Typhoon Time! Summer has officially arrived! And, soon enough, we could be given a taste of Mother Nature’s immense power in the form of a typhoon. Even though the island is very well fortified (typhoons have been regular visitors to Okinawa throughout the years), take each and every one of these storms very seriously. During typhoon season, which runs through November 30, it’s imperative to maintain a typhoon preparedness kit. This kit should include at least a four-day supply of non-perishable food and ample potable water, sandbags to reinforce doors from the outside, duct tape, hammer and nails for quick emergency repairs (including tarps/heavy plastic sheets or heavy cardboard to cover broken windows), towels and a large supply of newspapers to soak up leaks. In addition, flashlights with extra batteries and candles with waterproof matches or a lighter, a portable radio with ample extra batteries are useful when the power goes out. Don’t forget plenty of food for pets, charcoal or propane grill (in case the contents of your freezer needs to be cooked in the event of the aforementioned power outage), medications and a first aid kit, and supplies for kids including diapers and formula for babies and a fully-charged portable battery charger for your older kid’s mobile device(s). They did, however, tell me that I should go to the Custom Shop on Camp Foster, which I did. I was not expecting much after my experience on Kadena; however, I was pleasantly surprised by being provided excellent support by Shin Akiba, and on a later visit, by both Shin and Katie Allman. My son has been taking swim lessons at the Foster Aquatic Center, and he was lucky enough to continue on with Ms. Larissa Muscianese. Under her care, he went from being afraid of getting into the water to not wanting to get out, and this has been an amazing experience to witness as a parent. Larissa is so patient and always ready to get in the pool with the kids. She is such a great teacher, and my son looks forward to lessons with her every day! We are sad to hear she will be working on a different camp due to her commute. And, in my opinion, he is one of the best jujitsu instructors on island by far. Elton is always on time and goes out of his way to help students learn and grow in their jujitsu journeys. He has improved the physical and mental readiness of Marines, Sailors and civilians on Camp Hansen. Featuring one of the most oft-photographed lighthouses on the island, Zampa Misaki’s rocky cliffs are usually populated with fishermen clinging to ledges. Zampa also features a gargantuan lion dog that dominates the small park in which it stands. The giant shīsā of Zampa Misaki is reputedly the largest specimen of its kind on the island. The shīsā faces Asia, guarding travelers as they leave Okinawa and, at the same time, welcoming those returning from long journeys.

O

kinawa, with its beautiful beaches and exotic world-class resorts, may seem light-years away from “familiar” pizza. For many new to the island, it is only enjoyed inside the gates at more recognizable joints like Pizza Hut, Shisa Pizza or maybe even Anthony’s. Much of this can be attributed to unfamiliarity about what’s available coupled with language barriers as well as whispered rumors of strange toppings such as mayonnaise, pineapples and…corn. However, “true” pizza does exist on Okinawa, prepared in places that use the same methods and equipment found on the east coast of the U.S. as well as establishments in the pie’s homeland—Italy. Following are a few of our favorites.

MARUMIYA CRAFTER

It’s not often that you enter a pizza joint and smell the aroma of fresh basil filling the air, but that’s the kind of experience they’ve created at Marumiya Crafter in Ginowan City. Let me tell you, it was terrific. From the hanging, wood-crafted chandelier to the chairs made from refurbished oil barrels, it was easy to see where the word “Crafter” in Marumiya Crafter originated. Not only is Mr. Yutaka Miyagi the owner and chef, he also uses his talents in crafting and metalwork to create original pieces decorating his restaurant. His specialty, of course, is pizza made fresh and totally from scratch. All pizzas at Marumiya commence with their homemade pizza dough fermented for 30 to 48 hours. It is then smoked in a 500°C oven for 50 seconds, which Miyagi-san made himself, exemplifying the intrinsic value of a carefully crafted crust. Miyagi-san conducted his own research on pizza and garnered a collection of Italian influences, which can be tasted in every slice. Miyagi-san introduced me to his two most popular pies from his American and local diners. The first is the Italian Sausage Bismarck, the premium limited pizza item on their menu with thin slices of round sausage and a locally sourced premium egg at the center of it all. The second is the Homemade Smoked Bacon Pizza, topped with homemade tomato sauce, smoked bacon, smoked mozzarella cheese, smoked salt, smoked pepper, basil and parmesan cheese. After one bite into these slices of culinary perfection, I was sold on smoked everything and now have a hankering for smoked salt in every meal. —RA

