letter fromTHE PUBLISHER Here at Heartland LIVING, stories and photos are assigned in
advance of the publication date. But we have to be flexible, depending on what’s going on in our Heartland Communities. It is my job as publisher to find the most interesting and unique stories for you, our readers. After the recent big scare of Dorian and us all scrambling to make sure we had everything we needed to be prepared, check on our families and neighbors, we were blessed Dorian took a turn in his path and Florida was safe. I love how our communities have joined together to do everything they can to help the Bahamas. We will continue much needed prayers for them. This is where we had to be flexible when I came across the information on the NOAA Hurricane Hunters. One of the most fascinating things about scientific research is its unpredictable nature and this story sure caught my attention. It is so interesting what is in your community and you never even heard about it. These specially equipped NOAA aircrafts play an integral role in hurricane forecasting and are based at the Lakeland’s Linder International Airport. Data collected during hurricanes by these high-flying meteorological stations help forecasters make accurate predictions during a hurricane. I hope you enjoy the science and technology when you read about the Hurricane Hunters. Another hidden gem in our communities is Archbold Biological Station nestled out of town in Venus, FL. Thirty years ago, a partnership between Archbold Station and Buck Island Ranch inspired a mission: cowboys and scientists working together on a ten thousand acre working cattle ranch. You will read in their story how Archbold has taken advantage of a tremendous opportunity to purchase Buck Island Ranch making the Ranch part of Archbold forever. This will preserve and protect this important piece of Florida's heritage of science and conservation in Florida and beyond. Now far away from science and technology we bring you a cool hippie-chic surf town in Sayulita, Mexico. Who doesn’t like to travel? I believe it is good for the soul… I first had to get through all Jenny’s gorgeous photos of this village before reading her story. This is definitely on my bucket list now. How could it not be with accommodations called Casa Love, and their motto being “Live what you Love”. October is Breast Cancer Awareness and I can’t thank these five women enough for coming together and sharing their stories with you. I’m blessed to have the honor to personally know each one of them and be able to call these strong women my friends. You never know whose life you might touch by sharing your journey, what ever it might be. My heart was touched with this Pink Sisterhood story. BRIDGETTE WALDAU has been a graphic and fine artist for over 30 years. She received her A.A. from the Ft. Lauderdale Institute of Art and a Bachelor of Fine Art degree from Stetson University. She moved to Okeechobee in 1994 where she opened her art studio. Bridgette has been creative director for several publications, working with Heartland Publications & Marketing as art director since 2011, winning eleven Florida Magazine Charlie Awards (20152018). She is Arts & Culture Alliance Director (13 years) for Okeechobee Main Street. Bridgette is married to James Waldau, a retired firefighter from the City of Hialeah. RAFAEL PACHECO I am a Pisces and was born on the island of Puerto Rico. My dog thinks I am crazy for locking the door so many times in 10 seconds and my cats think I am made of catnip. Everything I wear is black, gray or blue. If I put on something colorful I must have been in a hurry. Photography is how I have let my artistic visions come to life since the early 90’s. Patience, kindness, sharing, sacrifice, love and not to judge I saw my mother practice these and they stayed within me. We are collective energy and all from the same Source. I don’t see the world through my eyes. I see it through my soul.
LAYNE PRESCOTT Layne was born into a military family, has lived overseas but did most of her growing up in Arcadia. After meeting and marrying Mike Prescott, she moved to Wauchula in 1979 and now calls it her home. She and Mike raised their three children there and now are reaping the benefits of their labor with six sweet, beautiful and perfect grandchildren. Her cooking style is eclectic and best described as “Southern comfort cuisine”. Her greatest joy comes from three things: her faith, loving on her family, and getting in the kitchen and “whipping” up something good.

JESSICA PLEGER is a wife, mother, editor, writer, and caterer. She attended the University of Central Florida where she received a Bachelor's Degree in Finance. Before working full-time at Heartland LIVING, Jessica was a paralegal for over 15 years. She is also the owner and operator of Pink Pineapple Catering. Jessica enjoys being outdoors, traveling, and participating in community events throughout the Heartland. A lifelong resident of Florida, Jessica was raised in Hardee County and now resides in Avon Park with her husband, Jonathan and daughter, Finley Grace.
KATY FASSLER has been telling stories since she was able to scribble her name in crayon on the wall. Hailing from Akron, Ohio, she moved to Sebring in 2006 to attend the Great Commission Bible Institute. Katy, an avid reader and book collector lives by Dr. Seuss’ advice, “Fill your house with stacks of books, in all the crannies and all the nooks.” Katy and her husband, Sean, live in Sebring with their two daughters, Adia and Emery.
JENNY ACHESON After a childhood following her UN parents to different countries and doing a French degree in England, Jenny worked as an editorial, lifestyle and travel photographer for 25 years in London, Paris and New York. When she met her husband Dale Rieke, she moved to Sarasota and together they set up Wood Street Studio, a woodworking studio and the vacation rental, Lido Beach House . Her photography clients are international magazines and newspapers and now include the local Sarasota Magazine and Edible Sarasota.

