Kathy greeted the Health Beauty Life team casually dressed and barefoot, accompanied by two dogs and radiating a neighborly vibe that made us feel instantly at home. There is no doubt her days after the catwalk have been monumentally productive. In a relatively short time, she’s built a powerhouse brand with a jaw-dropping portfolio of over 15,000 licensed products, created best-selling workout DVDs, and penned two inspirational books, one devotional and three children's books. Her ever growing merchandise list includes furniture, lighting, jewelry, bridal, fashion apparel, event destinations, and everything for the home, ringing up over $2 billion in revenue annually. Cafe Du Monde

Let’s begin with an early breakfast at the world famous Café Du Monde in the French Market. Originated in 1862, the cafe thrives, serving beignets (the Louisiana’s state doughnut), coffee with chicory mixed with hot milk known as cafe’ au lait. The Original Cafe Du Monde Coffee Stand was established in 1862 in the New Orleans French Market and is open 24 hours a day, seven days a week, closing only on Christmas Day and when an unusually strong hurricane stops by for a visit. Quarter

The original settlement of New Orleans, known originally as “Vieux Carré” “French Quarter” or simply “The Quarter,” is the oldest neighborhood in the city. Established by the French in 1718, the location was, and is still, a valuable site for trade due to its strategic position along the Mississippi River.

The district, bounded by Canal Street, Decatur Street, Esplanade Avenue and Rampart Street, is a National Historic Landmark. The French Quarter represents a rich tapestry of international influence with cultural contributions from the French, Spanish, Italians, Sicilians, Africans, Irish, and others. Like gumbo, “The Quarter” is a tasty stew full of surprises and magic.

Natchez River Boat Cruise

All aboard! Next stop is a relaxing river ride aboard the steamboat Natchez.The stern wheel steamboat sails along the banks of the Mississippi accompanied by a traditional New Orleans Jazz band and provides a view of New Orleans that must be experienced to be truly appreciated. The Natchez voyage is a two-hour cruise that steams out of the French Quarter daily at 11:30 AM and 2:30 PM with evening dinner cruises departing at 7:00 PM. Audubon Aquarium& Insectarium

As part of a family of museums and parks dedicated to nature, The Audobon Nature Institute has celebrated the Wonders of Nature since 1866. Touch a sting ray, meet a parakeet, and get up close and personal with gigantic sharks, tarpon, and rays in an immense 400,000 gallon Gulf of Mexico Exhibit.

The Audubon Butterfly Garden and Insectarium Located in the U.S. Custom House on Canal Street, The Insectarium is one-of-a-kind treat and a total workout for all five senses. As North America’s largest museum devoted to insects and their relatives, you’ll discover why insects are the building blocks of life. Along the way, you’ll be shrunk to the size of a bug, wander through a Louisiana swamp, join the audience of an awards show for bugs, (by bugs), and be captivated and delighted by thousands of butterflies in the amazing Asian garden. Cemetery

The Cities of the Dead Like all things in New Orleans, the city’s cemeteries are unique and unusual. Because the city is built on a swamp, the deceased are buried above ground in elaborate crypts, tombs and mausoleums. Over time, the cemeteries, with elaborate sculptures, individual wrought iron fences, and decorative artwork, have evolved to resemble small villages commonly referred to as “Cities of The Dead,” and have become attractions that are well worth a visit. While we were in town, we stopped by Lafayette Cemetery No. 1 and found the experience to be memorable and more than a little spooky. Founded in 1833, Lafayette #1 is listed on the National Register of Historical Places and contains crypts belonging to many historic individuals. The most famous cemetery, St. Louis Cemetery #1, is a short distance from the French Quarter. Located on historic Basin Street, St. Louis Cemetery #1 is the burial place of the legendary “voodoo queen” Marie Laveau. Some individuals still practice rituals at her grave, and New Orleans lore holds that visitors must turn around three times and knock three times on her tomb for their wishes to come true. Many of these “Cities of the Dead” can be visited on guided tours.

Streetcars

Take a trip into New Orleans' past on the oldest continuously operating streetcar (locals call these vintage electric rail vehicles “streetcars� - never trolleys.) in the world. With mahogany seats, brass fittings and exposed ceiling light bulbs, these beauties have rumbled along the steel rails of the city for over 150 years representing the charm and romance that is New Orleans. There are three different lines: St. Charles, Canal Street, and the Riverfront. Each one originates downtown and each takes you to different parts of the city. The St. Charles line is a 13.2 mile ride from Carondelet at Canal Street in the Central Business District through the oldest and most majestic section of uptown New Orleans, then rounds the bend in the river to Carrollton at Claiborne Avenue. Next it cruises along St. Charles Avenue past antebellum mansions, historic monuments, Loyola and Tulane universities, and the sweeping grounds of the Audubon Zoological Gardens, shopping centers, fine restaurants and hotels. One-way fares are $1.25 and can be paid with exact change when you board. One, three and 5-day unlimited ride passes are also available for $5, $12 and $20 respectively. Bourbon Street While all of New Orleans cannot be defined by this little slice of sin, the effect that Bourbon Street has on the city is undeniable. There is a casual irreverence to the place that colors the Crescent City in a boozy neon glow that beckons visitors with sights and sounds that can only be found on this block stretch of vintage New Orleans. Tourists stroll with drinks in hand experiencing the music and food, strip clubs, honky tonks and bars. It’s a place where four-star restaurants go toe-to-toe with noisy bars and where scantily clad saloon girls beckon from doorways while wide eyed tourists gawk. Everyone bobs to the rhythm of live jazz, rock and roll and infectious revelry.

