F

ebruary is full of celebrations! The month as a whole is Black History Month, a great opportunity to teach your kids about the tremendous achievements made in history by our African American leaders and discuss current events related to the civil rights movement. On February 1st the chips and salsa come out and we all gather around the TV for one of the most popular sporting events to happen all year long, the Super Bowl! Whether you chose to socialize and enjoy the tasty snacks like me, or are there to root on your team like the die-hard fan that you are, I hope you enjoy this day with family and friends (and extra Queso dip). Within the month, we have several other mini-celebrations such as Groundhog Day, February 2, where we eagerly find out if spring will come early (that little guy better not see his shadow if you ask me)! And of course, come February 14, we celebrate our sweethearts with chocolates, date nights, roses, and mushy Hallmark cards. To celebrate this loving time of year, this issue is full of loveinspired articles such as Celeb Parent Tracker: Date Night Edition and the Valentine’s Day Mad Lib, fun for the whole family! We also included fun Valentine’s Day Apps on A is for App as well as some adorable Pinterest ideas you’re sure to fall in love with! Q&A

We hear that you have several passions including photography, surfing, playing guitar, singing and writing your own music! Let’s start with photography, how did you get interested in taking pictures? We took a trip to Honolulu in Hawaii when I was 4 and my parents got me a single use waterproof film camera. When I looked at the pictures my finger was in all of them, and I wanted to take better ones. The idea to always take better pictures has driven my photography to today. What are your favorite subjects to shoot? Why? My favorite subjects are people because we are very unpredictable, and our bodies always tell a story. However, it’s always fun to take macro, or close up pictures, of plants or bugs as they are smaller parts of the world that most people don’t look at or pay attention to.

What camera do you use? Why do you like this kind the most? I get asked this a lot and I use the Nikon D610, which is a very well rounded camera. I use Nikon because I think it offers great low light capabilities, unbeatable color depth and dynamic range. Also, I know it’s weird but I love where the on/off switch is compared to Canon. Who is your favorite photographer or what style is your favorite and why? My favorite photographer is Jake Hesseltine from Photocreatures. He gave me my first internship and introduced me to a lot of amazing photographers who taught the classes. All the people there were super welcoming, taught me the tricks of the trade, and helped me get to where I am today.


Now onto guitar… when did you start playing guitar? I started playing guitar at the age of three, although I’m not sure I would call it playing. I would pick up a guitar, strum with random finger placements, and spontaneously come up with lyrics. What are your songs typically about? How do you come up with them? My songs are typically about dealing with things common to a lot of people like bullying, friendship, self-conflictions, and the times that make you realize why we are who we are. Have you performed your songs before? If so, when and where? Anything coming up? I have performed once for 8th grade graduation in front of the entire school (scary). I am currently looking into playing at the Fiesta Del Sol in Solana Beach, and any opportunities that come up at school. Who is your favorite guitarist? My favorite musician is my dad. He has listened to every song I have ever played and I always look up to him for advice on singing.

board. I really got the bug at age 9 and I started surfing every day. Since then, I have shaped multiple surfcraft (Boards, Hand-planes, Paipos). The thing I love most about surfing is it’s one of the few activities that really shows your soul. Where is your favorite surf spot? Pillbox (Fletcher Cove). My dad is a lifeguard there, the waves there are fun, and it’s less than a block from our house. How do you find time for all of your talents? I really have to use my time wisely and not waste any of it. What do you want other kids to know about your passions? Any advice for someone reading this that might want to start taking pictures, playing guitar, or surfing? Be original, and develop your own style. It’s fine when you’re starting to mimic someone else’s work, but creating your own unique style really shows what you can do, and distinguishes you. Naked Nachos made with The Better Chip.

“Nutz For Nachos!” Delicious nacho recipes that will have the whole family begging for more! Greek Nachos 1. Spread plain tortilla chips or The Better Chips Spinach & Kale on large serving tray. 2. Top individual chips with hummus or tzatziki (we do a little bit of both) 3. Top with chopped tomatoes, cucumbers, black olives and feta cheese 4. Meal tip: Add lamb or grilled chicken for a filling and balanced meal

Naked Nachos Ingredients: • 1 bag Fresh Corn tortilla chips or The Better Chips Corn • 3-4 Farm Fresh Tomatoes - Roasted • Fresh Corn – Roasted (Cut right off the Cob) • Fresh Rosemary, Thyme, Oregano, or Basil • Olive Oil

Directions: 1. Roast Tomatoes: Preheat oven to 350 degrees. Cut tomatoes at their waste and remove stem. Cover the bottom of a glass baking dish with olive oil. Set tomatoes sliced side down. Sprinkle with herbs. Cook for 1 hour. Add salt to taste. Slice to serve. 2. Roast Corn: Preheat oven to 450 degrees. Place fresh corn on baking sheet (Do not shuck). Roast for 15 minutes turning occasionally. Remove from oven and let cool. Shuck corn and cut from ear. Heat oil in a large skillet over high heat. Add corn kernels and sauté until heated through and golden yellow. 3. Line baking sheet with chips. Layer slice of roasted tomato and sprinkle on fresh corn. Garnish with fresh herbs. Broil on high for 2 minutes until edge of chips start to turn light brown. 4. Serve. 5. Pressed for time? - Buy a can of roasted tomatoes and a tub of fresh corn salsa – Almost as good and ready in minutes.