KRISTY HARRIS is a graphic designer and artist in Sebring, FL. Originally from Michigan, Kristy and her husband moved in 2007 to Highlands County where she received her Bachelors of Fine Arts Degree from Northern Michigan University. Kristy has owned her own freelance business, Kristy’s Kreatives for the past three years. Starting her own business gave her the opportunity to stay home with her daughter, Olivia and work with Knotty Girl Loves, Inc., a non-profit organization. In her spare time, Kristy enjoys painting, taking photos of her daughter, traveling and spending time with friends and family.

EMILY PLANK has a photography business rooted in her hometown of Lakeland, Florida that is celebrating 7 years. She is a graduate from the University of Florida with her Bachelor’s degree in Studio Art where she focused on drawing and painting. She fell in love with photography while at Florida, studying film and digital photography –then started her business while in school. She loves to tell a story, whether it’s that of a person, place or space she is dedicated portraying her subject’s beauty. s Floridians, we all know the terms ‘Spaghetti Models’, ‘Cone of Uncertainty’ and ‘Hurricane Hunters’ all too well. Living in Florida definitely has its perks but there are risks to the reward of year-round variably warm weather and beautiful beaches. Hurricane season is not something that we take lightly especially in recent years where many hurricanes have hit home or close-by.

he National Oceanic and Atmospheric Administration (NOAA) operate specialized aircraft that play an integral role in forecasting storms that develop all over the country. The NOAA Aircraft Operations Center (AOC) recently moved to its state-of-the-art new facility at Lakeland Linder International Airport in Lakeland. The crew of the NOAA are composed of federal civilian employees and officers of the NOAA Corps, one of the seven uniformed services of the United States. These pilots, civilian flight engineers, meteorologists and electronic engineers are well versed in their field giving them the training they need to work in adverse conditions. The NOAA offers a fleet of aircraft; each equipped with a variety of meteorological and oceanographic instruments to gather data in and around a storm. The Lockheed WP-3D (P-3) Orion is a variation of the plane used by Navy, designed specifically for NOAA. The two P-3s on the fleet are nicknamed “Kermit” and “Miss Piggy”. They adorn unique logos on their side that were created by Jim Henson of the “Muppet Babies” specifically for the planes with the original artwork being licensed to the NOAA. These planes literally have radars from head to tail. Although built in 1975, these planes are very well taken care of and well maintained. Heartland It truly takes a village of technicians, mechanics, LIVING etc. to keep these planes in top condition. These October are very pretty planes! The pure magnitude of November 2019 their size, pristine condition and not to mention the technology encompassing them was truly breathtaking. 25

uring my visit to the NOAA facility, Miss Piggy was getting ready to take her first flight since being back home. Miss Piggy has been undergoing refurbishment for the past 2 years to keep her in tip top shape and give her new wings to extend her service life. While this was happening, Kermit has been the man for the job. Kermit had his facelift a few years back, 2014-2016, and Miss Piggy carried the load then. They are both part of the active fleet again and ready to take on their next missions.„

hile the P-3 flies directly into the storm, another aircraft on the fleet has an equally important job. The Gulfstream IV-SP, known as “Gonzo” jet flies above and around the storm to gather atmospheric date directing the storm. If you remember with Dorian, there were two different high pressure ridges that were very instrumental in determining the future projected path. It was the Gulfstream IV’s mission to monitor and gather data from these pressure ridges for accurate portrayal of the future of these storms. During Hurricane Dorian, history was made with a three woman crew piloting the G-4, two experienced pilots and one in training to be the next generation of Hurricane Hunters. This plane flies through the highs and the lows that determine the steering of the storm. If you remember during Dorian, we were watching to make sure the northern High would weaken so that the storm would steer North. As they predicted, Dorian took her projected northerly path. During the 8-hour flight through a storm on the P-3, the 16-20 person flight crew is composed of three Pilots and two Flight Engineers along with a variety of scientists, technicians, and meteorologists. The pilots and engineers switch off approximately every two hours to rest and refresh due to the intensity of the flight. Just think, most of their flight, they can’t see in front of them while flying through a hurricane, they have to rely solely on the instruments.

