Every year the world resets and the spring season brings us a fresh start. New Year’s resolutions are in full affect; at least the ones we decided to keep. Spring Training for Major League Baseball gets America’s past time off to a new start (that one is for the men). The flowers in our gardens are starting to spring beautiful blooms, which reminds us that our recent new beginnings are now starting to show us results. Spring is also a time for reflection. Tax season is a not so pleasant reminder and recap of last year’s work and financial accomplishments. The Grammy’s, Academy Awards and Golden Globes are a celebration of the past year’s entertainment accomplishments. We are now far enough in to the new year to evaluate our recent plans toward our goals we set at the new year, and through the holidays long enough to celebrate our accomplishments. This spring issue showcases stories of new beginnings, and celebrates the accomplishments of some pretty extraordinary women. It tells a story of Gina finding herself in a personal low and homeless, but the strength to know new beginnings are always around the corner and the amazing accomplishment of family is the ultimate success. It explores the impact we can make on the beginnings of the children of our community with addressing childhood obesity. We even discuss the markings of those new beginnings many of us made with the trend, which has withstood time and outgrown the title of fad, of tattoo artistry. Love finds a way... by Gina Melchionna

G

rowing up on the Jersey Shore was GREAT. The beautiful beach, boardwalk, amusement parks, arcades, miniature golf, and all the things the Jersey Shore had to offer. But home was a different story. My parents divorced after a very dysfunctional relationship. When they divorced, I was one year old and my sister was 4 months old. My sister and I were left with my Dad’s parents to raise us. I grew up with feelings of shame, abandonment and most of all felt unloved. I did not see my mom again until I was 14 and my dad just visited on Fridays, coming and going whenever he felt like it. As I grew into my teenage years, I was looking for a man to show me love.

On a regular Wednesday night service, I was walking to my seat, when I saw this man, singing and worshiping to God. My stomach did a flip and my face turned hot and red. I sat down in my seat looked at my sister and said, “I think I just saw my husband!” She laughed!

couple of months went by and we were introduced by mutual friends. My friend had no idea that I had noticed him awhile ago and set us up on a blind date. We went out for pizza, of course. We began to talk and hang out, and discovered that we both came from the same county in New Jersey, and moved to Florida in the same year, both under tragic circumstances. We had lived 20 minutes from each other our whole lives and had never met! We met in August of 1999 and married in September 2000. We’ve been married now for 12 years and have 5 children. Although things are not perfect, I’ve found love from God, myself, my husband and my children.

I married at a very young age with anticipation to move out of my grandparent’s home. My marriage ended in divorce and I entered into a relationship that was verbally, mentally and physically abusive. I had a son and a daughter in that relationship. It was so bad that I was kicked out of the house. I ended up living with friends and finally in a shelter for a couple of months. My son was just a baby and I was pregnant without food, money, friends, and welfare kept denying me benefits. I could not take it anymore so I called my grandmother in Florida and was on the train that next day to start a new life.

I believe I had to come all the way to Florida to meet the man of my dreams who was always just around the corner!

Living in Florida gave me a second chance, and I took advantage of that chance. After a couple of years, I got a job, a car, and a new boyfriend. I thought this would take me to a whole new level in life. Of course my choices in men were horrible, the relationship ended, and I decided never to date again. I vowed to be single for the rest of my life, alone with my 2 kids forever. I decided to get help for myself, started going to church, attended classes to help me find myself, become a better person, a better mom, and a better me.

assover Seders have a tradition in my household of being accompanied by a hearty red wine. Easter includes pink and white colors which is apropos for wine matches. Here are some wonderful suggestions to cover the colorful holidays you celebrate. White is perfect for an afternoon lunch or early dinner. Try a lighter, crisper wine like a Riesling from Alsace providing a delightful fruit and light sweetness, without coating your mouth with sugar. Washington State brings a great opportunity to experience a wine that has the feel of a Kabinett Riesling from Germany without the price tag. Try Baron de Hoen Riesling from France at around $15 a bottle or Seven Hills Riesling from the Pacific Northwest at $13. For pink, trust France for a delicate, refreshingly off-dry rosé. August Antonin delivers a bright, delicious wine that is not heavy-handed, and makes a great aperitif selection. Priced at $14, enjoy a bright berry flavor while not overwhelming the dry palette. Paired perfectly with lighter fare, the rosé can also match well with turkey and ham.

