THE PUBLISHER T hanksgiving is done, the Christmas lights are strung, and the time for New Year’s is approaching for us to ring in 2018. Before we welcome in the New Year I feel it’s time for us to pause and reflect on our accomplishments and blessings we’ve had throughout the year. This includes what we have to be grateful for, the lessons we’ve learned along the way and a time to set new goals for the coming year.

This holiday season may be more challenging for our communities and all of those personally affected due to the hurricane and still dealing with damages. My hope is that while reading through the pages of our Holiday Issue you will find stories of love, courage and hope. It’s always important for us to place uplifting stories in this issue to remind our communities of all the blessings we are surrounded with even when from the outside looking in they don’t always seem like blessings.

One way most of us share time with our loved ones during this time of year is around the dinner table. I’m thankful that our resident Southern Chef, Layne Prescott happily obliged on extending her column this time to share some of her holiday dishes with you. Be sure to tag us on social media when you try some of the beloved recipes from Layne. The final wrap to the holiday season is New Year’s Eve. Local boutique, Amber Louise and Trending Threads was gracious in donating a few looks to get you ready for fun and festive gathering to kick off the New Year! Make sure to check out her boutique in Lake Placid and all of the fun ideas we have to dress to impress on your night out. This is the time of the year we should be thankful for our families, friends, heath and mostly our blessings. I hope you look back on this past year and see all your many blessings, and ready to kick off the New Year with new adventures and resolutions that await you for the coming year. and fine artist for over 30 years. She received her A.A. from the Ft. Lauderdale Institute of Art and a Bachelor of Fine Art degree from Stetson University. She moved to Okeechobee in 1994 where she opened her art studio. Bridgette has been creative director for several publications, working with Heartland Publications & Marketing as art director since 2011, winning six Florida Magazine Charlie Awards in 2015 & 2017. She is arts and culture director of Okeechobee Main Street (13 years) and member of the Chamber of Commerce of Okeechobee County. Bridgette is married to James Waldau, a retired firefighter from the City of Hialeah.

born on the island of Puerto Rico. My dog thinks I am crazy for locking the door so many times in 10 seconds and my cats think I am made of catnip. Everything I wear is black, gray or blue. If I put on something colorful I must have been in a hurry. Photography is how I have let my artistic visions come to life since the early 90’s. Patience, kindness, sharing, sacrifice, love and not to judge I saw my mother practice these and they stayed within me. We are collective energy and all from the same Source. I don’t see the world through my eyes. I see it through my soul.

a military family, has lived overseas but did most of her growing up in Arcadia. After meeting and marrying Mike Prescott, she moved to Wauchula in 1979 and now calls it her home. She and Mike raised their three children there and now are reaping the benefits of their labor with six sweet, beautiful and perfect grandchildren. Her cooking style is eclectic and best described as “Southern comfort cuisine”. Her greatest joy comes from three things: her faith, loving on her family, and getting in the kitchen and “whipping” up something good.
Jessica Pleger is a wife, mother, editor, writer, and caterer. She attended the University of Central Florida where she received a Bachelor's Degree in Finance. Before working full-time at Heartland LIVING, Jessica was a paralegal for over 15 years. She is also the owner and operator of Pink Pineapple Catering. Jessica enjoys being outdoors, traveling, and participating in community events throughout the Heartland. A lifelong resident of Florida, Jessica was raised in Hardee County and now resides in Avon Park with her husband, Jonathan and daughter, Finley Grace.

Shopping List to make 6 "bundles" •1 bundle of asparagus (approximately 30 stalks) •1 tablespoon olive oil • 6 pieces of bacon •1 1/2 tablespoons Everglades Rub Preheat oven to 400 degrees F. Clean Asparagus and remove tough ends of asparagus. On Baking sheet lay out asparagus in single layer, toss with olive oil. Take 5 stalks of asparagus and wrap with bacon. Placing them back on the same baking sheet. Sprinkle with Everglades Rub evenly Bake for 20 minutes in preheated oven.

estled in the high pines of Lake Alfred is The Barn Antiques. Family owned and operated since 1969, The Barn Antiques has been a bucket list hit for many and a staple in home furnishing and gifts for more in central Florida. Opening its doors to bring beautiful pieces of furniture and décor to those who enter has been the goal from inception and the family home feel has not changed through the years and expansion. Ednamay Wales had a heart for her family and community. As the founder of the Lazy W Ranch Day Camp in 1960, which offered horseback riding, swimming and other activities, she also imagined bringing history in to people’s homes. She had dream of opening a store selling antiques to her community. Antiquing was a passion but creating a business was the ultimate dream come true. Her friends thought she was crazy but in the fall of 1969, Ed and Ednamay Wales made that dream come to fruition. Ed built a small tin-roofed building on their family ranch. The Barn Antiques was open for business.

