on summer garden success. In Melbourne and the Mornington Peninsula, we're blessed with a climate that offers a horticultural freedom akin to a painter's vast palette of colours. This is a point of pride in my design work at Will Gibson Gardens, where the plants I recommend are not only ideal for summer but form part of a year-round vision for your garden's life.

Our temperate environment sets the stage for a variety of plant species to flourish, especially during the warm summer months. It's this versatility and range that I love to bring to my clients' gardens, whether they're seasoned green thumbs or just starting to nurture their first plants. From delicate winter bulbs that require the cold to rejuvenate and burst forth with colour as the days lengthen, to the more exotic and heat-loving species like palms, succulents, and tropical fruits, our gardens can cater to an extensive range of tastes and preferences. It's about more than just the visual pleasure these plants provide; it's about their adaptability and resilience. In our unique microclimate, we have the privilege of cultivating a wide and fascinating array of plants that would find it challenging to thrive elsewhere in Australia. With my years of experience, I've come to know and love a variety of plants that I regularly use in my designs, and I encourage you to consider these resilient and vibrant selections when planning your own summer garden • Liriope 'Isabella' OZ BREED: A hardy, evergreen grass-like plant with vibrant green foliage and purple flower spikes. Ideal as a ground cover or border plant. • Dichondra 'Repens': A lush, mat-forming ground cover with small, kidney-shaped leaves. It's perfect for creating a dense carpet of green in shaded areas. • Heuchera 'Palace Purple': Noted for its striking purple leaves, this plant adds a pop of colour to any garden bed or container. • Rosmarinus Prostrata: A creeping rosemary variety with aromatic leaves and blue flowers, great for cascading over walls or as a fragrant ground cover. • Viola Hederacea: A delicate trailing plant with heart-shaped leaves and dainty flowers, ideal for hanging baskets or as an understated ground cover. • Buxus Sempervirens (Balls): Commonly shaped into formal spheres, this classic evergreen is perfect for structured garden designs.

• Gardenia Florida: Known for its lush foliage and fragrant white flowers, this gardenia is a favourite for its beauty and scent. • Gardenia Aimee Yoshida: A larger gardenia variety with sizeable white blooms, known for its strong perfume and glossy leaves. • Gardenia Magnifica: This variety boasts large, creamy white flowers with a sweet fragrance and can be used as an ornamental shrub. • Rhaphiolepis 'Little Bliss': A compact shrub with pink blossoms, it's drought-tolerant and low-maintenance, ideal for urban gardens. • Westringia 'Fruticosa': A hardy native shrub with grey-green leaves and white or pale blue flowers, suited to coastal landscapes. • Westringia 'Blue Gem': Offers vivid blue/purple flowers, making it a standout in the garden for colour contrast. • Azalea Alba Magnifica: Presents stunning white blooms, bringing a classic elegance to shaded garden areas. • Arthropodium c. Matapouri Bay: Also known as Renga Renga Lily, this plant has long stalks of white flowers and is drought-resistant. • Laurus n. Miles Choice: A selection of bay tree known for its culinary leaves and easy-to-train growth habit. • Trachelospermum Jasminoides: Star jasmine, with its fragrant white flowers and glossy green leaves, is excellent for trellises or as a scented ground cover. • Crepe Myrtle 'Natchez': This tree is celebrated for its exfoliating bark and large clusters of white flowers during summer. Gardening is all about creating a living space that evolves with the seasons. It's about planting for longevity and enjoyment, taking advantage of the diversity that our climate offers. Summer Pea Pannacotta from Doot Doot Doot. Jackalope Hotel 166 Balnarring Road, Merricks North

Executive Chef Michael Wickham shares his signature Summer Pea Pannacotta recipe from the pinnacle of destination dining at Jackalope Hotel’s hatted Doot Doot Doot on the Mornington Peninsula. 10

Pannacotta

125g fresh peas 125ml chicken stock 75ml thickened cream ½ sachet of powdered gelatine (approx. 1 ½ tsp) 10 fresh mint leaves Mozzarella Ice Cream 310ml milk 280g buffalo mozzarella 2 tbsp inverted sugar (see recipe) 1 tbsp dextrose powder 13g salt 1g xanthan gum Inverted Sugar 175g sugar 75g water 3g citric acid Pea & Mint Salad 50g fresh peas 6 snow peas 5 leaves of mint Mint Oil 75g mint 75g baby spinach 150ml olive oil 150ml vegetable oil 2g salt Pea Furikake ¼ cup wasabi peas 1 sheet toasted nori seaweed 1tbsp black sesame seeds 1tbsp white sesame seeds

Place petit pois and stock in a saucepan. Bring to a boil, cover and simmer for 5 minutes. Stir cream into peas, add mint leaves, then liquidise and pass through a sieve. Season to taste. Add the gelatine powder to the pea cream. Briefly heat gently until gelatine dissolves. Lightly oil two ramekin dishes and pour in the pea cream. Allow to cool then chill for 4-6 hours. Mozzarella Ice Cream Blend all ingredients until smooth, transfer to an ice cream machine and churn until frozen. Place the ice cream into a tub and store in the freezer until needed. Inverted Sugar Add sugar and water to a pan. Once it has melted, add citric acid. Then, over medium heat, bring it to 118°C and allow it to cool. Pea & Mint Salad Pop the fresh peas from the pod and place in a bowl along with some thinly sliced raw snow peas and thinly cut mint leaves and dress with mint oil and salt. Mint Oil Blanch the mint and baby spinach for 30 seconds in rapidly boiling water, then refresh in iced water. Drain well and squeeze out all the water. Blend with the salt and oil in a blender until bright green and very hot. Place a couple of layers of Chux or cheese cloth into a sieve and drain the oil. Pea Furikake Toast both the sesame seeds and a sheet of nori seaweed in a frying pan. When cooled, place in a spice grinder along with the wasabi peas, then pulse until you reach a coarse, even consistency. To Serve

