publisher's note June was filled with joy as I welcomed my son Dutch to world and to the Boerne Business Monthly team! My daughter Dylan has spent her whole 4 years of existence at my side making magazines, or “mazagines” as she calls them, attending photo shoots and helping me put copies of BBM around town and I’m sure Dutch will do the same. I have been blessed to own a business that allows me to do something I love with my kids by my side. This July issue of Boerne Business Monthly marks the beginning of our 8th year! Boerne has changed a great deal in just that small amount of time, but it continues to be a place I am proud to raise a family, run a business and call home. Boerne is a great community that has embraced this publication from the very first issue and for that I am very thankful. City Awards are a Win-Win for All of Us!

J

Just a few weeks ago Boerne hosted a visit from retired NASA astronaut and commander Eileen Collins. Ms. Collins was a featured speaker as part of the Patrick Heath Public Library’s Summer Learning Odyssey. About 250 people, mostly children of course, attended the event to meet Commander Collins and hear about her experiences. What a treat that was for our local kids to get to talk with an astronaut; and what a thrill it was for me watching them as they expressed their excitement and wonder at the opportunities that await them when they become adults. Technology – I think we all have a love / hate relationship with it, but in this day and age it seems we just can’t live without it. In the public safety world, advances in technology are critical and a real blessing. Our emergency first responders are able to get to situations faster because real time communication is so much more efficient than it was decades ago. I want to share with you some great news about a couple of the technology awards that Boerne has received recently. Our Police and Fire departments have worked for months with the city’s IT department to install communications tools that are drastically improving service and saving money. Just last month Police Chief Jim Kohler attended a conference in Atlanta and was presented with the 2015 Tyler Public Sector Excellence Award for Local Government Solutions – that’s a mouthful. Through several tech advancements, such as iPads and coordination with Tyler Technologies software, Boerne has been able to decrease mobile communications costs by seventyseven percent and respond to most emergency calls in less than five minutes. As we go through our budget process each year, we challenge city staff in all of our departments to look for efficiencies that will save money. This one is a huge win-win for the Boerne community.

For people wanting quick information about Boerne – do you know we have a mobile app that is available for free from the mobile app store? The mobile app has some very unique features and also links directly to our website. A couple of months ago we received a Silver award from Horizon Interactive Awards for our governmental website. And we received a bronze award for our mobile app – both of which we are very proud of. So I encourage all of you to upload the app, search tag is “City of Boerne”, so that information about what’s happening in Boerne is right at your fingertips. On top of those awards, the city has also received the Texas Comptroller Leadership Circle Award for the fifth consecutive year. We are recognized at the Platinum level again for our actions that meet the highest standards for financial transparency online. The Boerne city council members and the city staff are completely committed to providing appropriate and accessible information online that goes beyond the state requirements. We post the city’s budget, the Comprehensive Annual Financial Report and the city’s check register so you can see how your tax dollars are being used to provide the services you expect. And more great news – the Old No. 9 hike and bike trail is open again and with a brand new surface. Gone are the ragged edges, cracks and crumbling pavement. The project was completed in a much shorter timeframe than expected, so kudos to the parks and recreation department staff and the Luck Design and Brady Lawn and Landscape teams. When the temperatures start dropping in just a few weeks, I have every intention of getting back on the trail.

Boerne is known as a picturesque community at the gateway of the beautiful Texas Hill Country. It also enjoys the reputation of a town with little to no poverty. So it might surprise you to know that one in five children in the Boerne Independent School District depend on the Federal Meal Program for their breakfast and lunch each weekday during the school year. Many of these children also experience hunger on the weekends. Assisted by a local chapter of the non-profit Blessings in a Backpack,

weekend food is provided to some of these children to ensure they are fed consistently seven days a week. But what happens during the summer when school is not in session and neither the Federal Meal Program nor Blessings in a Backpack are available? That is the question the Kendall County Food Council (KCFC) has been grappling with for the past several years. The KCFC is composed of local organizations concerned with all aspects of hunger and food insecurity, from farm to table. The organizations in the KCFC worked cooperatively to do what they could to address the issue of summer hunger, but the scope of the problem—both in sheer numbers and geographical spread—was beyond their ability to solve alone. So the idea of a community-wide coalition was born— a collaborative effort involving our local government, businesses, churches, non-profits and civic groups—the major entities in our community, all coming together with the goal of ensuring no child in Boerne would go hungry during the summer. The Boerne Community Coalition was launched in April with a kickoff event at the Patrick Heath Public Library. Mayor Mike Schultz issued a proclamation in support of this community-wide effort and BISD Superintendent David Stelmazewski reiterated the need for this effort. The logo for the coalition is a plate composed of puzzle pieces, which is a fitting analogy. Because Boerne has no “inner city” where one meal location could be established to solve this program, it will take a variety of programs and projects—a mix of puzzle pieces—to complete the picture of a full plate for over 1400 children in need. The coalition is in its infancy, just several weeks into its first summer. There are a handful of programs in place striving to reach as many of these children as possible. Both the YMCA and the Boys & Girls Club have offered scholarships to some of these children to attend their day camps and are providing lunch as part of the program. The First United Methodist


