As we transition from summer into fall and start looking ahead to these final months of 2023, it feels like the perfect time for a refresh. Taking care of our physical, mental and spiritual health is always beneficial, but it’s even more important as we enter a busy new season.

With Thanksgiving and the holidays upon us, it’s my wish for each of you to be surrounded by the ones you love and the ones who love you. In the hustle and bustle of this time of year, the greatest gift we can give ourselves is a little peace and the time to be present with the joys of the season. That said, I’ve always been drawn to Thanksgiving and the opportunity to give thanks.

What I love doing this time of year is entertaining and making my home beautiful decorating for the holidays. I’m not one for Halloween, but from Thanksgiving onward, it becomes a time for reflection and appreciation. It's a moment to express gratitude for the countless blessings we've all received and to celebrate the fortunate moments that have brought joy and success into our lives. I love the tradition of it all, especially for my family. We always have a traditional home cooked Thanksgiving dinner with all the fixin’s. Everyone has their special recipes that we make year after year.

For those that don’t have a large family and like a simpler holiday meal, I have added in some recipe ideas to make the turkey and dressing just as festive but easier to make, so you can enjoy more time with family and friends. Either way you enjoy this Thanksgiving, make sure you cherish all the joy and gratitude that has come to you so far in 2023.

With our fall season being the perfect time for a refresh, we feel it is a great time to get outside and enjoy the cooler weather. Our editor/writer Christy Swift took the time to join Katelyn Baker and Charissa Lighthall on the photo shoot for “Get Your Glamp On.” While Katelyn was styling hair and makeup on our gorgeous models, Charissa took the amazing photos, Christy and Janine Ransom got to experience all the fun glamping style: hiking, kayaking, wildlife and then back to the tent with a campfire. They ended the night in cozy beds in an air conditioned tent. Let us know if you decide to Glamp it!

Thank you to Matthew and Christa Christian for sharing their travels to our “Sister City” in Sebring, Ohio. This one has been on my bucket list, and after reading their beautiful time there it is a must.

She is currently working at Carolina CAT in Charlotte, N.C. with the Vice President of the Rental Store.

LADONNA PAEDAE RODRIGUEZ has written newspaper articles about Sebring, its people and its history, and finds joy in sharing with her community. Her passion for writing connects to her love of the arts. She is also a visual artist, using colored pencil as her medium. Her roots are deep in Highlands County; her mother was born in a house in DeSoto City in 1928, and her relatives were among the firefighters who went to rescue those in Moore Haven during the hurricane of 1926, giving her a unique perspective into our culture.

BRIDGETTE WALDAU has been a graphic and fine artist for over 40 years. She received her A.A. from the Ft. Lauderdale Institute of Art and a Bachelor of Fine Art degree from Stetson University. Bridgette has been creative director for several publications, working with Heartland Publications & Marketing as art director since 2011, winning eleven Florida Magazine Charlie Awards (2015- 2021). She is Arts & Culture Alliance Director (19 years) for Okeechobee Main Street. Bridgette is married to James Waldau, a retired firefighter from the City of Hialeah.

LISA TAYLOR HALL picked up her camera 7 years ago when motherhood inspired her to see the beauty in each day. She loves how photography captures a moment in time that otherwise might be forgotten. Lisa loves to capture organic moments in their best light. She grew up in Sebring and currently lives in Lake Wales with her husband and their three sons. Lisa specializes in lifestyle photography for families, small events, maternity, and graduates.

SHARON JONES Sharon's passion has always been photography. She is an award-winning photographer having transitioned from amateur to professional in 2010. She is a member of Okeechobee Main Street on the arts and cultural committee. Married to Ronald, Sharon has lived in Okeechobee for many years and has one son, Karl. “I love the history of our little town. I want to preserve all of our ‘todays’ through the lens of my camera, for our future ‘tomorrows’.”

MATTHEW CHRISTIAN is a local real estate broker and owner at Home Town Realty Pros. He is a Sebring native who graduated from Sebring High School in 2004 and the University of Central Florida in 2008 with a bachelor's degree in business and marketing. He is married with three beautiful children and enjoys teaching the Bible, shooting sports photography, piloting small aircraft, and driving race cars at the Sebring International Raceway. He is involved in ministering to those in need through a food and clothing ministry and has a love to serve and honor God to the best of his ability.

CHARISSA LIGHTHALL is the award-winning owner and founder of Photos by Rissa. Since opening in 2012, she has captured over 200 weddings and 2000 family sessions. Connecting with her clients and having fun during shoots is her top priority, and when she’s not behind the lens or editing, you can find her spending time outdoors with her three children. Her work has been featured in a myriad of publications, and she was named Best of Weddings by The Knot in 2019.

In a world that seems to be moving faster than ever, people are increasingly seeking solace in nature. Yet, the thought of roughing it out in the wilderness, battling bugs, and sleeping on the hard ground can deter many from venturing into the great outdoors. This is where "glamping" comes in - a delightful blend of glamor and camping that offers the best of both worlds.