year Navy veteran Paul Darby has been with the NOAA for 13 years as the Flight Engineer. During his time in the Navy, Darby also flew on the P-3 so his knowledge of the aircraft is vast. Darby is tasked with maintaining the speed. He works with the 2 pilots. The pilot on the left is the one that keeps the plane level and on track and he is the one that keeps the speed moving. You want to stay at a constant speed of about 210 knots. If you go too fast, it’s too rough on the crew and the plane and if you go too slow, well, you essentially fall out of the sky. It’s also the ideal speed for the instruments to collect data. As the plane goes through rain bands it will either speed the plane up or slow it down so he is constantly moving the levers to control the speed of the plane. He also watches all of the instruments and aircraft systems down to controlling the air conditioning in the plane. “I call it kind of an orchestra within the flight station to keep the plane in the air” says Darby. It takes a village to keep these planes in optimum conditions. Lieutenant Commander Brian Richards is the Navigator and was present on the P-3 for much of the Dorian missions. He works directly with the Flight Director to ensure the plane is in the correct position to collect accurate data. In addition, he is responsible for preparing a flight plan, which includes the route, headings, and altitudes to be flown, checkpoints, and estimated fuel consumption. Seated next to the Navigator is the Flight Director, sometimes referred to as the In-Flight Meteorologist.

ichard Henning covered that role in many of the Dorian missions as he’s done with countless other missions. His duties are to ensure all science objectives are met and that they are met safely. “My primary concern is of the flight of the crew and any of the scientists and guests that may be onboard the aircraft whether it be the P-3 or the G-4. Second to safety is making sure that all of the requirements on our flight from the National Hurricane Center or the hurricane researchers that are flying with us, they accomplish everything that they need on our mission.” They want to ensure all data that is gathered is accurate and no bad data is sent back to the ground to the computer models that forecast the hurricanes. For example, the tail doppler radar data on the P-3 goes directly into very high-resolution computer models.

n addition, they use “dropsondes” which are large biodegradable tubes that are equipped with technology that transmit air temperature, humidity, pressure, wind speed and wind direction data. These tubes are released over the ocean and parachute down, collecting date along the way. The parachute helps stabilize the tube so it falls upright which makes it easier to track several GPS satellites as many as 13 or 14 to get an extremely accurate solution for its exact location. They transmit data back to the aircraft every quarter of a second as they are carried through the wind. On any given mission, 30 – 35 dropsondes are released. During the Hurricane Dorian Missions, 40-50 dropsondes were released due to the intensity of the storm. Both the P-3 and the G-4 utilize these devices to collect various, extremely accurate data. The G-4 flies at 45,000 feet so it takes about 15 minutes for the dropsondes to reach the ocean; the P-3 flies at a much lower altitude, 8,000 to 10,000 feet, so the time in the atmosphere is only about 5 minutes. We rely on the joint efforts of experts to gather and evaluate information through the various avenues of technology to best determine the projections of these storms. This is where we get our Spaghetti Models and Cone of Uncertainty. They have worked endlessly over the years, and continue to, to develop the best tools to give the earliest projections so that casualties and property damage are minimalized. It brings such peace of mind knowing the amount of knowledge and data this group of individuals obtains to determine storm projections.

In their off season and even in between storm missions, these teams are given research projects for national and international meteorological and oceanographic research programs. Soon they will be resuming their mission on one of NOAA’s Twin Otters, to assist research on the endangered North Atlantic White Wales off the Northeast Coast and another will be studying ice seals in Alaska. Their studies of our earth’s atmosphere and how it affects humans and animals alike are limitless it seems with ever improving technology; and so intriguing to me. History Archbold Biological
Station has a long and interesting history. The land was originally purchased by John A. Roebling, II, grandson of the Brooklyn Bridge designer. Roebling’s wife, Margaret Shippen McIlaine, had a “lung ailment”, tuberculosis, and therefore needed a winter home away from the New Jersey winters. In 1929, the Roeblings purchased 1,050 acres just 8 miles south of Lake Placid, FL. Named “Red Hill” due to the red sand, they planned to build a mansion on its highest point. Before construction on the home, Roebling built a storehouse and other supporting buildings. Mrs. Roebling unfortunately died before the mansion was built and it was never completed. Roebling’s son, Donald, used the Red Hill Storehouse and Lake Annie for the first test runs of his amphibious vehicle, the Alligator, which became the prototype used by the U.S. Marine Corps and Army during World War II. On July 28, 1941, John A. Roebling, II gave the Red Hill Estate to Richard Archbold, a childhood friend of his son, Donald. Archbold, a zoologist and philanthropist, was independently wealthy being the grandson of John Dustin Archbold, an oil tycoon bought out by John D. Rockefeller. Richard Archbold used his wealth to finance a series of biological expeditions to New Guinea for the American Museum of Natural History. A lover of nature, Archbold used the gift of Red Hill Estate to establish the Archbold Biological Station to start his research of the rich biodiversity of south central Florida. Archbold spent the remainder of his life at the Station and died on August 1, 1976. His vision for Archbold Biological Station remains to this day. Pine Lilly by Reed Bowman

Research “Ecological studies
at Archbold Biological Station take advantage of opportunities for research in a landscape mosaic ranging from pristine Florida scrub at the Station and other conservation lands along the Lake Wales Ridge, to restoration sites particularly the Archbold Reserve, fragmented suburban landscapes, and agricultural lands throughout south central Florida. Staff and visiting scientists study the ecological patterns and processes, employing both observational and experimental approaches in short-term and long-term studies. Research spans the entire spectrum of modern ecology including Population Biology, Evolutionary Ecology, Animal Behavior, Agroecology, Ecosystem Ecology, Landscape Ecology and Biogeography, Conservation Biology and Restoration Ecology.” Beginning in the 1950s, Archbold Biological Station has been available to graduate students to conduct research. Students from all over the world have traveled to study at the Station.

