This week, we are joined by Chris McCue, Managing Director of Carr, a leading architecture and design practice. Chris discusses his approach to innovation, the future of design, and how Carr is influencing modern spaces. Explore his insights on creating impactful and sustainable environments.

Since Carr’s inception in 1971, evolving into an award-winning team of over sixty, how has this expansion shaped your studio’s approach?

Carr has been dedicated to enriching daily experiences through unparalleled design excellence. Our expansion and commitment to foundational design principles have empowered us to significantly influence the built environment across diverse sectors, including residential, commercial, and hospitality. As our endeavours have broadened in scope and complexity, we’ve augmented our team with specialised expertise to support this growth, aiming for lasting and sustainable outcomes in both architecture and interior design.

What are Carr’s key design principles, and how are these reflected in your projects?

Our key design principles are founded on achieving elevated and enduring outcomes. With clarity and resolution of space, our designs are crafted from the inside out, featuring sensitive manipulation of space, form, light, and materiality.

These principles manifest themselves in all our residential projects by considering the inhabitants, the local community, proportions, and connections to natural areas. The architecture takes cues from the surrounding context, the client’s aspirations, and the narrative journey. Deliberate and delicate moves, along with beautifully scaled spaces of wonder, truly enhance the everyday lives of the people we are fortunate enough to design for.

In what ways is artificial intelligence being incorporated into Carr’s architectural practices, and what future impact do you anticipate it having on design?

We are experimenting with the integration of various AI tools to support and refine the design process, especially for tasks that are technically demanding and labour-intensive. This strategic incorporation allows us to dedicate more time to the creative aspects of design. While the potential of AI excites us, we remain vigilant of its associated risks and challenges, such as concerns over data privacy, the danger of over-reliance, and copyright issues. AI is envisioned as a tool that enhances our capabilities, reinforcing the notion that architecture is fundamentally a human-centric practice.

What major trends are currently shaping the architecture industry, and how are they influencing the field?

The architecture industry in 2024 is being shaped by several critical trends, notably the impacts of the housing crisis, environmental sustainability, and the overarching effect of global events. We are trying to play our part in this process by exploring innovative approaches to density and sustainable design. In the residential sector, there’s a noticeable shift towards nuanced quality over overt opulence, particularly in Melbourne. Residential developments are increasingly community-oriented, designed to foster a strong sense of belonging and wellbeing, alongside a pronounced focus on energy efficiency and sustainability in building design.

What signifies a successful project completion at Carr?

A successful project at Carr is the culmination of holistic and sustainable design practices, complemented by design excellence and in-depth collaboration with our clients. Our projects not only aim for commercial success but also prioritise creating spaces that resonate with the users’ experiences and contentment. Our enduring commitment to timeless architecture and design plays a crucial role in enhancing the quality of our built environment.

Looking forward, how do you envision Carr’s development in the architecture and design sectors?

Design excellence is at the core of everything we do. Across projects of all scales, we always strive to create the best environments for people to live, work, and stay. Emerging sectors for the business, such as Branded Residences, Built-to-Rent apartments, and Retirement Lifestyle Living, see us expanding our repertoire into adjacent sectors while enabling us to tackle projects for other special projects. ■

Sweet alchemy by Rosemary

Rosemary Andrews is a name synonymous with sweet elegance in the world of culinary arts. She is now the proud founder of Mietta by Rosemary, a pop-up bakery that has become a haven of delight in Malvern. Her journey, from collaborating with Ben Shewry on the “dessert trolley of dreams” to launching her own venture, showcases her creativity and expertise in pastry.

The birth of Mietta by Rosemary comes after two years of meticulous planning and balancing her dessert box business. It was her successful one-day pop-up at Co Bake Space in June that catalysed this venture. The name - ‘Mietta’, translating from Italian as ‘sweet little thing’ and ‘Rosemary’, which means remembrance - is Rosemary’s tribute to life’s sweet moments, often shared over a slice of cake.

Mietta by Rosemary is not just any bakery. It’s a destination pop-up where Rosemary’s signature layer cakes, including the Honey-Misu layer cake, 8 Layer Carrot Cake, and Honey, Espresso and Dulce de Leche layer cake, take the spotlight. Her repertoire also includes other favourites like the Dulcey Baked Cheesecake and the two-texture Valrhona Chocolate Cake.

