While conducting food sensitivity tests in doctors’ offices as a graduate student, JJ had a breakthrough. She noted that people who were complaining about common symptoms such as fatigue, bloating, joint pain, moodiness, and inability to focus had certain types of foods that were consistent in their diets. When these foods were eliminated, the symptoms subsided practically overnight, and as a side effect, weight seemed to melt off.

Over time, JJ came to understand that people can have intolerance to some foods, which can be caused by genetics, hormones or the individual’s immune system. By removing certain foods from the diet for a period of about three weeks, it permits the immune system to cool down, hormones to rebalance and cravings to diminish, effectively allowing the body to reset. Foods can be slowly re-introduced or "re-challenged" as JJ calls it, making lateral swaps to better choices so the symptoms can be kept at bay and weight can be lost and/or managed. Battling Juvenile Arthritis Arthritis is the #1 cause of disability, attacking 50 million adults and 300,000 children. According to the Centers for Disease Control and Prevention (CDC), 1 in 5 adult Americans and 1 in 250 children suffer from some form of arthritis. Pediatric Rheumatologists also treat other rheumatic diseases in which arthritis is either the primary component or a symptom of the underlying disease, including Systemic Lupus Erythematosus (SLE), Dermatomyositis, Scleroderma, and Spondyloarthritis. No known cause has been pinpointed for most forms of juvenile arthritis nor is there evidence to suggest that toxins, foods or allergies cause children to develop the disease. Some research points toward a genetic predisposition, which means the combination of genes a child receives from family members may cause the onset of arthritis when triggered by other factors. 12 | Health Beauty Life Magazine

Treatment Unfortunately, there is no cure for juvenile arthritis. The goal of treatment for JA is to relieve inflammation, control pain and improve the child’s quality of life. Most treatment plans involve a combination of medication, physical activity, eye care and healthy eating.

ne look at a photo of Ed Begley Jr. and most people experience the same reaction. Instant recognition followed by the realization that they are looking at the face of someone who has been front and center on their TVs and movie screens for decades. In parts large and small, Begley’s performances are distinctly memorable, perfectly nuanced and understated. Frequently, he presents an expression of quite exasperation, with a look that says, come on, don’t you get it?? More than an actor who, through hard work and talent, has reached a level of rarefied celebrity, Begley, together with his beautiful wife and partner, Rachelle Carson-Begley, have successfully channeled their star power to become two of the leading activists for sustainability and green energy. In fact, Begley is universally considered the de facto poster boy for all things green.

A Life on the Stage and Screen Starting with his earliest appearances as a guest actor on Maude, Begley has created a Whitman Sampler of memorable roles on some of Hollywood’s most enduring productions. For decades, Begley has lent his unmistakable brand of dead-pan everyman with a cerebral twist, to seminal game changers like Mary Hartman-Mary Hartman and Arrested Development, episodic masterpieces like Six Feet Under and The West Wing, or you may remember him as the six-time Emmy nominated Dr. Victor Ehrlich, from the landmark television series, St. Elsewhere. On the big screen, Begley has delivered a spectrum of solid performances within the ensemble casts of fearlessly exploratory director, Christopher Guest, with signature roles in Best in Show, A Mighty Wind, For Your Consideration and, what many consider the funniest rock movie ever made, This is Spinal Tap. Recently, Begley killed it as Dr. Al Chadwick on Guest’s delightfully off-center improvisational HBO series, Family Tree. All of the elements of his talent, celebrity and avocation merged on his reality television series, Living With Ed on HGTV and Discovery's Planet Green channel, which also features Rachelle Carson-Begley. BTW, since 2000, the ubiquitous Mr. Begley has been a member of the Board of Governors of the Academy of Motion Picture Arts and Sciences. Green Living Starts at Home The Health Beauty Life crew had the distinct pleasure of getting to know Ed and Rachelle at their cozy LA home. Small and lovely, the house is on an inconspicuous corner in an upscale Los Angeles neighborhood and does not immediately scream “off the grid.” It’s not until we greet Ed himself that the various efficiencies and energy saving elements come to light. The fence that surrounds the entire home is made from recycled plastic milk jugs (but looks exactly like a wooden fence.) The lawns have been replaced by draught tolerant plants, herbs and fruit trees. Even Ed’s dog was rescued, or “recycled” as Ed puts it. Once on the grounds, it becomes clear that this is an example of permaculture, a system that takes care of the earth by utilizing natural resources while reinvesting materials back into the ecosystem. The result is beautifully lush, smells great and uses very little water. Entering the home reveals an additional benefit from Ed’s application of easy and affordable energy efficient elements. The living room is unmistakably quiet, as street noise is completely eliminated through double pane windows, recycled denim in the attic and cellulose insulation in all of the exterior walls. The place is calming and Zen, bathed in the soft light of energy efficient bulbs from all interior lamps.