f you have to do red, a darker version of pink, go for a pinot noir specifically one from Oregon. Light texture, spiced and wonderfully lush, pinot is a truly versatile wine matching foods from your richest steak to lightest salmon. The only catch is that it can be expensive. Try a new one, the BiggioHamina Zenith Vineyard Pinot Noir from the Willamette Valley. It is everything that I look for and more in a good Pinot. This is a polished product that offers elegance and great balance. For a delectable Passover combo, my choice takes into account the traditional fare at a seder, and one of my favorites, brisket. Change things up with something interesting from South America. Fabre Montmayou Malbec from Patagonia is lush and smooth, while giving hints of blueberry and spice. It will make a delicious counterpart to your family gathering without overwhelming the flavors of the meat.

over Brown Rice

Ingredients: 1 lb of large peeled raw shrimp (usually 20-25) 3 cloves garlic minced 1 tbsp dried parsley (if using fresh add at the end) Dash of crushed red pepper (optional) 3 tbsp extra virgin olive oil 4 tbsp organic butter ½ cup water 1 tbsp chicken or vegetable bouillon (no msg please) 1 cup brown rice Sea or Himalayan salt Directions: Rinse brown rice and add to 2 cups lightly salted boiling water, cover, reduce heat to low and simmer 45 minutes or until rice is tender (to eliminate phytic acid and make more digestible soak rice overnight) Sauté garlic in olive oil on medium heat Add butter, red pepper, parsley Add rinsed raw shrimp and cover until pink on medium low Add water and bouillon Remove from heat and let sit to allow flavors to marry  Add salt and pepper if desired Serve over brown rice and top with chopped fresh parsley if desired Sherri Mraz The “Cookin’ Yogi” has trained at the Institute for Integrative Nutrition in NYC, is certified through Teachers College Columbia University and by the American Association of Drugless Practitioners (AADP). Women Have “Different” Heart Attacks By Al Sears, MD Did you know that there’s an increased risk of heart attacks during the winter?

O

ne study looked at more than 222,000 people and found 33% more heart attack and stroke deaths during the winter season. ıFortunately, you can beat these killers with a few unconventional ways to improve your heart health. Even if you have a family history, I can help you. These methods are safe, proven and effective. There’s no way to be sure what exactly contributes to these coronary events. But it is a real risk. And I want you to know something that most doctors are not going to know; heart attack symptoms for women are very different than they are for men. The typical movie or TV scene that depicts a heart attack is someone clutching their chest or having trouble breathing. And those symptoms do happen, but mostly to men. For women, there are usually almost no symptoms at all. For instance, you hardly ever have pain. Women feel only chest pressure or a vague uncomfortable feeling that increases. It could be stomach discomfort that mimics indigestion. Or a slight pain in the shoulder or both arms. Also, women tend to just suck it up and assume they’re having a bad day. They have some nausea, feel exhausted, and assume its stress … heart attack symptoms are often ignored. If you do go to the doctor, you’re unlikely to say “I’m having a heart attack.” And your doctor might not recognize the symptoms, either. Women get numbness, palpitations, a headache and nausea and break out in a cold sweat. Doctors often diagnose this as anxiety. There’s one stat that I saw that women are more than twice as likely to miss a heart attack than a man. And half of all women who have a heart attack never call 911. 1. Recognize the symptoms – If you do have one or more of the symptoms I mentioned, get to an emergency room immediately! Don’t put it off. Calling 911 is usually better than driving to the hospital. The EMS team can begin treatment immediately. While you are waiting for EMS to arrive, chew and swallow a regular 325 mg. aspirin. Evidence is strong that during a heart attack, a single aspirin could save your life.