PIZZA STAND NY Walking into Pizza Stand NY, it’s clear that the place has style. From the white and black penny round floor tiles to the bright yellow neon signs, this quaint pizza shop nestled in Okinawa’s American Village screams, “New York.” It’s no wonder this pizza shop feels like a little slice of home, as owner of Pizza Stand NY, Mr. Daisuke Fukumoto, ventured to New York back in 2016 to learn the art of pizza making. And this inspired both the shop’s aesthetic and its delicious, thin-crust pizza pies. “At the time, not many places in Japan offered this type of pizza. That’s why I thought it would be great to bring New York-style pizza to our country,” he says. But for Fukumoto-san, it wasn’t just about establishing a niche. For him, pizza is a passion.

“I have fond memories of seeing New York-style pizza in the movies, like in Home Alone,” he said. “Although I didn’t grow up eating pizza like that, when I finally ate it for the first time, it felt nostalgic. That’s what I really love about this kind of pizza.” Pizza Stand NY sells whole pizzas, or you can stop in for a larger-than-yourface-sized slice. They offer all the classics like Cheese, Pepperoni—yes, even, Hawaiian—as well as fun flavors like Meat Jesus, Pulled Pork, and Hot Honey. But the one that’s sure to catch the eyes and captivate the taste buds is the White Pizza, which boasts a garlicky flavor with mozzarella and grana Padano cheeses, and healthy dollops of ricotta cheese. All these flavors and more (like Chicken Bacon Ranch and Buffalo Chicken) are only a few minutes’ drive from the gates of both Foster and Kadena Air Base, at Pizza Stand NY. —KS

HAPPY CRUISE

Pizza-making power couple Mr. and Mrs. Hideki and Noriko Horii established Happy Cruise in 2013 as a way to create something they’re most passionate about…delicious, authentic Napoli-style pizzas. Due to the pandemic, they embraced the challenge of running their pizzeria from a food truck, but there was still a lot of work to do—namely, constructing and installing the perfect wood-burning oven. But through a lot of trial and error, as well as some engineering experience, Hideki-san built an oven that recreated the tender, chewy crust and bubbly cheese combination they perfected for their restaurant. Authenticity starts with the dough, so they import Caputo, a brand-name flour that’s created at a flour mill in Naples. Noriko-san recommends eating the pizza as soon as it’s served, as Napoli-style pizzas are best enjoyed fresh out of the oven. The pizza that is the most popular with the locals is their Margherita Pizza, which features a simple tomato sauce, mozzarella, a sprinkling of Gouda cheese, fresh basil and a glug of imported olive oil. Each of the ingredients’ simplicity sings a perfect melody, harmonizing together in the pie. And the favorites among Americans are, of course, the Pepperoni and Hawaiian Pizzas. As the “does pineapple go on pizza?” debate rages on, Happy Cruise’s Hawaiian Pizza will have you voting yes; savory slabs of Japanese bacon are shingled across the dough, sprinkled with Gouda and mozzarella cheeses, and finished with chunks of sweet pineapple. That’s right—there’s no sauce on this pizza, and it really isn’t missed. The fresh pineapple provides the perfect amount of acidity and sweetness to cut through the saltiness of the cheese and bacon. If you want a more adventurous and Japanese-style pie, give their Mix Pizza a try which has a variety of ingredients like tomato sauce, Gouda and mozzarella cheeses, pepperoni, paprika, green peppers and corn. They also have a Honey & Bacon Pizza, which features the same cheeses, bacon and a drizzle of honey. —KK

Have you ever taken a moment to wonder what’s the name of the magic spell that keeps us craving pizza despite its humble ingredients and seemingly simple composition? Actually, magic takes a back seat to science in this case. For starters, the traditional components of pizza immediately capture the attention of the tongue with sublime balance—fattiness from the cheese, richness in meat toppings, and the sweetness of tomato sauce. However it’s two chemical reactions that really seal the deal—caramelization and the Maillard reaction—which both occur in fiery hot wood-burning pizza ovens. Caramelization is where the sugars in the food turn brown, creating a scrumptious complex food compound, and the Maillard reaction is the browning of high protein foods—think meat and cheese—when amino acids react with sugars. Next time you devour a slice from one of these pizza places on Okinawa, take a moment to appreciate the scientific elements that elicit excitement time and time again. Well, now that even science agrees that pizza is great, it’s time to go grab a slice!