Archbold Biological Station is passionate about sharing the experience with students of all ages. The Station provides an in-depth opportunity for Highlands County Schools in grades 3-5, as well as neighboring counties. This includes digital materials given to teachers to use and an opportunity for a full day field trip. More than 1,300 students take advantage of this opportunity every year.

In 2011, with an effort to expand educational opportunities, Archbold Biological Station built two incredible buildings to facilitate further education. Named the “Frances Archbold Hufty Learning Center”, in honor of Richard Archbold’s sister, Frances. She took the helm after his death, integrated exhibits and displays to develop understanding of the water cycle, energy, as well as the plants and animals native to the scrub White Tailed Buck by Reed Bowman
in south central Florida; fostering an understanding of the human impact and how we can be apart of creating a more sustainable world. The second building, The Adrian Archbold Lodge, accommodates visiting researchers, college classes, and professional groups. Both buildings are certified LEED (Leadership in Energy and Environmental Design) buildings. "LEED is the national accreditation system for ranking green buildings. Most of our green building goals were met by clever design – aligning the building and windows to maximize the use of natural lighting and reduce heat loading, so we can lower energy consumption to 55% below that of a typical building of the same size. The use of solar water heating panels, and capturing and recycling water, are other conservation methods we implemented in the Center,” Executive Director, Dr. Hilary Swain explains. In addition to the trails, the exhibits, and class field trips, Archbold Biological Station also offers a summer camp for kids ages 7-12. The camp provides hikes, visits to a working cattle ranch, swimming in a sinkhole lake, as well as meeting scientists, creating arts and crafts, and making lifelong friends.

OKEECHOBEE TO CELEBRATE THE 500 YEAR ANNIVERSARY OF THE FIRST CATTLE ARRIVAL TO THE STATE OF FLORIDA
Cattle Drive Sculpture Project Presented by Okeechobee Main Street’s Arts & Culture Alliance
Okeechobee Main Street’s Art and Culture Alliance is raising funds to bring a bronze cattle drive sculpture to Okeechobee. The project will consist of ten bronze sculptures and will include a horse with rider, calf, dog, six head of cattle and cowboy on a fence. The sculptures will celebrate the ranching lifestyle in Okeechobee County as well as celebrate the 500-year anniversary of the first cattle brought to Florida. In 1521 the earliest Spanish explorers and seven Andalusia cattle arrived on Florida shores. The project will be installed in the City of Okeechobee at Flagler Park in the Fall of 2021. The cattle sculptures will graze on the grass along side of the sidewalk with native plants added for authenticity. Visitors will be able to walk along the sidewalk and feel like they are in the middle of a cattle drive and will also be able to read about the history of Okeechobee ranchers. The OKMS Arts and Culture Alliance’s mission is to connect people to the arts and to each other. We want our art projects to celebrate the uniqueness of our community. This exhibit will not only be a celebration of Okeechobee ranchers but will also be an interactive installation containing historical content within the exhibit. This sculpture project will preserve the legacy of Florida heritage for many generations to come, allowing the essence of the Florida Cowboy to come alive here in the Heartland. The brightly colored flags fluttered above the cobbled streets as we jostled into town. Dodging barefoot surfers, elegant girls in floaty skirts and Mexican families piled high with beach toys, we made our way to the quaint town square. I grinned at Dale. Here we were! Sayulita, Pueblo Magico. „

nly an hour ago we had been downing free margaritas in the Puerto Vallarta arrivals lounge, served by laughing ladies in traditional dresses. We had jumped into the rent-a-car to drive the 26 miles north on Route 200, past tower hotels and Home Depots, to the hippie-chic, surfing destination that is Sayulita. When surfers first arrived here in the 70’s it was a small fishing village. The fabulous waves soon became a draw for both beginners and more skilled surfers looking for barrels and empty breaks. Today, all ages play in these legendary Pacific Ocean waves of this still un-spoilt Riviera Nayarit. July is a popular time for Mexicans to take their vacations. The town was throbbing with activity, the beaches were crowded with families, the restaurants churning out margaritas and grilled shrimp tacos at a crazy rate. Locals here don’t make you feel like a gringo; it seems tourists and locals live in harmony. Dale’s reports from the water were that surfers are chill, there is little localism, the youth are friendly, no-one hogging waves, or cutting people off. It’s not like this in all surf towns.

