BARBECUING METHOD

With indirect grilling the heat circulates around the food to be grilled. The closed lid turns the barbecue into a convection oven. This method is ideal for cooking large pieces of meat at low temperatures, gently cooking fish or making crispy pizzas.

DIRECT

As the name says, the food to be barbecued is placed directly above the heat source when using the direct barbecuing method. This method is ideal for flash-grilling meat. The high temperature enables a nice crust or a perfect seared pattern on the steak.

When the opening of the funnel is turned away from the charcoal and the lid is closed, the entire barbecue surface can be used for indirect barbecuing.

AN INTERVIEW WITH THE INVENTOR OF THE GAS KETTLE BARBECUE Over 20 years ago, Mike Lingwood invented a unique gas kettle barbecue and called it ­“OUTDOOR CHEF”. His aim was to develop a product that would allow people to easily barbecue a wide selection of healthy food without any flare-ups. His vision was to make barbecuing a relaxed and varied experience that would bring people together to let them share fun and carefree moments. Mr Lingwood, great ideas are often sparked by a need. Was this the case for the gas kettle barbecue? It all started with my youngest daughter’s birthday party on 21 June 1992. I wanted to treat guests of all ages to a typical barbecue with sausages, burgers, etc. As I “only” had a charcoal kettle barbecue at home, shortly before the party I decided to buy a gas barbecuing station with lava stones in the hope that this would allow me to barbecue the different foods quickly and without any complications. But it turned into a bit of a fiasco. Lots of food burned and there were flare-ups and clouds of smoke. I was disappointed that I hadn’t been able to cook the food on the new gas barbecue the way I had expected. As a bit of a tinkerer, I kept thinking there must be a better way of grilling with gas. How did you come up with the idea of transforming a kettle barbecue into a gas barbecue? I need to make a short digression here. In the summer of 1988, I moved from England to Spain with my family. A good friend of mine, who also lived in Spain, was a great barbecue enthusiast and loved to cook tasty

dishes on his charcoal kettle barbecue. I didn’t have much interest in barbecues at the time, however I took a charcoal barbecue with me to Spain and soon became familiar with it. I’m a “tinkerer” and after my daughter’s birthday party, I realised that it would be possible to combine the shape of the kettle with a paella burner – in other words, to turn a charcoal kettle barbecue into a gas-operated kettle barbecue. How long did it take until you had the first prototypes? It took quite a while. In Spain, most of the ironware shops have a wide range of different paella burners. Finding the right size to fit into my kettle was easy, but I always had the same problem — flare-ups. The real breakthrough came on the day I found an old washing machine drum in the rubbish! I removed the conical centre part and inserted it into the kettle as a funnel, so that the burner was completely covered and this prevented flareups. This discovery was followed by several months of development work, during which I tested a wide range of many different funnel shapes and sizes until I found the right one. Then I had the idea of dividing the funnel. The two-part funnel not only protected the burner, it also allowed the upper part to be rotated to concentrate the heat and direct it upwards — the unique “OUTDOORCHEF” funnel system had been invented.

PROFILE BORN ON: 3rd July, 1971 in Bolzano, Italy PROFESSIONAL HIGHLIGHTS: Roland Trettl received a star in the Michelin guide for “Ikarus” in Hangar 7, the Eckart Witzigmann international prize, a 100-point award from the Falstaff Restaurant Guide and a Michelin star for “Ca’s Puers” in Mallorca. He completed his culinary training at the Park hotel in Bolzano. He then went to Eckart Witzigmann and rose to the top in fine dining under the supervision of the German chef of the century. TODAY HE WORKS AS: Optimiser, author, TV chef and as a styler. Roland Trettl is known mainly from TV shows like: The Taste, Karawane the chef, Kitchen impossible and First dates – A table for 2.