The kitchen makes great use of non-electric Soaltube daylighting and the counter tops are beautiful and sparkly; all rendered from recycled Coke bottles. Of course, all of the appliances are low energy rated and power comes from conventional solar panels and a sun-chasing solar station on the roof. The backyard is beautiful, well maintained and comfortable and includes a nice sized area of plastic grass for lawn chair sunning. There are well fertilized vegetable gardens aided by the nutrients generated by mulching yard waste and other organic materials. Irrigation is supplied through an underground 500-gallon tank for the collection of rain water, which is easily distributed to the plants and veggies by an old fashion garden hose.


On Begley Street ON BEGLEY STREET is a weekly web show that chronicles the Begleys’ journey to build the greenest, most sustainable home in North America under LEED Platinum-certified standards. Watch each Sunday as Ed and Rachelle try to balance sustainable living with living comfortably. Each episode explores sustainable living while balancing comfort with consumption, and the Begleys’ adventures are often heightened by comical mistakes, which often result in their inimitable style of playful bickering.Be sure to keep an eye open as Ed and Rachelle’s high-profile friends stop by, only to be coerced into an afternoon of hard labor. Of course, there’s lots of how-to information for do-it-yourself projects that are as much about living and building sustainably. Named for (the other) Rachel Carson, author of Silent Spring, the hugely influential book that launched the contemporary environmental movement (and effectively ended the use of the pesticide DDT for agriculture in this country.)

When asked recently about how to affordably change to a more sustainable life, Ed always suggests that people do as he did in 1970 when he was 20 years old and totally broke. And that is to pick the low-hanging fruit first. What he means by that is to do all the stuff that’s cheap & easy: • Switch to energy-saving light bulbs • Install an energy-saving thermostat • Install weather stripping around doors & windows • Use Public transportation, if available • Ride your bike, if weather & fitness permit • Garden at home and compost • Recycle Then, if you save money on that (and you will!), you can move up the ladder and do other things that cost a bit more, and save more money (like a solar oven, and good insulation.) And if you save money from that (and you will!), you can move up again, and who knows, perhaps one day drive an alternative fuel car, or add solar panels!

The point is to do something, ONE thing for today. Then, tomorrow, do some more.

Clearly, it is understating the obvious to point out that she was meant to serve as an ambassador for arguably some of our world’s most important initiatives and together, with Ed is literally changing the world. The Driskill The Legendary Landmark of Texas Hospitality

A s one of the most significantly iconic buildings within

Lyndon B. Johnson considered the hotel lucky, as the place where he discovered that he won a Senate seat in 1948, the Presidency in 1964, and where he won the heart of his future bride, “Lady Bird” Johnson. • The ballroom was built as the dining room, the Maximilian suite was the gentlemen’s parlor and the Jim Hogg suite was the ladies’ parlor.

• The hotel was saved from demolition by the citizens of Austin in 1969. • The hotel placed mirrors from the imperial palace of Emperor Maximilian I in his namesake suite, which some say reflect the spirit of a woman in white.

I n Austin, art is everywhere. There are sculptures and murals throughout the city, and live music can be found in abundance. In fact, the art of Austin is somehow more present, more available and more eclectic than you will find in most cities in the country. Therefore, in true Austin style, The Contemporary Austin takes great pride in bringing a rich and varied mix of International Contemporary Visual Art to a city already known for its vibrant art community. Located within The Jones Center, a few blocks from the State Capitol building and the historic Driskill Hotel, the space proudly anchors the corner of 7th Street and Congress in the heart of Austin’s vibrant downtown.