e found our accommodation, Casa Love. “Live what you love” is their motto emblazoned in the window of Pachamama, their shop below. Red heart stencils plaster the steps going up. Just seconds from the beach, it’s a big white house with palapa-style roofs, seven breezy rooms, a large common area with red and pink walls and arches filled with books, artwork and musical instruments. Enormous white dream-catchers sway from the rafters. We walked though a courtyard of potted tropical plants and climbed up to our room. From the open whitewashed windows we looked out onto the pale blue Pacific and felt the softest of breezes. It was a hot day. There was a smell of garlic from restaurants below. atalie Mignot, a self-described “nomad and citizen of the world”, built Casa Amor 17 years ago. Her brother then opened Hotel Hafa, a Moroccan inspired guesthouse also in the middle of town. They raised their kids here; Natalie’s grown son and daughter are both incredible surfers. Natalie herself is awe-inspiring – she has been everywhere, seen everything, is truly generous, spirited and wise, conscientious (no plastic) and very cool! When we arrived, guests were sitting around the communal table learning how to make clay flutes with Maestro Oscar Herrera from Jalisco. Dale raced off for an afternoon surf and within minutes of me walking onto the beach I found myself settling down for an hour-long massage ($25!). With the tent curtains flapping softly, I listened to the waves and happy people all round. At the glow of dusk we ate at Barracuda on the corner – fish of the day and passion fruit margaritas – and watched as farmers rode their horses home through the streets and musicians set up for a night of entertaining.

right and early, after a morning long-board session out front, we wandered over to Miscelanea at Natalie’s suggestion. It’s a breakfast and lunch place styled in a hip and pared down way. We ate “chilaquiles” – tostadas, avocado, poached eggs, feta and cilantro cream. Heaven for 90 pesos ($4.50). Hungry for different waves, we briefly explored shiny Punta de Mita, an exclusive resort community, on the way to La Lancha Libre – a great point break that catches a south swell and offers several gentle waves for all skills. A few miles north of Sayulita, another great spot to surf is the tiny and typically Mexican town of San Pancho, snuggled between jungle and hills. It’s similar to Sayulita; a warm mix of Huichol Indians, slow pace, cobbled streets, beachy vibe and bohemian expats (from the US, Canada, Europe and South America) who have arrived with their art galleries and restaurants.

Back in Sayulita beach fiestas were in full force. At Leda Ristorante we listened to the mesmerizing sounds of Latin American music sung by our beautiful new friends, Julia and Luna of Kintu, then tumbled into bed. Being the surf widow, I sometimes am, the next day I had booked a “food tour” through Airbnb Experiences. I was surprised to find that Kaden, my guide, was a 14-year-old toe-headed blonde from Oregon! His younger brother trailed behind doing photos and video for marketing purposes. A self-titled entrepreneur the confident youngster was amusing and fairly informative as we raced around all his favorite places to eat.

ale and I moved up the street to an Airbnb - Mi Lugar Sayulita (I love trying out different places to stay!). Above Revolucion del Sueno, one of the coolest gift stores in town, it’s exterior the brightest of reds, our welcome was a black door plastered with the words “Mas Amor por Favor” (More Love Please). It was cool and bright and sparkled with the immaculate décor of an uber-design duo who also did design work at the nearby W Hotel. Soothing colors, modern amenities (iPad, Bose mini speakers and scented candles by the bed), luxury linens, baskets and weavings on the wall, and the loveliest of balconies complete with outdoor kitchen, dining table and hammock, were all things to write home about! One floor up was the roof deck with mini pool and lounge chairs and a 360-degree view of Sayulita. Dale grabbed the ukulele leaning on a shelf, cracked open a Pacifico beer and we watched the last surfers float into shore as the sun disappeared behind the rustling palms.

uffled by sliding glass doors and a mountain of downy duvet, the sounds of a new day woke us the next morning – street sweeping, unpacking of ice, greetings of shop owners, cries of a street hawker selling his wares. Surfboard and cameras under our arms, we grabbed our usual coffee from Taller D stand, Dale went surfing and I went in search of pom-poms. I had seen garlands of multicolored pom-poms hanging everywhere in the streets, dangling off people’s golf carts, in tourist shops. Women from the Chiapas Highlands with babies on their hips peered through endless curtains of them at the “hippie market”. It is also a tradition to braid them into their hair. As well as the artisans, woodworkers and craftspeople selling their goods, there are also expensive décor and fashion shops dotted around town Ula, Manyana, Evoke - not to mention the vendors selling hammocks, blankets and jewelry on the beach. For the more adventurous vacationers wanting a change from watersports and shopping, you can go horse-riding, whale watching (December to April), hiking, bird-watching, as well as join chocolate, macramé́ and pom-pom workshops.

