Set your alarm clocks and get ready for an early morning at Stonehenge. The Summer Solstice is upon us again – has it really been nearly a year since the last one? THe sCienCe biT...

WHy sTOneHenge?

The Summer Solstice occurs at the moment the axial tilt of the earth’s semi-axis in a given hemisphere is most inclined towards the star that it orbits-in our case, the Sun.

Stonehenge is special. its perhaps the most sacred space in the country and amongst the most sacred and spiritual in the world. according to some archaeologists, it was built nearly 5000 years ago – so those old stones have seen and heard a few things. pagans and paganism, the ancient and original religion of these islands gather at Stonehenge to see the sun rise, aligned on that morning with the Heel Stone and Slaughter Stone (yes, that’s exactly what it was used for). Think of it as a giant cosmic computer-built with frighteningly accurate precision.

Meaning? all we really need to think about is that it’s the day in the year when we have the longest period of daylight!

WHen is iT? Well, if you’re aiming to see the sun rise at Stonehenge (the place to be on such a day) then its on Th ursday June 21st with sunrise at 4.52am.

For many it marks the marriage of the God and Goddess of the earth, their union creating the natural force that ultimately creates the fruits of harvest. it is a time to celebrate growth and life, but, as well as that, also a time of reflection, for, after this day, the hours of daylight inexorably fall away, day by day, thus there is also acknowledgement, even now, that the sun has began its slow decline towards Winter.

PoPulatIon! grOWing pains Counting upwards from the dawn of time to the 19th Century, the human race maxed out at a population of around 1 billion people. it’s only taken us the last 200 years to add another 6.2 billion to that number. at the current growth rate population would double every 40 years reaching an eye bulging 24 billion in 80 years time! even more crowded than a Where’s Wally picture.

seriOusly dense Singapore takes the gold when it comes to population density. With only 5.4 million residents it doesn’t sound like it would be more crowded than the UK, which is home to 63 million. However, you can fit Singapore into the UK an astonishing 344 times over, and that

would be the equivalent of 1.8 billion people living on the British isles. Just imagine the supermarket queues!

pOpulaTiOn deCiMaTiOn at no point in human history has there been a more catastrophic population implosion than the one caused by the Bubonic plague, or by its more informative name, the Black death. it did exactly what it says on the tin, a grizzly way to go for sure. during its peak in 1350, it had wiped out as many as 200 million people, that was almost half of the worlds population at the time.

aniMal Madness We share the planet with plenty of weird and wonderful creatures, there are actually 8.7 million different species of animal. The

number of individual animals is impossible to tell, but it’s probably in the gazillions! it’s estimated that there are at least fi fteen mice to every one person on the planet, you might want to tuck your trousers into your socks from now on.

say WHaT? The most commonly spoken language in the world is Mandarin Chinese, which is hardly surprising when you think that China has a population of 1.8 billion. Second on the list is Spanish, followed by english in third. a lot of Spanish speakers can speak english as a second tongue, a lot of english speakers just point at what they want and say it a little louder! No it doesn’t mean you’re a failure or that everyone there will look down on you. and yes, they can help – they have a great database of and job opportunities and, more often than not, a lot of companies will prefer to register their vacancies with a Job Centre rather than an agency. Why? lots of good candidates and no commission to pay. You will also be able to claim Job Seekers allowance (oK, it’s only about £60 a week, but would you rather that or nothing at all?) – and they’ll pay your National insurance stamp for you for as long as you’re registered with them.

FlexibiliTy How about considering a career shift? Utilise all that experience and expertise that you already have together with some new skills or even vocational qualifications. one professional agency claims that a lot of their clients ended up finding new roles with, in some cases, a higher salary than the one they’d had previously. Remember, this is about you, your life and your career – so take control and explore all your options.

dOn’T Hurry There’s no immediate need to flood the market with your Cv, nor visiting/ registering with all the agencies that will see you. Take your time. and avoid the all too easy temptation to apply for jobs that you can do: look to apply for those that you actually want – apart from anything else, that desire will stand out at interview and mark you above those who are there because it’s one they can simply ‘do’.

updaTe yOur Cv a priority. Make sure it highlights your accomplishments – potential employers want to see actual evidence that you are an achiever and will be able to do just that with their business. achievements, successes, targets achieved, initiatives developed and introduced, accomplishment. Make sure it demands attention-remember, it’s the conduit that is going to get you an interview.

neTWOrk neTWOrk neTWOrk i know, it’s one of those sickening ‘buzz’ word now and completely over-used. and yes, over-used it might be, but it’s also a skill that is tragically underused and undervalued. Most people that talk about it have, to be honest, no idea of what it means or how to do it. Make yourself the exception. if the thought of networking makes you feel awkward or you don’t feel you need to do so: get over yourself! When you’re talking to both old and new contacts, make it clear you respect their opinions and knowledge – and remember, the joy of networking might not be that they can help, but that they might know someone who knows of someone else who has a friend who is looking for someone just like you. You’d have no way of knowing that if you didn’t get out there and start talking about yourself. So do it!

