- Skinless redfish fillets, rinsed and patted dry - 1 stick of butter - Seasoning Mix: combine equal parts of the following: Paul Prudhomme’s Blackened Redfish Magic, dried parsley & dried sweet basil - Fresh spinach leaves - Well-seasoned cast iron skillet

Directions:

- Turn on kitchen exhaust fan, open window or door. - Heat cast iron skillet on stove top over HIGH heat until skillet is extremely hot (15-20 minutes) - Melt butter in bowl in microwave - Dredge redfish fillets in melted butter - Sprinkle each side of the redfish fillet with the seasoning mixture - Place a redfish fillet in the hot skillet - Cook for 2 minutes and flip, cook the other side an additional 2 minutes - Remove the fillet from the skillet to rest on a paper towel covered plate - Once all redfish fillets have been blackened, add spinach to the skillet - Toss the spinach with a wooden spoon for 1 minute, until coated and emerald green. The spinach will clean the skillet, picking up the seasoning and pan drippings, making an excellent side dish