he store was in the middle of cow pastures and pines in rural Polk County but as time passed, the business grew. Every year there was expansion. With the construction of I4, more and more people were traveling to visit The Barn. There are currently four generations playing a part in the everyday business of The Barn Antiques. Ed and Ednamay Wales were the founders and their two sons have carried on the legacy. Richard and Suzan Wales are responsible for the antiques, with their daughter, Ansley, and Tom and Jan Wales handled the gift shop and restaurant. Tom and Jan’s sons, Justin and Drew, with his wife Adrianna, now operate The Stable Home Décor gift shop, The Seasons, The Back-Yard Garden Shop, and the Back-Porch Restaurant. Every year since its opening, The Barn Antiques closes for the summer to travel abroad to hand pick pieces to bring back to their faithful customers. The first Saturday of October was the 48th year opening with its new treasures; furniture, accent pieces, and the favorite, stained glass. The other shops and restaurant remain open year-round.

The original building is still home to the antique store. There are sprawling rooms full of large and small furniture pieces available to bring a piece of history into your home. The four showrooms are over 7500 square feet full of timeless pieces. From dining room tables to sideboards and chairs, there are hundreds of items from which to choose. “My parents and I have been going to England every summer since I was 2,” says granddaughter Ansley Wales. “I would go with them and help them buy.” After college, Ansley returned to Lake Alfred to work in the family business. “Now my father and I switch off and take turns. I go to England every other trip and buy a 40-foot container of antiques. We hand pick every piece and bring it back.” “We fill and ship new containers from England nearly every month. That's how we always keep a fresh selection of the highest quality, most affordable antiques – big and small – to be found.” Each piece is restored beautifully and meticulously. “We lovingly clean, polish, and restore each piece to the sturdy quality of its original condition. Our craftsmen preserve each piece's character and history, preparing it for its next century of use in your home.” One of the popular stops in The Barn is the Stained-Glass Room. Hundreds of windows and doors are hand selected and brought back for their customers. Bursting with color; reds, yellows, blues, and more, rows of stained glass is available to meet the tastes of every customer.

“After a few years in the antique shop, my mother took off time while school teaching to do arts and crafts with my brother and I and sold them in a corner of the antique shop. That was successful enough that they eventually expanded into another business which was The Stable Home Décor” said grandson Justin Wales. The Barn Antiques is a destination to spend the day. Shop the gift shops and antique rooms and stop to have a lovely lunch at The Back Porch. Featuring Wales family recipes, enjoy a quaint meal while surrounded by large stained-glass windows framing a view of natural Florida landscape. hortly after Leah Mitchell was born, her parents John and Whitnee Mitchell realized that something wasn’t quite right with her legs. As Leah grew, they discovered their daughter had more than just mobility problems; her verbal skills were not developing normally, and her social development appeared delayed as well.

Like most parents of special needs children, the Mitchells began searching for help on how to best meet Leah’s needs. “When your child is born, you have this innate vision of what their life is going to look like. Parents of children with special needs must quickly come to grips with the reality that their child may never be like their typical peers,” said Whitnee.

When Leah was four years old, the couple moved to Lakeland where a church friend pointed them to Achievement Academy, a non-profit United Way agency and fully accredited public Charter School serving children with special needs from birth through age five. Whitnee immediately applied to have Leah placed on the waiting list. It was a long summer. Then, five days before the school year started, the Mitchells received the news that there was a space for Leah.

“We were really excited,” Whitnee recalled. At four, Leah was completely nonverbal and in a wheelchair full time. She went into Stacey Robinson’s class where she began receiving speech, physical and occupational therapy, including spending time in “the stander,” an apparatus that encourages Leah to bear weight on her legs.

“At first, she could only tolerate 10 minutes,” said Robinson, or “Miss Stacey” as the family calls her. “We had to talk her through it or use bubbles.” Now she can do 45 minutes to an hour while she plays on an iPad or with Legos. It’s hard work for her, but Robinson said it’s almost as if Leah knows it’s for her benefit. When the preschooler first came into Robinson’s classroom, she did not engage well with other people, didn’t play with toys very much and could not get around. Robinson’s first goal with Leah was to earn her trust. Now, in her second year at the school, Leah is showing pretend play skills, communicating with signs and gestures, interacting well with her peers and therapists and has even begun to crawl and lift up on furniture. “It’s an inspiration to see. It’s hard work for her,” Robinson noted.