The Origin of Glamping

“Glamping” first appeared in the Oxford Dictionary in 2016, but its history dates back centuries. The roots of glamping can be traced to 16th century Scotland, when John Steward, the 3rd Earl of Atholl, organized the first luxury camping site in the U.K. for King James V and his mother, featuring furnishings and ornamentation from the royal palace. The Turkish Ottoman Empire was also known for lavish “mobile palaces” erected for their sultans. In the 20th century, extravagant safaris carried on the tradition for wealthy American and British travelers. Today, glamping has become more popular than ever, with the website Glamping Hub listing 34,000 glamping rentals in 2019.

What Exactly is “Glamping”?

What sets glamping apart from traditional camping is the emphasis on luxury, comfort, and convenience. Imagine all the fun of camping—hiking, kayaking, the scent of woods and campfire, quiet nights, the serenade of cicadas, maybe even a deer wandering through your campsite—after which you climb into a cozy bed in a spacious, air-conditioned tent outfitted with modern conveniences. If this appeals to you, drop your phone in the basket by the door (I mean, tent flap) and let’s explore Florida’s great outdoors, glamping style.

Glampers’ Journal Entry

We checked in at the ranger station and found our glampsite with its welcoming string of twinkle lights and 330 square foot double safari tent. The two queen beds were piled high with cozy pillows, and the boho decor screamed luxury. It felt more like a swanky hotel room than a tent, with an air conditioner, retrolooking mini fridge, and even a coffee station. This is camping like I’ve never seen before, and we’re here for it!

Aleksandra and Sheraz Miles own Timberlake Glamping, a concessionaire vendor managing six glamping sites inside the Hillsborough River State Park in Thonotosassa. The tents are raised up on a wood slat foundation, which serves as a floor, and are decorated with real beds, rugs, chairs, coffee tables and more. The tents come with A/C, a mini fridge, coffee maker, electrical outlets, and a diffuser. The largest tents can accommodate a group of six.

Aleksandra says there are a variety of reasons why their customers choose glamping. “We do cater heavily to families with kids. It’s a fun way of exposing kids to the outdoors.” She adds that many glampers are people who enjoy the outdoors and want to experience nature but don’t have a background in camping and/or don’t want to make a large investment in the necessary equipment needed for a camping lifestyle.

A third type of client are people like her husband and herself. “We’ve been campers all our lives. We love traditional camping, but it’s nice to be able to go and not have to do all the work. Not to have to drive two hours and then pitch a tent in the dark. Having a comfortable bed to sleep in. As we’ve gotten older, we’re starting to appreciate those little comforts,” Alexandra says. Timberline glampers can enjoy all of the features of the Hillsborough River State Park, including hiking trails for all levels (check out the suspension bridge over the scenic Hillsborough River and don’t miss those Class II rapids).

Hillsborough River State Park

We hiked along the Hillsborough River and got to see the Class II Rapids that are the main feature of the park. The rapids are protected, but we were able to kayak downstream of them. The water was like glass, creating a mirror image of the soaring pines, sabal palms, and prehistoric-looking hammock ecosystem around us. It was so quiet, so still. It felt like we were balanced on the edge of time, cocooned in nature’s embrace, all our troubles dissolving away with the ripples from our paddles.

Bikes are available for rent to explore the 1.6-mile Wetlands Restoration Nature Trail and the 2.2-mile park loop. The swimming pool and cafe are currently under renovation, but will make a welcome addition. Flovibez, another concessionaire vendor, offers canoe and kayak rentals.

“You’ll see gators, plenty of turtles, and deer. I’ve even seen wild hogs,” says Tyler Hitchner of Flovibez. “The best time of year to see the fish is in winter. The river gets clearer and it’s really pretty. You can see all the way down to the bottom. There’s everything from bluegill to Florida gar.” Other wildlife often spotted include possums, raccoons, armadillo, wild turkeys, and all kinds of birds.

When your busy day is done and a sleepy sunset-kissed sky beckons you back to your site, that’s when the benefits of glamping truly kick in. While traditional camping usually involves sleeping on the hard ground in a tent, glamping offers a luxury, hotel-style experience one zipper-pull away. Alexandra offered tips for a successful glamping experience:

 Bring your own firewood. If the ranger station is open, they sell firewood for $8 a bundle. Collecting firewood is not allowed.

 Pack cooking implements if you plan to go for traditional cooking-over-the-fire fare. Bring charcoal if you wish to use the grill. You’ll also need your own paper plates and utensils. Eating out or bringing takeout is also an option.

 Don’t forget a towel and toiletries for use in the on-site bathrooms.

Here are a few suggestions for your first (or next) glamping experience, but however you choose to do it is fine, too. There are no hard-and-fast glamping rules. If you’re relaxed and unplugged, you’re doing it right!

Girls’ Getaway: Swim, hike, kayak or bike during the day, then gather up your BFFs for a glamping pajama party. Roast ‘Smores around the fire pit outside and swing in a hammock as you read aloud from the latest novel you’re binge-ing. Sip a chilled beverage and pick at a swanky charcuterie platter. The cozy beds also make a great setting for a board or card game. Pillow fight, anyone? There’s plenty of them! If you hear a crashing sound in the bushes outside, Roxane at the ranger station says it’s probably an armadillo, not a bear, but if you want to embellish the story when you get back, we won’t judge!