TAIYO CAFÉ Have a slice or order a whole pie at Taiyo Café which is located next to the putting green at Taiyo Golf Club. They have all the go-to pizza classics including Pepperoni, Italian Sausage and a Combo, which you can enjoy after a round of golf or a stint on the driving range. If you fancy something a little more unconventional, try one of their show-stopping pizzas—the Farmer’s Market boasts pesto and cheese with fresh vegetables including zucchini, eggplant, peppers and onions; the BLT which combines all the fixings you’d find on the classic sandwich like mayo, cheese, lettuce and tomato. But a real sensational, culinary treat is the Taiyo Steak, a delectable pie topped with tender slices of NY strip steak, sautéed greens and a balsamic reduction. Bon appétit!

Far East Bodybuilding 2022 Beasts of the East Returns Since its inception, bodybuilding has always been about awe and admiration—and marveling at the perfectly crafted physiques of the elite athletes on stage. In the beginning, these demonstrations were regulated to carnival shows dubbed “muscle display performances.” During the late 19th century, early bodybuilders such as Eugen Sandow chiseled their frames to “The Grecian Ideal”—a “perfect physique” modeled after classical Greek and Roman sculptures. Sandow and his compatriots were the first to build their bodies to an aesthetic standard specifically to wow audiences. The tradition of awe, admiration and marveling at painstakingly crafted and maintained physiques continues as the Far East Bodybuilding Competition returns. The best bodybuilders and physique and figure competitors in the Pacific will once again compete at the fitness event of the year. Batter Up! Firecracker Pacific-Wide Softball Tournament It’s almost time for the softball tournament of all tournaments—the 2022 Pacific-wide Firecracker! Brush up on your evasive maneuvers, diving catches and lightning-fast flag grabs because the Camp Kinser Open Flag Football tournament is about to go down. Huddle your team and start strategizing now because kickoff is happening on Saturday and Sunday, June 25 and 26 at the Camp Kinser athletic field. Each team will be allowed 20 people on their roster plus a coach, as long as they aren’t playing (if the coach plans on playing, they count towards roster numbers). Players are required to wear shorts without pockets and keep shirts tucked in at all times (the only footwear not authorized is metal cleats). Teams must show up 30 minutes prior to their game start time. Eight players from the team will be allowed on the field at any given time, games will consist of two 20-minute halves and awards will be given to the 1st, 2nd and 3rd place teams. This tournament is open to all participants ages 16 and older. Those interested must register their team by June 20 at 1:30 p.m. via Eventbrite for $150. Aquathlons Dash, Splash, Dash Aquathlons—a multisport race that consists of the run and swim elements of a triathlon—provide twice the amount of aquatic fun without the maintenance and upkeep of a bike. By removing the bike leg of the race, there’s a decreased chance of road rash. And of course, it also eliminates the pesky bike-related inconveniences such as flat tires, broken chains and jammed gears (to name a few). See? No bike, less problems. In addition to being less incident prone, aquathlons require less equipment to participate—all that’s required is a tight-fitting swimsuit or singlet, goggles and a good pair of running shoes—which makes them a very affordable multisport race. If you would like to compete in this year’s series of FREE noncompetitive aquathlons, head over to the Foster Aquatic Center on

