David, can you elaborate on the design philosophies that guide your creative process and how they influence your projects? The DAVID HICKS design philosophy considers architecture, interior design, and decoration as a cohesive whole. Our signature is creating sophisticated and intelligent spaces that are both luxurious and functional. The DAVID HICKS ethos emphasises detail and outstanding craftsmanship and informs all projects. How do you approach the use of colour and texture in your designs, and what are some of your favourite combinations to work with?

Can you share insights into how you tailor your design approach to meet each client’s unique personality and lifestyle? Our dedication to client service is paramount, enabling us to deliver the high standard of our projects. I take a hands-on approach in all design and delivery aspects, building a one-on-one relationship with clients. Understanding a client’s way of life, preferences, and aversions is a detailed process that significantly informs our designs. We customise our approach for every project, ensuring that we meet client needs with creative and constructive solutions. What do you consider the most underrated element in interior design, and how do you incorporate it into your projects?

As a proponent of classical and modernist architecture, I revel in refined symmetry. I achieve balance by pairing robust architectural forms with luxurious decorative accents, crafting spaces that are both harmonious and elegant. My designs often play with contrasts in materials—smooth versus rough, matte versus polished—to create an interplay of luxury and glamour with exotic touches. Marble, with its inherent patterns and colours, is a favoured material for adding luxury and uniqueness. Colour is sometimes injected, mainly layered with artwork and decorative elements. This considered way of utilising colour and texture creates highly detailed environments that transcend time.

The most underrated element is the project’s delivery. While many designers have great ideas, the concept can be lost without detailed documentation or project management. We maintain a rigorous approach to documentation and management, ensuring our vision is fully realised. Interior planning is crucial, and starting with it lays the groundwork for the building’s design, leading to a more cohesive outcome. Could you share the inspiration behind the elegant interior design concept of 5 Stonnington Place in Toorak? The concept was inspired by the brutalist yet decorative Milanese villas. I was drawn to the design’s formality, simplicity, and decorative minimalism. We aimed to blend formal and informal areas without a strict separation, incorporating elements like fluted plaster wall dado and marble-trimmed archways. The kitchen, designed with edge-trimmed cabinets and rolled marble edges, serves as the informal space’s focal point, adding a touch of nostalgia.

Like most of our projects, 5 Stonnington Place includes numerous bespoke features. Detailing, material junctions, and sympathetic integration into the design are critical. When we can’t source specific materials, we often have them custom-made, as was the case with the fluted plaster. Stonework is another bespoke element, requiring careful selection and technical consideration to achieve the desired effect. These intricate details, akin to the craftsmanship of a luxury item like a Chanel bag, ensure the project’s individuality and quality.

A passionate advocate for wellness and innovative spa experiences, Lyndall has created a sanctuary at Aurora for rejuvenation and balance. Explore the journey of one of Australia’s leading wellness figures. Lyndall, could you share the story behind the inception of Aurora? What inspired you to start this journey?

What wellness practice has significantly influenced Aurora’s approach?

Raised on a Queensland fruit farm, I was surrounded by nature, I developed an intrinsic connection to a healthy, natural lifestyle. This early exposure, and pivotal work experience at Eden Health Retreat at 14, ignited a lifelong passion for wellness. I was fascinated by the transformative effects of wellness programs on individuals.

At Aurora, we have woven three foundational pillars of wellness into our approach: European Curative Therapies, Eastern Mind-Body Connection, and Mindful Rituals. These include a variety of practices like bathing and thermal rituals, touch therapy, aromatherapy, and mindfulness. We believe in integrating these elements to offer a holistic wellness journey for our guests.

This inspiration led me to envision a space dedicated to ongoing wellness practice, accessible to those who may not have the luxury of attending extended retreats. In 1997, I brought this vision to life with the opening of Aurora Spa Retreat in St Kilda. Our aim was to condense the benefits of a retreat into rejuvenating hour-long spa sessions. Aurora quickly evolved, gaining recognition and accolades, including Best Bathhouse and Best Spa in Australasia. Our latest endeavour, the Aurora Spa & Bathhouse in Sorrento, combines our deep wellness expertise with evidence-based practices to offer a truly regenerative experience. Why has wellness become such an essential part of people’s lives today? In today’s fast-paced and technologically driven world, the importance of wellness has become more evident. People are increasingly seeking ways to counteract the stresses and imbalances brought on by a busy lifestyle. Wellness practices have emerged as vital tools to restore harmony and equilibrium in our lives, offering tangible benefits to our overall well-being.

