I believe energy and enthusiasm plays a big role and if a baker is not excited to bake for your wedding then

Q What are our options for flavours? We start with a list of seven base cake flavours, and then allow our clients to customize their cake by mixing and matching an almost endless list of possible fillings. Our butter cream (made with real butter and absolutely NO trace of margarine or artificial ingredients) can be flavoured with everything from fruits to liqueurs, or you may opt for a rich chocolate ganache, creamy French butter cream, or fruit compote. We can even do a fruit cake for all those old-school vanguards out there! Q How much cake do we need? This is all dependant on whether or not a plated dessert comes with the meal from your venue. If there is a plated dessert served after dinner I generally tell my couples to make sure the cake feeds at least 60-70% of your guests. If a dessert is not included and the cake will be the main dessert for the evening, at very least make sure you have enough cake for each guest to have at least one serving. If you know you have a lot of sweet tooths in the crowd or will be having a brunch the next day you can always increase that number by a bit.

BUDGET PLANNING: HOW MUCH TO SPEND ON YOUR CAKE
When it comes to cakes, where do you spend? Where do you save? It’s Love has you covered! Text by Maria Kenney
Set Your Budget Before you start planning or pinning anything, sit down and figure out a realistic budget for your entire wedding and assess where your cake and other sweets fit in. You’ll need to know a pretty specific number before you meet with your cake baker and set the wheels in motion. Kayla of Laugh Love Cakes says this: “I think the most important thing is being realistic and upfront with your cake designer about your budget you are hoping to stay within. There are so many beautiful techniques in the cake world, some you may not of been aware of, so being open to suggestions and design alterations from a trusted cake designer will help you get your dream cake, all while staying within budget!”
Know the Numbers There’s a great saying in the cake world: Good cake ain’t cheap, and cheap cake ain’t good. This mantra applies to looks, texture, colour, and flavour, among other things, and unless your best friend happens to be a professional cake baker, your cake will cost you. Michelle from High Tea Bakery gives a great range: “A cake might cost $300 or $2000. A professional bakery will work with your budget to get as close to your dream dessert as possible.”

THE BUDGET
Forgo Cake If you’re looking to save a buck, you might forgo the cake altogether and opt for a sweets table instead. There are lots of creative ways to create a sweets table, and if you purchase cookies or hard candies, or better yet, elect a few close relatives to bake pies and homestyle desserts, you’ll really cut down on costs. Michelle from High Tea Bakery says: “The spectrum of possibilities is pretty endless. You might opt for a dessert buffet or just cookie favours instead.”
Save Some $$$ If you need to cut back but you still want a cake, you can ask your baker to provide a very small cake for display purposes only. That way, you’ll still get the classic photo of the cake cutting, and maybe even a shot of you and your groom food fighting. You can always ask your baker to include a sheet cake in the same colour and flavour as the display cake for serving purposes, or you can see what options your venue or caterer offer for plated desserts, which can sometimes be less expensive.
Spend Some $$$ If you’d rather splurge than save, you’re in luck—cakes and sweets are a great place to do so! Cori from Sweet C Bakery recommends choosing items that span across a variety of desserts: “Cheesecakes, truffles, macaroons and meringues are elegant and classy. They can be found in a wide variety of flavors. Another splurge would be to spend the extra on table décor. Cake stands add height and dimension, mirrors add depth and a very dramatic touch, don’t forget about signage and any extra details (flowers, backdrops, banner) that will make the dessert table pop.”

Kristina and Eric met in H I G H S C H O O L and they knew they would be married some day. Kristina described her perfect engagement ring, Eric teased her saying it didn’t exist. On the night he proposed, Eric took Kristina through the Leo Mol Sculpture Gardens, where they would say their “I dos” only a couple months later. He stopped her, got down on one knee, and pulled out a box. Inside was the exact ring she had described.
“The photos were so much fun, especially for a groom who does not like photos! We both enjoyed getting ready the morning of the wedding with our family and friends. Dancing to music and laughing all morning was a great way to keep us relaxed.” Kristina, the bride

FIVE YEARS LATER, Dean proposed at Melanie’s favourite restaurant, and they were so excited to share the news that they took their food to go. Their wedding day was an elegant affair complete with Jewish traditions that were of significance to the couple. They even displayed the receipt from the pair of shoes that had first brought them together. Opposite: Flowy chiffon bridesmaid dresses from Stella's bridal couldn't have fit the colour palette better; Black tuxes with skinny ties for the groomsmen and a bow tie for the groom gave off a James Bond feel. 1 | NAKED CAKES This style of cake is an updated version of the rustic buttercream cake. A naked cake is for a bride who is not interested in fondant but wants something a little different than a standard buttercream cake. The addition of fresh flowers and or
fruit makes this style of cake a beautiful addition to a rustic dessert table.
2 | PAINTED CAKES Painted cakes are completely on trend for this season. This technique is a soft and pretty way to add pops of colour to a wedding cake. Just as an artist would paint canvas, fondant cakes can be painted in a variety of ways such as in a watercolour technique or painted florals. A painted cake can add interest in a subtle way and is a great way to pull in your wedding colours without using monotone coloured fondant.

3 | METALLICS Pops of silver and gold are being seen all over wedding cakes this season. Metallic elements can be added to a wedding cake in various ways such as metallic leafing, sugar pearls/ dragees, edible glitter and metallic paints. All of these decorating materials add help to add hits of glam and drama the overall cake design. Adding metallic elements is a great way to add a hint of glimmer and interest to a cake’s colour scheme.
4 | TEXTURE The beautiful thing about adding elements of texture to a wedding cake is it gives the design dynamic dimension and plays as a lovely backdrop to accent sugar flower arrangements on the cake. Inspiration for texture elements used on a wedding cake can come from so many difference sources such as the brides wedding dress, bridesmaid dresses, invites, linens etc. There are so many creative ways to add texture, such as ruffles, embossing, floral/ lace appliques and piping to name a few.
5 | SUGAR FLOWERS Sugar flowers are one of my personal favourite additions to a wedding cake design. Because each flower is made by hand, every flower is unique and custom made for each sugar flower arrangement. They are a beautiful way to bring in the wedding’s colour scheme into the cake design and can be made in a more whimsical style or more realistic to match the blooms that may already be flowing throughout the venue. They add stunning drama and a beautiful focal point to any cake.
