IN A WEEK FILLED WITH JOYFUL EXPECTATIONS, THE ANTICIPATION FOR THE START OF SOMETHING NEW, A VERY SPECIAL WEDDING IN FACT – WAS ON THE HORIZON. GIANNA AND BRENDAN’S BIG DAY SEEMED TO SNEAK UP OUT OF NOWHERE AND IT DID NOT DISAPPOINT! IT WAS A PERFECT SUMMERS DAY AND LOVE WAS CLEARLY IN THE AIR!

And then it began. The double doors opened and in came the bridesmaids, each radiating beauty and grace. It was time. The groom’s smile grew and grew as his bride drew near. As bride gazed into her husband’s eyes, her smile lit up the chapel. Never have I seen a happier bride. Love was truly in the air. As I looked away from her smile, for just a moment, I saw a beautiful Roz La Kelin gown, flawlessly made, adored with lace, accompanied by pearls and crystals. It embodied elegance, coupling a classic vintage feel. She truly looked like a princess.

You couldn’t help notice the staff going out of their way to ensure that every guest, most importantly the newly married Mr. & Mrs. Lucas, had the wedding they desired and deserved. With the band in full swing, the dance floor came alive. The food and drink was divine and the newly married couple simply shined. The night was an absolute success, but like all good things, it had to come to end. The Master of Ceremonies announced it was that time and the Lucas’ began to say their goodbyes.

ONCE UPON A TIME, IN A LAND CALLED GRANGE, SOUTH AUSTRALIA, LIVED A YOUNG BOY NAMED PAUL. PAUL WOULD PLAY WITH PAPER, AND FAIRYTALE BOOKS, DREAMING ABOUT ONE DAY OWNING A CLOTHES STORE. FAST FORWARD A DECADE, AND THE LITTLE BOY PLAYING WITH PAPER IS NOW WORKING WITH SOME OF THE MOST OPULENT SILKS AND LACES IN THE WORLD. STILL A DREAMER, TODAY PAUL IS BRINGING MAGIC BACK INTO THE FASHION WORLD THROUGH PAOLO SEBASTIAN.

Paul Vasileff is the face behind Paolo Sebastian, an Adelaide-based couturier specialising in hand-made gowns. Vasileff’s intricate beadwork and romantic fabrics, paired with impeccable tailoring birth designs rich with soft youthful innocence, yet bold with womanly confidence. Baring a strong influence by the whimsical world of fairy tales, and eras when legends of the silver screen ruled Old Hollywood in gowns that echoed a timeless grace, Vasileff breathes new life into vintage glamour. A genuine old soul with a charming smile, Vasileff is wrapped in the body of a highly accomplished 24-year-old. As a graduate from Milan’s Europeo Istituto di Design, Vasileff also featured in London Fashion Week in 2010. Paolo Sebastian catapulted into acclaim following Sydney’s 2012 Fashion Palette. Today, Vasileff is listed a favourite designer amongst starlets around the world (Giuliana Rancic, Cat Sadler and Carrie Bickmore to name a few). Paolo Sebastian has been the name behind the dress at red carpets worldwide, from the Golden Globes, to the Logies.

Given his reputation for dreamy, romantic show-stoppers, it is no wonder that Vasileff attracts bride after bride, begging for a Paolo Sebastian custom-made gown. An honour, which fulfils Vasileff’s earliest dreams, as he shares that designing bridal was “always something I wanted to do.” With social media accounts rife with adorers lusting over his gowns, Vasileff explains, “We don’t do your typical kind of bridal. It’s a bit more red carpet, and I guess being custom-made couture, you can have your own personal stamp.” Despite being on the lips of international big names, Vasileff remains remarkably humble. When asked about the most memorable moment of his career, he lists his first fashion parade. “No one knew who I was. It mattered to me. It was that achievement of doing my first show. I came from nothing, no idea about the fashion industry or how it worked, I was sixteen-years-old and I wanted to put on a fashion show and start a label. That always stands out to me as a moment of pure happiness,” he says.