Someone once told me that breast cancer is a club that no one wants to be in, but it’s the very best club to be in and the members are great! To someone on the ‘outside’, someone who hasn’t been in the throes of breast cancer…that might not make a lot of sense. But with 1 in 8 women and 1 in 1,000 men – roughly 250,000 Americans - being diagnosed with breast cancer each year, chances are you know at least one person who has been
‘IN THE CLUB’.
When you are given a cancer diagnosis, one would think that your outlook would be anything but positive. But when talking with breast cancer survivors, I am consistently amazed that they all have the same types of things to say in regards to their breast cancer journey. Over the years and through various ‘hats’, I have had the opportunity to get to know many breast cancer survivors. On one sunny, Wednesday evening I met with five breast cancer survivors from Florida’s Heartland and had conversations that will stay in my heart forever.

JANE BAYLESS,
a two-year survivor who found her stage 1 cancer during a routine 3D mammogram and because the cancer hadn’t spread to her lymph nodes she was a candidate for interventional operative radiation during her lumpectomy surgery.
KELLIE DUKE
, a two-and-a-half-year survivor who found her cancer during an annual mammogram that was six months late. She was diagnosed with Stage 1a invasive ductal carcinoma and chose to have a total mastectomy to avoid extra radiation.
CATHY ALBRITTON, an 11-year survivor who found her cancer
during a routine mammogram. She was diagnosed with stage 1 and underwent two lumpectomies and radiation and years later a total hysterectomy to prevent the development of uterine and ovarian cancer. Through her work at AdventHealth, Cathy raises awareness of the importance of annual mammograms and breast health screenings as well as helps to raise money that offers mammograms to women in need.
TERESA VICKER,
a 17-year survivor found her cancer one day after noticing a protrusion from her left breast. Because of her family history of breast cancer, she was treated aggressively with a double mastectomy, lymph node removal, six months of chemo and several weeks of radiation.
DIANA ALBRITTON
, a 17-year survivor who found her cancer after doing a self-check. Diana has had six breast cancer related surgeries including a mastectomy and lymph node removal. Because of so many surgeries, Diana experienced nerve damage, lymphedema and was disabled in her right arm for two years. Diana founded a non-profit, Knotty Girl Loves, Inc., that educates on the importance of monthly breast self-checks for the early detection of breast cancer. „

Tell me about what it’s like to be a breast cancer survivor? How is life different from before you were diagnosed?
KELLIE:
(she gently places her hands on her heart) I felt God's peace from the beginning as he walked alongside me from the moment I was told, "We think you have breast cancer," all the way through my surgeries, until right now. God gave me the courage and strength I never knew I had. It came from way down deep. Having cancer helps you get your priorities in the right order really quick! God, family, friends, and what you do for others, is most important to me. I have changed in that, I have become a ‘Prayer Warrior’, and am convinced my mission in life right now is to pray for other women who are facing what I went through.
JANE: Yes, cancer definitely unites us! (she smiles at Teresa, they call each
other ‘breast friend’) I strongly feel that God gave me cancer for a reason, he knew I was strong enough and that I would be an advocate for educating others on the importance of screenings, early detection and awareness.
DIANA: I am not glad to have had cancer – BUT…there is a ‘but’ (as she
points one finger up into the air), did I get something beautiful and beneficial for others out of this that I wouldn’t have discovered any other way? Yes! I have overcome a lot of obstacles, but through it all…I have learned to love my life, live big, appreciate the small things, value myself more than ever and how to turn a negative into a positive!
CATHY:
My life is sweeter. I’ve always been a ‘glass half full’ kind of girl, but cancer really does change the way you look at things. You notice more caring and the precious little things. Looking back at the last eleven years of abundance in my family, I have had the joy of three marriages and five grandchildren!
TERESA:
We’ve talked about this before…I don’t save my celebrating for just birthdays. Every day I wake up is a CELEBRATION of life! I don’t need to wait for a certain day to make a big deal about that!

KRISTY:
My goodness, y’all are a special kind of amazing, you know that?! (They all giggle and jokingly wave their hands at me as if to shoo me away.) Do you think people see you as differently as you see the world now?
DIANA: People would say to me, “Well you don’t look sick. You don’t
look like you’ve had cancer” My question is, what am I supposed to look like? (she lifts up a section of her hair) All this? This is bonus hair! I keep my hair long to show women that even though it all falls out, it grows back! I dragon boat paddle, white water raft, zip line…simply because I CAN!
KELLIE:
I think I came out on the ‘other side’ stronger! I live my best life and do my best to instill that confidence in others. Especially for our Pink Sisters by giving them hope as they face this disease.
TERESA: (gesturing to Cathy and Diana) We are the pioneers of
breast cancer. Survivors of ten plus years…so much has changed in how we diagnose and treat now. We are so blessed to be standing here today and the foundation of support for the Pink Sisters that come after us. My first call was to Diana (Albritton) when I got diagnosed.
CATHY: Mine too! Since then I have had women call me…in fact, I
just had one call me last week. (silence sweeps the group) I always tell women that they are never, ever alone. Seek out the positive women, they are the ones that’ll hold you close through this journey. Because… that’s what we do. Heartland LIVING October November 2019