The bakery’s latest addition, a machine serving vanilla soft serve made with Gippsland Jersey milk and topped with Valrhona chocolate sauce, offers a treat that complements her array of baked wonders.

Rosemary’s focus on detail and finesse extends to the bakery’s design. Collaborating with GOLDEN, a local design studio, the space is a reflection of Parisian patisserie elegance, with a soft palette featuring marble and gold accents. The decor, including wall lights, custom shelving and a handmade flower wall, mirrors the layered beauty of her cakes.

From early days baking with her mother and grandmother to her professional beginnings at 16, Rosemary’s path led her through Melbourne’s renowned bakeries and restaurants, and stints in the prestigious London kitchens of Gordon Ramsay, The Ledbury, and Dinner by Heston Blumenthal. Her role at Attica during Melbourne’s 2020 lockdown and subsequent leadership at Attica Summer Camp also represented significant milestones in her career.

As Rosemary says, “Bringing joy to people is one of the main reasons I love being a pastry chef. Mietta reflects my career and what I am about – quality, delicious cakes that deliver happiness.”

Altiar Chargrilled Flank Steak

Chef hat-winning restaurant Rare Hare presents Head Chef Scott Burness’ signature chargrilled flank steak recipe, highlighting Jackalope’s culinary excellence in the Mornington Peninsula.

Ingredients

Steak

4 x 250g trimmed flank steaks

Brine

1l water

150g salt

100ml dark beer

2 sprigs thyme

10g smoked paprika

20g peppercorns

5 garlic cloves

Salsa Verde

50g parsley, roughly chopped

50g mint, roughly chopped

50g basil, roughly chopped

25g capers, roughly chopped

25g cornichons, roughly chopped

2 anchovy fillets, roughly chopped

½ garlic clove, minced

½ tbsp Dijon mustard

salt

lemon juice

light olive oil, or rapeseed oil

Steak dry rub

20g English mustard

10g Maldon salt

10g smoked paprika

10g sugar

10g ground black pepper

Beer and barley glaze

250ml dark beer

10ml Lea & Perrins

50g malt extract

50g Marmite

100ml beef stock, reduced to 50ml

Carrot miso purée

500g carrots, peeled and grated

100g butter

50g red miso

Salt

Charred baby leeks

12 baby leek roots, attached and washed

Splash olive oil

Maldon salt

Method

Start by heating the brine ingredients in a pan until the salt dissolves. Allow to cool.

Meanwhile, blend all the salsa verde ingredients in a blender, starting with a splash of oil. Blitz to achieve a loose dressing consistency, adding more oil if needed. Season with lemon juice, salt, and pepper.

When the brine is cool, add and fully submerge the beef and leave to brine for 1 hour.

For the carrot purée, melt the butter in a pan over medium heat. Add the grated carrot and cook until soft, about 10-12 minutes.

Blend the cooked carrot until smooth and strain through a fine sieve. Season with salt to taste and keep warm.

Remove the beef from the brine, rinse under cold water, and pat dry.

Preheat a barbecue or chargrill pan until very hot.

Combine the rub ingredients in a bowl, coat the steaks evenly, then drizzle and massage oil into the meat to mix with the spices.

Once the barbecue or griddle is smoking hot, sear the flank steaks on both sides.

Meanwhile, heat all ingredients for the beef and barley glaze in a pan, stirring until combined. Brush the steaks with the glaze while cooking, being careful to prevent burning.

Dressing

100ml olive oil

3g salt

20g shallots, brunoise

25ml white wine vinegar

5g Dijon mustard

5g English mustard

½ tsp ground black pepper

To serve

Puffed barley

Serves 4

Rub leeks with olive oil, season, and char them on the barbecue or griddle alongside the beef until blackened outside. Remove and allow them to cool slightly.

Remove the steaks from the heat once they reach an internal temperature of 52°C, measured with a probe thermometer. Leave them in a warm place.

Make the dressing by whisking all ingredients in a bowl until emulsified. Drizzle over the leeks and set aside.

After resting, the steaks should register 55°C on a temperature probe. Glaze them again, then carve into slices and season with salt.

To serve, add a spoonful of carrot purée to each plate. Top with slices of beef, dress with the leeks, and sprinkle some puffed barley on top. Spoon over the salsa verde and finish with the dressed leeks.

Garnish with baby herbs.