The building itself holds a special place in Austin’s history; built in 1851, it was the first three-story brick building in the city and has been home to several establishments over the years, most notably, The Queen Theater. Unveiled to the public in 2010 by the AMOA-Arthouse, and guided by a vision to create a “museum without walls,” the entire structure, and most prominently, the striking glass-walled lobby and unique rooftop theater is a visual delight that reflects the eclectic and culturally diverse fabric of the city. Looking out to the street from inside the glass-walled lobby is like watching art in motion – the sidewalks bustle with cultural diversity. Make sure to take in the view from the beautiful rooftop deck for a bird’s eye view of The Driskill Hotel, Austin’s State Capitol, and the historically significant Paramount and State Theaters. Why Austin Calls Itself the Bat Capital of America

Headlining this nightly, crowd-drawing spectacle are 1.5 million Mexican free-tailed bats, the largest urban bat colony in North America. They inhabit the Congress Avenue Bridge by day and put on a show at dusk as they emerge from under the bridge in spectacular masses to forage for food. Swarming out in steady droves for 45-60 minutes straight, the bats travel at 60+ miles per hour, blanketing the sky in 2-mile high rhythmic flight patterns. Watch them from atop the bridge, on the sides of the lake, or from a boat. Just don’t miss out on this unusual and unforgettable experience.

A Virtual Tour of The World Through Music Opening its doors in 2010, the Musical Instrument Museum (MIM) celebrates music as a sustaining human gift and enriches world culture by collecting, preserving, and exhibiting a wide variety of musical instruments and performance videos from every country of the world. MIM fosters an appreciation of diverse cultures by showing that mankind does innovate, adapt, and learn from one other to create the universal language of music. A couple of steps away, the Artist Gallery showcases numerous celebrity musicians such as Elvis, Dick Dale, Duane Eddy, Carlos Santana and even Taylor Swift, to name a few. Each artist has loaned or donated instruments to the museum, even articles of clothing that were worn during various performances.


Heading upstairs, Geographical Galleries are bursting with musical wares from Europe, North America, Africa and the Middle East, Latin America and the Caribbean as well as Asia and Oceania. The overall collection includes instruments from more than two hundred countries and territories in the world, many bringing both historic and artistic significance.


Wireless headsets and Wi-Fi hot spots provide loops of streamed music and immerse guests in the sounds of musical instruments throughout the expansive facility. As museum visitors approach each display, they can hear the instruments being played, either solo or as an ensemble, as well as witness it on video through high-resolution flat screens. Signage with information about the instruments, along with maps for orientation, allows guests to tour the many displays of each country in the world. More than 350 exhibits are spaced to provide comfortable viewing and an uninterrupted wireless signal. PREPARATION Sift chickpea flour into large bowl. Add onions, rosemary, 2 tbs. olive oil and water. Stir with a whisk to combine, making sure there are no lumps. Heat a well-seasoned cast iron skillet (or a non-stick oven-proof skillet) over medium-high heat and add remaining tablespoon of olive oil. Once the skillet and oil are hot, add the batter to the skillet, rotating to evenly distribute the batter. Once the edges begin to bubble, place the skillet in a 350° oven for 20 minutes, or until golden brown. Remove from the oven and allow to cool slightly. While the socca cools, prepare the chickpea relish. In a large bowl, add the sliced onion and pepper and sprinkle with a pinch of kosher salt. Next, add tomatoes and zucchini and stir to combine. Add fresh lemon juice and olive oil and toss to coat. Remove socca from the skillet onto a cutting board and slice into 6 even wedges. Place two pieces of socca on a plate and top with 1/3 of the chickpea relish. Finish the plate with a fresh-riped basil or mint leaves and ENJOY!

Best known for winning the GT class at Le Mans in 1964 and the 1965 FIA World Championship, Formula One driver Bob Bondurant had a dream to build the world’s best driving school. Additionally, Marshall was the chief photographer at Woodstock where his unfettered access and unflinching lens created images that are as historically significant as they are breathtakingly beautiful. A Delicious Family Tradition

I

n the small town of Driftwood, 25 miles southwest of Austin, The Salt Lick has been turning out barbeque the Roberts Family way since 1962. Originally nothing more than a roadside stand, The Salt Lick has blossomed from a tiny eatery to a full-fledged restaurant that draws more than 650,000 people per year. Locals and visitors kid that you don’t even need directions – just follow the smell of the smoke from the ancient stone barbeque pit that dominates the kitchen and perfumes the air for miles in all directions. Scott Roberts and his family may have opened the restaurant in 1962 but their Driftwood Texas roots run much deeper. Originally a cotton field, the Roberts family has owned the land that is home to The Salt Lick since 1902. When Scott’s father and mother returned to the United States after World War II, they came home to Driftwood with Scott’s father traveling across the state as a bridge builder. Wanting to find a way to stay in Driftwood, the family created a list of 54 things that they could do to make money in their hometown. The restaurant was #14 on the list. Thankfully for everyone, the family decided to give the restaurant business a try. Using stones native to the farm, they built a wood fire pit near the side of the road and began slinging barbeque and traditional sides like coleslaw and potato salad to the motorists lucky enough to find themselves passing through. As demand grew, they returned to the field, gathered more rocks and began building walls around the pit. 68 | Health Beauty Life Magazine