June 28, July 12 and July 26 from 4:30 to 5 p.m. to register on race day. Aquathletes will participate in two races each day. The first race will consist of a 390-meter run, a 100-meter swim and conclude with another 390-meter run. And race two builds up over the three dates to four laps around the softball field (2.88 km), a 200-meter swim and finishes with a final two laps around the softball field (1.44 km). Summer Reading Program Read Beyond the Beaten Path World-renowned author Stephen King once said, “Books are a uniquely portable magic.” And this year’s Summer Reading Program theme: Read Beyond the Beaten Path is perfectly in line with Mr. King’s thoughts on taking books everywhere and beyond. However, Read Beyond the Beaten Path is not necessarily about grabbing a flashlight, a copy of It and heading off to camp at one of Okinawa’s infamous haunted sites—readers can log their time spent reading anywhere (including in the comfort of their own home or the nearest library), earn badges and receive prizes throughout the summer. This program is intended for everyone and open to all ages; parents can help children log their time, if necessary. The Summer Reading Program starts on June 11 and goes until July 31, to create an account (unless you already have one) and to start recording your time, head to okinawabutler.beanstack. org. Beanstack even has an app that includes a timing feature, turn it on to start recording time then turn it off when finished and it will automatically add the time to your reading log. What reading material counts? Pretty much anything, so you don’t have to be a so-called bookworm to read your way to

incredible prizes. Rack up time by reading magazines, newspapers, school and work documents as well as e-books on handheld devices. Additionally, record any time spent listening to audio books. This year there will be exciting "reading checkpoint parties" held at MCCS Libraries in line with the theme. On June 13, from 4 to 6:30 p.m., you can snack on s’mores, tell ghost stories, sing your heart out and more at Campfire Karaoke Night at the Schwab Library. Coach Recruitment MCCS Youth Sports With the youth baseball and softball seasons right around the corner, MCCS Semper Fit Youth Sports is looking for volunteer head and assistant coaches to lead teams and mentor children ages 5 to 18. Volunteer coaching is a great way to engage with the community, be a positive role model for children and teenagers, share your experience and knowledge of a sport and even get some exercise, as demonstrating how to steal second base and field fly balls for an hour or two can certainly get the blood pumping. Bursting With Fun Foster Festival Wear a patriotic outfit and come celebrate Uncle Sam’s birthday at Camp Foster Festival! This two-day entertainment extravaganza complete with a fireworks display and bursting with family fun, carnival rides and a plethora of food options takes place on Saturday, July 2, and Sunday, July 3, from 1 to 9 p.m. both days. Festivalgoers can feast on savory, smoked meats including BBQ pork shoulder and brisket from Hickory House, freshly grilled American-style burgers from Bulldogs Burgers, cheesy pizzas as well as Miami-style inspired grub from 305 Latin Bistro. In addition, MCCS’ new food trucks La Cocina and Chef Shack will be on site, serving simplemente delicious authentic street tacos and burritos and succulent sandwiches, respectively. Firstly, this review isn’t about a turkey pizza special—as November is still a ways away. It’s all about an afternoon of delights at the Foster Bowling Center “gobbling” down delicious pizza and bowling turkeys (as in three strikes in a row)! Bowling is the greatest indoor pastime for many reasons. It’s the solution to rainy days, a great way to beat the heat, and the perfect cure for a boring afternoon when there’s simply not much to do. Even better, there’s no equipment required—unless you happen to be a hardcore bowler with your own ball, shoes and killer neon-orange shirt. If not, never fear, MCCS Bowling Centers have everything you need, so all you have to do is show up and have a blast with some fun, healthy competition where no one sits out, and everyone can be a part of the excitement. If this kind of fun sounds like it’s “right up your alley,” just think about how much better this equation would be with the addition of one of the greatest foodstuffs known to humankind—namely pizza—added to the mix? For many, there aren’t many truly viscerally enjoyable experiences that can beat biting into a sizzling-hot slice of pizza overflowing with melted and caramelized mozzarella, rich tomato sauce along with everything else that makes a good pizza good—be it the more traditional pepperoni, Italian sausage and mushrooms toppings to more exotic fare like BBQ chicken, ham, diced pineapples and more. Hungry like a t-rex? Youth Swim Team Tryouts From Guppy to Dolphin So your little swimmer has graduated from being a guppy by swimming circles around the other kids at Summer Swim League. Well, maybe it’s time for them to hop in the water with the big fish—the Okinawa Dolphins Swim Team (ODST), that is. ODST tryouts only take approximately five to ten minutes and are based upon the exit skills assessment for Level 5 American Red Cross Swimming Lessons. Swim one is a 50m free-style (front crawl), and swim two consists of a 25m backstroke (back crawl) followed by a 25m breaststroke. Each swim must meet competitive stroke rules, be a nonstop effort and performed without parental interaction. In addition to skill, swimmers must demonstrate maturity. Summer Swim League Swim Camp The best way to help kids gain confidence and improve swimming proficiency in the water is through swim classes. Help your kid become more comfortable and safer in an aquatic environment at Summer League Swim Camp—a program consisting of four 2-hour classes, ending in a practice swim meet. Practices will introduce four main competitive swimming strokes as well as cover basic starts and turns. The next classes take place Monday through Friday,