Irvin Mayfield's

While in New Orleans, we had the honor to meet Jazz great and two-time Emmy winner, Irvin Mayfield at his beautiful Bourbon Street Jazz Club, Irvin Mayfield’s Playhouse in the Royal Sonesta Hotel. Irvin’s Jazz club is on Bourbon Street, three blocks off Canal in the heart of The French Quarter, in the heart of New Orleans and is the ideal headquarters for the man who embodies the spirit of New Orleans as the de facto Cultural Ambassador for the Crescent City. The club offers a high end vibe coupled with down home sophistication, live music, great food and drinks, and is open every single day of the year. As a life-long native of New Orleans and a proud member of the New Orleans jazz community, Irvin is an extraordinarily accomplished individual as well as a dedicated preservationist and seriously skilled practitioner of traditional New Orleans Jazz. In addition to a staggering list of civic and community involvements, he is the co-founder of the Afro-Cuban jazz group Los Hombres Calientes, has released ten albums since 1998, and juggles roles as Cultural Ambassador and founding director of the New Orleans Jazz Institute at the University of New Orleans, (where he is also a professor). In 2002, he founded and became Artistic Director of The New Orleans Jazz Orchestra (NOJO) and holds positions both at the New Orleans Chamber of Commerce and the Champions Group of the New Orleans Museum of Art. Further, he is artist in residence at Christ Church Cathedral and, he is the Artistic Director of Jazz for the Minnesota Orchestra. Born and raised in New Orleans, Irvin began playing the trumpet in the 4th grade when he was influenced by a friend who played the instrument who, In Irvin’s words, “got good grades and had lots of girlfriends.”

Jazz Playhouse In New Orleans, they say trumpet players do not necessarily decide which instrument they play. The instrument chooses them. And, once you are chosen to play the trumpet, you become part of a legacy of trumpeters that include Louis Armstrong, Buddy Bolden, Wynton Marsalis, Terence Blanchard and others. Without a doubt, Irvin Mayfield is a card carrying member of that great society of musicians. Irvin acknowledges that Jazz experienced a slight slump in popularity over the last decade, but is enjoying an undeniable resurgence as of late. No doubt that lift in popularity has a lot to do with his efforts and the work of his musical contemporaries throughout the country. As Irvin points out, “All art ebbs and flows in popularity; I think Jazz is just another example of that like many other things. Some folks get into it at certain points in time, some don’t. But when you think about it, Louis Armstrong was the world’s very first pop star back in the late 20s, then other things happened, Frank Sinatra came along later and made jazz popular too.” Through the decades, in New Orleans jazz has remained a constant part of the fabric of everyday life. You hear it in weddings, funerals, house parties and birthdays. It’s played in church, barrooms and bordellos, street corners, and in elegant clubs like Irvin’s. Irvin continues, “When you come to New Orleans, you get to be different. In fact, our motto is “You’re different here.” When you are in this town, you let go of your “mundaneness,” and your “everydayness” and say OK, let’s grab a hand grenade (which is a cocktail made of every kind of liquor available) and wake up in a poncho somewhere, or go in a complete opposite direction to visit one of the most beautiful cathedrals anywhere, St Louis Cathedral, or dine in one of the best restaurants in the world, see and experience some of the finest architecture on earth, and no matter where you go or whatever you do, you will hear this amazing music that’s been around for over 100 years called jazz.”

Second Lining When asked about the culture that defines New Orleans, Irvin replies, “New Orleans is a unique city where a lot of cultures came together beautifully and it’s one of the few places where culture still exists in its original form. When you think about the places where you can get a true American Experience, there are some places you have to go, and New Orleans is definitely one of them. You’ll see what we call “Democracy in Different Forms. We have “herd democracy” which is jazz where you play as an individual and in groups at the same time, “Taste it” democracy with our Gumbo. (No two pots of gumbo are ever made the same) And, we also have a democracy of dance, called “second line” where we dance at funerals to celebrate life.” Once again, that’s a paradox that makes perfect sense here. “Here funerals are celebrated by live music for people who deserve it, you can’t just go hire a live band for your 2nd line funeral procession, that honor has to be given to you. Sometimes the honor of live music comes to musicians, sometimes to someone who was well known in their neighborhood and sometimes it’s for someone who just raised hell their whole life, but people come together and celebrate their lives. It’s about rebirth in New Orleans and that’s why we bounce back the way we do. We learned that again with Katrina.” He goes on to say, “New Orleans is the type of place where it’s not just the holy trinity of food, music and architecture; that make it special. It’s really the people. New Orleans people have this kind of built-in hospitality where we know the best food you’re going to get is at someone’s house and the best type of conversation is going to be a personal one.” In New Orleans, people can be themselves, individually is allowed and most importantly, appreciated. “In any other city, to be a drum major, might be considered less than great, but in New Orleans, the drum major is the big man on campus equal to the captain of the football team in other cities. Music is the only art form in the same space as emotion, and we have a lot of emotion in New Orleans.” When asked what he’s most proud of at this point in his illustrious career, he shares that being in a town where people appreciate what he does and to be considered an ambassador for the town is the highest honor that he can imagine. We were lucky enough to see a few Second Linings during our day in New Orleans and they are a treat to behold. It is impossible to not get caught up in the music and swagger that accompanies these joyous occasions and everyone’s invited to join the party thru the streets. It’s another example of the one-of-akind moments that happen every day in New Orleans. Second line parades are descended from the city’s famous jazz funerals. Except for the casket, mourning and a visit to the cemetery, they contain the same traditions as they march and dance along the city’s streets. There are dozens of different second line parades put on throughout the year, usually on Sunday afternoons, and held in neighborhoods all across the city. They range in size, level of organization and traditions, but in all cases, they will include a brass band, jubilant dancing in the street and members decked out in a wardrobe of brightly colored suits, sashes, hats and bonnets, parasols and banners, melding the pomp of a courtly function and the spontaneous energy of a block party, albeit one that moves a block at a time. The parades are not tied to any particular event, holiday or commemoration; rather, they are generally held for their own sake and to let the good times roll.