The first restaurant seated only 12 people, had no electricity or running water; in fact there were not restrooms at the restaurant for more than five years. As Scott’s father, Thurman would tell patrons “I have 1,000 oak trees; you can help yourself to any one”. And although the restaurant has grown significantly – they can accommodate up to 800 guests at a time – the Roberts Family stays true to what they know. They have used the same recipes and cooking technique for all of their meats and still grill the food and prepare the fixins “on demand” for eager (and hungry) guests.

The Roberts family can trace their roots back to “The Old Three Hundred,” the first settlers to receive land grants for Stephen J. Austin’s first colony in Texas, settling in Driftwood between 1850 and 1880.

It's All About the Grilling Process Just as important as the wood fire pit is the grilling process, a process that’s been perfected over generations and gives the meat the signature “Salt Lick” flavor. Seared over hot coals to help the spices adhere and caramelize, the meat is then cooked long and slow over indirect heat. Once the meat is nearly done, it is removed from the heat and placed in a blast chiller for 24-48 hours to enhance the flavor. As Scott explains, “Our meats & beans taste better the second time. They taste better after you refrigerate it overnight.” Once the meat has rested, it comes to the pit where the real magic happens!

The pit helps impart the distinctive flavor profiles that make The Salt Lick famous. First, the meat is basted in their signature barbeque sauce and allowed to caramelize on the wood-fired grill. While the meat cooks, the juices from the meat land on the coals and flare up imparting an oak-y smoke flavor. And when those flare ups need to be tamed, the kitchen staff will use pecan hulls soaked in water to calm the flame and send a delicious pecan flavored smoke to the meat as it grills.


Just like the meats, the fixins are made from the same recipe that made the roadside stop famous. Because there was no refrigeration in the beginning, all of the recipes are very simple (and mostly vinegar based). The pinto beans are chilled for a day (just like the meat, they taste better the second time!) and the coleslaw and potato salad are prepared fresh, not just fresh but batch by batch; there is nothing on stand-by. When the coleslaw or potato salad is getting low, the chef simply makes another batch. That process will continue until the last happy patron has had their fill.

Beyond the Pit Once you have eaten all you can eat (The Family Style meal comes with refills!), your Salt Lick adventure continues. Be sure to check out the rolling green hills, huge sandbox and playscapes at the Kid’s Ranch or spend a little quality time at the one of a kind Hammock Ranch. After several patrons jokingly said all they needed “was a wheelbarrow to take me to my car and a hammock to lay down,” Scott ordered 20 hammocks and suspended them in the trees. As Scott puts it, “We try to make our guests happy” and they have certainly accomplished that. Who wouldn’t be happy, after all, eating a Texas sized helping of delicious Salt Lick barbeque and sleeping it off in a shady hammock? Unlike many traditional cobbler recipes, The Salt Lick’s Peach Cobbler is a delicious buttery, fruity delight featuring a pastry that rises from below the fruit. The resulting cobbler has a golden, buttery pastry top that is laced with sliced peaches. Don’t be intimidated by its good looks. This gorgeous cobbler is easy to make and is the perfect end to any meal! For the peach filling:

Chef Stephen K. Eldridge and his amazing culinary staff have created unique lunch and dinner menus that reflect their farm and pasture to table approach to food. The vegetables and herbs are grown right next door to the restaurant on the grounds of the garden and proteins are carefully sourced ensuring that only the freshest selections are available to guests. The chef sources many of his prime cuts of lamb and pork from Niman Ranch, a collective of over 700 independent farmers who believe that all-natural, humane and sustainable farming and husbandry methods produce the best possible flavor. Everything is made in-house from the pickled onions and sauces to smoked bacon and sausage ensuring the highest level of quality and consistency for each dish that leaves the kitchen. In addition to lunch and dinner, Gertrude’s is also open for breakfast and features fresh pastries and breads from the restaurant’s own in-house pastry chef, Marisa J. Lown. From warm banana bread with sea salt whipped butter to fresh brioche, toast with homemade jam, this is one breakfast that you do not want to miss out on. Of course if early mornings aren’t your thing, Chef Marisa’s pastries are also featured on the Sunday Brunch menu.

n your day in Scottsdale, be sure to make time to visit Taliesin West, architect Frank Lloyd Wright's personal winter home, architectural campus, and studio. More than a must-see for architectural aficionados, Taliesin West is a tranquil oasis that offers visitors an opportunity to slow down and experience. Located just northeast of downtown Scottsdale, the National Historic Landmark is the main campus of the Frank Lloyd Wright School of Architecture and houses the Frank Lloyd Wright Foundation. It is where Wright studied, taught, and applied visionary innovations from 1937 until his demise in 1959 at the age of 92.

