LOOKing Through the Window Two men, both seriously ill, occupied the same hospital room. One man was allowed to sit up in his bed for an hour each afternoon to receive his daily medical treatment. His bed was next to the room's only window. The other man had to spend all his time flat on his back. The men talked for hours on end. They spoke of their wives and families, their homes, their jobs, their involvement in the military service, and where they had been on vacation.

Every afternoon when the man in the bed by the window could sit up, he would pass the time by describing to his roommate all the things he could see outside the window. The man in the other bed began to live for those one-hour periods where his world would be broadened and enlivened by the description of activity and color of the world outside. The window overlooked a park with a beautiful lake. Ducks and swans played on the water while children sailed their model boats. Young lovers held hands and walked amidst flowers of every color of the rainbow. Grand old trees graced the landscape, and a fine view of the city skyline could be seen in the distance. As the man described his view from the window in exquisite detail, the man on the other side of the room would close his eyes and imagine the picturesque scene. One warm afternoon the man by the window described a parade passing through the park. Although the other man could not hear the band, he could see the parade in his mind's eye, as the gentleman by the window developed a detailed picture with his descriptive words.

The blind man sees what he wants to see. He becomes who he wants to be.

their baths only to find the lifeless body of the man by the window, who had died peacefully in his sleep. She was saddened and called the hospital attendants to take the body away.

The seeing man has a tougher road... He sees everything around him and gets lost and confused about who he wants to be.

As soon as it seemed appropriate, the other man asked if he could be moved next to the window. The nurse was happy to make the switch, and after making sure he was comfortable, she left him alone. Slowly, painfully, he propped himself up on one elbow to take his first look at the world outside. Finally, he would have the joy of seeing it for himself. He strained to slowly turn to look out the window beside the bed. To his surprise the window faced a brick wall.

The faith filled man sees by faith what life can be. As a result of his vision, he becomes who he is meant to be.

The man called for the nurse and asked what could have compelled his deceased roommate to describe such wonderful things outside this window. The nurse responded that the man was blind and could not even see the wall. She said, "Perhaps he just wanted to encourage you."

She assured them that someone would be right down and trotted out the door to do her next good deed.

Chapter Two

When they arrived at the hospital, John was standing in front of the emergency room doors. “Tall, lean, good looking and waiting for me,” Heather thought with a giggle. As soon as the wheels on the suburban stopped turning, he had the door open and was whisking her into the hospital. Knowing where this was headed, Heather tried to cut her mother off even though she wanted the answers too. She didn’t want it to appear like what it was. She and her mother had done this to potential prospects hundreds of times, but for some reason she didn’t want John to have to endure it. Just as she was changing the subject, the admitting nurse called her name. Her mother winked at her as they left and showed no signs of following them.

When he finally arrived, they were having a great time. “Hi, I’m Dr. Thorp. Had quite a fall did ya, little lady?” he asked Heather, as he shook hands with John.

The doctor set about his work, talking all the while. John occupied himself reading all of the posters on the wall, politely keeping his back to her. Heather stared at John’s back whenever she could see him around the doctor. She thought it must be a learned craft to occupy patients so thoroughly with small talk. Before she knew it, the doctor was finished and thankfully, she had barely noticed any pain at all. “That is a gift,” she decided and thanked the doctor for his handiwork.

As John wheeled her into the lobby, her parents suggested that they take her home with them, rather than go to her apartment. Heather didn’t want to. She didn’t want the night to be over yet and she knew it would be, if she went home with them. “Daddy can’t John just take me home?” she asked. “Well, I guess you can do whatever you want to. I just thought that since there’s no one at your house to wait on you, that you’d want to stay with us.” “I don’t need to be waited on Daddy, I have crutches. See,” Heather said, pointing at the shiny new pair of aluminum crutches she had perched in her lap. “Well, it’s up to you honey.” “What about my truck though, Dad?” Heather asked, having forgotten all about it until now. Mr. Carter glanced at his wife and she nodded her approval. “Your Mom and I will go pick it up and take it to our house. You won’t be needing it anytime soon. We’ll drop your mother’s car off tomorrow for you to use.”