hile we were in New Orleans, we had the distinct pleasure of experiencing the incomparable Lucien Barbarin and his band at Irvin Mayfield’s beautiful Bourbon Street jazz club. A native and life-long resident of New Orleans, Lucien was born into a family of world renowned jazz musicians that have shaped New Orleans jazz for five generations; Lucien is the nephew of the legendary Paul Barbarin who wrote and performed with Jazz pioneers that include Henry “Red” Allen, Sidney Bechet, Joe “King” Oliver and Louis Armstrong. Additionally, Lucien is second cousin to jazz great Danny Barker, and thus represents the best of an evolving musical tradition. He nurtures that tradition through his artistry and commitment to live performances and recordings that never fail to illustrate the elegance, humor and flavor that is the heart of Traditional New Orleans Jazz. Born in New Orleans in 1956, Lucien’s unique musical education began when he performed at age six with his Uncle Paul Barbarin and the Onward Brass Band. Over time, Lucien expanded his mastery of jazz instruments to include the tuba, baritone, and drums, playing first-rate venues on Bourbon Street and remaining an active player with local brass bands, jazz festivals, and street parades. In 1990, Lucien joined the big band of Harry Connick, Jr., and has remains a steady musical collaborator with Mr. Connick to this day, having recorded several critically acclaimed albums as a sideman with Connick, including the Grammy-Award winning "Songs I Heard" in 2001. Lucien continues to thrill audiences worldwide as a featured performer with Harry Connick’s Big Band, most notably on the song "Luscious." A favorite with fans, "Luscious" was written by Harry specifically for Lucien to display his many talents. When not on tour, the New Orleans native can regularly be heard performing at the famous Palm Court Jazz Café, Irvin Mayfield’s Jazz Playhouse and the esteemed Preservation Hall. Lucien continues to make significant contributions to the future of traditional jazz on the stage and in his personal life. As the proud father of five children, each of whom show promising musical talent, the Barbarin Family Jazz tradition will continue to thrive.

INGREDIENTS • ¼ cup (½ stick) butter • 1 cup brown sugar • ½ teaspoon cinnamon • ¼ cup banana liqueur • 4 bananas, cut in half • lengthwise, then halved • ¼ cup dark rum • 4 scoops vanilla ice cream

SCAN

Combine the butter, sugar, and cinnamon in a flambé pan or skillet. Place the pan over low heat either on an alcohol burner or on top of the stove, and cook, stirring until the sugar dissolves. Stir in the banana liqueur, then place the bananas in the pan. When the banana sections soften and begin to brown, carefully add the rum. Continue to cook the sauce until the rum is hot, then tip the pan slightly to ignite the rum. When the flames subside, lift the bananas out of the pan and place four pieces over each portion of ice cream. Generously spoon warm sauce over the top of the ice cream and serve immediately. History of New Orleans The history of New Orleans reads like a fantastic novel. Here are a few of the highlights to help you better understand the historical dynamics that have shaped this utterly unique city.

French Founders: 1718 In 1718, the Frenchmen Sieur de Bienville founded a strategic port city five feet below sea level, near the juncture of the Mississippi and the Gulf of Mexico. The new city, or ville, was named La nouvelle Orleans for Philippe, Duc d'Orleans, and centered around the Place d'Arms (later to be known as Jackson Square). The original city was confined to the area we now call the French Quarter or Vieux Carre (Old Square).

Spanish Rule: 1762-1801 In 1762, either because he lost a bet or because the royal coffers were exhausted, Louis XV gave Louisiana to his Spanish cousin, King Charles III. Spanish rule was relatively short -- lasting until 1801 -- but Spain would leave a lasting imprint on the city. In 1788, the city went up in flames, incinerating over 800 buildings. New Orleans was still recovering when a second fire in 1794 destroyed 200 structures. One of the only French structures to survive these fires is the Old Ursuline Convent (1100 Chartres). Completed in 1752, it is the oldest building in the Mississippi River Valley. This means that most of the buildings you see in the French Quarter were actually constructed by the Spanish.

Sound Like a Local NOLA: Short for New Orleans, Louisiana Banquette: Sidewalk. Bayou: Choctaw for "small stream." It's a creek with a slow current, flowing from a river or lowland lake, often through swamp areas, usually in a delta region. Among its many nicknames, Louisiana is called "The Bayou State" for its beautiful wetland regions. Cajun: Nickname for Acadians, the French-speaking people who migrated to Louisiana from Nova Scotia, starting in 1755. Gris-gris (gree-gree): "X" marks the spot. Voodoo spells, often indicated by Xs, are still found on tombs like that of legendary voodoo queen Marie Laveau.

Isle単os (iz-lay-nyos): Islanders; in this case, Spanish settlers from the Canary Islands. Since 1799, they've been fishermen, trappers, and master boat builders in Louisiana. You can find them downriver, in St. Bernard Parish. Krewe: Members of a carnival organization, as in Krewe of Rex. A variation of "crew," the word was invented by 19th-century New Orleanians, who privately bankrolled the balls and parades (as is still the case). Lagniappe (lan-yap): A little something extra. A free coffee or dessert or a few extra ounces of boudin put the "bons" in "bons temps." Laissez les bons temps rouler! (less-say lay bon tonh roo-lay): Let the good times roll. Voodoo: From voudun, meaning "god," "spirit," or "insight" in the Fon language of Dahomey. Voodoo came from the West African Yoruba religion via Haiti, where African practices mingled with the Catholicism of French colonists. Yat: A local denizen. Named for the Ninth Ward greeting, "Where y'at?"


Louisiana Purchase: 1803

The New Paris

In 1801, Louisiana ceded back to France, but only two years later Napoleon sold the territory to the United States in the Louisiana Purchase of 1803, effectively doubling the size of the U.S.A. At a cost of only $15 million, it was considered one of the greatest real estate bargains in history.

By the mid 1800s, the city in the bend of the river became the fourth largest in the U.S. and one of the richest, dazzling visitors with chic Parisian couture, fabulous restaurants and sophisticated culture.

The American Sector and Haitian Immigration

Society centered around the French Opera House, where professional opera and theatre companies played to full houses. In fact, opera was performed in New Orleans seven years before the Louisiana Purchase, and more than 400 operas premiered in the Crescent City during the l9th century.

After the Louisiana Purchase, Americans arrived en masse as did European immigrants from Germany, Ireland and Sicily.

A Cultural Gumbo

Tension existed between the European Creoles concentrated in the French Quarter and the new American residents. As a result, the Americans settled across Canal Street in what was known then as the American Sector, known today as The Central Business District. The two factions skirmished often, and the Canal Street median became neutral area where the two groups could come together to do business without invading the other's territory. Ever since, all city medians have been called neutral grounds. And the Haitian Revolution of 1804 meant that for years to come thousands of Afro-Caribbean descent would come to call New Orleans home. These immigrants further diversified the population of New Orleans and made colorful contributions to the city's culture.