Family Glamp: Take the kids fishing, kayaking or geoseeking. Have lunch under one of the pavilions built by the Civilian Conservation Corps (CCC) in the 1930s and learn about the CCC’s history from the posted placards. If the kids aren’t tired enough yet, let them run around on the playground at the riverside picnic area. In the evening, enjoy stories or games and ‘Smores by the campfire. A night time walk around the campground might turn up a deer or raccoon. Then tuck the littles into their cozy beds while the adults enjoy some quiet time under the stars.

Glamping With the Guys: Yes, men can glamp, too! Disconnecting from tech and work for a couple of days can be good for the soul. Bring a football or a frisbee. Dust off those fishing licenses and stock up on firewood and ice. Bring your favorite beverages and a Bluetooth speaker for the evening (quiet time doesn’t start until 11PM, but your neighbors will appreciate it if you keep the Garth Brooks and Jimmy Buffett to a reasonable volume). Warning: cooking what you catch over a smoky fire is bound to bring on some nostalgia. Tell those old stories. Remind each other of “when.” Enjoy this time with good friends, good beer, and good conversation. “Today’s troubles” can wait until tomorrow.

Our Sister City Sebring OHIO

Growing up in Sebring, Florida gave me an immense amount of pride in my hometown. So when I stumbled across a YouTube video of the Sebring Mansion in Sebring, Ohio I looked at my wife, Christa, and told her, “We have to go there!” So began the planning and gathering of as much info as I could about Sebring, Ohio.

I knew that the founding father of our city, George Sebring, was from Sebring, Ohio, but that was the extent of my knowledge. As I dug into the past, I discovered a rich history contained within the 2.5 square miles of the Village of Sebring, located smack dab between Cleveland, Ohio and Pittsburgh, Pennsylvania. The Sebring family established the village in 1899, and it soon became known as the pottery capital of the world with over 3,300 pottery workers and 8 potteries. In 1912, Sebring began producing and selling the “Sebring Six” car. They produced around 100 cars before the Model T put them out of business. Around that time, George decided to head south and find some land to develop in Florida. He purchased 10,000 acres on the east side of Lake Jackson and settled and established what we now know as Sebring, Florida. By doing this, the Sebring family became the only family in the US to have two towns named after them. George Sebring carried on the same tradition that he had established in Ohio—that of giving churches free land to establish their places of worship, as he himself was a devout Christian. Also, as he did in Ohio, he wrote all property deeds to contain a clause prohibiting owners from possessing or selling alcohol. Meanwhile back in Ohio, his five brothers carried on in the pottery business. As time carried on, mergers, The Great Depression, WWII and foreign competition eventually decimated the pottery industry in Sebring, and the factories closed their doors. Now the quaint Village of Sebring is left with just over 4,000 residents.

More intrigued than ever, I booked our plane tickets and reservations at the Sebring Mansion Inn and Spa which was the former home of George Sebring’s brother Frank Sebring. The video footage and pictures I had seen revealed this majestic home to be a masterpiece of architecture, purchased in 1996 and lovingly restored by Lynne Biery. On the YouTube video I watched, Lynne explained that when she purchased the home, the basement was full of water, and raccoons inhabited the grand ballroom. She slowly and carefully had the home brought back to its former glory and built an additional wing off the rear of the mansion to create a total of 14 guestrooms. Each guestroom has a different theme with luxury amenities, and many are named after the potteries that once stood in Sebring. In the basement, you will now find a full pub and seating as well as the wing that leads to the spa. There are two therapy pools, one indoor and one outdoor, that are both heated so they can be enjoyed year round. „

With much anticipation, my wife and I began our journey by flying into Cleveland and driving just over an hour south before we were greeted with a simple green metal sign that told us we had arrived in our sister city. As we drove into the village, it was just how I had imagined it would be. Flowery trees lined the roads, and historic buildings and homes stood just behind them. As I approached the mansion, it was more breathtaking than I could imagine. Pictures didn’t do justice to the magnitude of this 123-year-old home. We excitedly pulled up, parked, and made our way through the wood and glass double doors. Just when I thought it couldn’t be any grander, I was overwhelmed by the quality and sheer amount of intricate custom woodwork in the main vestibule. The grand staircase wrapped its way up to a beautiful stained glass window, and from the first floor you could see all the way up to the rotunda on the third floor with a lit stained glass dome that used to be part of the roof on the mansion. Off the vestibule sat the oval music room with a grand piano, the original dining room, and a parlor.

We dropped our luggage and decided to go find dinner. The stay included a three-course breakfast and dinner, but our first night there we had opted to check out what Sebring had to offer for cuisine, which turned out to be pretty limited. There was one sit-down restaurant open for dinner located in the original masonic lodge; therefore the Brickhouse Bar & Grille was where we headed. The walls were adorned with Sebring High School letterman jackets and memorabilia which was strange to see as their school colors are purple and gold and they are known as the Trojans.