June 13–17 and are held at Camps Kinser, Foster and McTureous Aquatic Centers from 8 to 10 a.m. One note: swimmers must be at least 7 years old on the first day of camp and capable of passing the official MCCS Swim Test. Foster Trikids Three Times the Fun Triathlons contain three sports, which means three times the athletic fun! While this is great, why should the adults have all the fun? Why not shrink it down and make them kid-oriented? Well we have! On June 11, head out to the Camp Foster Aquatics Center for the Trikids, MiniKids & Women’s Only Triathlon. MiniKids (ages 9 and younger) will swim 25m, bike approximately 250m and run approximately 100m. TriKids (ages 7–14) and Women’s Only participants (ages 13 and older) will swim 200m, bike approximately 5k and finish by running approximately 1k. For MiniKids, parents may assist but not propel a triathlete past another; for TriKids, parental assistance is prohibited, but once the race starts, cheering is highly encouraged. Besides being a fun-focused, non-competitive event, it’s FREE. Register via Eventbrite by June 8 (11:30 p.m.). While there won’t be awards and prizes, participants can receive a frozen treat in the form of ice cream provided by Foremost Blue Seal. DIY Cutting Board at Courtney Arts and Crafts Spice up your backyard BBQ by presenting those dry-rubbed ribs and smoked brisket on something Pinterest-worthy, something you crafted with your own two hands: a DIY multi-colored cutting board. First, gather the necessary materials—the amount of wood required is dependent on your cutting board’s size. Cherry, walnut, maple or padauk are all great wood options and available at Courtney Arts and Crafts for purchase. In addition, you’ll need waterproof wood glue and a food-safe finishing oil (for example, mineral or butcher block oil). For construction, you’ll need a table saw, jointer, planer, router, clamps, a palm sander and brushes. Don’t have all the necessary equipment? No worries! Once the size and type(s) of wood are determined, you’ll use the jointer to ensure the wood has straight edges (if necessary). Next, place the project face down on the planer and use the push sticks to

run the wood through the planer. Repeat this process on every piece of wood; this will ensure that all of the pieces of wood are the same thickness and the cutting board will be even across the top. Once your planks are even and have straight edges, cut them into one inch strips in accordance with the size of your project. Arrange the strips next to each other, based on your preference (alternate colors for an eye-catching design). With the layout decided on, use a brush to evenly spread a small amount of glue along the length of the strips. Use clamps to secure the strips together, and allow the project to dry overnight. After everything is dry, run the board through the planer once more to remove any excess dried glue; use the palm sander to ensure a smooth finish. Check to make sure your cutting board is even and flat on both sides. Optionally, you can round the edges of the cutting board using the router for an even more polished product. Apply your food-safe finish and admire your work! (It may require two coats). Create Your Keepsakes Kimekomi Doll Making Classes Although dolls are frequently cited as the world’s oldest known toys, in Japan, they’re more popular as display items, keepsakes and gifts. There are many varieties of decorative dolls available throughout Japan and they make great souvenirs, but before choosing your perfect Japanese doll, did you consider making one yourself? Don’t know where to start? Head over to the Arts and Crafts Center on Camp Courtney to learn how to make Kimekomi dolls. Kimekomi is a 300+ year old Japanese dollmaking method that began in Kyoto during the Edo period. Today, most kimekomi dolls are made from pre-molded wood or ceramic and are decorated with beautiful fabrics making them perfect gifts and souvenirs of your time in Japan. At Kimekomi Doll Making classes, students’ first figurine comes with the option of red or black kimono cloth. After learning this traditional craft, students can continue on with classes and choose from many different kimekomi dolls. Some can even be decked out for different holidays such as Halloween or New Year’s, while others are modeled after animals. Classes are held on Sundays and are open to SOFA ID card holders island wide, ages 18 and older. To register, please sign up in-person at least one week in advance. The cost is $60 for four

