CHICKEN CURRY

T

his curry is a very easy and delicious one-pot wonder! My Ouma spent years perfecting this recipe so I can guarantee it will be a real crowd pleaser in your home!

To really bring out all of the delicious flavours, I like to make it the day before and heat it up before serving. There’s it.

• Serves 6-8 • Easy peasy • Gluten free | Kid friendly 7


RECIPE OF THE MONTH CONT. YOU WILL NEED • 120 g butter • 1 tsp olive oil • 2 large onions, finely • chopped • 1 large chilli, deseeded and • finely chopped • 1 tbsp curry powder • 1 tbsp ginger • 1 tbsp cumin • 1 tbsp turmeric • 1/2 tbsp garam masala • 5 star anise • 6 cardamom pods • 6 cloves • 1 cinnamon stick • 3 bay leaves • 8 chicken breasts, cut into • cubes • 1 tbsp tomato paste • 2 cups vegetable/chicken stock

METHOD • In a large pot on medium heat, melt the butter and add the olive oil. • Add the chopped onion and cook until translucent, then add the chopped chilli and all of the spices. • Add the chicken and cook for a few minutes until browned. • Add the tomato paste and cook for a few more minutes. • Add the stock, some salt and pepper and stir. • When the chicken is lovely and tender, your curry is ready.

Tips and tricks

Serve this scrumptious curry with rice, chutney, sliced banana, tomato and onion salsa, yoghurt and poppadums. Yum! Remember to remove your whole spices before serving! Otherwise tie them in a little piece of muslin before throwing them into the pot so that you can remove them easily. There’s it. 8

Siobhan Tatum Swart walked the red carpet of Parliament at the State of the Nation Address 2019 with her Dad, Steve Swart (a Croydon Homeowner and Resident), MP of the ACDP (The African Christian Democratic Party) wearing a statement dress to bring a powerful message. Restoration of the Rainbow Nation. A Declaration of Faith, with Isaiah 5-7 and Psalm 132 and Deuteronomy 6:4-5 imprinted on the dress. A beautiful, creative, prophetic dress filled with beautiful elements of Africa and the Word of God. What a Kingdom dress!

RESIDENTS FEATURED CONT.

On the 13th of April Karl and Petra Ossowski started a new chapter in their lives when they became husband and wife! The weather might have been moody, but there was nothing gloomy about the occasion. Wishing you both a lifetime of magic moments and special memories from your Croydon family.

On a warm sunny morning the feathered inhabitants of Spier Eagle Encounters came to visit Croydon Vineyard Estate. These raptors were accompanied by a friendly (so I’m told) python!

Thank you to all who supported Eagle Encounters, who received the money collected from the ticket sales.

Young and old from both the Vineyard and Olive Estate, as well as Kelderhof had great fun learning interesting facts about the raptors during the show and tell. A Harris Hawk even entertained the residents with a flying show. A lot of nervous smiles and giggles could also be seen and heard when those attending were holding the (friendly) python. 12


On the 22nd of February we had our annual grape stomping event – WHAT A HUGE SUCCESS! It was an event of mass proportion … and the biggest attendance to date! There was live music by Sam & Calla; a dance floor for the John Travolta’s and Olivia NewtonJohn’s amongst us and a variety of food trucks to tickle the tastebuds. And because you can’t buy happiness, but you can buy wine (which is kinda the same thing) … we were all happy! 13


GRAPE STOMPING CONT. Since CroYdon is a family community, we did not forget about our littlest CroYdonites‌ candyfloss, popcorn, slush puppies and a jumping castle were arranged specially for them. We were overwhelmed with the demand for tickets and unfortunately due to health and safety reasons had to restrict numbers. Under the circumstances and with the popularity of this event growing annually, be prepared for next year – you snooze, you lose! Never a truer word said in jest. 14



WINNING WINE CONT. Living on a wine estate has to be as near perfect a lifestyle as you could wish for. Not only does it give you one of the finest opportunities to observe the passing of the seasons but it also offers the opportunity to drink wines made from grapes grown outside your bedroom window. How cool is that? If those wines happen to be judged the best of the best then that’s even cooler. Both our 2017 Shiraz and Cabernet Sauvignon achieved a four star rating in the latest Platter guide (regarded as the “bible” of SA wines). Our Covenant Chenin Blanc also drew some very favourable comments from wine fundi Michael Fridjhon in Business Day newspaper. But the crowning glory came with the 8th annual Prescient Cabernet Sauvignon awards. 16


WINNING WINE CONT. 94 different cabernets were entered from 76 different producers and tasted blind by the judges (in other words, the tasters didn’t know whose wine they were tasting). Those 94 wines were whittled down to a final ten which were then re-tasted and rated out of 100. The CroYdon Covenant Cabernet 2017 came first in this highly prestigious competition with a score of 95/100 beating far more expensive and well established competitors such as Rust en Vrede, Delaire Graff and Le Riche. Nine out of the ten top wines came from the Stellenbosch area which reinforces the long held belief among wine enthusiasts that Stellenbosch really is Cabernet country.

This is a huge credit to our wine making team and the good news is that Rikus Neethling reckons the 2018 could be even better. If CroYdon Vineyards establish a brand name as a producer of top rated wines we all benefit as homeowners and part owners of the wine company. Success breeds success and the 2017 prize winning Cabernet which sold for R110 a bottle can now fetch R200 a bottle. G T Ferreira, the banking mogul owner of Tokara wine estate once described owning a wine farm as a “return on ego”. If you just happen to be producing a wine judged the best Cabernet in the Western Cape you can be forgiven for being a bit egotistical.