“Heather’s truck is a standard, so she’ll have to use her mother’s car for awhile,” he explained to John. John nodded his understanding and stopped Heather’s chair at the edge of the sidewalk. 14-15 ounce can sweetened condensed milk (filling) ½ cup lemon juice (fresh or bottled) (filling) 2 egg yolks (filling) 3 egg whites (meringue) ¼ C sugar (meringue)

Instructions 1. For crust, crush half of wafers (about 40). Stir in sugar. Add melted margarine and stir until well blended. Pat out into pie plate. 2. For filling, mix all ingredients with electric mixer until well blended. Pour into crust. Top with meringue. 3. For meringue, whip egg whites until foamy. Add sugar. Continue beating on high speed until soft peaks form. Pour onto top of pie and spread to edges to seal well. Bake at 325 for fifteen minutes or until top is golden. Allow to cool completely and refrigerate before serving if desired.

How to Bake a Ham

1. Wash and remove tops from strawberries. Place in blender and puree until fully liquefied.

and Get 4 MEALS out of it! I love to bake ham (the proper pronunciation in my neck of the woods is “ha-yum”). Its super simple, incredibly delicious, and yields enough to provide several meals. Anything that is left over is easily frozen to recycle into casseroles, beans, omelets, and more at a later date. There are as many ways to cook and use a ham as there are stars in the sky. A lot of people like to put a glaze on theirs, but my philosophy is: Why over complicate things? Ham tastes GOOD and when I take a bite of ham, I’m not expecting to taste maple or cinnamon or oranges, I just want to taste my ham!

2. Fill two quart pitcher halfway with water. Stir in drink mix. Add strawberry puree and fill the rest of the way with cold water. Stir well. *If strawberries aren’t sweet enough, you can add ¼ a cup of Splenda or sugar to taste. 3. Serve cold, over ice.

That having been said, of course there isn’t anything wrong with making a glaze, its just that I prefer the taste on its own. So here is your basic “How To Cook A Ham” tutorial with several options for getting more meals out of it! I put my ham on a baking sheet that has a lip on it because juices will come out and you don’t want them being spilled off into your oven. Encase your ham really well in aluminum foil. Now all you do is turn your oven on 250 and cook it all day. We are slow cooking this, basically using our oven as the original crock pot. I put mine on in the morning, around eight and let it slow cook until supper time. I recommend you cook it for at least five hours, anything longer than that just adds to the tenderness so feel free to cook yours all day like I do! Continued on page 17.

Perception

Are We Suffering From a Shallow Depth of FOCUS?

Is this hard to look at? Depth of focus is a photography term meaning a close up of the subject you are interested in and a blurring out of what you don't particularly care for. In cinematography a large depth of field is called DEEP FOCUS and the small depth of field is called a SHALLOW FOCUS. The decrease in sharpness is gradual, but it does help determine our perception of the object in the photograph. We use our perception of things to organize all of the sensory information that is thrown our way daily. How we perceive what we focus on has a big impact on our attitude toward it.

Use this photo for example.

If I said the word LOVE to you, but showed you this photo, what would you think? We are told our whole lives that God is love. However, when we say the word God, some people are offended. Love is never offensive. We really like love. It stands for all the great things we like and want in our lives. Things like babies and puppies and beauty of all sorts. We love people and cars and animals and food. We have no problem attaching the word to anything and everything that brings us joy and happiness.

Somewhere back in history someone zoomed in on the word God and decided to try to change our perception with all sorts of words and visual aids. Over time our perception has changed. The creator of the universe has somehow become perceived to be evil rather than GOOD in the minds of many. We can talk about and show love all day long though.

