Potatoes

A Nearly PERFECT FOOD...

GREAT NUTRITION The US Department of Agriculture has stated that “a diet of whole milk and potatoes would supply almost all of the food elements necessary for the maintenance of the human body.

GOOD FOOD

The potato itself is 99.9% fat free, and yet it is a nutrient dense food. It is an important dietary staple in over 130 countries. And best of all... they always taste great! A medium-sized potato has no fat, no cholesterol and contains 110 calories, which makes them GOOD food! •Sodium Free – Low sodium diets help to reduce the risk of high blood pressure and stroke. •Vitamin C — Don't just think of oranges anymore as a great source of Vitamin C! By eating one medium sized potato, you will receive 45% of the recommended daily value of Vitamin C — a great antioxidant. •More Potassium than Bananas! A medium-sized potato contains 18% of the recommended daily value of potassium - essential for maintaining proper muscle function. •Good Source of Fiber – The 3g of fiber in one medium-sized potato is 8% of the recommended daily value. Diets high in fiber are beneficial for a healthy digestive system and may reduce the risk of cancer and heart disease. Consuming adequate fiber also makes you feel fuller, helping to reduce snacking between meals. •Less Than 10% of the Daily Value of Carbohydrates – A medium-sized potato contains 26g of carbohydrates, only 9% of the recommended daily value. Complex carbohydrates are a great source of energy for the body. •A Great Antioxidant – Potatoes have one of the highest overall antioxidant activity among vegetables. Antioxidants protect key cell components by neutralizing the damaging effects of "free radicals." Potatoes also contain glutathione, an antioxidant that may help protect against some cancers.

Challah Bread (Easier than you think!)

What is a challah loaf and what does it symbolize? The braided challah, which is made with eggs, is the Jewish Sabbath and holiday bread. It is surrounded by folklore and tradition and loaded with symbolism. The bulkah is a segmented rectangular challah. Sweet challahs with honey or raisins are baked during the festive season to bring joy and happiness. A deliciously fluffy and eggy yeast bread perfect for family dinners, special occasions, and the Sabbath!

Ingredients:

Instructions:

•2.5 cups warm water* •1 tablespoon rapid rise yeast (I will only use Red Star brand) •½ cup honey •3 eggs •4 tablespoons kosher olive oil (I use Pompeian brand) •1 tablespoon of kosher or sea salt •7 cups bread flour (I use Pillsbury), with an addition 1-2 cups for kneading For wash: 1 egg and two tablespoons water

1. Place warm water in a large mixing bowl and sprinkle yeast over top. Stir and allow to sit for five minutes. After five minutes, if there are bubbles on top proceed with recipe. If there are no bubbles, wait until you can purchase new yeast.

2. To the active yeast mixture add: Honey, Oil, Eggs, and Salt. Stir with a whisk until well combined. Add in 4 cups of flour and stir with a sturdy wooden spoon until mixed in. 3. Add remaining three cups of flour and stir until flour is incorporated and dough is stiff. 4. Sprinkle a clean surface with one cup of flour. Turn dough out onto this and sprinkle more flour on top. Knead with both hands for ten minutes, adding more flour to spots that become too sticky to knead. After ten minutes, place in bowl and cover with clean cloth. Allow to rise for 1.5 hours. 5. Punch down dough and turn it out onto a floured surface. Sprinkle a little more flour over the top and knead dough for about five minutes. 6. Separate dough into two portions and then separate each portion into three smaller

portions (this is for a three strand braid). Roll each portion into a rope. It doesn’t matter how long the ropes are as long as you make sure each of the ropes are about the same size. Mine usually end up being 12-15 inches.

9. Preheat oven to 375. In a small bowl beat egg and water together. Uncover risen bread and brush with egg wash. Place in oven and bake for 15-20 minutes. Remove from oven and brush crevices on top of bread with egg wash again. Return to oven and bake for 20-25 more minutes, or until bread is dark golden brown and sounds hollow when tapped. Allow to cool completely before storing in an airtight container or serve warm :).

7. Pinch three ropes together at one end and then braid them, pinching together at the other end when done. Fold the ends under the loaf to hide them, leaving a pretty braided dough. Place this carefully onto a greased baking sheet and repeat with the Note: Feel free to add a little more flour in other loaf. this recipe if your dough is too sticky to work with. I use a little less in the initial 8. Spray the loaves lightly with cooking dough because I end up incorporating a spray (preferably kosher olive oil) and lot through the kneading process. cover loosely with cling wrap or waxed paper. Then, cover all of this with a towel. *Thanks to Amy Stratton in my Front Set aside and allow to rise for about an Porch Fellowship group for the tip on hour. brushing it a second time with the egg wash!