Church of Boerne is sponsoring an eight-week enrichment program targeted to these children which will also provide lunch. The Rainbow Senior Center at Kronkosky Place has expanded its Meals on Wheels program during the summer to provide for the families of some of these children. Oaks Hills Church is taking their Vacation Bible School into several of the targeted neighborhoods and will also provide meals as part of their program. One of the more ambitious programs is Love Boerne Kids, run by the non-profit Taking It To The Streets. Using a food truck recently acquired by TI2TS, meals are delivered to targeted neighborhoods throughout Boerne on an alternating M-W-F schedule one week and a T-TH-S schedule the next. One group of volunteers meet for food preparation (at local churches with commercial kitchens) and another group deliver the meals via the food truck. It’s hoped that other community organizations will step up to provide meals on the nights the food truck is not operating. This program is a work in progress and the logistics may be tweaked throughout the summer to improve its effectiveness. It is the goal of those currently involved in the coalition that this community-wide effort continue to expand and grow year after year until there are enough programs in place to feed all of Boerne’s children in need. They hope more businesses, churches, organizations and individuals will want to become involved and will also help to make this program a success by donating, as it is supported solely through financial and in-kind contributions. Boerne Samuel V. Champion High School has been included on the recently released U.S. News & World Report annual list of the best high schools in the nation. Champion High School was ranked 56th in Texas and 474th nationally, earning gold medal status in the publication’s annual evaluation of the nation’s public high schools. Only 59 schools in Texas achieved gold medal status. “Obviously, we are very proud of this recognition,” said Boerne ISD superintendent David Stelmazewski. “This is an affirmation of the hard work by our students, the dedication of our faculty and the priority placed on education by our entire community.” To create the 2015 Best High Schools rankings, U.S. News looked at more than 29,000 public high schools in all 50 states and the District of Columbia to determine which schools excelled in each state and nationally. High schools were evaluated in three stages. First, U.S.

News looked at overall student performance on state-required tests. Schools had to perform better than average to pass, but because of a slight change to the methodology this year, more schools qualified for the rankings. Then, U.S. News factored in how effectively schools educated their leastadvantaged students – those of minority and low-income backgrounds. Finally, schools were assessed on how well they prepared students for college based on participation in and performance on Advanced Placement and International Baccalaureate exams. For the fourth consecutive year, the School for the Talented and Gifted, a Dallas magnet school, was ranked as the No. 1 public high school in the country. In the area adjacent to Boerne, other schools making the list included Alamo Heights (#498 nationally, #59 in Texas) and San Antonio School of Science and Technology (#574 nationally, #69 in Texas) and Lake Travis High School (#781 nationally, #88 in Texas). The Dodging Duck Brewhaus

If you were to define a restaurant by its personality, the Dodging Duck Brewhaus and Restaurant would be the gregarious, funloving type who is genuinely, warmly interested in people, and loves to make others happy. This atmosphere of warmth and abundant hospitality begins with owners Keith and Chandra Moore and extends throughout their entire staff, each serving customers with a smile and cheery attitude that makes everyone feel good. It’s one reason why the Dodging Duck has become a favorite among the locals and a big attraction for out-of-towners. At the Dodging Duck, it’s easy to fall madly in love with at least one dish on every visit. Guests will find an eclectic array of mouthwatering meals – from incredibly savory Thai chicken wraps to juicy Bison burgers, from spicy Bratwurst and other delectable Hill Country sausages to incredibly robust salads served with Keith and Chandra’s special house-made dressings. There’s also much to love about the superb beverages. For beer lovers, there’s a selection of fresh, unfiltered and un-pasteurized craft beers, brewed on the premises, with such intriguing names as Jurassic Duck Amber Ale, Sir Francis Drake Porter, and Dubbel Duck Belgian Ale. For patrons preferring a glass of wine, the wine list includes a wide array of fine wines from around the globe that will delight even the most discriminating connoisseur. In fact, Dodging Duck features one of the largest selections of wine by the glass found in the area. Business happens at The Duck, too. “We’ve seen homes sold, contracts written, and even wills witnessed right at the bar,” recalls Keith. Along with business lunches happening every day. The Duck has separate dining rooms that regularly host a wide variety of group meetings. And let’s not forget the fun. There’s Kilt Night on Tuesdays, when many regulars come dressed in kilts, play bagpipes, read poetry, and belt out Irish songs. The Duck also features special celebrations throughout the year, such as Ducktoberfest in October, Jolly Holly Duck Days in December, and, of course, St. Patrick’s Day. To add to the fun, unique t-shirts and souvenir logo glasses