Also look out for studios who are well organised & punctual. Simply being late to a meeting says a lot about how they operate and how serious they are about you as a client. Would you want your photographer late on your big day? HOW CAN A COUPLE ENSURE THEY ARE GETTING VALUE FOR WHAT THEY PAY, AND SHOULD THEY BE LOOKING AT PACKAGES THAT INCLUDE PRINTS, ETC? Every couple is different. Each and every one of them. They should communicate with each other before looking for their photographer. Organising the ‘must-haves’ so they don’t sucked into buying more than they really need. Be wise. Be practical. If you want prints/ albums, get them. If you dont, then dont. Simple HOW DO YOU FEEL ABOUT BLACK AND WHITE PHOTOS TAKEN? We love black and white. Can’t get enough of it. The beauty of simplicity. No distractions

WHAT HAS BEEN YOUR FAVOURITE LOCATION, AND WHY? Tasmania has been my favourite to date. Shot a small wedding, less than 80 people in a small town called Snug. Roughly 25mins out of Hobart, all the town consisted of one small pub, cafe, and milk bar. The wedding was at the bride’s parents home, a 100+ year heritage home which had been fully restored and finished only months before the big day. The simplicity of the town made it really easy to navigate and there was a lot of people willing to help in any way they could. Ladders, tools, cars, odd jobs. If they hesitate or come up blank, they haven’t thought about it at all. This isnt a deal breaker, but its not a great sign. Prepare for the worst, but pray for the best.

From Lebanese roots, Alin has always called Melbourne home. From an early age, he was influenced by his bridal designer Aunty and his tailor Uncle. After the heartbreaking loss of his Aunty, Alin’s interest intensified and he “fell in love with the whole industry”. Rather than focusing on religion and maths class in school, Alin remembers filling his exercise books with bridal gown designs.

Despite a love for designing in general, bridal gowns will always have a special place in Alin’s heart. “White is just so beautiful,” he says. “The bridal fabrics are just so pure”. Although very confident and sure of his own style, Alin explains a lot of his success is due to the relationships, and communication he forms with his clients. “I actually do listen to clients, some designers have their own style and want to do their own thing.” He says, “The best thing about making a bridal gown is the relationship you create with your client. It’s not like going and getting a haircut and you’re there for an hour. You have consultations and meetings within nine to twelve months. I think that’s the highlight of it, because then they can gain the trust in you.”

Alin pursued his love of design, studying fashion at various institutions. There, he honed in on his construction and theory skills, yet nothing proved more valuable than working in the industry. “They teach you at school as much as you can, but you don’t learn as much as you actually work in the industry. With a career spanning over thirty years, Mathieu Salem has been involved in every aspect of fashion design, from picking up pins off the workroom floor to dressing royalty. His designs can regularly be seen on celebrities, models and socialites as they grace the red carpet, magazine covers and the racing scene. Training in fashion design in Australia and London, his classic designs have seen him win numerous awards for Bridal, Evening, Race and Day wear. Growing up in the suburbs of Melbourne with his mother and aunts, who were all dressmakers, Salem was exposed to the creation of beautiful garments from a very young age. He says that as a child he would sit, watch, and play in the sewing workroom, picking up pieces of fabric and shopping for fabrics with his mother. This traditional designer upbringing that has shaped his career is something that Salem says is a rarity among

young designers today. “It’s very rare that we ever find any of the new students have ever touched a sewing machine before they’ve gone to fashion college, which is often a major obstacle in employing new designers and workroom staff.” After studying fashion design at the Royal Art College in the United Kingdom, Salem spent years working in all aspects of the fashion industry before returning to his designer roots after an inspirational trip to the place where he grew up. “Sometimes it can be just a gorgeous piece of fabric, an art exhibition, or in my case, travelling in a Melbourne tram down Chapel Street, to suddenly awaken that creative urge again, and so with that it brought me down to Melbourne and straight back into fashion.”

In 2006 he opened his first studio in Melbourne, bringing what he calls his ‘wearable art’ to life for the clients who seek his bridal couturier expertise. Salem understands the unique role that he plays as a designer in helping a woman find her perfect wedding dress. He carefully assesses his clients to make sure that the dress is reflection of themselves, that it makes them feel special and doesn’t overwhelm them. His greatest piece of advice for women who are starting to choose their dress is to have an understanding of your budget and the direction you want to go in, but to keep your mind open to everything. “The first thing you should be looking for is the silhouette. Forget the embellishments, forget the fabric, forget the colour, just look for the shape that best suits your body. Try everything on, try the meringue on, try the slim silhouette, try the sexy dress, you’re going to find out if you’re right or you might be surprised.” Salem’s classic designs are reminiscent of the old school dressmaking techniques of draping, cutting, fit and fabric embellishment. He doesn’t question inspiration when it comes, whether it be a cocktail he had in Bangkok, a basket of orchids or a fabulous piece of fabric. “So like everything else, inspiration comes when it comes, and I suppose that’s the definition of the word, wouldn’t it be?” Over the next year Salem believes that tattooed lace, intricate and ornate upper bodices and necklines, and veils will be trending in bridal fashion. He also believes that bridal wear is moving towards convertible dresses, multiple pieces that can all interchange with each other so that the gown can have a life after the wedding. “I hate the thought that this beautiful piece of work will go into a box, or into a preservation bag, not to be seen for years. I love the idea that it can have a place in a woman’s wardrobe and in her heart.” But for Salem, traditionalism always prevails, with his belief that what makes bride is the veil, as they will never wear one again in their life. “The moment a girl puts on a veil, she suddenly becomes a bride, and it’s beautiful.” Salem’s ultimate advice for potential brides is to enjoy the process of planning a wedding, don’t feel stressed or rushed, and if you are unhappy then walk away. He believes that buying a wedding dress is a fantasy a woman will act out once in her life, and as a designer he wants to fulfill that fantasy. “Every day when I see the look reflected in the mirror of that girl when she puts that gown on for the last time and it’s everything she wants, that just is everything for me. I love it, it’s my pat on the back, it’s when I see that I know I’m doing what I was meant to do.”