2. Build a bulletproof heart – My number one recommendation for a healthy heart is to stop doing traditional endurance exercise and switch to shorter, progressive periods of exertion like I show you in my P.A.C.E. program. This helps you regain your heart’s “capacity” which is lost when you exercise for long periods of time. Any time is a good time to start, and you can start from your current level of fitness no matter what it is. 3. Feed Your Heart – My second most important recommendation would be to get plenty of CoQ10. It’s a super-nutrient and main source of energy for your heart. Grass-fed beef, eggs and cod liver oil are CoQ10 food sources. Or you can supplement. I recommend taking 50 mg of the “ubiquinol” form of CoQ10. Another critical heart vitamin is one most people forget when it comes to the heart – niacin, or vitamin B3. It clears your liver of a dangerous lipoprotein called Lp(a). There is a strong statistical link between Lp(a) and heart attacks. Researchers at the University of Pittsburgh have reported that high levels increase heart attack risk by 331%2. The Misconceptions of Chiropractic Q & A Q: Once I start with Chiropractic care, do I have to continue forever?

A: This is a great question that for some is very confusing.

As chiropractors we find interference to the nervous system as a result of a vertebrae putting pressure on a nerve. This may cause pain, but only 6 percent of the nervous system detects pain so the other 94% that operates the body could be affected by this pinched nerve without any pain involvement. So my question to most patients is how long have you had the pain, how does it interfere with your life, both emotionally and physically? The answer is usually 10 plus years I’ve been dealing with the pain. Well if it takes 10 years to put the vertebrae out of place, it takes about 10 months to make a correction, but how do we maintain a healthy spine after care? A recommended maintenance program is usually a visit frequency of 1-2 times per month to keep the spine and nerves functioning better. We eat right, exercise, try to get proper sleep, and we try to have a positive attitude at all times, but what we are missing is a nervous system that is more effective and efficient which is why chiropractic becomes a lifestyle for many. Once you start care, you may feel great, but if your nervous system is not functioning properly, then our job is not complete. So to answer the question once I start do I have to continue, it’s your choice if you want to maintain a healthy spine. You have to see the dentist every 6-12 months to maintain your teeth, isn’t your spine more important?

Q: Do my bones pop when I get adjusted? A: People assume that the noise made from the adjustment

is the bone rubbing against bone causing the “pop” sound or noise. Well, this is a true misconception. In between each joint are synovial fluid and when the bone is adjusted synovial gas releases from the joint causing the noise. There are 8 joint spaces between each bone, so you may feel more than one gas pocket release with each adjustment. The alignment of the vertebrae keeps the joints mobile and allows us to heal faster and take pressure off the nerve. Our main goal as a chiropractor is to reduce nerve impingement, increase mobility, and reduce tenderness.

Q: If I am not in pain, why should I go to a chiropractor? A: Only 6% of the nervous system detects pain, the other 94%

operates the body, so if a nerve is pinched that goes to the stomach, or the lungs, or the heart, there becomes interference to the electrical impulse of the nerve. The weight of a dime decreases the function of a nerve by 60%. So imagine if the nerve that goes to the heart is not fully functioning then the heart could be compromised. This is why it is important for everyone to have their spine checked.

Q: Is the chiropractic adjustment painful? A: There are 100 different chiropractic techniques and some of them can cause discomfort, however, at The Wellness Experience of Wellington, Inc. we use a very gentle approach called the proadjuster, for those patients afraid of some of the older style techniques. Why We Crave Certain Foods

S

ome days, it’s chocolate; other days, only potato chips will do. Cravings for high fat and delicious foods strike hardheartedly making our sensible meals seem boring. And since cravings are governed by the mind instead of the stomach, simply eating anything won’t make them go away—our brains know what they want and will not accept any substitutions.

Notice that we never crave things we haven’t tried before— that’s because cravings are a manifestation of our need for comfort, for things we know. Cravings are not only tied to stress, unhappiness, and other negative emotions, but also tied to memories. So, places, people and smells can also bring on strong cravings.

Everyone experiences cravings at some point and usually they’re for the same kinds of food. But while the cravings tend to be individualized, the stimulant for them are universal. The foods we desire do more than please our taste buds, and because of this, cravings are difficult but can be controlled.