iving or snorkeling in the waters surrounding this beautiful island are two of Okinawa’s most popular pastimes—especially during the warm summer months. Both activities are fun and rewarding for all ages, enabling participants to discover a wonderful new world together. The main island of Okinawa features many points catering to many different skill levels of both divers and snorkelers—with Sunabe Seawall, Maeda Point and Mermaid’s Grotto the most popular. At these three venues, you can spy sea life in multitudes, including eagle rays, clownfish and anemones, turtles, reef sharks and more. However, after alternating between Maeda, Mermaid’s Grotto and the seawall every weekend for 6 months, these points—while still picturesque—can become a bit overfamiliar… to the point of practically knowing every fish by their first name. Maybe it’s time for a change of underwater scenery…preferably somewhere exotic! Well, have you ever been to the Kerama Islands? No? Well, you’re in for the treat of a lifetime!


While the Kerama Islands are now a popular destination, this was not always the case. For many mainland Japanese, their hearts were initially stolen by an adorable movie called Marilynni-Aitai. A love story, Marilyn-ni-Aitai didn’t star people; the protagonists Shiro and Marilyn were dogs. Based on a true story, Shiro’s family moved from Zamami Island to Aka Island, but he swam the distance to see Marilyn regularly. Today, a statue of her stands on a seaside road on Zamami, and a statue of Shiro stands at the port on Aka Island.

The Kerama Islands, which are located a scant 32 kilometers southwest of Okinawa’s capital city, may be close physically, but they are light-years away from Naha’s hustle, bustle, modern convenience and 21st century instant gratification. Made up of 22 isles and islets, only four of which are inhabited, the Keramas were the first stopping point for U.S. forces preceding the Battle of Okinawa in WWII and it was also the site of many of the atrocities that war brings. However, like the Okinawan mainland, the Kerama Islands once again found peace and beauty, and today it is known as a nearby paradise offering the healing solace of nature, silence and simpler pleasures such as a cooling dip in emerald green waters on a summer day.

The Kerama Islands are designated as a Japanese National Park. And the waters there are so blue that a phrase—Kerama Blue—was coined to describe it.

Zamami Island

Zamami is the second largest inhabited island in the small chain with a “whopping” population of approximately 600 permanent residents spread between the main village of Zamami and the smaller surrounding hamlets. Although there is an elementary and middle school, kids attend high school in Naha City. Zamami, like its other inhabited brethren Tokashiki, Aka and Geruma, is famous for its beautiful beaches and surrounding seas teeming with life. Unlike the rest of the islands, Zamami does offer some relatively modern conveniences—including a hotel with most of the expected amenities. Two of Zamami’s most well-known beaches are Furuzamami and Ama. Furuzamami offers both a sandy area for frolicking/sunbathing as well as ample coral for snorkelers to explore. The beach also has restaurants and gear rentals. Ama Beach doesn’t have as much coral, but is the site of the island’s lone camping area (with showers and restrooms) with a lifeguard watching over swimmers during the summer months. Ama is also a good place to see sea turtles—especially in the mornings and evenings. Other than Furuzamami and Ama there are more than 20 other beaches surrounding the island. To see some of these beaches from above, Takatsukiyama Observatory (located on the highest point of Zamami) is the perfect reward for a few minutes of agony. On a clear day, visitors can even see Naha on the horizon. Inazaki Observatory offers views (again, on a clear day) of Aguni, Tonaki and Kume Islands as well as whales when they are around in the winter months.