The War of 1812 and The Battle of New Orleans The war of 1812 began, and culminated in the Battle of New Orleans three years later. In January of 1815, 8,000 British troops were poised to attack and overtake the City of New Orleans. The American forces lead by General Andrew Jackson were grossly outnumbered. And due to the circumstances an unusual union formed- the notorious pirate Jean Lafitte and his men joined the American forces to defend New Orleans. On January 8, a polyglot band of 4,000 militia, frontiersmen, former Haitian slaves, and Lafitte's pirates defeated the British at the Chalmette battlefield, just a few miles east of the French Quarter. The battlefield remains a place worthy of a visit.

Under French, Spanish and American flags, Creole society coalesced as Islanders, West Africans, slaves, free people of color and indentured servants poured into the city along with a mix of French and Spanish aristocrats, merchants, farmers, soldiers, freed prisoners and nuns. New Orleans was, for its time, a permissive society, that resulted an intermingling of peoples unseen in other communities. And it is New Orleans' diverse heritage that is the driving force behind this unique and exotic city. The contributions of Africans, Caribbean peoples, the French, Spanish, Germans, Irish Sicilians and more created a society unlike any other. Over the years, New Orleans has had a powerful influence on American and global culture. Our cuisine is known across the world and through the innovative sounds of jazz rock and roll was born. Literary giants from Tennessee Williams to William Faulkner have flocked to the city for inspiration. Our food, music and cultural practices will capture your imagination and your heart. Let the Madness Begin If New Orleans is famous for its French Quarter, beignets and Bourbon Street, one event surpasses them all as the city's legendary signature piece - Mardi Gras! Mardi Gras is a season of revelry, madness, music, parades and parties. People wear comic costumes and attend spectacular masquerade balls and the gaudy and the gorgeous all come together in a tradition that dates back centuries and must be experienced to fully appreciate. Mardi Gras, (French for Fat Tuesday,) is the single-day climax of the season. While Mardi Gras undoubtedly has pagan, pre-Christian origins, the Catholic Church legitimized the festival as a brief celebration before the penitential season of Lent. The date of Mardi Gras is set to occur 46 days before Easter and can fall as early as February 3 or as late as March 9. The single custom that most distinguishes Mardi Gras parades is that of throws – (medallion necklaces and colorful aluminum coins called doubloons) tossed from the floats - which turn New Orleans parades into crowd participation events unmatched anywhere. "Throw Me Something Mister" is the battle cry of the million-plus people who line the parade routes. A Carnival krewe is led by the captain, who is the permanent leader of the group. Each year, a king and queen are selected to reign over the parade. While most clubs select their royalty from within their own ranks, krewes such as Bacchus and Endymion invite guest celebrities to ride as their monarch or parade marshal. Stars such as Billy Crystal, Dennis Quaid, Wayne Newton, Tom Jones, Neil Sedaka, Paul Anka, Dolly Parton, John Goodman and Harry Connick, Jr. have been so honored. New Orleans is a survivor; triumphantly rising from the ashes of devastating fires, surviving the ravages of the Civil War, and the horrors inflicted by Hurricane Irene and the BP oil spill, the city bounced back with a resilient strength that is admirable and undeniably New Orleans. It’s a town that is justifiably proud of its roots, steeped in history, architecture, music, cuisine and deep historical importance. Many New Orleanians consider their town more like a country than a city, displaying an attitude of fierce independence and rule-bending southern pride that resonates along every street, and in every parish.

While we were in New York City, we had the opportunity to go backstage at the historic Helen Hayes Theater to chat with the talented young stars of the wildly successful, five-time Tony Award-nominated musical, Rock of Ages. The vibe in the crowd lining up for Rock of Ages feels more like a rock concert than a Broadway show, with a growing sense of anticipation as the audience waits for each night’s sold out performance. Billed as “Broadway’s Best Party” the show, written by Chris D’Arienzo, is carried along by a nonstop string of hard driving hits from the 1980s with songs by Styx, Journey, Bon Jovi, Pat Benetar and other bands, expertly performed by the show’s amazing cast and accompanied by a lineup of journeymen rock musicians. Entering through the cast entrance and stepping through the stage door is like walking into any one of the Sunset Strip’s hardest rockin’ nightclubs, circa 1987. Thanks to the highly detailed scenery, imaginative lighting and live band, the transformation from present day New York to a mid-80’s Los Angeles rock palace is quick and painless that takes place as soon as the house lights dim. While the crew made last minute adjustments to sound and lights, and the stage managers worked with other cast members, we sat down for a quick chat with Jeremy Woodard, Ashley Spencer and Justin Sargent to talk about their roles in the show, and how their paths led them to starring in “Broadway’s Best Party”, Rock of Ages. The young actors were so at ease with Health Beauty Life Publisher Patrick Dockry, that the interview was more like a coffee table chat than a pre curtain interview. Despite the commotion and noise just below on the neon lit stage, they shared a bit of their journey from the time they were bit by the acting bug to what led them to Rock of Ages.

Jeremy Woodard

is a “southern Gentleman” from North Carolina, and one of the show’s most seasoned cast members. As a veteran of several productions, Jeremy worked diligently to land the part of Stacee Jaxx in the long running play. Jeremy wanted to be an athlete before becoming an actor and never considered himself a singer prior to his ballad-belting turn in Rock of Ages. That’s a pretty amazing revelation from a guy that handles up to seven songs per performance.

Ashley Spencer

like the character she plays, came from a small town in Middle America (Canton, Ohio) and auditioned for the show for a “long time” before landing her role as Sherrie Christian. Ashley dazzles as Sherrie, who comes to L.A. to pursue her dreams of becoming an actress, learns valuable life lessons, and falls in love along the way.

Justin Sargent

grew up in the coastal town of New Port Richey, Florida and graduated from an Orlando, Florida college before succumbing to the lure of Broadway’s bright lights, after being discovered as a singing waiter. Following numerous auditions for Spiderman Turn off the Dark, Justin landed an understudy role in R.O.A., which lead to his costarring part as Drew Boley in the New York production.