The next day we had an appointment at the Sebring Historical Society to dig in to even more history. We arrived at the former Strand Theatre, which the historic society now occupies, and met with a member of the society who showed us a large amount of pottery and china manufactured in Sebring. There was also a section devoted to Viktor Schreckengost, an American Industrial Designer from Sebring whose designs and patents included the pedal car, Murray bicycles, Murray riding and push mowers, and a “Jazz” punch bowl commissioned for Eleanor Roosevelt as a gift for her husband Franklin D. Roosevelt. A mural in the middle of the town square commemorates Viktor and his contributions to society. We left from there and visited Ashtons 5 & 10 and found a pie plate bearing the stamp of Sebring from one of the potteries as a souvenir as well as some fresh Amish chocolates.

Ifound it very surreal to see “Sebring” plastered throughout a town that wasn’t the Sebring I was familiar with, but I enjoyed the charm and quiet of the downtown area. We were invited to go check out Sebring McKinley High School by the principal, and once again it was so strange to see a Sebring High School unlike the one I was accustomed to in my hometown. We were able to visit a few more small stores as well as the Copeland Oaks Retirement Community with its vast and perfectly manicured grounds. One of the last stops we made was to the graveyard to check out the Sebring family plots.

I was glad we decided to step out of the norm and go to a place that no one I knew had ever been and that to my surprise many never knew existed. Our Village Okeechobee

When someone walks through the door at Our Village, the goal is to find out what they need to live the best life that they can and how Our Village can help them do just that.

Our Village Okeechobee, a non-profit organization, started with a vision of one person 23 years ago. This vision came to founder Leah Suarez, after a near death experience. The vision came to her in the form of a dream, a dream so clear she could not ignore it. But I’ll let her tell it...

“So in that state of whatever it was, I was having dreams, and literally visions of Jesus,” Leah said. “Stuff like that doesn't happen to people like me. Funny thing, though, was one dream stuck with me about Our Village. I was seeing this orb, and my husband, the quintessential guy who must have a million children around, literally pops out of a clown car in this city with kids.” Soon after getting out of the hospital, Leah wrote her vision for Our Village.

Her vision became a reality soon after college. She gathered a group of friends, sharing her idea. Leah told them, “Listen, you guys know that I'm the craziest person ever, probably your craziest friend but hear me out.” She pitched her vision, adding, “I have no money, I have no means to start this other than you guys throwing money in the pot and deciding to be a board member or volunteer.” She needed a village to make Our Village a reality.

Who is Leah Suarez, this energized self-proclaimed crazy person? Leah’s family moved to Okeechobee from Sarasota 40 years ago when she was in high school. Through hard work, her parents, Joani and Richard Hargrave, owners of a local thrift store called Uncle Dick's, were able to send Leah to college. She moved away and graduated from the University of Central Florida with no plans to return.

Leah and her husband, Joe Suarez, met in high school, staying in touch through college. They eventually married, and in the 1990s ended up moving back to Okeechobee, both working for the State of Florida. This was also shortly after Leah’s mom suddenly died. The couple are bilingual, and this was an advantage because the State needed bilingual people with bachelor’s degrees to work in Okeechobee at that time. They are blessed with six children, three of whom are adopted.

After receiving a degree in Public Speaking, Leah quickly began to realize her passion was public service. Her career in state government included working for the Department of Health and Rehabilitative Services, Department of Revenue, Department of Children and Families, and Florida Community Health Centers. She also developed many state programs and projects.

Her public service experience and tenacity led the way to open Our Village Okeechobee in 2015.

The mission of Our Village Okeechobee is giving people a hand up and not a handout. They follow the philosophy of Chinese philosopher Lao Tzu. “If you give a man a fish, he eats for a day, but if you teach him how to fish, you feed him for a lifetime." Leah is eager to help but explains you must also help people move away from the situation that got them there in the first place. Our Village helps with food and clothing needs but also helps with keeping the electricity on or providing gas in your car. If economic problems persist, they will help you and then help you to find ways to overcome those problems.

Our Village began in a bedroom at the Suarez’s home, moving to a small office, and then to a tiny “cracker house.” Realizing they needed more room, Leah prayed for a bigger space. “I decided I was going to let God handle it. Then a building became available.” Our Village moved to their current headquarters in 2019, but it came with a unique background—it was an old funeral home. Leah says, “Some think it’s weird. I think it’s bringing life back to a place associated with death. A place that held sadness is now where people can come and feel welcomed.”

The larger facility was cordoned off into several sections including a thrift shop to help raise money and rooms for education, virtual school, homeschooling, tutoring and peer counseling.

As with any non-profit, funding is a challenge. There are eleven qualified professionals at Our Village, and all are paid through grants. To provide the best, Leah says, “I have to have the funding in place and I have to have a positive working place.” Funding for day-to-day operations comes from fundraising events, retail income and donations. Volunteers and in-kind services also make up an essential part of Our Village’s survival.

The Food Pantry

Our Village plays a leading role in helping families fulfill their food needs. Leah said, “We never intended to have a food pantry, but often food is the one thing that changes lives. It came about during the pandemic.” They realized there was a tremendous need and continued the food pantry. The Food Pantry is at the main headquarters.

In 2022, the original thrift store was moved and became Joani’s Exchange, named after Leah’s mother. Located directly across the street from Our Village’s main headquarters, this store is now a quaint boutique. The thrift store assists clients with their needs and is open to the public for shopping. Administrative Assistant, Debbie Carr, runs the thrift store, where she also often teaches job skills to kids.