Redundancy really could be the best thing that ever happened to you: it’s just a matter of attitude. Make yours a positive one.

We’ve all thought about it, some of us have experienced it, others continue to plan it. No longer just the pursuit of school leavers leaving for their obligatory ‘year out’, taking a gap year later on in life has become much more common. Why do it? You may ask. Well, a gap year can offer a variety of advantages. it could be a way of reconnecting with yourself, to take stock of what’s important in your life or simply to offer a once in a lifetime experience. Here we offer some short tips and advice on how to make those dreams a reality, to say goodbye to the mundanity and throw yourself into a world of the unknown... written by TOM WalTers

Three months to dart through the well-trodden spine of South-east asia, taking in the delights of angkor Wat or the insanity of Thailand’s beach parties. or maybe a year traversing through South america, discovering lost tribes, steaming rainforests and vast cities. Travelling is in one breath life changing and completely terrifying but the experiences and memories gained can last a lifetime. Get past the time spent away from family or, if travelling solo, the initial pangs of loneliness and you could be well set to have the time of your life. it takes a huge amount of sacrifice to save the money to make it attainable, but the amount will naturally depend on what you want from your adventure.

vOlunTeering if travelling all seems a bit self-indulgent and not enough about adding something to the world, then you may consider volunteering as the perfect alternative. From teaching english in Cambodia, helping distribute medical supplies in Guatemala or working in an orphanage in Ghana, there are a staggering number of opportunities out there. of course volunteering doesn’t necessarily mean leaving the UK, but if you are looking for the chance to push your boundaries then volunteering abroad could be the thing you need to re-evaluate your life.

a gap year, for all of its potential to offer experiences and fulfi l lifelong ambitions, may also be the time you need to take a career break. a fractured economy and lack of prospects may lead you to think otherwise, but in some respects there has never been a better time to take the plunge. Further education courses are plentiful and relatively cheap and cover an abundance of subjects. although fi nancially the prospect of changing career may seem daunting, the benefi ts both personally and also to your career could be huge. bag yOurselF a bag The fi rst golden rule is to buy the right backpack. it will be glued to your back for the duration of your trip, therefore, it needs to be comfortable. Backpacks are measured in litres and designed for different seasons. Get advice from an outdoor specialist. a day bag is also an essential item to purchase. again these come in different sizes and materials. Some backpacks come with an attached day bag.

MOney bag They may not look attractive, but they allow you to keep your money and personal belongings strapped to you at all times. They’re designed to be hidden underneath clothes, away from prying eyes!

TOileTries Shampoos, moisturisers, cleansers and body lotions. The world is a big, wonderful and weird place, there are thousands of locations that embody the bizarre and the ambiguous. Mayhem! looks at the strangest places you’ve probably never heard of, and will definitely want to visit. THOr’s Well Cape peRpeTUa (USa) Sat intimidatingly on the oregon coast is the infamous Thor’s Well. it’s been described as a ‘gaping sinkhole’ that appears bottomless

despite the constant, unbroken stream of water that falls into it. it’s understood that it’s most likely only twenty feet deep and is an amazing sight to behold. despite the risk it poses to visiting tourists

and locals (survival is highly unlikely should anyone get swept into the oceanic turbulence), it’s extremely popular among photographers who flock there to capture it’s unique beauty.

CaT island TaSHiRoJiMa (JapaN) it’s as fascinating as it sounds, and trust me, you’ll want to go there unless you’re seriously allergic to feline’s. The island of Tashirojima during the edo period (1603–1868) was used for the breeding and raising of silk-worms which produced textiles. Mice are natural predators of silk worms, but cats are natural predators of mice, resulting in a surge of kitties that roamed the island keeping the mouse population at bay. overtime, the unneutered cat population flourished, eventually outweighing the human population. Th is doesn’t pose too much of a problem however, since locals believe cats bring good fortune and the infl ux of tourists means the island is doing great fi nancially.

