NEW YEAR. NEW MENU. NEW WEBSITE. It’s a new year and we are so excited about what is happening at Central! Thank you to all who made it a great Holiday Season, especially the Bellevue Collection. We are happy to announce the launch of our new user friendly website and a revamped menu which include some of the same hits with the addition of a more robust lunch menu and seasonal deliciousness. After our first three months people are talking about Central Bar + Restaurant, but don’t take our word for it... come see why!
“Walking into Central Bar + Restaurant is like stepping into a Golden Era Hollywood film. A centerpiece bar glows in a golden light, with shimmering glasses and bottles, reminiscent of an exclusive speakeasy from the 1930s.” 425 Magazine
“Central Bar and Restaurant offers Northwest fare with European flavors. There is food for everyone to enjoy. From lamb medallions, prime mignon, “proper” fish and chips made with Atlantic Haddock, and sage pasta with white shallot cream sauce, to roasted chicken breast, mussels and halibut.” Downtown Bellevue Network
“Bellevue’s new eatery is designed to be a gathering place with lots of open space, mirrors and other gleaming surfaces that give it a jewel-box effect.” Patti Payne, Puget Sound Business Journal

(CON TI N U ED)
RUBY ROOM IS A FORMALWEAR PROGRAM THAT ALLOWS LOW-INCOME TEENS IN WESTERN WASHINGTON TO BE INCLUDED IN MILESTONE MOMENTS DURING THEIR HIGH SCHOOL YEARS. These moments include quinceañeras, proms and homecomings. The Bellevue-based boutique services 400-500 eligible teens per year, and members in the community donate its entire inventory, which includes cocktail dresses, formal dresses, shoes, accessories, handbags, suits and tuxedos. The program’s mission is to empower youth through fashion, but this is not made possible without amazing volunteers and like-minded individuals behind the organization. Every prom and homecoming season, volunteers sign up to be part of the styling team that has the honor of dressing the young women and men. The stylists all share the same goals: to make the community’s teens feel special, confident and ready to dazzle at their event! Lastly, Ruby Room is excited to announce that it is expanding to Tacoma this spring. Stay informed with the second location, donation days and other events on Facebook @RubyRoomSeattleWashington.

Tesla Model X ECO-FRIENDLY EYE CANDY
ARTICLE EARL BENJAMIN | PHOTOGRAPHY KARA MERCER
TESLA’S MODEL X IS A COMPLETELY ELECTRIC VEHICLE ALLOWING FOR TRAVEL WITHOUT THE USE OF ANY GASOLINE WHILE BEING THE SAFEST, QUICKEST AND MOST CAPABLE SPORT UTILITY VEHICLE IN HISTORY. To top it off, the Model X is equally as eco-friendly as it is eye candy. Experience an open and modern feel with falcon-wing doors that automatically open and close, a panoramic view windshield, and plenty of space with three rows of seats. Tesla attributes a great portion of its safety to the electric drivetrain, located beneath the car. Its low center of gravity reduces the risk of rollover, while simultaneously enhancing performance. The electric all-wheel-drive system increases efficiency, reaching 0-60 mph in 3.2 seconds, all while producing zero emissions. The car also features adaptive LED headlights and a HEPA air-filtration system. It’s auto-dimming mirrors also contribute to conserving extra energy. Model X owners receive over-the-air software updates to their car remotely without visiting a service center. These updates enhance performance, add functionality and improve the overall driving experience.

TAYLOR SHELLFISH FARMS HAS BEEN PROVIDING SUSTAINABLE SHELLFISH TO THE PACIFIC NORTHWEST SINCE THE 1890S
WHILE TAYLOR SHELLFISH FARMS’ MENU IS CONSTANTLY CHANGING, IT’S COMMITMENT TO SUSTAINABLE FARMING HAS REMAINED CONSISTENT. The family-owned company has provided sustainable shellfish to the Pacific Northwest since the 1890s. Taylor Shellfish prides itself on responsible farming and good social practices, for a complete "tide-to-table” experience. On Sunday, November 19, the company opened its fourth and largest oyster farm in Lincoln Square South in downtown Bellevue. The farm houses 130 seats, a bar, banquette and community tables. Fifth-generation family member Marcelle Gonzalez explains that each space has a unique design that reflects the respective community. “For the design, we stayed true to the Bellevue neighborhood feel, giving it an upscale contemporary design with vintage influences," Marcelle says. "The space has a casual elegance with beautiful feature lighting which makes for the perfect evening.” The Bellevue oyster farm offers fresh seafood from each of Taylor’s farming areas in the South Puget Sound, Hood Canal, Samish Bay and Willapa Bay. Guests can choose from all types of oysters, along with clams, mussels, geoduck, fresh local Dungeness crab, prawns and more. The farm serves multiple oyster species, allowing for quality, fresh oysters served year-round. Food Alliance, a sustainable agriculture third-party certifier, certifies all Taylor Shellfish products. Taylor Shellfish is also the first farm in the U.S. to be certified by the Aquaculture Stewardship Council (ASC), a leading international third-party certifier of responsibly farmed seafood. The farm also highlights its commitment to clean water issues such as ocean acidification. Taylor’s goal is to protect the environment through its day-to-day operations, while also planning for the future. The farm sites vary rom beaches to rocky shorelines to tide flats. Each location provides shellfish with its own unique flavor. “Our fresh-shucked oysters are always a favorite,” Marcelle says. “Part of being able to enjoy the oysters is learning to shuck properly.” Aside from high-quality food, Taylor Shellfish places emphasis on its communities, employees and the environment. This commitment started when founder Justin Taylor discovered his passion for oyster farming. Passing from generation to generation, Taylor has maintained the family environment with more than 500 employees, including their children. Their goal is to grow this legacy while helping to build a cleaner, safe environment for many more generations.

