Dear Members, Happy New Year! Last year was an exciting one and we have lots in store for 2015. Innisbrook and Salamander accomplished a lot in 2014— from celebrating one year of excellence at Salamander Resort & Spa to hosting the Valspar Championship in March on the Copperhead Course. Golfweek ranked the Copperhead Course among the top 100 courses in the nation. The top of the year brings lots of fun activities at Innisbrook. Start off the New Year with a new you. Until January 31, sign up for five 30-minute personal training sessions and receive two additional sessions free. Membership in the IMGA & IWGA allows all golfing Members the ability to maintain a handicap at the club as well as participate in events such as the Club Championship, Member/Member and Ryder Cup. Hole in One Congratulations! Carrie Bell made her hole in one on November 28 on Island’s #17 for 135 yards using her Hybrid 5. Congratulations Carrie!

Innisbrook’s Ryder Cup Team Barnes retains the Innisbrook Cup! The matches were close; coming down to having 1 match each day in making the difference for the overall victory. Everyone had a grand time both days. The courses were in good shape, the weather was unbelievable both days and the matches were competitive. Member events such as this one create such camaraderie amongst the members, and opportunity for the golf professionals to get to know our members. On behalf of entire Innisbrook Golf and Membership staff, we would like to thank Andy McAdams, and the IMGA board members, and all of the competitors for taking the weekend to compete in this year’s Innisbrook Cup. We conclude this year’s event by congratulating Team Bobby Barnes—Nic Wahl, Clark Bradley, Peter Minogue, Barry Nelsen, Carl Cohen, Ed Cramm, Jake Holub, K.S. Interclub As a team, Innisbrook came in 2nd with a score of 334 in the Pinellas County Interclub held on December 16 at Crescent Oaks Golf Club. Table Talk with Chef Andrew Coniglio Guinness and Beef Stew While living in Dublin, Ireland for three years I got introduced to some great “new school” continental cuisine and of course many “old world” dishes. I would like to share my recipe for my favorite from the “old world”. In Dublin I had the opportunity to work for a family of butchers that owned a farm, butcher shops and of course, restaurants called F.X.B Steak and Seafood in the Temple Bar area of the city. There I got to use some of the finest quality beef and ingredients that the country had to offer and this is my recipe for the Guinness and Beef Stew.

Yield: 8-10 portions • 2 Pounds Diced Stew Meat (Chuck) •16 Ounces Guinness • 3 Sprigs of Fresh Rosemary (picked and chopped) • 4 Sprigs of Fresh Thyme (picked and chopped)

• 4 Sprigs of Fresh Parsley (picked and chopped) • 3 Bay Leaves • 3 Medium Carrots (Diced) • 1 Medium Yellow Onion (Diced) • ½ Cup Rutabaga (Diced) • ½ Cup Turnip (Diced)

• 1 Cup All-Purpose Flour • 2 Cups Beef Stock • 1 Cup White Potatoes (Diced, boiled separately) • Cornstarch (if needed) • Salt and Pepper to Taste

Method 1) Marinate the Diced Beef in half of the Guinness, Rosemary, Thyme, Parsley and Bay Leaves overnight. 2) Next day, drain beef from liquid and reserve the liquid for later. 3) Season beef with salt and pepper lightly and add the other half of the herbs, cook in a stock pot until brown (uncovered).

4) Add all vegetables (not potatoes) to the pot and cook for about 8 minutes on medium heat or until the vegetables start to brown. 5) Add flour and cook for 3 minutes. 6) Deglaze pan with Guinness, beef stock and left over marinade bring to a boil and then simmer for 1 hour. 7) In a separate pot cook your diced potatoes in salted water until done (the reason I do this separately is to ensure that the potatoes do not fall apart in the stew). 8) Check tenderness of beef and when it is ready to serve you add your cooked potatoes.


Dali Museum Picasso exhibit A trip to the Dali museum for the Picasso exhibit is planned for Monday, February 9. The bus will depart from the Osprey Clubhouse at 9 am to arrive for the museum tour at 10 am. Following our visit at the museum the bus will make a stop in the downtown St. Pete area where the group can enjoy the many dining options the area has to offer. Museum tickets are $16.75. Innisbrook’s ponds offer a welcome location for our annual visitors from the far north during the winter months. “Divers” and “Dabblers” find safety and food while the golfers play. At first light they can be seen zipping just above the trees from the west where they raft by the thousands in the Gulf overnight. On the freshwater ponds they feed, groom, and relax most of the day. At dusk they will quietly assemble in a tight group before springing into the air in unison. They circle a time or two then head back to the Gulf for the night. This will be the ducks’ daily routine until springtime when nature calls them back from where they came. Since the grounds of Innisbrook are located close to the Gulf, the ducks wintering here are mostly “diving” ducks. The redhead, hooded merganser, ring-necked, lessor scaup and bufflehead ducks can relax at our great resort. Of course there are dangers, such as, alligators, birds of prey and misguided golf shots. The males sport beautiful plumage as a display to impress the females. As winter wears on the numbers of ducks will increase, until one day near April 1st they will depart to continue the circle of life