Tokashiki Island Tokashiki Island, located closest to Naha, is the largest and most populous (albeit 700 residents cannot be considered large) isle in the Keramas. Rugged and mountainous, the highest point of Tokashiki rises 200 meters above sea level. Two of Tokashiki’s best known beaches are Aharen and Tokashiku Beaches. The area around Aharen Beach is well-populated with dive shops and equipment rentals. A small uninhabited islet at the entrance to the bay, which can be visited via banana boat or small ferry, offers stunning underwater scenery with pristine white sand and coral heads teeming with sea life including eagle rays, octopi and more. Tokashiku, located a few kilometers north of Aharen, is a bit more remote and serves as nesting grounds for sea turtles. The National Okinawa Youth Friendship Center operates a Marine Resources Training Center at Tokashiku Beach.

Aka and Geruma Islands Aka, Geruma (and the uninhabited Fukaji) Islands are connected to each other by bridges and are the most remote and least populated of the Kerama Islands—making it a better place for more advanced snorkelers. A scant ten-minute speedboat trip from Zamami (much longer if you are a dog) these islets still have a post office, a clinic, a few machiya-gwa (small stores) and a school located in one of the most picturesque locations in the prefecture. Aka Island’s permanent population hovers around 300 and Geruma's in the mid-60s. Ironically, Fukaji may not have permanent residents, but cross the bridge and climb the large (and back-breaking if you are on a rented bicycle) hill and you will find the Kerama Island’s only airport—only open to chartered flights. Aka and Geruma’s main offerings are—surprise—beautiful beaches and breathtaking (literally) observatories high atop hills offering spectacular panoramas. Nishibama Beach, located on the north shore of Aka Island is one of the most well-known. Snorkeling and beach amenities are available for rent at Nishibama. Also, for landscape photographers, a wooden stairway leading upwards to an observatory overlooking the beautiful tableau is located at the base of a hill towering above the beach. Other notable beaches include Maihama (next to Aka Village proper). Hizushi Beach, Kushibaru and Aka Beach just north of the port. The three populated islands are accessible via both express and regular ferries out of Tomari Port.

Oyako-Don (Chicken and Egg Rice Bowl) *Oyako means “parent and child” Serves four Ingredients 7.5 oz chicken (preferably dark meat) cut into bite-sized cubes 1 onion sliced into thin strips 4 eggs, beaten 1 mitsuba (Japanese parsley) or watercress leaf per bowl Sauce 2 cups of dashi (made from bonito flakes) 5 tbsp. sugar 10 tbsp. soy sauce 5 tbsp. mirin (sweet Japanese cooking wine) Method of Preparation 1. Bring all sauce ingredients to a rolling boil in a saucepan. 2. Add chicken and sliced onions and heat for 2–3 minutes. 3. Lower heat and add eggs while stirring slowly. 4. Add mitsuba (or watercress) leaves, turn off heat, and cover until eggs have solidified to desired consistency. 5. Divide rice into deep bowls (one per person) and cover the rice with chicken and egg mixture. 6. Serve.

Irei no Hi The war on Okinawa came to an end on June 23, 1945—a day which is commemorated in the prefecture as a public holiday known as Irei no Hi, or Memorial Day. Irei no Hi honors all who died during the Battle of Okinawa as well as in other areas of the Pacific during WWII. The Battle of Okinawa is remembered as one of the bloodiest, most destructive Pacific battles of WWII. More than 29,000 Marines and Sailors were killed, missing or wounded. U.S. Army casualties totaled close to 40,000. And, Japanese losses were enormous, with more than 110,000 killed and at least 20,000 sealed in caves. Irei no Hi is a time for people to pray for the spirits and souls of those who died. Thousands of people flock each year to memorial services at various war sites such as the Himeyuri Monument, where hundreds of high school girls and teachers died while serving in the Japanese Army Himeyuri Nursing Corps. One of the most visited places during Irei no Hi is Peace Memorial Park in Chinen Village. Comprised of monuments such as the Cornerstone of Peace (rows of expansive marble walls inscribed with the names of those who lost their lives during the war) and the Okinawa Prefectural Peace Memorial Museum, Peace Memorial Park is a solemn tribute to the war victims and a somber reminder of the tragedy of war. To get to Peace Memorial Park, head south on Hwy 58 toward Naha Airport. South of the airport, 58 is called Route 331. Stay on Route 331 through Itoman City and follow the signs to Peace Prayer Memorial. 