When asked what’s better the movie or the play, the cast laughingly replies that they’re both great but their show is a completely different experience and more like going to a party or a rock show than a movie.

Like all good live theater, the bond between the cast and the audience is one that creates an enhanced experience. The trio agrees the show is different but amazing every night, depending on what (and how much) the audience has had to drink, what happens with the live, on stage band and the overall mood of the audience.

Guacamole Bites These bite-sized appetizers are cool, creamy and delicious. Follow our simple, no-fuss guacamole recipe below or save time by purchasing your favorite pre-made variety.

INGREDIENTS • 8oz sour cream • 8oz guacamole (see recipe below) • 1 tbs. fresh cilantro, chopped • Phyllo cups (found in your grocer’s freezer)

PREPARATION Prepare phyllo cups as directed on packaging and allow to cool completely. Place a dollop of guacamole in the bottom of the cup and top with an equal serving of sour cream. Garnish with fresh chopped cilantro, place on a serving platter and serve immediately. ENJOY!

Quick and Easy Guacamole INGREDIENTS • 2 ripe avocados • 1 shallot, minced • 1 garlic clove, minced • 1 jalapeno, seeded and diced (for extra heat keep the seeds) • 1 tbs. cilantro, finely chopped • 1 lime, juiced • ½ tsp. kosher salt • 1 plum tomato, seeded and diced

Finish the skewer by bringing the basil leaf up and pushing the top of the leaf onto the top of the toothpick. Place on a platter drizzle with balsamic vinaigrette and serve immediately. ENJOY!

PREPARATION Cut avocados in half, remove the seeds and scoop out flesh. Mash avocado with a fork, keeping it a bit chunkier than desired consistency. Add shallot, garlic, jalapeno, cilantro, lime juice, salt and mash again until combined. Cover with plastic wrap, pressing the wrap on top of the guacamole to prevent browning and refrigerate until ready to use. Right before serving, add tomatoes and mix gently until combined. ENJOY!

Smoked Salmon and Caviar on Rye This appetizer is a great way to serve elegant salmon and caviar to your guests without breaking the bank.

INGREDIENTS

Bite-Size Caprese Skewers

• 1 loaf rye cocktail bread • 2oz cream cheese • 2oz sour cream • 4oz smoked salmon • 2oz caviar

PREPARATION These fun skewers are a great way to serve veggies. They are small enough for kids but pack a sophisticated flavor, making them appealing to adults as well.

INGREDIENTS • 1 pint cherry tomatoes • 1 8oz container of Ciliegini mozzarella balls (small buffalo mozzarella balls) • 15-20 large whole basil leaves, stemmed • 15-20 toothpicks • Balsamic Vinaigrette

PREPARATION Soak toothpicks in water for 30 minutes. When ready, insert a toothpick through the narrow end of the basil leaf. Continue by threading one cherry tomato and one mozzarella ball onto the toothpick.

Combine sour cream and cream cheese in a medium bowl using a hand mixer. Place rye bread slices on a serving platter and top each slice with a dollop of the cream cheese mixture. Next, place a piece of smoke salmon over the sour cream mixture and finish by topping the salmon with a ¼ tsp. of caviar. Refrigerate until ready to serve. ENJOY!


Beet and Sweet Potato Chips This bright, fun (and healthy) play on chips and dip will have everyone coming back for more! The oven baked chips are easy to make and worth the effort.

INGREDIENTS • 1 medium beet • 1 sweet potato • 2 tsp. canola oil • 3/4 cup ricotta cheese • ¼ cup parmesan cheese, finely grated • Salt and pepper to taste • 2 tsp. fresh chives, chopped

PREPARATION FOR THE CHIPS: Preheat oven to 350 degrees. Slice beet and sweet potato to 1/16 inches thick. Place slices in a large bowl and toss with vegetable oil. Arrange root vegetables in a single layer on two baking sheets. Place another baking sheet directly on top of the slices and bake for 15-20 minutes, or until light in color. Transfer slices to a wire rack and allow to cool completely. The chips will firm up and become crunchy as they cool. FOR THE TOPPING: In a small bowl, combine the ricotta and parmesan cheese. Season to taste with kosher salt and pepper.

The record-breaking athlete began racing go-karts before she even had a driver's license. She jumpstarted her career overseas and made history with the highest ever finish for a woman.

Since then, Danica's career has been on the fast track with considerable wins and high-profile endorsements. Throughout her profession, she has received numerous industry awards and honors.

In the Beginning Danica grew up in Northern Illinois in a little town just north of Rockford called Roscoe. When she was just 10 years of age, she and her 8-year-old sister formed an interest in go-karts through a neighbor who raced them. Her parents were very supportive and even despite a minor crash on her first attempt, she fell in love with racing right away. “My first time in a go-kart was in a parking lot driving around in circles and my break petal fell to the floor sending me into a wall. I wasn’t smart enough to turn the wheel and just spin out. That was my first accident, but it didn’t scare me for some reason. From there, I got good pretty quick,” Danica cites. She continues, “As you make steps up, it gets faster. You start with a little five horsepower engine that does 45 miles per hour and you eventually graduate up to the IndyCar Series and those cars do 240 miles per hour. For me, it took 12 years to get there.” “My first time in an Indy car, they told me to take it easy and not to rush but by the seventh lap I was flat out,” she declares. “I learned quickly that when the car is comfortable, it’s comfortable. If it’s not, that’s when accidents happen.” Danica is routinely questioned about what it’s like being female in a male-dominated field, and she responds by pointing out that it actually helps to be unique and different. This is especially true when it comes to sponsorship and funding, which is critical for the sport. At the same time, however, there are no free rides or special treatment because of her gender.

Camera Time Danica is no stranger to the camera. When she was only 14 years old, new to high school and still racing go-karts, ABC Sports followed her around for an afternoon for a show called Passion to Play, The Making of a Champion. Later that same year, MTV followed suit filming for a day for their own show. In 2006, she starred in a music video for Jay-z along with Dale Earnhardt, Jr. and earlier this year she played a car thief in a music video for Miranda Lambert called “Fastest Girl in Town.” With a grin, Danica is quick to point out that it was all for a role for the video and that aside from breaking a few speed limits a time or two, she does not participate in any illegal activities. “From a young age, I had a lot of exposure to cameras and to that kind of world more than anything because it put me on TV and made my brand more valuable. It made me valuable to a sponsor, which is so important in this field,” Danica says. She continues, “My life is always changing and different. Just when I think it won’t be drastically different, again in two years all of a sudden it takes another shift. Every few years it just seems to be more interesting and bigger than I ever thought.”

