FOR ME, FALL BRINGS TO MIND CARAMEL APPLES, PUMPKIN PIE (AND EVERYTHING PUMPKIN), PIPING HOT CHILI, HOT DOGS ON THE FIRE, HOT CHOCOLATE AND MY FAVORITE WINERIES. I mean, there are pretty colored leaves, the cool crisp air, but why do I think only of fall food? I guess because I’ve been working on this Food and Wine issue since August! In the process, I’ve discovered an O’Fallon gem—Clayton’s Restaurant. The gourmet chef prepares the most delicious meals, and the cocktails are great, too! Check it out on page 28. We’ll soon have an opportunity to enjoy a brand-new place for great food, coffee, drinks and a true sense of community. It’s called Whiskey Run Coffee, located on Highway N in Cottleville. As you’ll read on page 26, it will also serve as a performance and event venue and will host everything from weddings to upscale dinners to Corn Hole tournaments.

BEER TACOS INGREDIENTS + 1 2-pound-chuck roast
DIRECTIONS In this fabulous slow cooker recipe, beer taco seasoning trans-

Sear the whole beef roast in a hot skillet until just browned on all sides. Place roast in crockpot. Add in 6 tablespoons of beer taco seasoning and 1 bottle of dark Mexican beer. Place lid on cooker and cook on medium heat for 6-8 hours. When done, you should be able to shred with 2 forks. Remember to cook low and slow to get delicious, tender pulled beef for your tacos and other Mexican dishes.

SLOW COOKER BREAD This surprisingly moist and delicious loaf is so easy to make in a crockpot! The freshness lasts for days due to the baking process in the crockpot. INGREDIENTS + 1 1/4 cup warm water + 1 teaspoon sugar + 1 package yeast + 3 tablespoons olive oil + 2 tablespoons Old Town Spice Shoppe rosemary garlic seasoning + 3 cups flour, approximately

DIRECTIONS Pour water into a bowl and mix in yeast and sugar. Wait about 5 minutes or until it begins to bubble, then add in olive oil and rosemary garlic seasoning. Gradually begin to flour until able to knead; knead for 10 minutes. Line the crockpot with parchment paper, place the dough inside, cover the pot with a dish towel and place on lid. Put on medium setting and let rise about 30 minutes until doubled in size. Remove dough, knead for another 5 minutes, return dough to parchment-lined crock, replace towel and lid; cook on high for 1 1/2 to 2 hours, or until the center is 190 F. Rest for 5 minutes. The crust will be paler than a traditional oven-baked loaf but equally delicious. If you want a 'browner' crust, place in a 500 F oven for 3-5 minutes after it's done baking in the crockpot.

