Dear Members, It’s hard to believe the holiday season is already upon us. November brings us lots of exciting and fun family activities at Innisbrook. We’ve come to the end of the summer season and the weather wasn’t really an issue until the last 3 weeks of September when we got hit with 14 inches of rain in 15 days. Things are beginning to dry out now and just in time for everyone’s favorite time of year…overseeed! I know this process can be very disruptive and for a period of time cause sub-par putting surfaces, but the benefits will surely show in the winter months. The first course closed for overseeding was the Island course in October followed by the Copperhead also in October. The South course is presently being done and will be finished by November 7 then the North course will be the last from November 11 to 21. Here are a few things we’ve been able to accomplish over the summer months. • South course # 1 Green is now open. • We’ve enlarged and leveled the tee boxes on the Copperhead holes number- 4, 8, 11,13, & 14 • We’ve placed rope and signage throughout all courses directing carts away from high traffic areas around greens, tees, and bunkers. • Replaced the old pump house on Copperhead number -5 We are looking forward to a very productive fall followed by a very busy winter season. Innisbrook Member Ria Graham, was selected to play on the USA Supersenior tennis team in Antalya, Turkey October 13-18. The four member team was Dorris Defries (CA), Roz King (CA), Burnett Herrick (SC) and Ria (FL). They played various teams from the International tennis federation. In the main draw, which was divided into two sections, they played and beat: The Ukraine; and France. In the playoff rounds they played and beat Canada and then Germany for the championship. The format is two singles matches and one doubles match.

Table Talk with Chef Andrew Coniglio Cobia wrapped in Banana Leaf For this month I wanted to share a recipe I made for a cooking competition I participated in last month in Orlando hosted by Celerity Chef Emily Ellyn. Cobia is a firm white fish that is readily available but can be substituted with local Mahi-Mahi. This is a fun presentation that really keeps your fish naturally moist and the side dish is a “pasta” made from fresh hearts of palm.

Ingredients • 6 Cups Fresh Pumpkin (skin off, diced) • 2- 8 Ounce Filets for Cobia • 2- 12”x6” pieces of Banana Leaf • Kosher Salt and Black Pepper to taste • 2 Ounces of Orange Juice

• 2 Ounces White Wine • 2 Slices Fresh Orange • 3 Whole Hearts of Palm • 2 Ounces Julienne White Onions

• 2 Ounces Grand Marnier • 3 Ounces Whole Butter • 3 Leaves Fresh Basil • ½ Ounce Crushed Almonds

Method 1. Make sure fish filets have all pin bones removed. 2. Season Cobia with salt and pepper and place each filet in the middle of a banana leaf with 3 quartered pieces of orange slices on the bottom. 3. Pour orange juice and white wine over the Cobia and keeping the liquid inside fold in the edges and wrap the fish (use toothpick on bottom to keep fish wrapped). 4. On a hot grill (or sauté pan) cook the banana leaf wrapped Cobia for 5 minutes, turning to give grill marks. 5. Place fish in pan and cook in 350 degree oven for 15 minutes (the banana leaf keeps in all the moisture to steam the Cobia). 6. While fish is in the oven use a peeler to create long strips or ribbons with the hearts of palm (should look like pasta). 7. Blanch hearts of palm ribbons in boiling water for 4-5 minutes and set aside.

9. Add hearts of palm and basil to pan, slowly add the remaining butter and squeeze leftover orange for juice. 10. Remove Cobia from oven and peel back banana leaf, make a nest of the hearts of palm ribbons and top with crushed almonds..

8. In a sauté pan cook onions in 1 ounce of the butter until translucent, deglaze pan with Grand Marnier (this with catch fire as the alcohol burns off) and turn to low heat.


The F.E.A.S.T. project

Each year during the month of November, Innisbrook Associates collect non perishable food items for F.E.A.S.T. food pantry of Palm Harbor. F.E.A.S.T. Food Pantry of Palm Harbor is a non-profit, 501-C3, nondenominational food bank serving the residents of North Pinellas County for over 25 years. Currently, F.E.A.S.T. is helping over 3,000 families each month. The need is so great now, that they are adding 4-5 families a day in North Pinellas County. If you would like to help fill the F.E.A.S.T. pantry your donations of non perishable food items can be dropped at the Membership office located in the Island clubhouse.

Nature Watch: Armadillos

Written and photographed by Golf Operations Dave Noel Of the 20 varieties of armadillo, all but one live in Latin America. The familiar ninebanded armadillo is the only species that includes the United States in its range. Armadillo is a Spanish word meaning “little armored one� and refers to the bony plates that cover the back, head, legs, and tail of most of these odd looking creatures. Armadillos are the only living mammals that wear such shells. Armadillos dig burrows and sleep prolifically, up to 16 hours per day, foraging in the early morning and evening for beetles, ants, termites, and other insects. They have very poor eyesight, and utilize their keen sense of smell to hunt. Strong legs and huge front claws are used for digging, and long, sticky tongues for extracting ants and termites from their tunnels. In addition to bugs, armadillos eat small vertebrates, plants, and some fruit, as well as the occasional carrion meal.

Armadillos are not native to Florida, but are now common over most of the state. It is lawful for a landowner to live-trap or humanely destroy nuisance armadillos although they are difficult to capture with live traps. Armadillos are not considered native to Florida and are, therefore, illegal to transport and release. Relocating wildlife is seldom biologically sound, the animal often does not survive. Innisbrook armadillos can create real havoc on the greens, fairways and lawns digging for food just below the surface. Grounds department is especially busy this time of year repairing the burroughing holes they leave behind. When startled, such as clapping your hands at close range, they will leap straight into the air then take off running for the nearest cover.

Membership cards are updated at the Membership office located at the Island clubhouse. As long as there is a current photo on file a new one can be printed instantly.

There is an area on the card that indicates an expiration date.

Membership cards should always be carried and presented as proof of Membership and protection against erroneous charges. Carrying Membership cards is a requirement stated in the Code of Regulations.