Formerly the Child Development Center of Polk County, Inc., the organization has served children with disabilities for over 60 years. In 1997, Achievement Academy became a charter school, making it one of the largest established charter schools in the state of Florida, and one of only a handful of schools specifically geared for special needs children. „

The organization actually has two components-- the AdvancED-accredited charter school which serves children ages 18 months through 5 years, and the Birth to Three program, an in-home visitation program which identifies children up to age three who might have delays. “Early intervention is the key,” said development director Stacy Williams. “The earlier the child can get help, the better chance they have to maximize their potential.” Money is not a barrier for families, either, as Achievement Academy is free. But it does cost money to run-- a lot, especially because class sizes are small and the classrooms receive daily visits from licensed therapists. Staying on top of the latest developments also means acquiring new technologies and therapy tools as well as training staff on them. Just last year, fundraising efforts allowed the school to raise $15,000 to purchase eight iLs systems.

iLs stands for integrated listening system, a therapeutic exercise program geared at helping kids with their concentration, communication, organization, physical regulation and anxiety. The students wear a special headset that provides music through air conduction (the way we normally hear things) and bone conduction (the conduction of sound to the inner ear through the bones of the skull). Combined with movement and thought-provoking tasks over a series of 60 one-hour sessions, the listening program is geared towards children with ADHD, autism, speech and language delays and overall developmental delays, according to Achievement Academy’s therapy department head Wendy Ames. „

But those therapies are exactly what these special kids need, as Luis Unda discovered. Unda’s son, Fernando, experienced seizures and a speech delay early on. He was later diagnosed with autism at age 12. Fernando exhibited difficult behaviors, and the staff at Achievement Academy helped Luis and his wife Griselle to understand how to best handle them. Fernando, now 23, is living in a group home and participating in a life skills and job skills program. Luis, past board president for Achievement Academy, and Griselle, who works in an administrative role at the school, credit the early intervention Fernando received as being crucial to his current success. “He’s doing fantastic. I can see he is on the right path to be successful in life, having a job and having a routine that he enjoys and that he’s happy about,” said Luis. Luis said he’ll never forget one phrase he heard early on to describe Achievement Academy: one of the best-kept secrets of Polk County. He agrees. “As a special needs parent what a relief it is to have your child be part of that school.” If there is a secret ingredient, Luis feels it is the staff. “Everybody is so dedicated to making those kids succeed,” he said. Williams agreed. As development director she can vouch for the longevity of the folks who work at the school. “Our principal has been here 30 years. Our early interventionists in the birth to 3 program have been here 34 and 35 years. One of our physical therapists has been here over 30 years,” Williams said. Robinson, Leah’s teacher, has been with the school for 20 years.

Leah’s mom can tell, “Their staff is like a family,” said Whitnee. Besides doing their jobs, the staff does something else for special needs families, according to Whitnee. “Mostly what we need, families like ours, is uplifting voices of support and inclusion, and that’s exactly what you get from Achievement Academy.” Whitnee likes that the classroom is run like any other classroom, where students are challenged and given responsibilities as well as love and support. “These kids are really resilient. Ingredients: 5-6 Pound Delmonico Steak Roast ¼ cup Worcestershire sauce Salt & Pepper Garlic Powder 6 strips bacon
• Take roast out of refrigerator and allow to come to room temperature. • Preheat oven to 500 degrees. • Pour Worcestershire sauce over entire roast. • Season generously with salt, pepper, and garlic powder. • Place roast in foil lined roasting pan. • Place in hot oven and roast for 30 minutes.
• Remove roast and cover with bacon strips. • Lower oven temp to 325 and cook for additional 30 minutes. Meat thermometer should register 130 degrees. Remove from oven and allow to rest for 15-20 minutes. • Caution – meat will continue to cook, so remove from heat and do not overcook.

ONION CASSEROLE Ingredients: 2 Large Vidalia onions 2 Large Red Onions
(Cut in half-thinly slice onions and separate)
2 bunches Green onions, cleaned, sliced
Black Pepper (to taste) 10 oz. bleu cheese, crumbled 10 oz. grated havarti cheese 3 T. butter cut into small pieces ½ - ¾ cup dry white wine
• Preheat oven to 350 degrees. • In a greased 9 x 13 inch baking dish, layer half of sweet onions, red onion and green onions. Sprinkle black pepper. Top with bleu cheese. • Layer remaining onions and sprinkle with black pepper. Top with Havarti cheese. • Place butter evenly over cheese. • Pour wine over casserole. • Bake 1 hour or until onions are tender. If cheese browns too quickly, cover with aluminum foil. Serve hot. Note: Casserole may be assembled 1 day in advance and refrigerated. If refrigerated, increase baking time to 1 hour 15 minutes.

