ummer is almost over, can you believe it? It’s definitely a catch 22; summer is fun and full of beach, summer camps, family vacations, lots of free time, etc., but there is something special about going back to school and having a dependable routine that we love… and parents and kids need! To help us all get back into the swing of things, and in “school mode,” we’ve included some fun features in this issue. Check out what some of your favorite celebs have to say about high school on Celeb Tracker: School Daze on page 5 and Pinterest Picks: Back to School on page 4 for some fun Back to School recipes and craft ideas, as well as a few laughs. Tell us when you started dancing and what made you want to start. I started taking dance classes when I was two. I always liked to dance to music and my daddy’s drumming, so my mom enrolled me in some classes. I fell in love with dance and haven’t stopped dancing since then. What styles of dance do you practice? What is your favorite/why? I have been training in Ballet, Jazz, Musical Theatre, Hip Hop, Tap, Lyrical, Contemporary, Philippine Folk Dance, Hula and Tahitian. They’re all my favorite because dancing gives me energy and life. Tell us about the training/how often you practice. I am at the studio 6-7 days of the week, between 2-4 hours a day. Sometimes we practice more if we have an upcoming recital or competition. Do you dance as a soloist or in a group? Which do you prefer/or what do you enjoy about both? I do solos, trios and group dances. I like trios and group dances because I get to work with other dancers and my dance teammates have become some of my best friends. I like solos because I get to showcase what I can do and challenge myself to do things I initially couldn’t do. We hear that you qualified to take summer intensive classes at Joffrey Ballet School in New York and American Ballet Theater’s Young Dancer Summer Workshop- congrats! Will you be attending either one of these? If so, what are you

most looking forward to? Yes, I did two weeks of the Joffrey Summer Intensives in New York--one week was for Musical Theatre and the next week was a ballet intensive, and then I did a two-week ballet intensive with ABT in Costa Mesa. What I enjoyed the most was that I got to watch a Broadway show, meet new dancers from around the world, and improve my technique and flexibility over the summer. What do you love the most about dance? What I love most about dance is that I get to work with teachers and friends, learn new things and express myself through movement. What advice do you have for kids who might want to start dancing? Have fun, smile, work your hardest, and if you can’t do something at first, never give up because you can eventually do it if you work hard. Tell us about your role at Student Ambassador at your school. What does that job include? I give tours to educators around the world and tell them about our projectbased learning school. I talk about the projects from the student’s perspective and show them how our projects are based on students’ hopes and goals, so the students have a voice in designing the projects. Is there anything else you would like to add? I’d like to thank my teachers at Evolution Dance Center and my family for always supporting me in everything that I do. NCK

How has living in North County affected your surfing career? North County has had a positive effect on my surfing because there are always waves somewhere, which keeps me in the water almost every day. Who are some local pros and companies that have helped you in your achievements? How? It was beneficial surfing with Josh Kerr a couple of times. He had some helpful tips to improve my maneuvers. Gravity Skateboards has helped me by giving me skateboards, so I can skate when the surf is flat. Any advice to other surfers out there looking to improve their skills? Surf every day in all conditions, and try to surf at different spots so you receive a higher variety of waves.

What do you love the most about surfing? Why? I really enjoy being in the ocean and I feel like I have a special connection with it. My other favorite part about surfing is just catching a wave and being able to do whatever you want in it; I feel so free and unique. Have you ever had any shark run-ins? Other sea creatures? Luckily no sharks, but lots of dolphin, seal, and sting ray encounters. Where do you see yourself professionally in 5 years? I will be a freshman in college balancing school, surfing and beach volleyball. Hopefully doing well in some QS and Junior Pro Contests. Who is your favorite pro-surfer? Stephanie Gilmore. I love her lifestyle and positive state of mind. I hope to be like her one day.