healthy eating. It prevents so-called flare-ups and unwanted smoke. “Health plays an important role in my life”, said Trettl, “and healthy food also has a lot to do with taste.” Roland Trettl is also convinced that good tastes do not depend on the question of whether to use a charcoal or a gas barbecue, as many people think. “That the taste of the food will be better if I barbecue it using charcoal, is complete nonsense to me. What is far more important is that you master the barbecue and only use good food. Then nobody will notice whether I have barbecued the food using gas or charcoal.” “THE GAS KETTLE BARBECUE CAN REPLACE THE ENTIRE KITCHEN.” In addition to the two cooking methods that can be used for barbecuing, Roland Trettl is amazed that the gas kettle barbecue can also be used for baking and cooking. “I didn’t know where to start first with the gas kettle barbecue: Pizza, desserts, even baked ice-cream. It replaced an entire kitchen. Actually, you can rip them out if you have a kettle barbecue at home.” Indeed, the gas kettle barbecue offers a wide range of applications. Barbecuing meat is just one of many. Roland Trettl also uses his gas kettle barbecue to prepare vegetables. “I just love barbecuing vegetables. For me, vegetables are not just there for support purposes, they are equivalent to the main part of the meal - like meat and fish.” 13

PREPARATION Add rosemary and olive oil to a marinade. Brush calf‘s carrot with the marinade, wrap with cling film and leave to marinate overnight in the fridge. Place veal rack on the universal rack. COOKING Place the universal rack with the veal rack on the preheated barbecue grid and grill at 160 °C until a core temperature of 54 °C is reached. Drizzle with oil and season to taste with coarse salt and pepper. Distribute sprigs of rosemary and onion on top. Continue barbecuing until the core temperature reaches 60 °C. Remove from the grill, allow to rest covered for about 5 minutes until the meat reaches a core temperature of 64 °C. Then cut open and serve.

Open the lid before igniting. Open the gas tap on the bottle. Set the regulator to position 2 | . Then press the ignition. Close the lid and allow the barbecue to heat up for around 10 minutes. Each additional burner can be switched on by opening additional regulators and pressing the ignition again.

Make sure that the gas bottle, hose and regulator are suitable for your country. Place gas bottles weighing 8.0 kg or more beside the barbecue and secure lighter bottles on the lower shelf using the mechanism provided. Connect the gas bottle to the regulator and make sure that the thread is screwed correctly.

Perform a leak test before first use, when changing the gas bottle and after long periods of non-use. Brush a soap solution over all gas-carrying parts and then open the gas-tap on the bottle without opening the regulator on the barbecue. If no bubbles form, then your gas system is free from leaks.

Open the lower ventilation gate. Place 2 - 3 fire starters on the lighter grate and then ignite them.

Insert the stainless steel charcoal basket and pile the charcoal or briquettes in the centre. The quantity depends on the size of the kettle. The barbecuing fun can start after just 20 minutes with direct or indirect barbecuing.

Our EASY SLIDE technology allows you to choose between direct or indirect barbecuing. Indirect barbecuing makes the entire barbecue surface available. This is ideal for preparing large pieces of meat, such as chicken, leg of lamb or spare ribs.

With direct grilling, the food to be grilled is placed directly above the heat source and cooked at high temperatures. This creates a beautiful crust and the typical seared pattern.

To avoid any drop in temperature when topping up the fuel you can prepare some burning charcoal in advance. This can be done quickly and easily using our chimney starter. You can then add the burning charcoal easily and safely thanks to the folding barbecue grid.

The two ventilation gates are used to regulate the temperature. Fully opening the gates creates a strong current of air which increases the temperature. The more the ventilation slider is moved towards the closed position, the more the air current is progressively reduced - this results in a drop in temperature.

PREPARATION Mix the rosemary, olive oil and meat seasoning into a marinade. Brush the marinade all over the pork rack, wrap it in cling-foil and then leave it in the fridge overnight to marinate. Brush the potatoes under running water, pat dry and slice them in half lengthways. Brush olive oil over the cut surface and marinate with potato seasoning. Cut the top off of the peppers and then remove the seeds. Trim the bottoms of the peppers without cutting holes in them. Mix well together the cream cheese, melon cubes and thyme. Season with salt and pepper and then fill the peppers. PREHEATING 5 minutes at the medium setting with the lid closed. COOKING Place the pork rack on the pre-heated barbecue grid and barbecue at the lowest level. Place the halved oven potatoes and the peppers close together on the barbecue after approx. 30 minutes. When the pork reaches a core temperature of 64°C, remove it from the barbecue and let it rest for about 5 to 7 minutes until the meat reaches a core temperature of 68°C. Cook the potatoes and vegetables until they are done and then serve with herb butter.

SWITCHING ON

Make sure the heating element is inserted correctly. Before using the barbecue, inspect the cable, plug and heating element regulator for any signs of damage or wear.