The word doesn’t even begin to cover a way to describe these women, does it? Incidentally, most of the ladies showed up to our meeting already decked out with arm candy featuring words such as, ‘Believe’, ‘Fighter’, ‘Fearless’, ‘Hope’, and ‘Warrior’. If you have heard the quote by Jake Remington, “Fate whispers to the Warrior, ‘You cannot withstand the storm’. And the Warrior whispers back, ‘I am the storm’.” I am certain you can join me in believing he was writing about a breast cancer survivor. No two journeys through breast cancer are the same and yet it yields the same type of Warrior. Filled with tenderness and compassion and fueled by the strength to keep going. After all, they are paving the way for future members of The Pink Sisterhood.-
GOOD BREAST HEALTH is key in detecting breast cancer early.
Here are some tips for helping to detect the signs of breast cancer early. Annual screenings such as mammograms play a key role in detecting tumors that are too small to be seen or felt to the touch. Ask your health care provider about when the best time is to begin annual screenings. Knowing how your body looks and feels by doing monthly self-checks will help you to alert your provider to any changes you may notice between annual mammograms and wellness exams with your provider. Things to look for: changes in size or shape, pain or swelling, nipple discharge, dimples of the skin, and/or lumps that can be felt under the skin. If you notice something unusual for your body, don’t panic! 80% of breast lumps are non-cancerous, many turn out to be harmless cysts or breast tissue related to your menstrual cycle. None-the-less, get it checked out, if it is cancer, the earlier it is discovered, the better. Plus, testing offers a baseline for moving forward. Know your risk factors and talk with your provider about your family medical history. If you have any additional questions about breast health, talk to your health care provider about concerns you may be having. Like they always say…when it doubt, check it out!

ucked away in Downtown Avon Park, 18 East Restaurant and Bar is the perfect restaurant for its moody location. Original bare brick lines the walls of the dimly lit dining room and bar located on historic Main Street. Entering into their 8th year in business, restaurateur David Ailstock has adorned the restaurant with artifacts, photos and special memories of his patrons over the years, in a way, made it feel like home. And that’s just what it feels like when you walk in the door, a warm environment with friendly staff and a great meal! Open Tuesday through Saturday, from 4pm to 9pm, 18 East offers a Menu to please any palate. Appetizers feature items such as Gator Tail, Deep Fried Artichoke and my personal favorite, Ahi Tuna over Fried Kale. The Main Dishes, or ‘Stars of the Show’ are mostly served with their house made, to die for, twice-baked potato, hand-cut fried or veggie of the day, usually their spectacular flash fried green beans. These sides are paired with the true stars in my opinion, a steak. Rather you choose the Filet or the Ribeye, you won’t be disappointed. His slogan is ‘Best Steak Around’ and he’s not lying! Another star is the Bone-in Frenched Pork Chop, which is topped with a mustard glaze and roasted red peppers; unlike any chop you’ve ever had. If you want something lighter there are plenty of options for salads and sandwiches. The Big Time Salad has grilled Romaine lettuce, blue cheese crumbles, tomatoes, Parmesan and balsamic vinegar. I personally love it topped with their perfect grilled shrimp for a great light meal. If you’re in the mood for a sandwich, the Prime Rib Ruben or Philly are the way to go. Both are stuffed full of meat and topped with their respective adornments. These are just a small sample of what they offer, trust me, there is something for everyone on their menu.

2 tsp. chili powder 1 tsp. dried oregano ½ tsp. smoked paprika ½ tsp. garlic powder ½ tsp. onion powder ½ tsp. Taco Seasoning ½ tsp. Cumin 1 Chicken bouillon
Ingredients:
1 onion, diced 1 bell pepper, diced 3 cloves garlic 1 Tbsp. olive oil (or bacon drippings) 1 (28 oz.) can crushed tomatoes 1 small can Rotel Tomatoes with Chilies 1 can chicken broth 1 can corn 1 cup white hominy 1 small can chopped green chilies 1 (15 oz.) can black beans, rinsed and drained 3 cups cooked chicken (breasts or thighs or rotisserie)

Sauté onion and bell pepper in oil. Add all seasoning and garlic. Stir and cook for 3-4 minutes. Add all other ingredients. Bring to a rolling boil, reduce temperature and simmer for 10-15 minutes. Once flavors have simmered and rested, serve in bowl and top with crushed tortilla chips and other taco toppings.