Continued from page 13. I like to serve my ham with white beans, also known as Northern or Navy beans. What you are seeing here is basically a combination of Northern and Navy beans, I used a bag of each because I didn’t have enough of either one to make a really big pot. How do you cook these beans? That’s simple, just CLICK HERE for my tutorial on how to make dried beans, which is the exact method I used to cook these. Dried beans are incredibly economical and filling. I make a large pot and then use them for two meals, once as a side dish and once as a main course. This is my first choice in recycling ham and beans. The following day, I heat up the beans and shred a good bit of ham to go in them. Serve this with cornbread and some chopped onions and don’t be surprised if wayward Southern bachelors don’t start lining up at your door! Do you have a family who bristles at the thought of leftovers? A simple solution to this is to wait two days before recycling them into a new meal. If I have ham on Monday, I might wait until Wednesday to serve this ham and bean dish. This is an easy way to beat the “we had this last night!” whining. My family has yet to notice we are eating leftovers when I serve them this way! But Mama’s Northern Beans Had This Gravy In Them… I’ve had a lot of people email asking about the “gravy” their mothers used to have in their white beans. The good news is, that cooks up all on its own! Another thing I like to do for a super quick supper with leftover ham is chop it up and add it to a box of Au Gratin or Scalloped potatoes. Just prepare the potatoes according to box directions, stir in chopped ham, place in a 9×13 inch casserole dish and bake (according to package directions). This is home style convenience food at its finest! My husband was pretty put off the first time that box of potatoes appeared, but he got over it after his first bite of my ham “casserole”. If you want, you can also experiment with adding frozen vegetables to this. I like to add green beans :).

Other uses for leftover ham: •Chop it up and add it to omelets for a great breakfast (or brunch…or dinner…or…) •Bake up a can of biscuits (if you don’t want to make homemade) and have ham and biscuits! This is an excellent dinner idea (Southerners love our breakfast for dinner!). •A ham bone is also a GREAT seasoning for soups and stews! Let it cook in there the entire time, so you get all of those delicious ham bits off of it!

“Okay, wait right here and I’ll get my truck,” he said and locked the brakes on her wheelchair. Heather watched him amble across the parking lot mesmerized. However, as soon as he was out of sight, she grabbed her mother’s hand and pulled her over to her chair. Bubbling over with delight, Heather asked her mother what she thought of him. Leah looked at her daughter’s face and smiled one of those contented, full-of-love smiles she was known for. Her daughter was beautiful when she had a smile on her face. The world famous Crawfish Festival began in 1960 as a spin-off of the Breaux Bridge Centennial Celebration. The festival is now known around the country and even the world.

Breaux Bridge named the "Crawfish Capital of the World" in 1959.

Every May thousands of hungry people flock to Breaux Bridge to be part of the festivities. The Crawfish Festival has also become one of the largest gatherings of world famous Cajun musicians. All weekend long you can hear the sound of authentic Cajun, Zydeco and Swamp Pop music rising from the festival. You can witness over 30 bands perform over the three day event if you think you have the stamina. It’s a perfect opportunity to see our musical tradition passed from generation to generation. Watch the Cajun dance contests, and if you’re brave, join in. There’s no better way to learn. There are even Cajun music workshops held in the heritage tent. The Breaux Bridge Crawfish Festival Association is a volunteer organization. Their mission is to promote the crawfish industry in Louisiana and the culture of Cajun Country.

Washed Ashore is included with your paid Zoo admission and is free for Zoo members. The aquatic trash in our oceans is harmful to wildlife like sea turtles. One group came up with a creative solution that would both remove some of the debris and also educate people about the dangers of plastic pollution. The group is called the Washed Ashore Project, and it is a non-profit, community-based organization with a mission of educating and creating awareness about marine debris and plastic pollution through art. The Houston Zoo is the place to see a special Washed Ashore art exhibit featuring giant sculptures of the sea life most affected by plastic pollution, made entirely of marine debris collected from beaches. From a Styrofoam coral reef to a plastic bottle sea jelly to a recycled plastic whale rib cage (that’s 10’ tall and 23’ long!), guests of all ages will have a blast interacting with these awesome creatures while learning all about how they can help save wildlife.

This causes blockages within their digestive system.