Today Danica is driving people to learn about chronic obstructive pulmonary disease (COPD) in memory of her grandmother who died from emphysema, a form of the illness. Danica remembers how her grandmother struggled to breathe and the impact that had on her life. She is determined to help others recognize signs of the ailment and take action to breathe better. So she's raising awareness for COPD as the leading ambassador for the DRIVE4COPD campaign. Danica firmly believes the cause deserves awareness as it is estimated that 24 million people, a majority of them women, have COPD but remain undiagnosed. DRIVE4COPD provides screening so people can understand the signs and symptoms and see if they are at risk for the disease. In just under three years, the organization has screened 2.5 million people and raised awareness and money for education and a cure. “Early detection is the key as screening can help with options," Danica says in closing. “Thank God that technology and science allows these options, but the ultimate goal is really to find a cure!”

W

hen Brad Pitt visited New Orleans’ Lower 9th Ward two years after Hurricane Katrina, he was shocked by the lack of rebuilding progress in this historic, working class community. Many worried the plight of the neighborhood would be forgotten, but in a bold move, Pitt committed to help rebuild in the hardest hit area of the city. Pitt believed that if safe, sustainable homes could be built in the most devastated part of New Orleans, it would prove that high quality green housing could be built affordably everywhere. Led by GRAFT architects, the Make It Right foundation convened 21 world-renowned architects to design climate-adapted, eco-friendly homes, informed by William McDonough’s Cradle to Cradle design principles. Over the course of many months, Pitt and the architects, who volunteered their time and work, met with Lower 9th Ward homeowners and community leaders to talk about their rebuilding needs and collaborate on home designs. Make It Right kicked off initial fundraising efforts with the Pink Project in December 2007 and broke ground on the first homes with President Clinton and the Clinton Global Initiative in March 2008. Construction began in June 2008 and the first six homes were completed in August 2008. There is a commitment to build 150 homes and all have earned LEED Platinum, the highest level of certification offered by the U.S. Green Building Council.

More than 350 people are now living in Make It Right homes in part of the neighborhood that was desolate just five years ago. In addition to providing homes, Make it Right has built an eco-friendly, solar-powered playground and worked with residents to plant community gardens throughout the neighborhood. Now they are exploring ways to attract other needed services and amenities to ensure the long-term sustainability of the community. Some of the green features in the Make it Right homes include: solar panels, ENERGY STARÂŽ appliances, no-VOC paints and flooring, pervious concrete and high-velocity air conditioners.

Make It Right also significantly invests in hiring and training local businesses and trades people. Their cutting-edge work in sustainable design, construction and solar power has helped train a local workforce in green collar jobs and helped position New Orleans and Louisiana as a leader in the green economy. Make It Right believes that energy efficient, well-designed homes should be affordable and available for everyone. Through innovative partnerships and community-led design sessions, they are working in neighborhoods across the country and educating others to change the way buildings are designed and built. Today Make It Right is sharing their knowledge of affordable green homebuilding with communities around the country and around the world. While continuing to fulfill their commitment to New Orleans, they have helped build an apartment building for disabled veterans in Newark, New Jersey and broken ground on an ambitious community development in a blighted Kansas City, Missouri neighborhood. They continue to find innovative ways to help communities in need and educate others to change the way buildings are designed and built. Wild Alaskan Halibut


INGREDIENTS

with roasted fennel, meyer lemon confit and citrus beurre blanc This impressive dish is perfect for entertaining friends or as an elegant date night meal for someone special. The fennel and lemon confit can be prepared ahead of time, allowing you to spend less time in the kitchen before meal time.

Beurre Blanc • • • • •

2 lbs unsalted butter, cut into small pieces ½ cup white wine ½ cup champagne vin ½ cup heavy cream 4 thyme sprigs and a few black peppercorns, in a sachet • Salt to taste

Prepare the roasted fennel and meyer lemon confit as directed below:

INGREDIENTS

Roasted Fennel • 1 fennel bulb, peeled and cut into wedges (16 total) • Olive oil • Salt & Pepper to taste

PREPARATION Reduce heavy cream until it is thick enough to coat the back of a spoon. Add wine and vinegar and whisk until incorporated. Add butter a few pieces at a time, whisking constantly so the sauce does not break. Add the sachet when most of the butter is incorporated. Once all the butter has been added, remove the sachet and set sauce aside.

INGREDIENTS

PREPARATION Toss cut fennel in a bowl with the olive oil and season to taste. Place fennel on a hotel pan and roast at 350f till tender. Set aside.

INGREDIENTS

Meyer Lemon Confit • 5 meyer lemons • 1 cup sugar • 1 cup water

PREPARATION Slice lemons thinly. In a 2 quart pot, add water and sugar and bring to a simmer, stirring occasionally until sugar has dissolved. Remove from heat. Place sliced lemons spread on a rimmed pan. Pour syrup on top of lemons. Allow to steep until soft and then cool down in syrup. Meanwhile, line a baking sheet with parchment paper. Once cool, remove lemon slices from syrup and set on baking sheet in a single layer. Syrup can be recycled up to 3 times. Prepare the sauce right before you are ready to cook the fish:

Sautéed Alaskan Halibut • • • • • •

x2 6oz halibut filets 1 orange, pith removed and sliced into segments Oil 2 Tbs. unsalted butter Salt & Pepper to taste Micro sakura mix (garnish)

PREPARATION Turn oven broiler on. Heat a large sauté pan with vegetable oil (two turns of the pan). Place the halibut in the pan and let sear for 4-6 minutes. In a second pan, sauté fennel over medium heat until warmed throughout. Add 2 tablespoons of butter to the pan with the halibut; once butter has melted take a spoon and baste the fish with the browned butter for a few minutes to finish cooking the fish. Once cooked, remove pan from heat. Place half the fennel and orange segments in the center of the plate. Place the halibut filet over the fennel and oranges and lay a few pieces of the lemon confit on top and repeat with second serving. Put plates in the oven until lemons are warm, about 1 minute. Remove plates from the oven and dress with 2 tablespoons of the beurre blanc and garnish with the micro sakura mix. Serve immediately. ENJOY!