Owned by husband and wife Tony and Cindy Kooyumjian since 1998, the winery boasts numerous awards for its locally grown wines harvested in the premier Augusta Viticulture Area. In the 2019 Missouri Wine Competition, the winery took home top awards, including Gold and Best Varietal for 2018 Chardonel; Best of Class and Gold for both the La Rosee and 2018 Vidal Icewine; Silver for Grappa, Peach Eau De Vie, and Stone House White and Red, to name a few. With multiple outdoor seating arrangements nestled under the shade of the mature trees or near the pond spouting waterfalls, the winery can seat up to 700 guests on its various patios, decks and pergolas throughout the 500-acre property. “It is one of the most beautiful wineries in Missouri, if not in the United States,” says Tony, who was born on his grandmother’s vineyard in Fresno, California. The winery also has indoor seating with grand fireplaces for those rainy or cool days, and a large Parliament Room available to rent for large groups of up to 100. A full-service restaurant located on-site offers a full line of sandwiches, salads, pizza and appetizers during the week, and on Saturday nights, guests can indulge in specialty dinners designed to complement the wines. Reservations are recommended for Saturday night dinners. With 20 wines to try—from sweet to semisweet to dry to port to dessert—how to decide? Tony’s favorite is the award-winning Norton, which is a bold red wine developed from a Native American grape. He also enjoys the Seyval Blanc, which he describes as “a great summer sipping wine” with a dry, crisp citrusy flavor. But, Tony encourages guests to taste for themselves. MMM…CAN YOU SMELL THAT? As you approach one of the open-air restaurants in Santorini, Greece, the scent of fresh rosemary teases you. There are buckets of fresh rosemary on every table. There’s soft pita bread, warm from the oven, with amazing fresh feta cheese, kalamata olives and tomatoes, all drizzled with fruity olive oil—a simple meal in one of the most beautiful cities in Greece. I love food. I love to cook. And, I love to travel. Luckily, many years in the cruise industry has afforded me the opportunity to indulge in my passions, and I’d love to share a few of my favorite foods from around the world. We just came back from Alaska. In Sitka, we broke open large king crab legs, dipping chunks in melted butter, with a squeeze of lemon. In addition to the fresh seafood, I loved the reindeer sausage…especially hot reindeer sausage gravy on fluffy biscuits for breakfast, or a link grilled and served in a bun, washed down with Alaska Amber beer for lunch. Spruce syrup, wild salmonberry jelly, salmon jerky— so much to taste in that great land. In Rio de Janeiro, visiting an old friend, we sat on the beach with our toes in the sand, eating savory 22

empanadas, drinking Caipirinhas, the local favorite. It’s made from Cachaca, a Brazilian distilled liquor that starts from unadulterated sugarcane juice. We had dinner at Restaurante Garote de Ipanema, where we cooked slices of fresh seasoned beef on our table grill, accompanied by black beans and rice. We also ate at a buffet restaurant of local specialties, where they charge you by the weight of your food! How brilliant is that? When you visit the unbelievable Paradise of French Polynesia, go to Bloody Mary’s Bar on Bora Bora and have a Bloody Mary. Tahiti is known for vanilla beans, and you’ll find vanilla undertones in your drink. Freshly-baked French baguettes are delivered in residential mailboxes. I’ve eaten fresh Tahitian pineapple, cut with a machete…sweet golden goodness. And don’t miss the overwater restaurant on Moorea, where your fresh, flaky-skin fish is caught right off their deck! Ahhh…Italy. I think of drinking Bellini’s at Harry’s in Venice; being proposed to on the Grand Canal near the Rialto Bridge (I have a very romantic husband.); listening to live music, while drinking red wine served with olives and potato chips in St Mark’s Square; drinking wine in a gondola; fresh pizza in a piazza in Sorrento; the crunch of the fresh crust, the fresh buffalo mozzarella pulls, as you taste the tomatoes and basil; and cooking classes in Civitavecchia, with the Italian “grandmother.” We made fresh pasta to savor with her Americana sauce, along with our own individually made-from-scratch tiramisu. Tasting the world isn’t difficult. You just need an appetite, a sense of adventure and someone who knows where to go and the best way to experience it. Bon Appetit!

Mix together. Transfer to thick-bottomed saucepot and warm over medium-low heat 10-15 minutes, stirring continuously. Remove to cool.
Serves: 12 BARBECUE SAUCE:

+ 2 cups ketchup + 2 cups apple cider vinegar
Mix together. Keep dry and covered until ready to use.
+ 1 cup dijon mustard + 1 cup brown sugar + 2 tablespoons cayenne pepper + 2 tablespoons kosher salt + 1 tablespoon black pepper