Fly geyser Nevada, (USa) adjacent to the Black Rock desert, the stunningly man made Fly Geyser sits on the edge of private land as a result of an energy company in 1964 drilling way down into geothermal waters. Today, it’s a scalding hot fountain that grows a little higher every year due to mineral build-up, its unusual green and red hues are a result of Thermophilic algae. Unfortunately, the owner of the land has prevented trespassers from getting too close with a locked gate, but it’s large enough to be seen from a dirt track nearby.

sedleC Ossuary KUTNa HoRa (CzeCH RepUBliC) if you’re a horror fan, then this one is definitely for you. Not only is the place itself the epitome of spookiness, but the backstory is pretty incredible too. The Sedlec ossuary is a small Roman Catholic church comprised majorly of human bones. in the 13th century, the abbot at the time returned from his travels to palestine with holy soil which he sprinkled sporadically onto the graveyard surrounding the area. as a result, it became a highly sought after place to be buried amongst aristocracy of Central europe. eventually, the space could not accommodate the number of burials, thus the bones of 40,000 people were exhumed and stored in the chapel. The site attracts many tourists, in particular its enormous chandelier which allegedly contains at least one of every type of bone in the human body.

Fingal’s Cave Scotland (UK) now for somewhere a little closer to home. at 72 feet tall and 270 feet deep, Fingal’s sea cave is so visually astounding that it’s become a legend amongst the Irish and Scottish celts, who call it ‘The cave of Melody.’ The tale goes that the Irish giant ‘Fionn mac cumhaill’ built a bridge from Fingal’s cave to the Giant’s causeway in Scotland in order to fight his equally enormous rival, Benandonner. The cave is made up of the hexagonal columns of basalt, that make up its interior walls. You can visit the cave by taking a cruise which travels past it, but the best way is by hiking right into it so you can get a closer look at its stunning walls.

Fruity or zesty. dry or sweet. They may all look the same colour and are all a mouthful to pronounce but the right White can make all the difference to your meal.

often associated as more rich and heavy than white wine. The main rule for this one is the richer the meat the richer the red. For instance, a big bit of steak or a real meaty Spag Bol or chilli would go perfectly with something equally as indulgent. Shiraz or zinfandel would be the best choice. You may also want to splash a bit in with your mince while cooking too.

Sherry isn’t just for Grandma. Not the most obvious choice for food unless of course it’s in a trifle. a fruity sherry is great with sweet things. Try poured over ice cream or with soft cheese. or fancy something different? Try a light, dry sherry with shellfish or light nibbles or tapas when ordering at a restaurant.

a rich white wine such as Chardonnay for instance, goes well with also rich food. it’s the perfect partner for your cheese and cracker munchies as it’s great with fats and carbs. The same rules go for the bubbly wines too. Which is why we love prosecco or Champagne (when we can) so much with something equally as cheeky such as pizza, a cheesy pasta and of course chocolate! But if you’re looking for something lighter then opt for a dry, pinot Grigio or Sauvignon Blanc. These two types of wine are perfect with white meat or a Sunday roast as it doesn’t over power all the vegetables.

We all know who’ll end up hogging the tongs this summer! it’s time to start thinking about the delicate subject of the barbecues, so for the perfect steak, fellas, listen up! FirsT THings FirsT

it’s the question of gas or charcoal? For big events gas is the best option. Th is allows you to cook all day and keep food flowing with no time wasted waiting for coals to heat up. For old traditionalists however nothing beats charcoal. The smoke produced adds unbeatable fl avour to food. Try adding a few sprigs of fresh thyme, rosemary or even fruit wood chips on the coals for added ‘cheff y’ kudos.

a hot BBQ should produce a medium-rare steak in just two minutes each side (depending on thickness). if you’re unsure about chicken and bangers you can cheat by starting them off in the oven. decent quality meat is important as cheap cuts and economy products contain loads of fat and risk turning your BBQ into an inferno. Making your own basic burgers out of lean mince and onion is a doddle and you can add whatever seasonings you fancy – try coriander, ginger and chilli.

perFeCTly COOked Th is can take some mastering but simply put, don’t overcook beef or lamb and make sure poultry and burgers are cooked through. an internal temperature of at least 75 degrees is recommended, so a meat probe is a wise investment. Be sure to keep cooked and raw meat apart too.

Marinades Marinades are a must to avoid boring, bland food as well as keeping everything moist and tender. a homemade sauce will score added brownie points but if in doubt or short on time olive oil, lemon and salt is an easy and winning combination.

