n a trip to Amsterdam, I visited a museum where I saw this sign - "Waar moet ik heen?" Translated from Dutch, it means - Where shall I go? For the lifelong traveler in me, this was an epiphany for not only my travels until then but also the travels ahead. The travel bug bit me early on in life, and there has been no stopping since. Though born in India and raised in the Middle East, I now call America home, and have had the opportunity to travel across the U.S, Europe, Africa and Asia, personally and professionally.

So you can sense my awe when sharing the story of Carlsbad resident Caitlyn Webster, who is an undersea explorer and deep dive specialist with none other than National Geographic! She shares her stories of underwater escapades in remote locations and another world altogether that most of us are ever privy to. If you’d like to stay on the surface though, our friends at Carefree Vacations can assist with a spectacular luxury cruising experience to pretty much any destination you fancy. And while at it, remember to factor in your pets as you plan these great adventures to lands near and far. RUBBER DUCKY DERBY TO BENEFIT AGUA HEDIONDA LAGOON FOUNDATION The Rubber Ducky Derby benefits over 7,000 North County students attending educational programs offered through the Agua Hedionda Foundation’s Discovery Center. Individuals and businesses alike are encouraged to organize a team for this fun, team-building experience on November 5 at the California Watersports Building. GEMS OF LA COSTA PROVES TRUE GEM WITH CHARITY JAR Many years ago, something unexpected happened at Gems of La Costa. The owners, Dale and Linda Condy, began “working for tips”, providing small repairs in exchange for voluntary donations (tips) for local charities. ed endive and fennel salad with anchovy date dressing for your third course? That is what fine dining at home looks like if you are the lucky winner of a fabulous meal prepared by Joy Prowse! No stranger to the kitchen, Prowse has been cooking since she was an 8-year-old and grew up in the family restaurant, preparing a weekly Italian smorgasbord in New Jersey. She enjoys cooking for her family and friends as well as donating dinners for good causes. So when the Carlsbad Hi-Noon Rotary Club approached her to help raise money for its Teens and Marines scholarships, she happily obliged! The Annual Scholarship Fundraiser for Teens and Marines was held in August. Following a day of golf, there was a celebratory dinner and auction at the Crossings. Joy and Stan Prowse donated a six-course dinner paired with wine for six guests - a great success, raising $1,500. All proceeds from the event benefit Carlsbad High School students and Marines who have left active service. The donated dinner itself was a fabulous event hosted in the beautiful Aviara home of the Prowses, involving Rotarians in the preparation of the spread and as honored guests attending a night of culinary excellence. Witnessing chef Joy Prowse in the kitchen with her four sous-chefs, Alice and Joe McDermott, An Lu, Maureen Simons, and Dallas Fatseas, is savory poetry in motion! Enjoying the feast were all Hi-Noon Rotarians, Jo Ann Ross and her guests, Grant and Kathy Harvey, club members Nancy Starling and Yvonne Finocchiaro, and Yvonne's husband Carmelo. Jeffrey Wohler of Hi-Noon provided the delicious paired wines for each course presented to guests through the evening.

with the Mostest CHOCOLATE WALNUT TART RECIPE As a baker, Prowse insists on creating and rolling out her own dough to create a flaky crust, “I never met anyone who didn't love this tart. It's almost candy-like. If you prefer pecans or almonds, you can use those instead of the walnuts.” Ingredients: 2 large eggs, ¼ cup sugar, ¼ cup honey, ½ cup plus 2 tablespoons light corn syrup, 2 tablespoons unsalted butter (melted and cooled to room temperature), ¼ cup light cream, 2 ¼ cups walnut halves, 1 prepared (unbaked) Flaky Tart Crust, ½ cup semisweet chocolate chips or 3 ounces good-quality dark chocolate, broken into pieces and 1 teaspoon solid vegetable shortening. •

Position your oven racks so that one is in the center and preheat the oven to 375 degrees.

Whisk eggs and sugar together in a big bowl. Whisk in honey and corn syrup, then stir in the butter, cream and nuts. Pour this mixture into the tart shell.

Place the tart on the center rack in the oven, bake for 50-55 minutes until the filling is firm to the touch, and the nuts and crust are golden brown. Do not over-bake.

Remove the tart from the oven and set on a wire rack to cool slightly.

To remove the tart from the pan, rest it on a big can. Make sure the tart is steady and balanced. Slide the outside ring of the pan down off the tart. Move the tart to your work surface and slide the tart off the pan bottom onto a rimless serving dish or a cutting board.

In a double boiler (or a stainless-steel bowl placed over a pot of boiling water), melt the chocolate and shortening together. Pour or spoon the chocolate into a pastry bag and pipe it onto the cooled tart with a swift back-and-forth motion or in any design you want. Alternately, pour the chocolate from a measuring cup with a spout and handle. The resulting design won't be as delicate but it'll certainly taste as good.