Grandma’s Candy Apple Nachos Ingredients: • 1 bag Fresh Corn tortilla chips or The Better Chips Spinach & Kale • 1 Granny Smith apple, diced • Caramel sauce • Melted Chocolate sauce • Walnuts, chopped • Mini-marshmallows • Walnuts Directions: 1. Dice apple into small pieces. 2. Heat the chocolate & caramel sauces so that they are warm and easy to drizzle over chips. 3. How has living in North County affected your surfing career? I grew up learning about the ocean as a Del Mar Junior Lifeguard. That program gave me my first exposure to surfing. North County surfers are lucky because our coast offers a wide variety of breaks and we can almost always find a wave. Who are some local pros and companies that have helped you in your achievements? How? Evan Slater taught me about the world of competitive surfing and about the surf industry. He also invited me to join him and his daughter, Peytie, on the surf trip of my life. My shaper is Wally Puha, out of Oceanside. Wally has been shaping for me and teaching me about board design for over five years. His support and mentorship have had a huge influence on my surfing.

Any advice to other surfers out there looking to improve their skills? Spending time with a surf coach and analyzing video of your surfing are two great ways to improve. What do you love the most about surfing? Why? I love the sense of community among surfers. I’m happy when I get a good ride, of course, but I am also super stoked when I see other surfers enjoying great waves. Have you ever had any shark run-ins? Other sea creatures? Luckily no shark run-ins, but plenty of wonderful encounters with dolphins and seals! Where do you see yourself professionally in 5 years? I see myself traveling to the world’s best breaks, surfing for my college team, and working in the surf industry or as a physical therapist.

Who is your favorite pro-surfer? Courtney Conlogue has an insane amount of power. I really admire her. Where is your go-to surf gear shop? Surfride Surf Shop. They have helped support my surf team – San Marcos High School. What’s the biggest wave you’ve ever surfed? 12 ft faces at Steamer Lane. Is there anything else you would like to add? I think it’s important to keep the aloha spirit alive here in North County – give someone a wave, pick up some trash, and always appreciate the beauty of the ocean! NCK

How has living in North County affected your skating career? Living here has affected my skating because there is so much skateboarding culture. (Pro’s, Parks, Other skateboarders.) Who are some local pros and companies that have helped you in your achievements? Some local pros that have helped me in my skating for sure are Willy Santos, Jimmy Carlin, and just all of my friends who I skate with.

The Misadventures of Spiderman

L

ast week my family snuggled up on the sofa for Friday movie night. We watched Arachnophobia, the 1990 horror-comedy about a Venezuelan killer spider that attacks a sleepy American town. The kids slept with us later that night. A California king bed isn’t very spacious when there is a 9-year-old boy kicking you in the teeth every five minutes. My kids weren’t the only ones spooked by the film. “I think we have a lot of spiders in the house,” my wife says. I immediately know where this is leading: she wants to call an exterminator, which I think is an unnecessary expense, so I attempt to fend her off at the pass. “Spiders are a good thing,” I say. “Are they?” she asks. “Sure,” I say, “they eat the bed bugs.” “But we don’t have any bed bugs,” she says. “Precisely,” I say, “because all of our spiders are eating them.” I’m just making this up about the bed bugs. I don’t know if the spiders in our house are eating bed bugs, but I assume they are eating something, and in my imagination it might as well be bed bugs. Truthfully, we probably do have more spiders than the average house, but we don’t have enough to call an exterminator. I don’t have anything against exterminators. When I was a kid, I watched my dad unsuccessfully battle a wasp nest with a garden hose and a tennis racket. If I had a wasp nest in the backyard I’d be the first guy to call an exterminator. But spiders? Spiders? There’s no need for an exterminator. Like Jeff Daniels in Arachnophobia, I got this covered. I also have an ulterior motive. The money I save by taking care of the problem myself is cash back in my pocket. Cash that I can spend frivolously on other things, like a new Mesa Boogie vacuum tube guitar amp.