Hamachi Ceviche This dish scores on presentation and flavor. The bright, crisp flavor of the spices combined with the fresh lime juice and spicy jalapeno make this dish sing with every bite. Its simple preparation also makes this dish great for entertaining. Just be sure that you keep it on ice!

INGREDIENTS • 4.5 oz. hamachi, cubed • 2 tsp. red onions, fine diced • 2 tsp. jalapenos (red and green), deveined and seeded, fine diced • • • • • • • • •

2 tsp. green apples, fine diced 1 tsp. basil, chiffonade 1 tsp. cilantro, chopped 1 tsp. chives, chopped 2 tbs. extra virgin olive oil 3 tbs. fresh lime juice Salt and pepper to taste 3 lime wedges 2 single serve Tabasco sauce

PREPARATION Fold all ingredients gently in a mixing bowl. Adjust seasoning and allow it to sit for 2 – 3 minutes. Place finished product into 3 2oz. ramekins. Place ramekins over ice in a bowl, garnish with the lime wedges, and serve with the mini Tabasco sauce.

or seven years, Eva La Rue starred as the vivacious and brilliant Natalia Boa Vista on the CBS primetime series CSI: Miami. She portrayed a DNA lab specialist turned crime scene investigator with a knack for grant writing on one of the most watched television shows in the world. It is listed on the National Register of Historic Places, and was the home of Showtime at the Apollo, a nationally syndicated television variety show consisting of new talent. A cultural icon, the Apollo has had significant impact on the development of American culture and its popularity around the world.

Creation of a Legend Built in 1914, the entertainment venue known as the Apollo Theater was initially called Hurtig and Seamon’s New Burlesque Theatre. Owned by Sidney Cohen, the theater presented white singers and light entertainment. A local campaign, led by newly elected Mayor Fiorello La Guardia, against burlesque closed the theatre in 1933. A year later the theater reopened as the 125th Street Apollo Theatre. Owned by Cohen and managed by Morris Sussman, they changed the format of the shows to variety revues and redirected their marketing attention to the growing African-American community in Harlem. From 1935 to 1979, the historic landmark changed hands two more times. In 1935 Frank Schiffman and Leo Brecher took over the theater. Under this ownership the theater presented 31 shows per week: four per day, plus extra shows on Wednesday, Saturday and Sunday. The Schiffman and Brecher families would operate the Apollo Theater until the late 1970’s. In 1981, Percy Sutton, a prominent lawyer, politician, media and technology executive and a group of private investors purchased the Apollo. Under Sutton’s ownership, the Theater was equipped with a recording and television studio. Based on its cultural significance and architecture, the Apollo Theater received state and city landmark designation in 1983 and was listed on the National Register of Historic Places. In 1991, Apollo Theater Foundation, Inc., was established as not-for-profit organization to manage, fund and oversee programming for the theater. Under the guidance of a Board of Directors, today the Apollo boasts a range of new programs serving the community and complementing its historic role through performing arts, education, and community outreach programs.

Amateur Night at the Apollo Amateur Night at the Apollo has played a major role in cultivating artists, and in the emergence of innovative musical genres including jazz, swing, bebop, R&B, gospel, blues, soul and hip-hop. Amateur Night helped shape the popular vocal and performance tastes of many generations of Americans of every color. Ralph Cooper, an accomplished emcee, actor and dancer, launched the Wednesday Amateur Night at Sidney Cohen and Morris Sussman's 125th Street Apollo Theatre in 1934. Cooper's Amateur Night in Harlem radio shows were broadcast live and carried on a national network of 21 stations. Amateur Night at the Apollo quickly became the leading showcase for many new, young, and talented performers such as a 15-year-old Ella Fitzgerald, who went on to become one of the first Amateur Night winners. From its notoriously tough audience to the magic of the Tree of Hope, the Amateur Night story is the stuff that legends are made of - literally. Amateur Night has been the launching pad for some of the world’s greatest artists including Stevie Wonder, the Jackson Five and Lauryn Hill. Sarah Vaughan, Billie Holiday, Sammy Davis, Jr., James Brown, Michael Jackson, Bill Cosby, Gladys Knight, Luther Vandross, D’Angelo, and countless others also began their road to stardom on the Apollo’s stage.


Long before Ted Mack and the Amateur Hour and American Idol, Amateur Night at the Apollo was, and continues to be, a primary source for discovering new talent and spotlighting up-and-coming artists. All are hoping that the hallowed stage and the approval of the Apollo audience will launch their careers in the entertainment world.

The Tree of Hope The legend and tradition of The Tree of Hope began outside the famous Harlem Lafayette Theatre once located between 131st and 132nd Streets on Seventh Avenue, known as the Boulevard of Dreams. Harlem's then top show biz venue featuring African-American talent, the Lafayette soon became the scene for aspiring actors, dancers and performers to gather. The Tree of Hope stood across from the Lafayette Theatre and performers believed it to bring good luck to those who stood beneath its branches. It symbolized the promise that Harlem held for millions of aspiring African-Americans. In 1934, around the time the Apollo Theater first launched Amateur Night, the City of New York widened Seventh Avenue and the trees that had once lined the Boulevard of Dreams had to be removed. One of the doomed trees was the famous Harlem landmark, The Tree of Hope. To this day, a large section of the trunk of this very tree stands proudly on the Apollo stage and every Wednesday night, where hopeful performers touch the tree in the hope they can share in the good fortune of so many past performers.


Take a Tour Apollo historic tours connect the past, the present and the future of the legendary venue, revealing the significant contributions of African-Americans and Latinos to the birth of global popular culture. The tours are educational, informative, entertaining, and inspiring, as resident historian and official tour guide, Billy Mitchell, discloses little known facts about the theater and the legendary people who performed there. “There is so much history in this place,” says the man known as Mr. Apollo as he points out the Hall of Fame imagery gracing the walls of the theater. “There is this amazing wall with pictures of people, so many of whom started their careers here at the Apollo and went on to become legends.” He continues, describing the famed Amateur Night, “The audience is the judge of every performance. They are brutally honest and very diverse, but they all want the same thing…to see a great performance!”