What food we crave is a matter of mood. A common misconception is that our cravings are linked to actual nutritional deficiencies, but that theory hasn’t been proven. Woman experience heightened cravings for certain foods at various stages in their menstrual cycles, and a lack of potassium or iodine might prompt the need for salt. But most of the time, cravings are a part of our body’s complex response to stress, certainly the most common trigger for cravings.

Tips to curb the cravings: Pinpoint the craving’s origins. ÂÂ Are you stressed, tired, sad, bored, thirsty, or legitimately hungry? Figure out what’s making you want something in the first place.

ÂÂ Trying to cut out sugar from your diet may be next to impossible for some. Allow yourself a square or two of chocolate instead of the entire bar.

ÂÂ If you want salty-crunchiness, try reduced-fat popcorn, rice cakes with peanut butter, or edamame. For sweet cravings, try fruit; fresh or frozen or yogurt sweetened with honey or agave nectar. If you trust your willpower, try indulging just a little; if not, the healthier alternative might be more up your alley.

Why does giving in Feels So Good?

Our cravings vary, but one common characteristic is that they’re high-calorie, high fat and/or sugar content. A diet low in protein and fiber are other common factors for craving highcalorie, high fat foods. Our bodies propel us toward dense foods when we’re anxious or worried. The flood of cortisol, a stress hormone, drives the brain to look for something that will make it feel better. When we eat high-energy foods, it causes the release of chemicals like serotonin; the feel good chemical, which then creates a link in our brains between ingesting caloricallyrich foods and feeling pleasure. Some believe that cravings are evolutionary; our bodies are inclined to hunt for high-calorie foods because they’ll provide us with nutrition an optimal energy for survival. Another presumption is that we learn to want certain foods while still in the womb. We develop the ability to smell and taste during the second trimester of pregnancy and develop taste preferences for what our mothers eat when they are pregnant and during breastfeeding. Our brains also keep track of what makes us happy for future reference, particularly when they produce such immediate, rewarding results, as eating high-calorie foods does. eople are just now relaxing their purse-strings while indicators show that the economy is rebounding. And you wonder how fashionistas have been able to continue looking stylish and trendy through the recession without selling their first born. Here’s a little secret that truly has become a huge business across the country – Consignment Stores and Thrift Shops. The resale industry in the U.S. experienced a comeback after the start of the economic downturn in 2008. The resale, consignment and thrift store industry has reported a 7% increase of Resale shops across the country within the last year, said Adele Meyer, executive director of The Association of Resale Professionals. Since the beginning of the recession, Americans have spent their time coming up with creative ways to save money, usually through getting rid of objects and entertainment they have deemed unnecessary. Monstrous, gas-guzzling SUVs can be seen sitting on car lots in exchange for smaller and more gas-friendly vehicles . The National Association of Resale Professionals stated that reasons for this included an increased need for households to sell unused items for cash.

From the moment of my diagnosis and the three months that followed, proved to be the most difficult time in my life and could not have faced them without the love and amazing support demonstrated by my husband. hildhood obesity has become such an epidemic in this country that kids today risk having shorter life spans than their parents. If you have children that would certainly get your attention, right? The American Heart Association reports that about one in three American kids is overweight or obese. Those statistics have nearly tripled in the last 50 years. As a result, many young children today are plagued with risk factors for heart disease, including high cholesterol, elevated blood pressure, high triglycerides, raised insulin, physical inactivity, and obesity. Many also suffer from low self-esteem and depression. No one formula can be applied to overweight children. Gaining weight can be environmental, emotional, physical, or inheritable. Solving the growing problem of childhood obesity is a mission that will require unprecedented levels of cooperation between multiple sectors of our communities, including schools, public health agencies, businesses and families. What is currently lacking is a widespread understanding that childhood obesity is not the sole responsibility of the parent—or, worse yet, the child—to fix. The top cause of childhood obesity in our world today is not a change in gene structure, but a shift in our children’s lives towards a more obesogenic environment. This refers to an environment that promotes gaining weight and one that does not make it conducive to losing weight. For example: • • • •

Fewer children walk to school. Greater amounts of homework lead to sedentary lifestyles. Technology now entices children more than physical activity. The availability of 24/7 television shows for kids encourages increased sedentary time. • Parents work longer hours, causing kids to make unhealthy food choices in their absence. • Kids increasingly eat heavily processed foods as a convenience.