Rising invitingly from the beautiful Sonoran desert in the foothills of the McDowell Mountains, Taliesin West, named after Wright's summer home, Taliesin, in Spring Green, Wisconsin, is a testament to Wright’s game-changing ability to integrate indoor and outdoor spaces.

Wright, who utilized native materials in design and construction, incorporated natural ambient light for all interior illumination through translucent covered skylights, generous windows and site orientation. The result is calming and warm, with each room bathed in the soft natural light that Wright desired. 84 | Health Beauty Life Magazine

Taking inspiration from the long, low, sweeping lines and up-tilting planes of desert landscape, as well as the surface quality and color palette of its richly patterned wildlife, Wright fashioned a masterpiece that must be experienced to truly appreciate.

History Starting in 1933, Wright and the Taliesin Fellowship would travel to Arizona each winter for the warmer climate. Several years later, after paying a mere $3.50 an acre, he purchased a 500-acre plot of desert land on a southern slope of the McDowell Range overlooking Paradise Valley outside Scottsdale. Wright believed this to be the perfect spot for his beloved Taliesin West; a place of residence, a place of business and a place to learn.


Creating an Architectural Masterpiece From 1937 to 1941 when much of the original construction took place, Wright, who favored using readily available materials opposed to those transported to the site, built the structure's walls from native desert rocks stacked within wood forms and filled with concrete. The flat surfaces of the rocks were placed facing outward and large boulders filled the interior space to conserve concrete. You can feel the spirit of Wright throughout the campus as his personal touch is inescapable. In addition to the primary structures, he designed all of the furniture and decorations with the majority being built by apprentices who resided on the campus in tents and who studied and worked under the strict tutelage of the master.

Upon every return after a summer in Wisconsin, Wright would grab a hammer and immediately make his way through the Taliesin West complex to make improvements or expand the facilities. Throughout the years, he extended the dining room and added the cabaret theatre, music pavilion, and numerous other rooms. The site offers a broad range of public tours every day, except Thanksgiving, Christmas, and Easter, from 9 am to 3pm. Tours range from one to three hours long. Taliesin West is closed on Tuesdays and Wednesdays during the months of July and August.

Constructed in 1957, the pavilion was designed for Wright’s wife and daughter for the purpose of dance. Sporting Wright’s signature Cherokee red color, it offers translucent lighting from above, a deep stage and removeable panels that revealing an orchestra pit below.

The living room was often referred to as the garden room as it opens to a garden on the east and to the horizon on the south.

To ensure visitors always have new and original items to browse, Shauna Jean uniquely houses a pop-up space that welcomes different specialty niche stores as on a revolving basis. It’s a piece of vintage Scottsdale, POP-UP culture, local art and one of a kind shopping all blended together under one roof to create a “Place of Heart with a capital ART.” Check it out.

The Invisalign treatment begins with an initial consultation in which the doctor discusses the case in detail to determine if the patient is a good candidate for the system. They take x-rays, pictures and impressions of the patient’s teeth, which will be used to create a digital 3-D image. This process helps map out a precise action plan, including the exact movements of the teeth with each stage of treatment. A series of custom-made, clear aligners is produced using a smooth, comfortable, BPA-free plastic that won't irritate cheeks and gums, as many traditional metal braces tend to do. Patients simply wear the aligners throughout the day for at least 22 hours and remove them when eating and to brush their teeth. As each set of aligners is worn, usually without anyone noticing them, teeth gently and gradually begin to shift into place. Approximately every two weeks a new set of aligners is introduced advancing patients to the next stage of the treatment. Occasional checkups monitor the progress and at every stage, patients are able to see how much closer they are to having a confident smile. While every case is unique, treatment typically takes about a year for adults. For teens, the length of treatment is comparable to that of braces, but since wires and brackets don’t cover their teeth, they’ll be able to see improvement much sooner. 92 | Health Beauty Life Magazine