Connect the mains plug to an earthed socket outlet. Set the master switch to “I” and the temperature control to “ON”. The green indicator light for Setting 1 starts to flash, indicating that the heating element is heating up.

SETTING THE HEAT

Select the required temperature level from 1 - 6 on the temperature regulator using the arrow keys or allow the barbecue to heat up with the lid closed, until the indicator light is permanently lit, which tells you that the required temperature has been reached. Heating up takes approx. 10 - 15 minutes, depending on level you have selected, the wind and the weather.

The EASY REFLECT foil ensures even heat distribution and permits grilling at high temperatures up to 300°C if needed. The barbecue heats continuously at Level 7. Always barbecue with the lid open at this setting.

Any dripping fat or marinades evaporate on the aluminium protection foil, giving the food to be grilled that typical barbecue flavour. Replaceable aluminium protection foil protects the EASY REFLECT from dripping barbecue liquid.

AFTER BARBECUING

TIP

BARBECUING & COOKING Switch the temperature regulator to “OFF” and the master switch to “0”. Always unplug the mains plug when not in use. The device is only disconnected from the mains if the mains plug has been disconnected. When unplugging, always grip the plug rather than the cable.

The electric kettle barbecue allows you to barbecue (with and without the lid) and cook (with the lid). Use the support ring provided for cooking. Remove the barbecue grid, insert the support ring, then place the gourmet set or griddle plate (for example) directly on top and let the barbecue fun begin!

From frying, to roasting, braising, baking or steaming, it makes easy work of all kinds of dishes with flavours that rekindle childhood memories of grandma’s casserole dishes. The cast-iron pot can be used in the gas kettle, on the side cooking plate in the barbecue stations or on our charcoal barbecues and, with a capacity of 4 litres, it takes almost every challenge in its stride.

AND THIS IS HOW IT WORKS Heat up the briquettes in the firing chimneyuntil they glow. Place 5 - 7 briquett es on the charcoal grate and position them around the Dutch Oven’s holder. Now place the cast iron pot on the hold er. Close the lid and, depending on the heat that you want, place 10 – 15 glowing briq uettes on the lid. Now close the barbecue lid. Check the heat from time-to-time and add more briquettes as necessary until the dish is ready.

PREHEATING 10 minutes at the highest setting with the lid closed. COOKING Melt the butter in the pre-heated Dutch Oven and then braise the potato and onion cubes. Add the paprika seasoning and fry quickly. Add the meat cubes and the strips of pepper and fry whilst continually stirring. Douse with the bouillon and simmer for about 20 minutes on a low heat and with the lid closed. Add the tomato purée and the strained tomatoes, season with salt, pepper and nutmeg and cook for another 15 minutes until the meat is soft. Season with mustard, chili and tabasco to attain the required pungency. Now add the beans and the corn and briefly continue cooking using the lowest heat.

PREHEATING 10 minutes at the highest setting with the lid closed. PREPARATION Mix the olive oil and meat seasoning into a marinade. Brush the marinade all over the loin of veal, wrap it in cling-foil and then leave it in the fridge overnight to marinate. COOKING Place the loin of veal on the preheated barbecue grid and barbecue it at 160°C until it reaches a core temperature of 57°C. Remove the loin of veal from the barbecue, cover it and leave it to rest for approx. 5 minutes until the meat reaches a core temperature of 62°C. Then cut off the slices and serve them with herb butter.

Tip The “coating” gives the roast an excellent colour. Mix the ingredients well and apply them once or twice about 10 minutes before the end of the cooking time.

SMOKER CHIPS Soak the smoker chips in water for about 30 minutes before barbecuing. Drain well, pour into the smoker box and place in the barbecue. For an even smokier flavour, mix some dry chips among the damp ones — this makes the flavour even more intense.

WOOD PLANKS Our new wood planks made from cedar and alder wood give a delicate flavour and are ideal for use with fish and vegetable dishes. This method is also suitable for people who don’t usually enjoy smoked food — when heated, the planks give off a wonderful wood aroma that improves all kinds of barbecued food. The planks can be used more than once.

TIP 1. Place the wood planks in lukewarm water for at least 60 minutes. For even more flavour add some beer, wine, whiskey or rum to the water. 2. Place the food to be barbecued in the middle of the plank and directly above the heat source. Close the barbecue lid and cook/barbecue using reduced heat. 3. After use, allow the wood planks to cool completely and clean with water and a brush. Leave to dry completely.