‘CRACK’ CROCKPOT CHICKEN 3-4 boneless, skinless Chicken Breasts (or thighs) 1 ½ pkgs. Ranch dressing mix 12 oz. cream cheese (cut into cubes) Cut chicken into big chunks. Place in crockpot. Sprinkle Ranch dressing mix over chicken and cream cheese. Cook on high 3 hours or low 5 hours.
1 cup mayonnaise 1 lb. bacon 2 cups Cheese (any variety) shredded (plus additional for top) Green onions (sliced) Jalapenos While chicken is cooking, cook bacon crisp. Chop up and set aside. Once chicken has cooked, shred or chop chicken and mix well with cream cheese. Add mayonnaise and cheese. Stir until creamy and melty. Sprinkle additional cheese on top, bacon and onions, and jalapenos. Serve on toasted buns, on toasted bread, or chips and crackers. Delicious!

1/2 cup butter 2 eggs 1 cup sugar 1 cup light corn syrup 1 cup milk 1 cup pecan halves Dash salt 1 tsp. vanilla
Preheat oven to 325 degrees and grease a 9 x 13-inch pan. Reserve 2/3 cup of cake mix and set aside. Place remaining cake mix in a bowl with softened butter, light brown sugar, 2 eggs and water. Mix well with mixer. Fold in pecans. Place in prepared pan and bake for 25 minutes.

While cake is baking, prepare pie layer. Mix together 1/2 cup softened butter, 2 eggs, sugar, corn syrup and milk along with the 2/3 cup of reserved cake mix. Dash salt and 1 tsp. vanilla. Remove cake from oven and pour pie portion over. Arrange 1 cup pecan halves on top and return to oven and bake 30-35 minutes. Center will be jiggly. Allow to rest 10 minutes. Serve warm with ice cream. (Cold is good too).

AdventHealth Sebring Implements Innovative da Vinci® Technology, Providing Faster Recovery Post Surgery By Ashley Jeffery AdventHealth Sebring is the only hospital in Highlands County currently using the innovative da Vinci® Si robotics system inside of the operating room. The state-of-theart, 3D technology allows surgeons to provide medically complex procedures through dime-sized incisions. This level of high-quality health care provides patients with faster recovery times following surgery, allowing for a quicker journey to get back to living happier, healthier lives following treatment. “By adding the da Vinci® robotics system we’re able to elevate our clinical expertise to make sure patients receive the best care possible,” said Dr. Michael Latzko, Medical Director of Robotic Surgery at AdventHealth Sebring. “By making the minimal incisions, we’re alleviating any additional down time and reducing the patient’s risk for complications following surgery.” AdventHealth Sebring will use the da Vinci® Si to perform general, urology and gynecology surgeries. Marine Corps Toys for Tots 4th Annual Masquerade Gala Photos Courtesy Jessica Duenas and Alec Muller Since 2000, Marine Corps Toys for Tots of Okeechobee has provided over 35,000 underprivileged children in Okeechobee with toys. In addition, Marine Corps Toys for Tots of Okeechobee partners with other nonprofit organizations so that no child is without during the Holiday season. Toys are distributed to the needy children that are residents of Okeechobee. What is collected in Okeechobee stays in Okeechobee! On September 14, special guests from the 4th Air Naval Gun Liaison Company joined Coordinator Malissa Morgan and Co-Coordinator Kristi Morgan at the Gala. In 2015, Malissa shared that they ran out of toys at distribution. Knowing they did not ever want to run out of toys again, her and Kristi brainstormed as to what they could do to fundraise. This year at the 4th Annual Masquerade Gala it was the largest Toys for Tots event. Malissa shared “We could not be more grateful to our community for selling this event out each year”.

Archbold Summer Camp By Dustin Angell Photos Courtesy Archbold Biological Station This summer Archbold Biological Station ran their 28th season of weeklong day camps for local families. Each year is a reunion of sorts, as over half the campers are returnees, coming back for more fun with friends, interaction with nature, and science exploration. During this summer’s theme of “Eco-Detectives” the children visited different habitats in the nature preserve, visited Archbold’s Buck Island Ranch, and met with wildlife and plant researchers. Moonlight Martinis Meatballs
&
Highlands Lakeside Theatre hosted their annual Moonlight, Meatballs and Martinis at the Jack Stroup Civic Center. The evening showcased 10 professional and amateur chefs from around the Heartland vying for the title of Superball V, Meatball Master in the categories of People’s Choice and Judge’s Choice. Sandhill Distillery sponsored the VIP Lounge and served two special martinis, Apple Pie and Lemon Drop. In addition, there were three other special martinis for the evening to compliment the chef’s creations. People could go outside with local astronomer David Lewis for a look out of his telescope when the moon was right. At the end of the evening Jessica Pleger of Pink Pineapple Catering was awarded the People’s Choice Award and Ron Schilffarth, with the Sebring Elks #1529 received the Judge’s Choice Award. Both received a trophy plus cash and prizes donated by the theatre and local sponsors. Ron Schilffarth