This branch of Our Village was also formed in 2022. Their primary focus is helping with immigration. The process is expensive and most of the work involves cumbersome paperwork. It can be done more affordably with help from those trained in the process. The goal is to help immigrants become lawfully authorized and work towards a better life.

Filling the needs of the youth in Okeechobee, Peer Support is dedicated to helping children have happy childhoods. They want children to have a positive outlook and achieve great things in life, not be afraid to make mistakes and think they “can’t do” before they even try. Peer Support Specialists provide understanding during a time when children feel anxious, bullied, hopeless or just different.

Peer Support also extends into the public-school classrooms. This is where Veronica Gilchrist, Peer Support Specialist, spends her weekdays talking with kids who are having challenges in the classroom and helping them work through any issues that may be keeping them from learning and being successful. Pat McCoy, principal at Yearling Middle school where they have a Peer Support "Reset Room", stated, " Our village has been a lifesaver for yearling middle school. Our students are thriving in the peer support program. They have a place and a person to go to when they’re feeling the need to talk to someone. They have a consistent person to call their trusted adult".

Funded by the Southeast Florida Behavioral Health Network, this coalition focuses on ways to guide and create prevention activities, working to reduce substance use among young people. The Coalition provides education and awareness about the dangers of substance abuse. They use education to help reduce substance abuse before it starts or worsens. Our Village goes even further by also including help to prevent bullying and other anti-social activities.

This newest branch of Our Village is named in honor of Clemence Einhorn, a teacher who touched the lives of many students, leaving an indelible mark on their learning journey. The Center offers after-school tutoring, home-school help, peer support, art classes, and more. Director Elaine Keller said, “We’re trying to offer different things to get more people involved.” This Center is packed in the afternoons with tutors, overflowing into the main headquarters. The art classes are a great tool for helping students. Most students are elementary school age, but classes will expand to teach all ages. The Center offers other activities, such as family nights, Bible studies, health education and outside group meetings.

Stepping outside the walls of their headquarters, you will find Our Village all over Okeechobee holding events and fundraisers, not only for themselves but for others. Some of their events include Back-To-School Expo, OHS graduation party, food truck events, yard sales, movies in the parking lot and much more. What started as a vision of one, turned into the work of a mighty village. Many people were needed to bring Our Village Okeechobee to life.

Alex Tijerina, Director of Development and Community Engagement, says “Our Village is blessed to have a large support system within Okeechobee and the surrounding areas. and we hope as we are able to get out into the community to provide this valuable information, that we will see our amazing small town come together, invest in and support the change Our Village is making."

What is a typical day at Our Village? Leah said, “Like a Hurricane! We are in the eye of the hurricane watching everything around us swirl by and somehow come together.” And it is indeed non-stop for the organization.

A few days after interviewing Leah, a sadness fell over the Okeechobee community. A brother and sister, high school student volunteers at Our Village, lost their lives in a tragic car accident. Our Village immediately set up grief counseling with extended hours. Knowing the community needed to come together, they organized a candlelight vigil within two days of the accident. Over 200 attended an evening of prayer and remembrance for the hurting community. They also aided in fundraising to help the family.

Leah, with the help of a “Village” of educators, volunteers, community leaders and organizations, will continue to provide services to help people have a good life. The saying goes “it takes a village” and Okeechobee is blessed to have a village, Our Village Okeechobee.

DEEP ROOTS IN FLORIDA SOIL:

Tracing the lineage of one’s family to the 1900s can be challenging. Discovering and verifying those roots to the 1700s is remarkable. Pioneer Lorida family, the Waldrons, know their history well. They are settlers, great story-tellers, history buffs, and perhaps, legend-creators.

This is the multi-generational historical “map” of the Waldron family and their far-reaching family tree, the canopy of which covers generations. It traces back to when Florida was composed of territories split into east and west, and before that to their Georgia home, to being early settlers and township developers in Arcadia, Florida, finally landing today in Lorida, Florida.

ay the word, “pioneer,” and the Waldron family fits snugly into that mold. Withstanding the hardships of sourcing basic needs such as food, water and shelter was challenging to say the least for these early settlers, but the Waldrons came through by sheer grit and determination—not unscathed, but they came through, nevertheless—and they multiplied and were fruitful.

In the early 1800s, Waldron pioneers settled in Colombia County, Florida. David Elias Waldron, Sr., born in the 1750s, served in the Civil War and eventually settled in Manatee County, which at the time encompassed multiple current-day counties, including Hardee and Highlands). He set up camp in a hammock on Fisheating Creek, in the area then known as Indian Prairie (now called Palmdale). He married Mary Ann Thompson, and together they had six children, one of whom was David Elias Waldron, Jr. (born in 1847). Eventually the family built a log cabin on the site.

As an adult, David Elias Waldron, Jr. set up a home in Venus on the upper Fisheating Creek. David and his wife Martha Jane (Driggers) were married in 1871 and eventually became parents to 10 children, one of whom was James Alva “Alvie” Waldron, born in Brownville, Florida, on November 4, 1876. James Alva and Doshie (Layport) Waldron were married in Fort Basinger, Florida on April 8, 1906, and were the parents of Lester (Bud) Waldron as well as at least eight other children. Alvie lived a long life, passing away in 1976 at 99 years old. He is buried in Okeechobee, Florida. David, Sr. died at Fort Bassinger on November 8, 1908 and is buried in a small cemetery near Highway 98.