Serve tart warm or at room temperature.

rom guiding dives in Malaysia, surveying coral reefs in Indonesia, and exploring submerged caves in Mexico, 26-year-old Carlsbad resident Caitlyn Webster travels to remote areas around the world as a Scientific Diver and photographer. No wonder then that she speaks five languages and has traveled to all seven continents! “It certainly is a multi-faceted job,” she says. “I am able to show people this world that they otherwise wouldn’t really think about.” This ‘world’ Webster refers to involves her work on months-long excursions to remote regions as an Undersea Specialist on Lindblad Expeditions-National Geographic ships. Her responsibilities include taking video footage during her dives and creating a natural history presentation for the guests on board, often within the same day. When not on an expedition, Webster works with various research stations around the world as a scientific diver, aiding their graduate research projects and creating promotional underwater videos. The short amount of free time on the ships is spent researching, and her time off is filled with prepping for the next adventure. “It’s constantly learning and trying to figure out how you can use what you already know, and then build upon that based on a specific ecosystem or place that you’re visiting,” she says. When diving at work, Webster must constantly monitor her time, as dives are limited. “I could stay down for 3 hours and it would feel like 10 seconds,” she shares, of the undersea world that is her “happy place.” It isn’t smooth sailing all the time though. During emergency situations in the course of her work, and Webster has experienced a few of those, she has learned to react calmly and effectively. “I have been fortunate in that all of my jobs and training have prepared me pretty much for any situation under water,” she says, recalling a dive in Antarctica when her regulator “free-flowed,” releasing all of the air from her tank. On various other dives, she recalls great hammerhead and tiger sharks spontaneously swimming by her. “Your heart rate goes up for sure, but it is more of a thrill than anything else.” Born in southern California and raised in Northern Virginia, Webster and her family moved to Carlsbad when she was in high school. She remembers her first marine biology course and taking her first scuba diving course during the summer. “I was totally hooked and thought it was the greatest thing I had ever experienced,” she says about her first dive in Catalina. A trip to Maui further fueled her passion for undersea exploration. She obtained her undergraduate degree in biological science at California Polytechnic State University, where she was Vice President of the SCUBA club. She did her senior thesis in South Africa studying great white sharks, later volunteering with a nonprofit CONTINUED >

"Carlsbad is certainly a wonderful place to inspire someone to love the ocean..." organization in Mozambique, Africa, studying everything from diver impact on reefs to manta ray behavior. Now her current assignments take her around the world on diverse remote research diving operations and logistics endeavors. Constantly on the go, Webster usually has just a day to a couple of weeks to visit home. “Carlsbad is certainly a wonderful place to inspire someone to love the ocean, and it is definitely one of my favorite places to visit while I am off the ship and can go anywhere in the world,” she shares. Most times though, Webster has to readjust after longer trips abroad. “I certainly have had reverse culture shock multiple times. It takes me two hours to go grocery shopping,” she jokes, about being overwhelmed by the number of food options available. While Webster acclimates to everyday life during her brief visits home, her passion for ocean preservation continues off the ship. On a recent trip to Costco with her mom, the plastic water bottles people were buying saddened Webster. “It made my

he change in the weather and displays in the stores signal the holidays are just around the corner. We happily look forward to fun times with our family, friends…and pets! It is no secret that many of our wonderful winter holiday traditions can pose threats to our pets. So when making your plans, consider your pet’s comfort, health and safety.

HOLIDAY DECORATIONS: Ensure your holiday tree is securely anchored. Tightly cover the tree-watering base container as fertilizers and stagnant water can make pets sick. Place glass ornaments higher on the tree and keep fragile decorations out of reach. Avoid using shiny tinsel or sparkly ribbon that attracts cats and can be harmful if ingested. Be mindful that pets can get into presents so keep gifts that could be harmful to pets out of reach.

HOLIDAY FOODS: For your pet’s health and safety, ensure the bits of turkey or other meats you offer are boneless and well cooked. Limit the amount of fat. Avoid giving chocolate, any foods sweetened with zylitol, or food heavily seasoned with sage or other herbs to pets, all of which can cause severe health problems. Do not leave plates of food or alcoholic beverages unattended, especially when your attention might be focused on guests. HOLIDAY WEATHER: Freezing weather may be rare where you live but if you venture to local mountains or beyond for winter fun with your pets, be aware that if you are cold, they could be cold too, especially shorter-haired dogs, so provide a well-fitting sweater. Dogs’ paws could become raw or sore if they are not accustomed to ice and snow, so have them wear booties for protection. Always provide plenty of water after outdoor winter play. 30

HOLIDAY TRAVELS: Traveling on airlines and trains can be stressful for some pets, resulting in anxious behavior or even illness. Know your pet’s temperament beforehand and travel by car if that is a better option. Traveling pets must have a microchip and a well-fitted collar with their identity tag, all with your current cell phone number. Pets should be restrained in the car with a pet safety harness or in a secure carrier or crate. A better alternative for your pets could be to hire a professional pet sitter who is licensed, insured and bonded, and will care for your pets in the comfort, security and familiar surroundings of your own home, maintaining their usual routine, while you are away on your travels.

HOLIDAY PLANTS: Holly, mistletoe, pine needles and a variety of lilies can be harmful to your pets if eaten, causing serious gastrointestinal upset, cardiovascular problems or kidney failure. The popular poinsettias can usually cause mild to moderate gastrointestinal upset, so a good idea is to keep them out of your pet’s reach. (As needed, call your vet’s hotline or for a fee, call ASPCA Poison Control at 888-426-4435.)