are available. Many customers personalize their logo glass and leave them in the open cabinets by the bar, ready for drinking when they return. “Countless customers have made very good friends with other customers at the Duck. It’s very much a local pub atmosphere with lots of camaraderie,” notes Chandra.

NO RESTAURANT EXPERIENCE

Keith and Chandra did not enter the restaurant business in the conventional way. They never started out as dishwashers or waited on tables. Nor did they ever own or manage another restaurant. While living in Houston, Chandra practiced law for 14 years and Keith worked for a Swiss instrumentation manufacturer. “My company relocated us to Geneva, Switzerland, where I was the vice president of sales and marketing,” says Keith. “Our biggest market was the brewing industry, so my job included traveling and drinking beers from all over the world, attending international brewing conferences, and visiting breweries worldwide,” he adds. The Moores lived in Switzerland for 5 ½ years. After Keith’s company was sold, they returned to Texas in 1999, settling in Boerne to raise their three sons. Soon, though, the Moores realized that something was lacking in Boerne that represented a business opportunity. “Keith really missed the beers that he had in England, Europe and elsewhere,” says Chandra. “He noticed there wasn’t a wide selection of beers available here, and he thought a brewery would be a really interesting entrepreneurial opportunity.’ So, in 2001, the Moores decided to open their own brewpub. After they purchased and remodeled the present building, once a private residence, they developed their unique brewery and restaurant concept. They filled their menu with cuisines from different cultures encountered on their travels, including several of their own special recipes. With some luck, Keith found a brew pub in Minnesota that was going out of business. He purchased all their brewing equipment, a beautiful copper-clad 10-barrel system built in Hungary, and installed everything in the detached building behind the restaurant. In addition to strong German heritage in Boerne, the Moores called their establishment a Brewhaus because of their time spent in Germany and in tribute to the importance of brewing in the


German culture. As for the Dodging Duck name . . . “It seemed like a perfect name,” says Chandra, “as we watched the ducks try to cross River Road in traffic. Of course, Dodging Duck also reminds us of British pubs and their whimsical names.” When all was ready, the Dodging Duck Brewhaus and Restaurant opened in August 2002.

GREAT TASTING BEER

At any time of the year, Dodging Duck serves four craft beers. But through the course of a year, patrons may quench their thirst with as many as 15 to 20 different styles of beer. “We like to change our beers seasonally,” says Keith. “We nearly always have the India Pale Ale. It’s our most popular beer. But the other three tanks just change with the seasons or whatever we decide to make. Sometimes the beer is dark and sometimes it’s light or bitter. “We also make fun beers like our Pecan Brown Ale, which we call Old Geezer. Located in the Boerne, BYFA is a non-profit youth football association, committed to provide a competitive football environment where the child / player “comes first.” BYFA is serviced by community based volunteers; a dedicated Board of Directors, Executive Committee, Coaching Staff(s) and parents. It seems like the world is moving at 100 mph around us (maybe not so much in Boerne, TX) but it’s easier now more than ever to reach exhaustion and over train. The summer time provides a great opportunity for people to get out and do things in the heat. So for the athletes, 9 to 5 er’s and everyone in between, here is break down of over training and how to avoid it from holding you back or causing damage. TRAINING = TRAINING + REST. You can’t have one with out the other, they go together like peanut butter and jelly or Kool-aide and sugar. They work synergistically to bring about a result. Many people involved in these high intensity activities can be really close to crossing this threshold. In order to stay below this threshold where we are building up rather than breaking down we must listen to our body. WHAT DOES IT FEEL LIKE? Too much training can actually feel euphoric at first. Bursts of energy can happen and you may feel like you don’t need sleep. As adrenal glands exhaust themselves, fatigue sets in and you may start needing a boost through out the day. Sometimes you can feel muscles twitching for no reason at all, like your eye lid or triceps. This is not THE sign of over training, but merely a piece of data to gather. My favorite way of checking if I am overtraining/physically exhausted is to keep tabs on my resting heart rate. If it is normally 65 beats per minute and now its 75-80 bpm, you may be heading toward over stressing your body. HERE ARE SOME ACTION STEPS YOU CAN TAKE TO AVOID OVER TRAINING. Get some REM sleep. Simple right? REM sleep is where you actively rebuild and regenerate your cells at night. To get better REM sleep try emitting glowing screens 30 minutes prior to bed. Good luck with that one I know its tough! Second, eat well. Most people are deficient in B vitamins since they are water-soluble. A high quality fish oil is also essential since our bodies do not make Omega 3’s to help fight inflammation and rebuild our nervous system. Thirdly, is to detect and correct any obstructions that may be constricting the body’s nervous system, which directly impacts the immune system and musculoskeletal systems. WHAT DOES A STRUCTURAL SHIFT HAVE TO DO WITH MY HEALTH? By reducing any Structural Shifts in the spine, which cause many secondary conditions such as