Lester (Bud) and spouse Rena Tomlinson Waldron were both born in the 1920s and had four children: Ronnie, Loyle, Patricia Ann and Jim (now deceased), which brings us to the current-day Waldron family members who are some of the very “deep roots” of Lorida, Florida. Rena was very active in her close-knit community and in fact was a charter member of the Lorida Baptist Church. Church life was intertwined with social life for the Waldrons and Tomlinsons as well as for most of the people they knew. Pioneer Lorida families such as Boney, Rimes, Ashton, MontsDeOca, and McClelland all attended church alongside the Waldrons.

he Waldron children attended the two-room Lorida schoolhouse, as did lots of cousins and friends. When you live in a very, very small town, your siblings and cousins become your best friends and your partners in mischief, and for the Waldrons it was no different. After school, the clan found themselves participating in local rodeos, fishing and hunting, and helping out with family chores.

In 1952, those chores increased significantly as Bud became an egg farmer. On a 10-acre tract of land in Lorida, the Redwine family, who were experienced egg farmers, took young Bud Waldron under-wing, teaching him all things egg farming. Young sons, Ronnie and Loyle, along with their mother and other friends, collected the eggs in wire baskets and would then tote them by Jeep to the egg room. There more family and employees would wash, weigh and grade the eggs by hand. Bud, Rena and her sister-in-law Reba began hauling chickens back to the farm for the Redwines from another state. One thing led to another, and soon the Waldrons started Sunny Land Egg Farm, which was located in Lorida on Highway 98, close to the then-Red Lantern.

The family of six (Bud, Rena, Ronnie, Loyle, Jim, and Patricia Ann) lived primitively in a two-bedroom, one bath cracker house without air conditioning behind the brick building which housed the eggs. They began with 10,000 laying hens, which required the family to be up before daylight to perform the tasks that would ensure a plenitude of good, healthy eggs. The chicken feed was trucked to Sunny Land from Tampa in large, colorfully decorated burlap feed-sacks. Many Lorida children during those days wore clothing created from sacks that were purchased from Sunny Land for twenty-five cents each.

ealizing that he did not want to continue in the egg producing business that his father had decided to give to him and brother Loyle, Ronnie began buying boxes of 30-dozen eggs and selling them directly to Lorida residents, as well as to restaurants, jails and schools, and to the locally famous hotels, The Kenilworth Lodge and The Harder Hall Resort. True to his Waldron roots, found other ways to support his family. First, he began buying and selling farm equipment, then entering the custom butchering/cut-and-wrap business. As fate would have it, a truck full of cattle wrecked near the egg farm, part of which was by then dedicated to the butchering business. Seventeen cows were killed in the wreck, and, seeing an opportunity to not let the loss of the cattle be for naught, Ronnie and Bud fetched their bulldozer, loaded them up and butchered them well into the wee hours, eventually selling them to local, happy beef-eating customers.

The new generation continues the legacy.

oyle recalled going oystering with his father Bud, and grandfather “Alvie” off the coast of Anna Maria Island. As Bud and Loyle worked feverishly pulling in the oysters, the elder statesman Alvie sat in the back of their boat, popping and slurping up those oysters, much to the chagrin of the other Waldron “boys.”

In the 1960s and ‘70s, Ronnie’s brother Loyle trapped and sold catfish. He built traps out of chicken wire into which he would put soybean meal bait. He’d toss them into Lake Istokpoga, haul in and skin the fruits of his labor, and take them to sell at market in Okeechobee.

A common thread among the Waldrons is self-sufficiency, dedication and persistence, both in work and in life. As the Waldron family grows in numbers, so also grows their dedication to preserving the family legacy and heritage.

Ronnie and Loyle, Patricia and Jim added to the family tree with their own children. Ronnie Waldron has two sons, Keatley and Mike, and a daughter, Lea (their mother is Angela Dixon Wingo). They are quick to reminisce about the family’s history and colorful past with their own children. Keatley and wife Kim have three children: Keat, Kash and Kase. Mike’s four children with Karen are Emily Grace, Clayton, Ryan and Will. Lea’s son is Austin Maddox. Loyle’s two daughters are Debbie and Denise, and their mother is Linda. Patricia’s children with James Paul are Rhonda and Suzanne. With second husband Jim Mero, they have a son, Michael. Jim has a daughter, Stacy, whose mother is Gail.

The tight-knit Waldron family is humble but proud of their roots, hard-working and fun-loving. As children are added into the family, they learn about how the Waldrons, with a hardy pioneer spirit and cowboy determination, created a legacy that will continue for generations to come. That broad tree keeps growing mighty and strong with each new generation.

Sheet Pan Herb Roasted Turkey

AND CRANBERRY PECAN STUFFING

Ummmm, a sheet pan turkey dinner? Yes, please! It's the easiest Thanksgiving holiday meal! A sheet pan turkey dinner with cornbread stuffing mix right on top! So easy and with fewer dishes!