CULINARY CREATIONS
(CON TI N U ED)
AS A NUTRITION AND HEALTHY LIFESTYLE COACH, I’M BIG ON HELPING CLIENTS INCORPORATE MORE NUTRIENT-RICH VEGETABLES INTO THEIR DIET IN DELICIOUS WAYS. However, these days not all veggies are created equal, as many have been sprayed with pesticides, genetically modified, grown in soil depleted of minerals, or traveled a long way to get to us—thus losing nutritional value along the way. While this can be a bit disheartening, there are still plenty of ways to ensure you’re getting your daily dose of health-boosting veggies, especially at your local farmers market. This spring I was inspired to incorporate fresh organic basil, greens, garlic, radish and leeks sourced from Alvarez Farms, which resulted in this gorgeous and equally tasty grain bowl with pumpkin seed pesto. Topping it off with a yolky egg and rich avocado adds flavor and helps your body absorb even more of those fat-soluble vitamins.
VISITING THE FARMERS MARKET IS A FUN WAY TO LEARN JUST WHERE E XACTLY THOSE VEGGIES WERE SOURCED FROM, AND YOU CAN BET THERE’LL BE A NUMBER OF LOCAL , SEASONAL AND ORGANIC PRODUCE ON HAND.

(CON TI N U ED)
HAVING REACHED THE PEAK OF OUR MOST RECENT MOUNTAIN, THE WINTER SEASON, SPRING IS HERE, BRINGING US CLOSER TO WARMER MONTHS. If you seek more vitamin D, fresh air and an adventurous weekend getaway, a trip to the coast might be calling your name. Westport, Washington is visited by people from all over our country and other parts of the world. Surfing in this area is one of nature’s greatest resources, and although our PNW weather can be iffy, on those days “when the Surf Gods smile,” Westport can produce a world-class wave. Enter the Loge at The Sands in Westport, the place to stay and play when planning your Northwest surfing adventures. As a guest, you can escape to the Loge hotel, hostel or the RV and rustic camping site. Founded by CEO Johannes Ariens and Chief Financial Officer Cale Genebacher, Loge was founded for people to travel and recreate in one destination. Through a partnership with EVO, the camp provides a rental and demo center that holds surfboards, wetsuits, booties, leashes and other outdoor equipment for guests to rent and use to experience the Washington coast. Rest from your day in a hotel room designed with some local Westport artist flair. The hotel offers an array of rooms and suites and can accommodate your party’s needs. Loge welcomes your furry friend by providing dog beds as well as water and food bowls. More of a community-style environment, the hostel is lodging meant for friends. The hostel features co-ed bunks or private rooms for two and also provides a community kitchen, lounge, games and television for all guests. The lower property at Loge gives guests a true camping feel. RV or not, the camping site gives you an overnight outdoor experience to write home about. With covered sites, RV hookups, bathrooms and a covered outdoor kitchen featuring Traeger Grills, the campsite gives you a rustic setting to escape to. Fun amenities are of no shortage from the stage and outdoor movie screen and communal fire pits to the full-service bar and café on-site. Since opening Memorial Day weekend 2017, Loge at the Sands has hosted approximately 5,000 guests. Accepting reservations year-round, it’s truly the ideal destination for outdoor recreates to call a home away from home. “People think our place is for hardcore outdoors people,” Cale says. “The people that love the property are the beginners or the people that want to get out of town. This is where people come, stay and relax outdoors.” Surfers, hikers, mountain bikers and outdoor lovers of any kind travel to gather at Loge at the Sands. The Washington coast draws guests in, but the Loge culture, company and camp amenities are what keep guests returning. 38

PLANTING TIPS + Succulents don’t like wet roots, so when choosing a container, make sure that it has adequate draining. If there isn’t a natural draining hole, drill several small holes in the bottom. + To ensure your soil drains easily and the plants’ roots aren’t too wet, you can use a special soil mix for succulents or mix potting soil and sand together to make it more porous. + Mix and match succulents for an artful display. They don’t mind being close together, and finishing off with aquarium rocks, moss or other decorative material will give it a finished look. For more planting tips, visit Lowes.com