COTTLEVILLE STILL HAS A SMALL-TOWN FEEL, EVEN AS IT GROWS UP. One of the newest additions to that small-town feel is Whisky Run Coffee, opening this fall. But, don’t let the name mislead you. While it may sound like your typical coffee bar, it’s anything but. In addition to being a restaurant and coffee shop, it is also a performance and event venue that can hold 1,800 people and will host everything from weddings to upscale dinners to corn hole tournaments. President and Owner Katie Wolf says she and her husband had been looking for the perfect space for about five years when they found the ideal location in what was once the Kurtz Nursery. “The founding father [of the nursery] passed away five years ago. We bought the last parcel … and are treasuring it.” It’s situated on 4 1/2 park-like acres, off Highway N., close to 364 and Highway K. Katie says they will use the existing 1,100-square-foot house by adding a new roof, a new porch addition and patio seating that will overlook a koi pond. Additional landscaping will be added to the already tree-lined property. “We were able to keep 98% of the original trees, so it’s beautiful and tranquil there,” Katie says. For her, the new business has been a labor of love at a place where she grew up, and why she never considered anywhere outside of Cottleville. It’s been a challenge with all of the rain earlier this year, Katie says, but she is persevering and working hard to see this dream become a reality. “We wanted to be in the city where we lived and to be there for the community, just as they’ve been there for us. It’s all about having a focal point for the community, where people can come together,” she says. NESTLED INTO THE TRIAD CENTER WEST PLAZA ON MEXICO ROAD IN O’FALLON, BETWEEN BRYAN ROAD AND HIGHWAY K., HUNGRY FOLKS WILL FIND A DIAMOND OF A RESTAURANT. Opened officially in 2016, Clayton’s history really dates back almost 17 years, when owner Kevin Kaegel and Chef Jim Thomas first met. Kevin tells the story of when he and his wife would frequent Boccacio’s Restaurant on Main Street in St. Charles. Kevin says they continued to return to the restaurant because of the delicious steaks prepared by Boccacio’s chef, Jim Thomas. After a while, Jim left Boccacio’s and opened his own restaurant in St. Charles’ Frenchtown CONTINUED >

area, called Premier. Eventually, Kevin and his wife visited Premier because of its reputation for fine steaks, not knowing Jim was the proprietor. Once they found out it was Jim Thomas, this restaurant, too, became their Friday hangout. Flash forward several years, and Kevin found himself retired from his business career and one day, while at Sam’s Club, he ran into Jim, who was buying supplies for his catering business. They started talking, which eventually led to the decision to become partners in opening their own restaurant...thus Clayton’s was born. “I wouldn’t have opened this without Jim Thomas,” Kevin says. When it first opened, Clayton’s catered to patrons like those Kevin remembered from Boccacio’s—those that would sometimes make an “evening” of their visit (weren’t in a hurry)—savoring the sauces and Jim’s creations. They didn’t mind a higher-priced meal and the slower prep time. Unfortunately, despite initial success, the number of Clayton’s patrons began to wane, and Kevin and Jim saw the need this summer for a change in strategy. What came out of that is the current offerings at Clayton’s, introduced in early August. Jim still creates some of the best steaks, seafood and desserts in the area, but prep times have been reduced, along with a more grill-oriented menu and lower prices. “We wanted to address the tastes and lifestyle of our customers,” Kevin explains. “What customers will always find at Clayton’s are the high-quality food, premier meats, a warm, friendly atmosphere, a wonderful wait staff, and some of the best desserts anywhere.” Steaks, namely the filet, are what Clayton’s may be best known for, and are cooked perfectly to customers’ requests. Kevin says Jim has been famous for the steak offerings for such a long period of time, but seafood, mainly scallops and salmon, are also favorites and are delectable. “What I want our restaurant to be known for most is our quality meats and our premier products,” Kevin adds. The menu offers a wide variety of appetizers and main dishes including chicken, pork and pasta creations, in addition to the steaks, seafood and sides. Clayton’s also offers a renowned dessert menu including bananas foster, James’ Delight and pimp cheesecake, so named by Kevin’s daughter, for its numerous toppings. Clayton’s is becoming famous for its $12 breakfast buffet, offered Sundays, 9 a.m.-1 p.m., featuring a variety of breakfast favorites and an omelet station, along with unlimited mimosas or bloody marys for $9.
