Comforts of Home Chicken and Dumplings

Mac aroni Sauté

Marjie’s Kitchen

Joan’s Kitchen

Ingredients

Ingredients

3 c. cooked chicken 6-8 c. chicken broth 2 c. flour 2 tbsp. butter

1/2 tsp. baking powder salt to taste (I just shake some in) 1 cup of milk, maybe a bit less

4 tbsp. fat or salad oil 1-1/2 c. elbow macaroni 6 tbsp. minced onions 6 tbsp. minced green peppers

2 c. tomato juice 3/4 tsp. salt 1/8 tsp. pepper (optional) 3 tbsp. and 1 tsp. Worcestershire

Directions

Directions

• In a bowl, combine the flour, baking powder and salt. Cut the butter into the dry ingredients with a fork or pastry blender. Stir in the milk, mixing with a fork until the dough forms a ball. • Roll dough out on a floured surface. Cut dumplings into squares using a pizza cutter. Be sure to keep dough floured to keep dough from sticking until ready to cook. • Bring chicken broth to a boil. Drop the dumplings in one at a time, stirring while you add them. The extra flour on them will help thicken the broth. Cook them for about 15-20 minutes or until they not doughy tasting. Add the cooked chicken to the pot. Serve with cooked or steamed vegetables, and warm bread. Enjoy!

In hot fat in a skillet, sauté uncooked macaroni, onions, peppers about 10 minutes or until macaroni turns yellow. Stir in tomato juice, salt, pepper and Worcestershire, bringing to a boil over high heat. Turn heat low and cook covered without stirring 20 minutes. Variations: In a separate skillet, brown ground beef or turkey in a small amount of oil. When macaroni is done, stir in cooked meat. Top with Grated Parmesan cheese, fresh parsley, shredded cheese.

te Hot Chocola

Ingredients

Directions

2 tbsp. EV Olive Oil 1 large onion, diced 2 cloves garlic, smashed 2 - 28 oz. jars Marinara sauce 1- 16 oz. box lasagna noodles 4 c. ricotta cheese 2 tbsp. grated pecorino ch. 1/2 c. grated parmesan ch. 3/4 lb. mozzarella ch. shredded (about 3c.), 2 large eggs Salt to taste Handful fresh chopped spinach

Add other special seasonings you like. Make the lasagna: Preheat the oven to 375. Bring a large pot of salted water to a boil. Add the lasagna noodles and cook until soft. Fill a bowl with salted ice water. Remove the pasta from the boiling water and transfer to the ice water to stop the cooking. Mix the ricotta,1/4 c. parmesan, 1-1/2 c. mozzarella, eggs, spinach and 2 tsp. salt in a bowl. Drain the pasta and place on a clean towel in a single layer. Coat the bottom of a 9-by-13-inch baking dish with two ladles of sauce. Spread 3 tbsp. of the cheese filling down the center of each lasagna sheet; roll up the sheet (but not too tightly or the filling might ooze out). Place seam-side down in the baking dish, leaving a little room between each roll. Cover with 3 to 4 c. sauce and sprinkle with the remaining 1/4 c. parmesan and 1-1/2 c. mozzarella.