How do you envision the future of wellness and spa experiences, and Aurora’s role in this landscape? The wellness industry, including wellness travel, is experiencing rapid growth globally. There’s a burgeoning interest in regular bathing practices, a tradition in European culture known for its health benefits. At Aurora, we aim to cultivate this culture in Australia. Our Sorrento location, with its 10-step bathing ritual, is designed to deepen the impact of our treatments and offer benefits like stress reduction and improved sleep. As the wellness landscape expands, Aurora is positioned to guide our guests through transformative wellness experiences.

How has Aurora evolved to meet changing wellness needs? When Aurora first started, wellness was often viewed as an ‘alternative’ or ‘niche’ concept. However, over the past 26 years, there has been a significant shift in public perception. Today, wellness is a topic that is openly discussed and actively sought after, both by individuals and within the corporate world. Aurora has adapted to these evolving needs, transitioning from a concept once considered fringe to one that is now integral and mainstream. Can you share the story behind introducing your ASPAR product range? When Aurora Spa moved to Melbourne, we faced a new challenge – transforming our six-day guest experiences into impactful 60-minute sessions. This necessitated a shift in approach, where efficiency in delivering therapeutic results became paramount. This led to the birth of our ASPAR product range, each product meticulously hand-mixed to achieve the maximum therapeutic effect in the least amount of time. ASPAR has grown to symbolise our dedication to wellness beyond the spa, having featured in Qantas flights and lounges, and now available across Australia and New Zealand.

Choux au Craquelin Matcha Cream Puff from Bansho. Shop 1/ 960 High Street, Armadale

French and Japanese-style bistro, Bansho, shares chef Tomotaka Ishizuka's Japanese twist on the classic French Choux au Craquelin.


Ingredients

Method

Choux Pastry

Choux Mix

32ml Milk 32ml Water 32g Butter 1.2g Sugar 0.6g Salt 34g Plain Flour 56g Eggs Craquelin

36g Plain Flour 36g Brown Sugar 28g Soft Butter Matcha Cream

120g Cream 36g Sugar 0.6g Gelatine 1.5g Matcha Powder

Preheat oven to 200C. Combine milk, water, butter, sugar, and salt in a pot and bring to a boil. Reduce heat to low and stir in flour, cooking for 2-3 minutes until the raw flour taste disappears. Transfer the mixture to a mixer (or mix by hand) on low-medium speed to cool. When the mixture cools to 20-30°C, add eggs one at a time, ensuring each is fully incorporated before adding the next. Line two baking sheets with parchment paper and moisten with water. This humidifies the environment, allowing the pastries to rise without drying or burning. Transfer the choux dough to a piping bag and form 3-4cm rounds. Place trays in the oven, reduce the temperature to 170C, and bake for 20 minutes, allowing the choux to rise. Open the oven briefly to release moisture, then continue baking for another 10 minutes until choux is crispy. Choux Tips Ensure the liquid is boiling before adding flour, but avoid reducing it too much. The mix is ready when a thin crust forms at the pot's bottom and it doesn't stick to your utensil. Don't add eggs when the mix is too hot, or they'll cook, preventing a proper rise. Depending on humidity, you might need more or fewer eggs. The mix is right when it falls in a consistent ribbon and holds its shape. If the mixture falls in clumps, add more eggs one at a time, ensuring it doesn't become overly wet. Over adding eggs results in a too-wet mix, causing the choux to collapse during baking and preventing a crisp crust. Craquelin Mix (Prepare 1 day in advance)

Using a stand mixer with a paddle attachment, beat brown sugar and butter on medium until creamy (~2 mins). Scrape the bowl and beater. Add flour and salt, mixing on medium-low until a damp, crumbly texture forms (~2 mins). Form the dough into a ball using hands (avoid adding extra flour). Roll it out on parchment paper to 0.5cm thickness. Freeze to set the craquelin. After freezing, remove the top parchment layer and cut out 18 rounds using a 2-inch cutter. Place on the choux mix and bake as per the choux procedure. Craquelin Tips Ensure butter is at room temperature. Avoid overmixing to maintain a crispy crust. Matcha Cream (Prepare 1 day in advance)

In a pot, combine cream, sugar, and sifted matcha; bring to a boil. Rehydrate the gelatine in water. After boiling, remove the pot from heat. Squeeze out excess water from gelatine and whisk into the mix. Strain the mixture to remove any lumps or impurities. Allow it to cool and set in the fridge for 24hrs. Once cooled and somewhat custard-like, whisk in a mixer with a whisk attachment on medium-high speed until it forms a stiff peak. Fill a piping bag with the matcha cream and pipe into the choux. Matcha Cream Tips Boiling the cream with matcha and sugar enhances its distinctive green colour and flavour. Gelatine ensures the cream doesn't turn buttery and aids in stability. (Serves 5)

Can you tell us about the origin of The Beautiful Bunch and the inspiration behind providing employment opportunities for women from refugee backgrounds?