Where is your go-to surf gear shop? Hansen’s or Sun Diego. What’s the biggest wave you’ve ever surfed? 10 foot face at Playa Colorados, Nicaragua. Is there anything else you would like to add? I would like to say thank you to my Dad for inspiring my passion to surf and both my parents for supporting me in everything I do and always believing in me to be the best I can be. Rancho Encinitas Academy

Rancho Encinitas Academy (REA) in Encinitas is a hidden gem. There are two school programs available on one beautiful two-acre campus. Edison Academy at REA is a program within the main school for students grade 3-8, who have learning, processing and/or attention challenges. REA provides a small nurturing environment for students in grades kindergarten through eighth grade. First-time visitors to the campus are often pleasantly surprised when they enter the campus that sits behind the main building off of Encinitas Boulevard. The physical campus, with its’ bird aviaries, pet bunnies, a student garden, and outdoor amphitheater, reminds many people of a site where they attended, or wished they would have attended, summer camp. The environment was planned to be conducive to a safe, relaxing, and peaceful learning experience. This campus was specifically created to reduce stress and anxiety so that each student’s focus can be on learning. REA and Edison Academy have been providing an excellent educational experience to North County students for over twenty years. The really fun thing I am able to do at Edison Academy is really explore and provide project-based activities across the curriculum. For example, my class and I created a western town when we were studying the California Gold Rush. When we studied about weather, the students became weather forecasters and filmed their oral reports. These types of projects occur in every one of our classrooms across the curriculum. French Ham & Cheese with Cherry Mustard

You may have noticed at your local grocer that California cherries are in season. In addition to their good looks, cherries are chock full of good for you vitamins and minerals. They’re a great source of potassium, low on the glycemic index (leaving you feeling fuller longer), have anti inflammatory properties and get this–they’re a good source of melatonin, which reduces jet lag and helps you sleep better. Aside from being great for snacking on and baking with, there are lots of creative ways to incorporate cherries into your diet. Chef de Cuisine Jason T. Hall uses the juicy fruit to enhance a classic favorite; the ham and cheese sandwich. Hall is currently cooking up a storm at the lively new eatery, Jane Q, which opened in Hollywood this month. The father of 7 month old daughter, Westlyn, loves pairing this dish with a bright rose’ for a fancy brunch at home. 16

Ingredients • ½ lb. sliced Jambon de Paris • Two slices good brioche bread • Few slices Comte Cheese • Cherry Mustard (recipe following is a large batch, but great way to preserve cherries through the summer!)

Directions 1) In a large heavy bottomed saute pan or cast iron, give ham a quick sear on both sides. 2) Remove ham and add butter and bread to pan. Toast well and flip, adding more butter if necessary. 3) Give inside toasted pieces a good swipe of cherry mustard and add Comte (generous) and seared ham. 4) Put sandwich together and ensure that it is toasted well on the outside.

Cherry Mustard

Mustard Paste

• 5 lbs. fresh bing cherries, pitted

• Mustard paste

• 1 lb. brown sugar

• ¾ cup mustard powder

• 4 oz. sugar

• 3oz water

• 750 ml good red wine

• Salt to taste

• 2 cups red wine vinegar

Directions 1) In a 10-quart heavy bottom pot combine cherries, sugars and red wine 2) Turn heat on medium and cook out alcohol in the red wine 3) After 5 minutes add the red wine vinegar and cook down till liquid is reduced by 75 percent. 4) Once liquid starts to get low reduce the heat and don’t let the liquid foam with small bubbles (this means that you are creating caramel!) 5) Let the cherries sit and cool to room temperature.

6) Strain the liquid off the cherries and place them in a food processor to blend in several batches. 7) Start the food processor off slow and listen to make sure that there are not any seeds missed in the pitting stage. 8) Once the cherries are blended, slowly add the mustard paste (Careful not to make it too spicy! You don’t have to use all the paste!) 9) Add salt and cherry liquid to balance out flavor and consistency.

But when Granny dies, she leaves one last adventure, in the real world no less, for Elsa to tackle, and Elsa learns that their made-up world might not be so made-up after all. I really loved this book! It had humor, adventure, heartbreak, forgiveness, love, and redemption: everything that makes up a great story, with fairytale twists throughout. I definitely recommend it! I give it an A-. Also check out Britt-Marie was Here by Fredrik Backman, for the continued story of one of the characters from this book.