POMPANO with Melon and Mango Salad

INGREDIENTS 1 Cup of each of 3 of the following Melons (totaling 3 cups) peeled, seeded and ¾” dice (Watermelon, Cantaloupe, Honeydew, Casaba, Crenshaw, Santa Claus, Canary) • 3 Cups - Melon of Choice (see above), diced • ½ Cup - Mango, Diced • ½ Cup - Papaya, Diced • 2 Tbs. - Chopped Cilantro • 1 tsp. - Chopped Mint • 2 Tbs. - Honey • ½ tsp. - Salt • 1 - Lime, Juiced

Preparation 6 each 8-10 oz. Pompano Filets, Scaled and Scored, Pinbones Removed, Salt, Pepper, Flour, Canola Oil, Butter 1) Dice the melon, mango and papaya. Mix together the honey, cilantro, mint, lime and salt, toss, cover and refrigerate. 2) Season the Pompano filets with salt and pepper and dust with flour. Divide the six filets in two large preheated sautéed pans with 1 tablespoon of Canola oil and 1 tablespoon of butter, skin side down. Cook over medium to high heat for about 3-4 minutes. More of the cooking needs to be done on the skin side so it’s nice and crispy. Turn and continue cooking for an additional 2-3 minutes. **

To Serve: Line six large, heated plates with a section of a banana leaf cut to fit. Place about ½ a cup of the diced melon mixture slightly off center and shingle the julienned melon/mango of the side. Plate the Pompano filets so that some of each melon is showing. Serve immediately.


RED SNAPPER topped with Browned Butter and Lump Crabmeat INGREDIENTS • 6 each - 8-10 oz. Pompano Filets, Scaled and Scored, Pinbones Removed • 2 Tbs. - Salted Butter ½ - Lemon 1 tsp - Freshly Chopped Parsley 2 oz. - Fresh Jumbo Lump Crabmeat Salt - To Taste Pepper - To Taste 6 Tbs. - Flour 2 Tbs - Canola Oil

Preparation 6 each 8-10 oz. Pompano Filets, Scaled and Scored, Pinbones Removed, Salt, Pepper, Flour, Canola Oil, Butter 1) Season the Red Snapper filets with salt and pepper and dust with flour. Divide the six filets in two large preheated sautéed pans with 1 tablespoon of Canola oil and 1 tablespoon of butter, skin side down. Cook over medium to high heat for about 3-4 minutes. More of the cooking needs to be done on the skin side so it’s nice and crispy. Turn and continue cooking for an additional 2-3 minutes. 2) Place a separate sauté pan on high heat and leave until it is hot. Place butter in pan and when it starts to brown, add the juice of ½ of a lemon and stir. 3) Add parsley. 4) Add Crabmeat and toss in butter. 5) Place mixture on top of prepared Red Snapper and serve immediately.

These treatment protocols offer over 500 specific moves unique to ART, which allow him to identify and correct the precise problems that are affecting each individual patient.

Applied and Clinical Kinesiology In common medical usage, Kinesiology is the study of muscles and muscular movement but when coupled with the term Applied or Clinical, whole new concepts are invoked. These techniques use manual muscle testing to evaluate body function. By manually testing specific muscles, areas of dysfunction can be identified. These areas can then be treated by K-Laser and/or by therapeutic reflex points and acupuncture points to restore function and reduce pain. There are Clinical Kinesiology muscle testing manuals for the low back, hip, knee, ankle and foot, shoulder, elbow, wrist and hand, neck and head including the muscles of the TMJ (jaw). Dysfunction, pain and disease begin first as an imbalance in the body’s energy fields that, if sustained, progresses on to the physical plane. Weakness in a muscle is an energetic phenomenon, which can be used to identify health problems (sometimes before symptoms appear), thereby allowing Kinesiologists to begin to correct the imbalance and practice prevention.

K-Laser Treatments K-Laser is a high tech tool that delivers physiological benefits by stimulating an energy-bearing molecule found in all living cells called Adenosine Triphosphate (ATP). Increasing ATP production and enhancing cell membrane permeability, the K-Laser is a hot laser that helps injuries heal by providing bio-stimulatory from photochemical reactions in cellular tissue. Treating Patrick Health Beauty Life publisher Patrick Dockry, has been seeking treatment from Dr. Specht for many years, receiving relief from a variety of sports and activity-related aliments. This visit he came in with some pain and strength issues in his right arm, as he was unable to perform pull-ups without intense pain. Dr. Specht initially tests for some general nutritional and dietary imbalances as part of his regular treatment in healing the entire body. He looks for imbalances and how everything affects muscles, bones and neurological function. In Patrick’s case, he started the exam with a manual muscle test, which works as an indicator to see if Patrick’s ileocecal valve is in proper order. Described as a guard gate between the small and large intestine, if the ileocecal valve is not operating correctly, bowel disturbances can occur, which affects the entire body. Once the preliminary tests checked out, Dr. Specht moved on to testing specific muscles in Patrick’s right arm utilizing Clinical Kinesiology methods. Through these tests, Dr. Specht isolated three individual muscles that were dysfunctional and very weak. He treated these areas using the K-Laser on very specific points in the muscles and then retested to ensure correction.

For each of the three affected muscles, Dr. Specht quickly conducted a series of tests to determine if there were any systemic underlying causes for the muscle imbalances. These causes could include nutritional deficiencies, toxicities, allergies or homeopathic imbalances. The last few tests checked for general inflammation and hydration issues, which Patrick passed with flying colors. In the end, Dr. Specht treated three particular muscles, recommended a nutritional supplement to help maintain the balance of the muscles, reset the body by stimulating specific spinal points, and then isolated the probable dietary cause of the issue. Patrick left the office with renewed strength in the problem areas, enabling him to do pain-free pull-ups, and feeling better overall. Not bad for less than an hour in his favorite Chiropractor’s office!