INGREDIENTS

5 cups French bread cubes

5 tablespoons unsalted butter, at room temperature

3 cloves garlic, minced

1 onion, diced

2 celery ribs, diced

1/3 cup dry white wine

1/4 cup dried sweetened cranberries

1/4 cup chopped fresh parsley leaves

1 tablespoon chopped fresh sage leaves

2 teaspoons chopped fresh thyme leaves

2 1/2 cups seasoned cornbread stuffing mix

1/2 cup pecans, chopped

1 1/2 cups chicken stock

For the Turkey

2 tablespoons unsalted butter, at room temperature

1 clove garlic, minced

1 teaspoon chopped fresh thyme leaves

1 teaspoon lemon zest

1 2-pound boneless, skin-on turkey breast

Kosher salt and freshly ground black pepper

INSTRUCTIONS

1. Preheat oven to 400 degrees F. Lightly oil a 9 x 13 baking dish or coat with nonstick spray.

2. Spread bread cubes in a single layer on a baking sheet. Place into oven and bake until crisp and golden, about 10-12 minutes; set aside.

3. Melt butter in a large Dutch oven over mediumhigh heat. Add garlic, onion and celery. Cook, stirring occasionally, until tender, about 3-4 minutes.

4. Stir in wine and cook, stirring occasionally, until just reduced, about 2 minutes. Stir in cranberries, parsley, sage and thyme. Remove from heat and let stand to soften cranberries, about 5 minutes.

5. Stir in bread, cornbread stuffing mix and pecans; season with salt and pepper, to taste. Stir in chicken stock until absorbed and well combined.

6. Spread bread mixture into the prepared baking dish

7. In a small bowl, combine butter, garlic, thyme and lemon zest.

8. Using your fingers, carefully loosen the skin from the breast meat, spreading the butter mixture under the skin. Secure skin over the butter with wooden picks; season with salt and pepper, to taste.

9. Place turkey on top of the bread mixture. Place into oven and bake until the turkey is completely cooked through, reaching an internal temperature of 165 degrees F, about 40-45 minutes. Serve immediately.

Mashed Sweet Potatoes

This is an absolute must for Thanksgiving! It’s so easy and so good with the sage-butter and crisp bacon bits!

INGREDIENTS

3 1/2 pounds medium sweet potatoes

5 slices bacon, chopped 1/2 cup unsalted butter

3 cloves garlic, minced

2 tablespoons chopped fresh sage leaves

2 tablespoons maple syrup Kosher salt and freshly ground black pepper, to taste

INSTRUCTIONS

1. Preheat oven to 400 degrees F. Line a baking sheet with foil or parchment paper.

2. Place potatoes in a single layer onto the prepared baking sheet. Place into oven and bake until tender, about 1 hour. Let cool before peeling.

3. Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Drain excess fat; transfer bacon to a paper towel-lined plate.

4. Melt butter in the skillet. Add garlic and sage, and cook, stirring frequently, until fragrant, about 1-2 minutes. Remove from heat; keep warm.

5. Using a potato masher, mash potatoes until smooth. Stir in maple syrup and 6 tablespoons reserved butter mixture; season with salt and pepper, to taste.

6. Serve immediately with remaining butter mixture and bacon.

Buttermilk Cornbread

It’s perfectly fluffy, moist, and slightly sweet, and IT IS DANGEROUSLY GOOD, particularly with extra butter on top, melting right into the warm bread with a drizzle of honey. It’s perfection to say the least.

So easy! No mixer needed here! Amazingly moist and slightly sweet. A classic side dish loved by EVERYONE.

INGREDIENTS

1 1/2 cups cornmeal

1 cup all-purpose flour

1/3 cup sugar

4 teaspoons baking powder

1 teaspoon kosher salt

2 cups reduced fat buttermilk

1 large egg

6 tablespoons unsalted butter, melted and divided

INSTRUCTIONS

1. Preheat oven to 425 degrees F. Place an oven-proof 10-inch cast iron skillet in the oven.

2. In a large bowl, combine cornmeal, flour, sugar, baking powder and salt.

3. In a large glass measuring cup or another bowl, whisk together buttermilk, egg and 3 tablespoons butter. Pour mixture over dry ingredients and stir using a rubber spatula just until moist.

4. Remove skillet from the oven and add remaining 3 tablespoons until heated through, about 1-2 minutes.

5. Working carefully, immediately scoop the batter into the hot skillet. Place into oven and bake for 25-30 minutes, or until a tester inserted in the center comes out clean.

6. Serve warm right in the cast iron skillet to keep warm and for presentation purposes.

Thanksgiving Sliders

Leftover turkey sliders, cranberry sauce, Dijon and melted cheese on super buttery Hawaiian rolls. Bake and serve warm! SO GOOD.

My favorite part about the holidays has to be the leftover sammies.

INGREDIENTS

2 tablespoons Dijon mustard

2 tablespoons mayonnaise

2 green onions, thinly sliced Kosher salt and freshly ground black pepper, to taste

1 12-count package KING’S HAWAIIAN Original Hawaiian Sweet Dinner Rolls, halved lengthwise

1/3 cup leftover cranberry sauce

3/4 pound leftover turkey, shredded

8 slices Havarti cheese

2 tablespoons unsalted butter, melted

1 teaspoon poppy seeds

INSTRUCTIONS

1. Preheat oven to 375 degrees F. Lightly oil a baking sheet or coat with nonstick spray.

2. In a small bowl, combine Dijon, mayonnaise and green onions, season with salt and pepper, to taste. Spread mixture on top half of dinner rolls; set aside.