The Nest BY CYNTHIA D’APRIX SWEENEY Leo, Melanie, Jack, and Beatrice Plumb are dysfunctional siblings living around New York City. After years of waiting, their joint trust fund, which they call “The Nest”, is almost available, and each of them has plans on what they’ll do with their share. But when their addict oldest brother, Leo, gets into a car accident, the funds are threatened, therefore endangering his siblings’ financial futures. If I could describe this book in one work it would be boring. It took me months of picking it up and putting it down before I could finish. The characters are almost all unlikable, the plot is slow-moving, and there is very little closure at all in the end. After seeing it talked up so much, I was rather disappointed. I give it a D. Join the Hip Chicks Book Club this month in reading The Circle by Dave Eggers, and check back for my review!

How has living in North County affected your skating career? I love where I live because it has the best skate parks! It is easy to go to a lot of skate parks in one day. Who are some local pros and companies that have helped you in your achievements? My little brother started a skateboard company called Radley Skateboards. His skateboard decks are shaped perfectly for me and my sister. I love to skate with Jordyn Barrett. She is always so nice to me and my sister and always helps me learn new tricks. Where do you see yourself professionally in 5 years? I will still be in school and hopefully skateboarding and having fun.

What’s your favorite after-school snack (skating fuel)? I love Nutella on toast or Nutella with strawberries. I LOVE NUTELLA! Do you get nervous before every competition? If so, what do you do to relax and calm your nerves? I haven’t done many contests but if I get nervous before a demo then I normally sing a Katy Perry or Taylor Swift song in my head. What advice do you have for other kids thinking about learning how to skateboard? Never give up! Skateboarding is sometimes hard but the more tricks you learn the more fun skateboarding is.

We hear that you have several other talents and hobbies, can you tell our readers about those? I like to roller skate, do gymnastics and play the piano. I’ve been taking lessons for about a year and I hope to one day be able to play in a band. How do you juggle your other interests and skateboarding? I usually just do whatever my sister wants to do. We do everything together so when she wants to roller skate, we roller skater or when we want to skateboard, we go skateboarding. Things are always more fun together. NCK

B

efore the start of every school year one of my old college professors would reread the book Alma Mater: A College Homecoming, by P. F. Kluge. He claimed it helped him recharge his batteries and get excited about the upcoming year. Is there a book I can read to help me recharge my batteries and get excited about another year of elementary school? Because I really need something to energize me. Now, I don’t want to sound like an ingrate, but with four years of elementary school parental experience under my belt I’m approaching 2017–2018 with a bit of a pessimistic been there done that attitude. With one quick look into the crystal ball I can predict the future school year, and I’m not crazy about some of the stuff I’m seeing. It all starts the day before school when the parents flock to campus to read the posted teacher assignments. This is immediately followed by all of the parents complaining about

the teacher assignments. This really irks me, because it is my personal belief that if your kid attends a 5-star elementary school you automatically forfeit your right to complain about teacher assignments. But hey, that’s just me. After school starts it doesn’t take too long for the aggressive fundraising campaign to begin. In past years I bought gift baskets at silent auctions, purchased reusable grocery bags and stuffed my face at various restaurant nights. I am sure the school has spent the last three months strategizing on new and creative ways to suck money out me this year. I can’t wait to see what they’ve come up with. Once my pockets are cleaned out then I’m going to have to deal with my least favorite aspect of elementary school: girl drama. Darcy says I’m only her fifth best friend, boo hoo hoo. All of Mindy’s clothes are from Juicy Couture, boo hoo hoo. And this year I have a hunch that girl drama is going to transition to boy-girl drama. Trent likes Ali more than me, boo hoo hoo. Thankfully there isn’t too much drama with

my son and his friends. There is however an obsession with flatulence. I’ll take cutting the cheese shenanigans over girl drama any day. At some point during the school year I know I’m going to be drafted to chaperone multiple field trips to various lagoons. And it seems like I always get stuck with a kid in my group who likes to pull fire alarms, break glass bottles and/or disappear. Lucky me! But despite the anticipated hiccups I know are coming my way this academic year, I’m going to really try to enjoy the experience. Whenever the elementary school water gets a little choppy, I’ll just remind myself that soon my kids will be in middle school and they’ll be totally embarrassed by me.