f course, healthy eating habits now make for healthy adults later. We as parents have a responsibility to teach our children how to live an active and healthy lifestyle. CARING FOR THE COMMUNITY Dezzy’s Second Chance Animal Rescue – Delray Beach Work, pressure and glamour filled my life as a successful interior designer for mega yachts planes and multi-million dollar homes. But, I traded in my ruler and fabric swatches for a life filled with hours of work and extreme pressure without glamour or paycheck. Today I rescue homeless dogs living their last days on the euthanasia wards. When I get the call about a loving pet being hours away of being euthanized, I put on my rescuer cap and go.

Every chance I get, I encourage people to spay and neuter their animals. This will enable our society to be able to enjoy our pets rather than be burdened by these homeless, unwanted, loveable animals. But at the end of the day, forever more, I will be a dog rescuer. I need them as much as they need me.

Here’s my life story from riches to rags.

I

n 2003, I married a veterinarian and after spending time in his animal hospital for a renovation project, I began helping out. I noticed humans abandoning their animals in boxes or tied to a pole. Once I found a dog wrapped in duct tape and left at the front door. Homeless animals appeared everywhere I went; some needing medical attention, others needing a home. My time was spent holding fund-raising events for animal rescues and organizations. Eventually, I realized that my true calling was saving helpless, homeless animals. Whether they needed major surgery or shelter from a hurricane, I made sure they were not alone or scared. In 2010, things in my life changed but did not change my mission to save the lives of these animals. This is when Dezzy’s Second Chance Animal Rescue was born. There were many hours of painstaking paperwork, costly fees, and turning my home into headquarters for this rescue operation. Becoming a 501(C)3 Florida Non-Profit has enabled me to hold adoption events in Boca Raton and Delray Beach including the Subaru Showroom, Delray Green Market, and each November “Bake for the Rescues” takes place at the historic Sundy House in Delray. Never have I worked harder in my life -- happily. My day begins at 5:00am and ends when I pass out from exhaustion. Aside from kennel work, I walk, feed, medicate, and bath the rescues. I run the business from reviewing adoption applications, visiting homes of potential adopters to squeezing in time for play and training lessons. So, I have traded in my expensive cars for a Ford van with 100,000 miles. I do not worry about Jimmy Choo shoes, but where the next adoption event will be. My diamonds have been replaced with natural dog foods, heartworm treatments and surgeries.

lace of Hope is a unique, faith-based, state-licensed child welfare organization providing emergency shelter, family-style foster care (emergency and long-term), family outreach and intervention, maternity care, safety for victims of domestic minor sex trafficking, transitional housing and support services, traditional foster care and adoption recruitment and support, hope, and healing opportunities for children (and families) who have been traumatized by abuse and neglect throughout our region. “About 6 months or so ago I received the email below and thought to myself, “Hmmm….. What have we done?” Our generation and our children’s generation think we are so smart and ahead of our time because we are technologically savvy and have endless information at our fingertips. However, when you read this and truly think about it, we are the ones that very well may have caused the over-abundance; the heaping landfills filled with non-biodegradable, wasteful products. We claim to be eco-friendly and a “green generation” but when you look at the numbers and statistics, and read about global warming, you probably will think “How smart are we?” I think our parents and their parents’ generations were truly the eco-friendly generations. With time, things change, progress, and grow like our need for instant gratification and convenience. We have lost sight of how it may affect us, the environment, the world we live in today, and the world our children and the next generations will live in. When you read this email you too will probably have the “Ahha” moment and realize we may very well be the culprits who created our planets’ green issues.” ~ Deena Buell

hecking out at the store, the young cashier suggested to the older woman, that she should bring her own grocery bags because plastic bags weren’t good for the environment. The woman apologized and explained, “We didn’t have this green thing back in my earlier days.” The young clerk responded, “That’s our problem today. Your generation did not care enough to save our environment for future generations.”

We didn’t fire up an engine and burn gasoline just to cut the lawn. We used a push mower that ran on human power. We exercised by working so we didn’t need to go to a health club to run on treadmills that operate on electricity.