3. Place bottom half of dinner rolls onto the prepared baking sheet. Top with cranberry sauce, turkey, cheese and top of dinner rolls. Brush tops of dinner rolls with butter; sprinkle with poppy seeds.

4. Place into oven and bake until golden brown and toasted, about 15-18 minutes. Let stand 5 minutes. Serve warm.

A super easy, refreshing fruity drink so perfect for the holidays! Just be sure to hold off on the ginger ale until right before serving to save on all that fizziness. And you can easily make this into a fizzy cocktail for the grown-ups!

INGREDIENTS

1 liter ginger ale*

2 cups pineapple juice

1 cup cranberry juice

1/2 cup fresh cranberries

1 orange, thinly sliced

1 lemon, thinly sliced

1 lime, thinly sliced

INSTRUCTIONS

1. In a large pitcher, whisk together ginger ale, pineapple juice and cranberry juice.

2. Serve over fresh cranberries, orange, lemon and lime slices, if desired.

NOTE: *Prosecco (wine) can be substituted for an alcoholic drink.

“Can you help me identify a plant in my yard?” “We just moved here from Indiana, and we want to know when to plant tomatoes.” “Please tell me what’s wrong with my lawn.” These are typical questions that a Master Gardener volunteer may get when working at the Help Desk at the Master Gardener office. The volunteers at the Help Desk field hundreds of questions every year in person and on the phone from curious and sometimes anxious homeowners who are concerned about their yards. This free public service is just one of the many opportunities that the volunteers use to share their love and knowledge of horticulture.

The Master Gardener Volunteer Program is a national program that began in 1973 in Washington state. An extension agent realized that a well-trained group of community volunteers could respond to many everyday homeowner questions and that would free him to work on more difficult issues in the community. Since that time, the Master Gardener Volunteer Program has grown and is now active in 45 states. Florida’s program began in 1979 and is now established in over half of Florida’s counties. The Florida Master Gardener Volunteer Program is sponsored by the University of Florida’s Institute of Food and Agricultural Sciences (IFAS) of which the Highlands County Extension Service is a part.

The Highlands County program was established in 1984 and there are currently 70 active volunteers. To be a Master Gardener Volunteer, there is no previous horticulture training or work experience required. Every year in January, candidate applications are reviewed, and extensive interviews are conducted by the horticulture agent, David Austin. The top candidates are selected and begin an eight-week training class at the end of January. The participants take an exam at the end of the course as the final step for certification. Course curriculum includes plant propagation, botany, soil and fertilizers, turf care, pests and diseases, as well as plant identification. Lots of plant identification!! To retain the certification every year, they must commit to 75 hours in the first year, 35 volunteer hours every year thereafter, and complete 10 hours of continuing education each year.

Despite the rigorous training course, much of the learning comes from the hands-on work that the volunteers do in the community and working together at the propagation shed. Over time, many become experts in areas such as vegetable gardening, pollinator plants, gardening tool care, and banana trees. You name it and there is probably a volunteer that has experience with just about any plant that a homeowner would have.

In addition to the Help Desk, the Master Gardener Volunteers offer soil pH testing for a small fee. This service is regularly used by homeowners and lawn maintenance companies for customers’ lawns. They are frequently called upon to make presentations to local civic clubs about various horticultural topics. Several volunteers regularly write articles for the Master Gardener monthly newsletter which goes out to over two thousand subscribers. They organize and participate in the Central Butterfly and Pollinator Club and the Heartland Beekeepers, both of which meet monthly. In previous years, they designed and planted gardens for schools and dearly departed friends. Except for specialized monthly classes many of these services are provided at no charge.

Of all the activities that the Master Gardener Volunteers are involved with, the most important one is the annual “Let It Grow” garden festival that is held on the third Saturday in November. The program is 100% self-funded and the proceeds from the festival support nearly all the program services. This year’s festival is November 18 from 9 a.m. to 4 p.m. at the Bert J. Harris Ag Center in Sebring. The event started as a plant sale in 2013 and has transformed into a day-long festival that now showcases hundreds of plants that were propagated or started from seed by the volunteers during the year. For the past several years buyers have waited in line before the opening ceremony to get their choice of edibles, landscape plants, Florida-native plants, pollinator plants, succulents, and flowering plants. All of that plus more will be available again this year. Classes about succulents and orchids will be offered for a small fee and free propagation demonstrations will be held at the prop shed. For those interested in early holiday shopping, there will be 60+ vendors with a wide variety of crafts, art, and merchandise, and the Master Gardener Volunteers will have raffle items and silent auction items donated by local individuals and businesses. Hungry guests can stop by one of several locally owned food trucks for a meal or a snack anytime from the beginning of the day until the festival closes. Live music from local musicians will entertain guests all day. The festival is free, and everyone is invited to enjoy the festival to celebrate plants.