CARROT SOUFFLE Ingredients: 1 ½ cups butter 3 pounds carrots, peeled & sliced salt 1 ½ cups sugar

6 large eggs ½ cup all-purpose flour 1 T. baking powder ¼ t. ground cinnamon
• Preheat the oven to 350 degrees F. • Spray with butter flavor cooking spray casserole dish. • Bring a large pot of salted water to a boil over medium heat. Add the carrots and cook until tender. Drain and set aside. • In food processor, add the sugar and eggs and pulse to combine. Add the flour, baking powder, cinnamon and butter; pulse until smooth. Add the carrots and pulse to combine. • Spoon the mixture into the prepared dishes and bake until set, about 1 hour. Remove from the oven and serve immediately.
MACARONI & CHEESE Ingredients: 1 Box (16 oz) elbow macaroni 4 T. butter ½ - 1 cup sour cream Salt, Pepper, garlic powder to taste 3 cups – grated cheese ( sharp, mild, blends) 1 cup cubed Colby cheese ½ cup shredded gruyere 4 eggs (slightly beaten) 2 cups heavy cream Additional milk if needed 1-2 additional cups for top of macaroni & cheese ½ parmesan (for top) • Cook macaroni al dente. Drain macaroni and put back in pot or in large bowl. Add butter, sour cream, and seasonings. Combine well. • Add shredded cheeses, cubed cheese, and gruyere. Add slightly beaten eggs and heavy cream. • Mix together well. • Mixture must have adequate liquid (liquid must be visible). If necessary, add milk.
• Place in sprayed 10 X 14 baking dish. • Spread additional cheese on top and sprinkle parmesan. Bake COVERED 350 degrees for 30 minutes. Uncover, bake 10-20 minutes until bubbly. Do not overcook.
TRADITIONAL BREAD PUDDING WITH HARD SAUCE Ingredients: 2 Medium loaves French Bread (1 inch cubes) 6 Eggs 1 cup brown sugar 1 cup white sugar 3 T. Cinnamon Dash Salt 3 cups Half & Half 1 cup Heavy Cream 2 T. Vanilla 2 cups raisins (1/2 cup set aside) • Combine all ingredients in large bowl. Allow bread to absorb all liquid. • Spray 9 X 13 deep baking dish with butter spray. Add bread pudding mixture. Sprinkle reserved raisins and press down. • Bake at 350 degree oven in WATER BATH, 45-50 minutes (or until knife inserted in center comes out clean). Heartland • Toppings: Candied pecans LIVING Sauce: 3 T. butter, 2 t. flour, 1 cup brown sugar, December 2017 ¼ cup bourbon. Stir and cook over medium heat January 2018 until sugar melts. Add ¼ cup heavy cream and remove from heat.

Explore Florida’s role in the war with Dr. Gary Mormino as he examines the great social, cultural, and economic forces that transformed Florida into the “Sunshine State,” now the third most populous in the country.

The Legacy of Franklin Roosevelt’s WPA in Florida
Presented By: David Schmidt, Curator, Florida Civilian Conservation Corps Museum February 20, 2018, 7:00 – 8:00 PM The Works Progress Administration (WPA) was one of FDR’s most controversial programs to put people to work during the Great Depression. Many saw it as a ‘make work’ program which did not accomplish its goals – the acronym was derided as “We Piddle Around.” The buildings, bridges, dams, post offices and other projects that were completed during the 1930s and 40s constitute a significant infrastructure now taken for-granted. Even less well known are the New Deal initiatives that included art, photography, film, literature, music and theater. Roosevelt scholar David Schmidt looks closely at WPA works in Florida including the 1942 mural of saber-toothed cats by the great American wildlife artist Charles R. Knight that was rescued from the Sebring Post Office and now hangs in the Sebring Public Library.

Presented By: Steven Noll, Professor of History, University of Florida March 6, 2018, 7:00 – 8:00 PM Florida’s history as territory and state can be told through the changing methods of transportation designed to move people and goods both to Florida and within Florida. Examining the changing transportation networks in the state, Dr. Steven Noll will trace how Florida changed from a backwoods frontier to one of the most important states in the union. Tying transportation history to social history, travel on a journey that moves from the Bellamy Road of the 1820s to the modern transportation issues currently facing the Sunshine State.

In the beautiful Outdoor Kitchen at Bok Tower, a sold-out audience watched World Food Championship’s Amy Freeze prepare the best of the fall harvest from their Edible Garden in the first installment of the Farm to Table Dinner series. During the Autumn’s Bounty presentation, Amy incorporated flavors of the fall, along with ingredients straight form our garden, to prepare a four-course dinner, including a craft beer-infused dessert, and fall drinks. Amy has become known for her use of craft beer, even in desserts, and has successfully transitioned into recipe creation for well-known food and beverage brands. Experts shared about building your own small or tiny house through educational sessions, model home tours and debt reduction seminars. Proceeds from this event were donated to the Hardee Habitat for Humanity to help them build a house in Hardee County as well as the Bowling Green First Responders to put new defibrillators in all Police Cars.