Now, I’m no dummy. I’ve been married long enough to know my wife will not be persuaded by my rational and logical argument that our money is better spent on a guitar amp than it is on an exterminator. So I take another approach. “Do we really want to call an exterminator, you know, with all of their toxic chemicals?” Honestly, I really don’t care about commercial pesticides. As far as I’m concerned, a guy in a hazmat suit can come to my house with 10 gallons of DDT, as long as he gets the job done. But my wife is environmentally conscious, and I can sway her if I just work the word toxic into the conversation a few times. Motivated by my faux-green approach to pest control, she gives me the DIY thumbs up. The only problem is I don’t really know anything about being an exterminator. Not to be deterred, these days that isn’t a big of deal. If you don’t know how to do something you just look it up on YouTube. After a couple of video tutorials and a trip to Home Depot for some bug juice, I was in business and ready to reduce our spider population. But my foray into the realm of amateur pest control quickly ended in disaster. I didn’t even make it out of the garage before I mishandled the container of pesticide. It hit the ground with a thud and released a cloud of spider-killing-mist that covered all of my exposed flesh and seeped into both my lungs and eyes. You might think it would be hard to rinse your eyes in water and call the poison control hotline at the same time, but I assure you it can be done. My second call was to an exterminator, which was painful to my pride and it put a temporary dent in my rock-n-roll aspirations. Book Review

Mom to Mom

Megan Rath is a wife and mom of an 8 year old daughter and 4 year old son. She is the organizer of the Hip Chicks Book Club (www.meetup.com/hipchicksbookclub), a large group of diverse women of all ages that meets in North County every month. A native of North County all her life, she currently lives in Vista.

Bared to You (Crossfire series #1) by Sylvia Day Eva moves to New York to escape from her past, and meets super hot, somewhat controlling, billionaire Gideon Cross, who woos her into his bed, while she unwittingly steals a place in his heart. Something he never thought would happen. Ok, so this plot is EXTREMELY similar to the Fifty Shades of Grey series. But, having read the Fifty Shades books, I can honestly say this series is so much better. Well written, engaging, and sexy, this was a quick (somewhat mindless) romantic read, perfect for Valentine’s Day. Or, you know, anytime.

I give it a B. The next books in the Crossfire Series are: Reflected in You (#2), Entwined with You (#3), and the newly released Captivated by You (#4).

This Dark Road to Mercy by Wiley Cash Twelve-year-old Easter Quillby and her six-year-old sister Ruby are living in a foster home after their mother’s death, when their father, Wade, an ex-baseball player with a troubled past, whom they haven’t seen in years, shows up in the middle of the night to take his daughters back. But the girls’ court-appointed guardian and the police aren’t the only ones looking for Wade and the girls… especially since Wade is wanted in connection with a multi-million dollar robbery by the local mob. I really enjoyed this book. It’s a great story about the importance of family, and redemption from the past. It’s told from the perspective of multiple characters, and it really pulled me in. I definitely recommend it.

Give this book an A-. If you enjoy this book, check out Whistling Past the Graveyard by Susan Crandall.

Rock Church Orphan Ministry Cares for Children Around the World By Doreen Rekoski

J

oe Brandi had a piece of the American dream… college pastor of a nice big church in Florida, making a nice salary, living in a nice house. Things were good. One day, a friend who worked for World Orphans asked if he knew how many orphans there were in the world. “A couple hundred thousand?” Joe guessed. “143 million,” his friend replied. That number is even higher today. According to UNICEF, it is estimated that 153 million children worldwide, ranging from infants to teenagers, have lost one or both parents. HIV/AIDS has orphaned 17.9 million children, most of them in Sub-Saharan Africa and Southeast Asia. Joe was awestruck at the number, but not enough to take the bait he knew his friend was casting. Life was too comfortable. The seed, however, was planted. Months later, after a battle with cancer that challenged everything Brandi valued and a trip to Kenya with World Orphans, the plight of the orphans became real. Suddenly he realized he needed to care for them more than he wanted to care for himself. Today, Brandi is the leader of the Rock Church Orphan Ministry, called Unity 4 Orphans, a non-profit which seeks to make a difference in the lives of orphans through fundraising initiatives and missionary trips to orphan communities.

Missionary trips to Tijuana are conducted monthly and international trips are led throughout the year in selected countries. “Our goal is to build consistent relationships with orphans as well as the local organizations that directly support orphan communities,” said Brandi. He says it’s an exciting time in the ministry. “We get to love and care for the kids, help to feed them and improve their environment. But, we also get to see the people who come with us to the orphanages change as well. It’s hard to see kids who have so little, and not feel the need to do anything to help them, even if it means uprooting your life to do it.” In the last year, the ministry has coordinated 12 mission trips to Tijuana, Mexico, and mobilized over 420 individuals who served a total of over 3,360 hours. ”I invite everyone to step out of their comfort zone and get involved with what God is doing in the lives of these children,” said Brandi. It was started in 2000 by Pastor Miles McPherson, a former NFL player.