Be sure to take meat out of the fridge around an hour before cooking or the result will be the dreaded ‘raw and pink inside, cremated and black on the outside’ effect. Spice is the variety of life, and since times long-past, spices have been used worldwide to intensify the taste of dishes, taking them from bland and boring to intense and exotic.

CHinese Five-spiCe

ginger

With subtlety and depth, Chinese and asian dishes regularly use spices to enhance the fl avour and give that real, authentic taste. Take for instance Chinese Five Spice, a combination of Szechuan peppercorns, cinnamon, fennel seeds, star anise and cloves. its combination of fl avours brings extra life to dishes like Five Spice Sticky pork Belly, especially when the meat is left to marinade in the spice overnight.

in either it’s powdered or natural form, ginger is a common spice used in asian, Thai and indian dishes. With the same history as turmeric, research also suggests that ginger can be used as an anti-nausea remedy, even if taken as herbal tea. With its strong and memorable fl avour, ginger can be used in a variety of dishes, from a lemon and ginger drizzle cake to Thai prawn, ginger and spring onion stir fry.

Ranging from the north to the south, curry dishes have the connotations of heat and after-burn. However, the range of spices used in authentic curry dishes can often surprise you. Take for example turmeric, with its warm, peppery yet slightly bitter aftertaste has been used for thousands of years. Traditional uses include to aid digestion, detox and strengthen the liver, and as an anti-infl ammatory agent.

Th is is easily one of the most memorable spices, but not purely for its delicate taste. Saff ron itself is made from the stigma of a blue crocus flower. To make 1g of this spice, it takes anywhere from 200–500 of the stigma, so saff ron cultivation is a timeconsuming yet lucrative business to be in. Saff ron can be used in recipes such as paellas and many other sea-food dishes or sauces.

even for the most novice cook, there is a spice to match most dishes. all it takes is a little research, a taste for the unknown, and sure enough you’ll soon be bringing the exotic tastes of far-away lands, right to your dinner table.

one of the greatest things about summer is the weather for barbecuing, complete with your friends, lots of beer and, of course, meat. But have you ever asked yourself – is it the same all over the world? Fire up the coals and put the drinks on ice, because Mayhem! is taking you on a world barbecue tour. written by JuTTa lasner asia

our first stop is Japan, the land of the rising sun and… squid. Yep, that’s what the Japanese serve up accompanied by lots of other seafood and vegetables. Yakitori, the Japanese version of a shish kebab, will also be served along with rice and soy sauce. The Chinese marinate their meat in honey prior to it being cooked by means of a long, hand held fork over a fire.

on the other side of the world we stop in Mexico for a barbacoa. lamb and is traditionally cooked over a hole in the ground. Served with warm tortillas, guacomole and salsa. Cool down with raspberry peach aqua fresca. in the US a barbecue is usually referred to as a “grilling”. in latin america the meat is roasted over a longer period of time and further away from the coals.

Stick another shrimp on the barbie! Traditions down-under include prawns and aioli, chops and beef drizzled with beer with mint pea potato salad.

Scandinavians prefer venison on their barbecues with Juniper flavoured sauces, where-as healthy Mediterranean types marinate their meat with olive oil, citrus or herbal sauces.

argenTina There’s no free for all at argentinean barbecues where the meats are cooked and served in a very set and specific order. Barbecues are called asados and the national dish, embutidos, are various kinds of sausages served along marraqueta (bread), followed by meats such as flank steaks, chicken and chivito (the meat of a young goat), a simple mixed salad, all washed down with beer, wine and soda.

sOuTH aFriCa The Cape of Good Hope is the last stop on this culinary journey. The South african ‘Braais’ includes lamb or mutton sosaties, kebabs, marinated chicken, steaks and sausages as well as pap, a thickened porridge made from finely ground corn. Braais are sometimes called ‘dop en tjop’; a ‘dop’ is slang for an alcoholic drink while ‘tjop’ is an afrikaans word for lamp chop.

But we often underestimate the impact that our daily commute can have on us, and feel powerless to break the cycle. according to a recent study one in seven commuters are now spending two hours or more each day travelling to and from work. Taking the bus or coach to work on a journey lasting more than 30 minutes was found to be the most negative commuting option. even your sleep may be affected, with additional studies suggesting those who commute for more than 45 minutes each way report reduced sleep quality compared to those who commute shorter distances.