“But she was right. We didn’t have the green thing in our day.”

Back then, we returned milk bottles, soda bottles and beer bottles to the store. The store sent them back to the plant to be washed and sterilized and refilled, so the same bottles can be used over and over. Grocery stores bagged our groceries in brown paper bags that we reused for numerous things. Most memorable besides household garbage bags, was the use of brown paper bags as book covers for our schoolbooks. Then we were able to personalize our books on the brown paper bags. We walked to the grocery store and didn’t climb into a 300-horsepower machine every time we had to go two blocks. But she was right. We didn’t have the green thing in our day. Back then, we washed the baby’s diapers because we didn’t have the throwaway kind. We dried clothes on a line, not in an energy-gobbling machine burning up 220 volts -- wind and solar power really did dry our clothes back in our early days. Kids got hand-me-down clothes from their brothers or sisters, not always brand-new clothing. We had one TV, or radio, in the house -- not a TV in every room. And the TV had a small screen, not a screen the size of the state of Montana. In the kitchen, we blended and stirred by hand, we didn’t have electric machines to do everything for us. When we packaged a fragile item to send in the mail, we used wadded up old newspapers to cushion it, not Styrofoam or plastic bubble wrap.

But she’s right; we didn’t have the green thing back then. We drank from a fountain when we were thirsty instead of using a cup or a plastic bottle every time we had a drink of water. We refilled writing pens with ink instead of buying a new pen. People took the streetcar or a bus and kids rode their bikes to school or walked instead of turning their moms into a 24-hour taxi service. We had one electrical outlet in a room, not an entire bank of sockets to power a dozen appliances. And we didn’t need a computerized gadget to receive a signal beamed from satellites 23,000 miles out in space in order to find the nearest burger joint.

ut isn’t it sad that the current generation comments on how wasteful we old folks were just because we didn’t have the green thing back then?

attoos have a long history in cultures like Ancient Egypt, Polynesia, and Japan. They have been known as a way to protect a woman during pregnancy, identify a concubine, showcase a soldier’s accomplishments, punish criminals, celebrate a ritual, and mark various classes and royalty. Many other milestones like reaching adulthood or a level of spirituality have incorporated the tattoo for thousands of years. So why have tattoos become increasingly popular with women in their forties? Like Michelle who got her first tattoo in her forties by Spike at Ink Link Tattoos in West Palm Beach and Dorri who got her first tattoo by Luis at Palm Beach Ink and Tattoos in Lake Worth, they appreciate the art and freedom of expression of having tattoos. unding a college education does not mean you have to jeopardize your lifestyle and future financial objectives. In preparing to send a child to college, parents must develop a well thought out, structured plan. Part of this planning must include the education of the parents on the process that lies ahead.

To navigate the path to a successful outcome for parents & student, the parents must not make assumptions and should be guided by accurate information. There are many costly assumptions made by parents that can cause them to overpay for college by thousands to tens of thousands of dollars. These assumptions include but are not limited to:

My child’s college costs are prepaid: Most parents look at tuition and not much more. This approach vastly underestimates the total cost of attendance. Room & board, books, fees, transportation and rate of inflation must be considered. Many prepaid college plans only cover tuition. Parents should also consider the fees attached to manage these plans. Many 529’s are vulnerable to the market’s performance and this means you may not know how much funding is available when the child is ready to attend college. If parents have been saving through a 529 plan or Pre paid college plan they should be aware that these can be counted against them when it comes to applying for financial aid.

Public schools are less costly:

While choosing the correct school for your child is important, it is also necessary to take financial concerns into consideration. Some private schools may have a lower out of pocket expense than a public school even though at first glance they may seem to be quite a bit more expensive. Private schools are often supported by endowments and donations from alumni. The student should consider the financial aid packages offered by these schools. Doing research on all schools that offer the academic needs and activities should also be taken into consideration. In fact private schools may have a lower out of pocket cost because they are interested in attracting students from every income level, and thereby may offer more financial aid. Don’t be put off by the price of a particular school, research options the school may offer. You may be pleasantly surprised!