In your six-month training program, what key skills do you focus on teaching, and how do you believe these skills prepare your trainees for future success?

The Beautiful Bunch was born during Melbourne’s lengthy lockdown in October 2020. Our CEO, Jane Marx, together with three amazing young women from refugee backgrounds, saw an opportunity to create something meaningful. The idea was to offer paid training opportunities to young women who often find themselves sidelined in the mainstream workforce. We believe in the power of employment as a tool for empowerment. It’s crucial for these young women to gain meaningful employment early on. They face considerable challenges entering the workforce, and we are dedicated to helping them secure jobs, gain financial independence, and chase their dreams.

Over six months, we focus on teaching them everything from botanical knowledge and the basics of floristry to digital skills and financial literacy. We also place a strong emphasis on developing soft skills, like effective communication and building confidence. We aim to prepare them not just for professional opportunities in floristry but also for personal growth and success in various aspects of their lives.

Could you discuss the challenges these women face in the workforce and how The Beautiful Bunch’s supportive environment helps overcome them? Many of the women we work with face a long and difficult journey securing employment in Australia. They’re dealing with a new language, unfamiliar culture, and often doing it without the support of family or friends. We provide a safe and nurturing space where they can grow and flourish. The Beautiful Bunch is all about creating a sense of community amongst these women, offering a supportive environment that caters to their unique needs and helps them overcome these challenges. What significance does being the only Victorian not-forprofit focused on young women from refugee backgrounds hold for The Beautiful Bunch, and how does this influence your approach and initiatives? We have designed our program around ensuring that the obstacles that exist to entering the mainstream workforce. Our approach prioritises accessibility: no prior work experience or high English proficiency is required, and childcare or limited availability are not seen as barriers. Our focus is on meeting their needs while running a busy floristry business.

How does your daily process of selecting and creating one style of bouquet distinguish The Beautiful Bunch? We start as early as 2:30 am, heading to the Melbourne Flower Market to pick the freshest seasonal flowers and foliage for our “Bunch of the Day”. This commitment to using locally grown Australian blooms is part of our effort to minimise our carbon footprint. It’s not just about making beautiful bouquets; it’s about sustainable practices and reflecting our core values. Can you elaborate on how purchasing flowers from The Beautiful Bunch contributes to the trainees’ professional growth and confidence? For most of the young women we work with, this is their first job. We provide paid training, which is essential for their full participation and growth. We are a social enterprise, so most of our work is funded through our flower sales. The support from our customers is crucial. We intend to provide our program participants with a diverse range of transferable skills that will set them up for long-term success. This work is made possible thanks to our loyal, flower-loving customers.

By diligently observing the market, one better understands its patterns and, more importantly, the key elements that drive these cycles.” A real estate market cycle, at its core, is a pattern of increasing and decreasing property values and transaction volumes over time. It usually goes through four distinct phases: boom, downturn, stagnation, and recovery. Boom During this phase, areas from the heart of Melbourne to the coastal stretches of the Mornington Peninsula witness surging property values. In Melbourne, especially in sought-after suburbs, demand for housing typically overshadows supply, leading to rapid price hikes. The Mornington Peninsula, buoyed by its appeal as a tourist destination, sees beachfront properties and holiday homes in high demand, with both areas benefiting from increased infrastructure developments.

Stagnation/Slump Property values in both regions might plateau or experience further decline. In Melbourne, the property market may slow, with longer sale periods and reduced buyer confidence. Similarly, the Mornington Peninsula, being seasonal in its appeal, can see reduced interest, particularly in holiday homes and investment properties. Recovery Both Melbourne and the Mornington Peninsula start showing signs of revival. As buyer confidence resurges, property values embark on a steady ascent. The rejuvenation can stem from favourable government policies, economic turnarounds, or a resurgence in the appeal of the Mornington Peninsula as a lifestyle and holiday destination. Fraser adds, “Regularly watching the market helps develop the skill to make smarter decisions over time. This can improve your long-term lifestyle and strengthen your financial position.” These cycles significantly influence the strategies investors use and the opportunities they can leverage. Yet, it’s important to remember that real estate varies greatly by location. General market trends can be affected, or even overridden, by local factors such as population growth, infrastructure projects, and the area’s economic health. So, a deep understanding of both Melbourne and the Mornington Peninsula’s local situations, along with broader market trends, is crucial for successful property investing.

Downturn/Correction Following a period of swift growth, the market, whether in Melbourne’s urban areas or the Mornington Peninsula’s scenic locales, starts to experience a cool-down. Property prices may stabilise or retract in certain pockets. This stage can be prompted by factors like lending restrictions, stamp duty changes, or even a seasonal dip in tourism-driven demand in the Peninsula. 13