neck and back pain, numbness and headaches, a person can adapt to the stressful impact on their body. Let's be honest, the internet offers so much convenience and information in today’s digital world. It would be hard to imagine life without it. The internet has made buying, selling and marketing real estate so much easier for buyers, sellers and real estate professionals. Virtual tours, Google Earth, Realtor.com, etc. are just a few free resources for all of us to enjoy through the internet. However, one challenge that real estate professionals can be faced with is the disparity of a home's true selling value compared to what Zillow (an internet based real estate marketing site) has the home valued at. For the record, I think Zillow does some good things and makes it pretty simple for any home owner to get an estimated value of their home (called "Zestimates") within seconds. However, the problem is more often than not, the "Zestimate" is not the true market value. This presents a two headed challenge for real estate professionals. Some sellers are convinced that a "Zestimate" is their true value and will expect the asking price or even sales price to be what their "Zestimate" is. This can put a real estate professional in a tough position. They are tasked with delicately educating the home owner about the actual market value without running the risk of offending and potentially losing out on the listing. So what if a seller has priced their home 10, 20, 50, 100 thousand dollars higher than the "Zestimate" and the buyer

refuses to see what the actual market value is? This can be and has become a problem for all parties involved in more than a few real estate negotiations. Respectfully, Zillow does not know if a home owner has upgraded the kitchen and master bath or if old carpet has been replaced with custom flooring, or if the appliances have been upgraded. These are just a few basic examples of improvements a seller could have made that Zillow would not be aware of. Real estate is local. Sure, there can be national trends, but real estate values are based on local sales data (i.e. the Multiple Listing Service), local trends and other local factors/influences, not data from large national internet sites. Your real estate professional can show you sales prices of recently sold homes in your neighborhood as well as pictures and descriptions of each home, allowing you to see what kinds of improvements, if any, each home had. I am not suggesting to completely ignore sites such as Zillow, but the best source of a home's market value is actual data through the local MLS. Thank you for reading. Americans put in more working hours than our counterparts in England, France and Germany. Working long hours, running a household and taking care of family can take a toll on us physically and mentally. Our workspace and living space is a picture of our physical and mental state. It’s a fact clutter causes stress and anxiety and costs money and time. A healthy lifestyle is about a healthy environment both at the office and at home. I have found in my experience as a Professional Organizer that a cluttered office can have a domino effect on productivity. When you spend several hours a week looking for a file, a contract, meeting notes or your expense report to name a few, you are wasting time, which may cause you to miss deadlines and maybe loose clients which in turn is lost income. That is not the result anyone is looking for. I have personally worked with a client who lost 70 pounds over a year’s time. She originally hired me to help her organize her business home office. Once that was completed and she saw the results and the peace it brought her we moved onto the rest of her home. That was 3 years ago and she has still kept the clutter down and the weight off. Most people are very aware their cluttered office causes them stress. Yet they put it off because they don’t know where to begin or the clutter is so bad they are overwhelmed. Here are a few quick tips to help you get started and hopefully bring peace and health back into your

life. Your clutter did not happen overnight so don’t expect it will be cleared in one day, plan on a few days to make this happen. • Block out time in your very busy calendar to take care of you (if you play golf or have time for a Spurs’ game you have time in your calendar) • Ask for help, maybe it’s your assistant, a co-worker or a family member and then pay it forward • Have small to medium size boxes on hand – for recycle, donate and shredding • Break down your office into “small jobs”; stick to one file cabinet, one book shelf, your desk, one at a time • Stay focus, do not jump from one end of the office to the other – finish what you are working on until it’s completed • Recycle old paperwork and equipment that is no longer in working condition • Shred important paperwork • Donate any furniture or office equipment you are not using • Work on updating your filing system – file, label and store old paperwork in storage bins or banker boxes and place them in a closet and only keep current information within reach Doing just a few of these steps will make a big difference in your stress level plus it may help you lose a few LB’s!