Place the pannacotta ramekin into hot water for 10 seconds to loosen from the sides, then turn out onto a plate. Spoon the dressed pea salad around the pannacotta, building up the sides. Sprinkle the pea furikake around the outside of the salad. Using a warmed ice cream scoop, make a nice, rounded ball of mozzarella sorbet and place on top of the pannacotta. Dress the salad with a little more mint oil, mint sprigs, pea tendrils, chive flowers and pea/broad bean flowers. Finish with a twist of black pepper and a pinch of sea salt. (Serves 2)

The choice of art needs to respect the architectural integrity of the space while also providing a counterpoint that makes each room intriguing. The result is a unique blend of the familiar and the unexpected, a mix of recognisable and international names that may not have been previously considered.

In the tranquil landscapes of coastal living, where architecture often reflects the calming influence of the ocean, art becomes a vital component in converting spaces into personalised havens. This blend of art and architecture extends beyond visual appeal; it’s about crafting spaces that push boundaries to create environments that are both unexpected and thought-provoking. Here, Oliver Gabelich, private art curator and owner of Mickys art gallery, delves into how visionaries like Aurel K. Basedow in Como, Italy, and Melbourne’s Nick Thomm are redefining the narrative of coastal living through their art. In coastal homes, where the architecture typically features open spaces, abundant natural light, and a seamless integration of indoor and outdoor areas, the chosen art must resonate with this essence. Georgie Howe is one such impressive individual, making remarkable strides in the world of professional cycling. Here, Georgie offers an insightful recap of her journey and her incredibly successful season as a member of Team Jayco AlUla. Join us as she shares her experiences, challenges, and the invaluable lessons learned along the way in this dynamic and demanding sport. On the 30th of November 2017, my TrainingPeaks (a workout scheduling application software) read T2 Ergo: 3x20’ & Road Bike (2hr). Six years on, and I am looking at my training for the day. Similarly, I have two sessions today: a three-hour session on my time trial bike with 2x30min tempo efforts, followed by a one-hour high intensity interval training (HIIT) session in the evening on the stationary bike. In 2017, I was an elite rower living in Melbourne, fresh off the plane from four years studying at Princeton University. Fast forward to the present day, and I now live in Girona, Spain, as a professional cyclist for Team Jayco AlUla. It goes without saying that I could not be where I am today without the support of like-minded people and organisations

– such as John Bongiorno and the team at Marshall White. In my first year as a professional, I lined up at some of the biggest races in the world: Tour Down Under, Omloop Het Nieuwsblad, Gent-Wevelgem, Paris-Roubaix, Vuelta a España Feminina, Tour de France Femmes avec Zwift, and the World Championships Individual Time Trial. I was well and truly a ‘deer in the headlights’ entering my first European season in the professional peloton. It seems like a lifetime ago since I saw the entire Marshall White team at their annual ‘Fire Up’ event at Kooyong Tennis Club earlier this year. Many lessons were learned, a few of which I have summarised below: · When in doubt, just keep going. Whether it was on the cobbles of Roubaix, feeling like you cannot push any harder, or entering an environment of the unknown, persistence and curiosity will always prevail. · Communicate, communicate, communicate. Do not suffer in silence. If you have something to say, say it. Be it in a team meeting, feedback session, or sprint lead-out. Tell your team how you are feeling. Communicate ideas. Don’t die wondering. · Trust the process. It is very easy in the modern era to be outcome-driven, to be extrinsically motivated, seeking validation from others. Of course, we all want success, but to succeed, we need to see the value in each step we take along the way. Tick off today, then tomorrow, and then the next day… · Be compassionate. Empathy is the hallmark of a good teammate. Never assume what another is feeling, always ask. Even a small, ‘Hey, I noticed you were a little quiet at dinner. Is everything ok?’ goes a long way for that person to feel ‘seen’. · Love what you do, but it’s okay to hate it sometimes. Did I love every minute of my first year in the pro peloton? Absolutely not. But that is totally fine and expected. I am grateful every single day that I get to do this sport as my profession. I love to be outside and enjoy everything the world has to offer, meet new people, and feel the exhilaration of racing – especially with a team. However, I have had to learn to be kind to myself when I do not love it. And that is okay. Preparations for the 2024 season are well underway. I am currently in the middle of a big training block as I gear up to begin my season in Australia at the Australian Road Nationals on the 4th of January. Following that, I will be lining up in Adelaide for the Tour Down Under and back in Geelong for the Cadel Evans Great Ocean Road Race. I simply cannot wait to get back to Melbourne. While Europe is superb in many ways, there are just some things that only Melbourne can provide. Thank you again to John and the team at Marshall White for your continued support.