My favourite part of the kitchen tea was being able to use my mother’s fine china as crockery, antique silvery cutlery and silver tea ware, which has been in our family for decades. Keeping it personalised was really important for me. The food was displayed on grand silver platters and the drinks served in gorgeous crystal ware. Whilst such a small touch, using my mother and mother-in-law’s fine china, evoked a sense of two families uniting as one. I thank my mother, Cassis, sister, mother-inlaw and friends for creating the most perfect kitchen tea for me, I love them infinitely.

I knew bridal robes had always been a ‘must have’ item for any wedding day during the hair and makeup preparations, I wanted a robe for my own wedding where I could feel comfortable having so many people around including photographers yet keep the style delicate, romantic and feminine. WHAT IS YOUR OWN STYLE AND HOW HAVE YOU INCORPORATED THAT INTO YOUR DESIGNS? I love all things lace. I love styles that gives you confidence where your beauty shows without having to reveal too much! I need to feel comfortable in everything I wear so I made sure that is my number one priority within my robes besides how it looks. My robes must be soft and cover you in all the right places yet show just enough to make you feel amazing when wearing it. WHAT DO YOU BELIEVE ARE THE TRENDS FOR SUMMER? BEETROOT, GOATS CHEESE AND POMEGRANATE SALAD SERVES 2 INGREDIENTS

2 cups rocket 3 small beetroots 80g goats cheese (crumbled) ¼ cup walnuts 2 tbsp pomegranate seeds (from ¼ pomegranate) ¼ cup olive oil 1 tbsp red wine vinegar ½ lemon (squeezed)

METHOD

Preheat oven to 200°C. Use a fork to prick beetroot. Place on a baking tray and bake for 45 minutes or until tender. Set aside to cool. Peel and cut into quarters. Combine the rocket and beetroot in a serving bowl. Top with goat’s cheese, walnuts and pomegranate seeds. Combine olive oil, vinegar and lemon juice in a jug and drizzle over the salad.

NUTRITIONAL TIPS

»» Despite it staining everything, beetroots have several benefits, making it an ideal vegetable for choice this summer. Its high antioxidant content aids in liver detoxification, improving energy, mood and skin and aiding in weight loss - just ensure beetroot isn’t on your reception menu.

METHOD

Place all ingredients in a blender and mix until smooth. Strain through a sieve into a glass. Add ice blocks and mint.

1 cup cup coconut milk ½ cup raspberries 1 tbsp pomegranate seeds 2 tbsp chia seeds 2 tbsp agave syrup

METHOD

Combine all ingredients in a large container and mix well. Refrigerate for 2 hours to allow the chia seeds to expand. Pour mixture into 4 popsicle molds and freeze overnight.

NUTRITIONAL TIPS

»» This is a great summer dessert of even a snack as it is high in fibre, thanks to the chia seeds, so they keep you fuller for longer. When chia seeds expand in liquid, they develop a gelatinous coating, which helps them to move swiftly through the digestive tract, aiding not only in weight loss, but glowing skin and improves energy levels.

CRUNCHY GRANOLA AND BERRIES SERVES 2 INGREDIENTS

1 cup rolled oats 1 tbsp sunflower seeds 1 tbsp pumpkin seeds 1 tbsp almonds (chopped) 1 tbsp goji berries 1 tbsp desiccated coconut ½ cup frozen mixed berries ½ cup natural yoghurt

METHOD

Preheat the oven to 170 degrees. On a baking tray, spread the oats and place into oven for 10 minutes until golden brown, occasionally stirring. Remove from the oven and allow to cool. Defrost the berries. In a bowl, mix the oats, seeds, almonds, goji berries and coconut together. Layer the berries and yoghurt over the granola.

NUTRITIONAL TIPS

»» As there is a wide variety of yoghurt available on the market, it is best to choose organic and biodynamic plain yoghurt as they contain bioavailable live bacteria. Avoid labels containing added sugar, honey, colours, flavours and additives - use fruit instead for flavoring.
