aybe it was the Filet Mignon Louisiana, with béarnaise sauce and crawfish. Could have been a Crunchburger, or hot potato chips with blue cheese sauce. Perhaps it was a transcendent cactus pear margarita that you still talk about more than a decade later. If food and drink are a passion, chances are you’ve shared it, on some level, with Bobby Flay. Now, the man behind Bar Americain, Mesa Grill, Bobby Flay Steak and the ode to hamburgerology that is Bobby’s Burger Palace not may not have a Hamptons restaurant in his future. But he is excited to immerse himself in the midst of the East End culinary scene this summer. “I love being part of anything food/wine related in the Hamptons,” says Flay, who is certainly not alone in that sentiment. And as host of Dan’s Taste of Two Forks on July 13, he’ll get to share that love. A one-night-only showcase of more than 60 restaurants, wineries, and local purveyors, Dan’s Taste of Two Forks draws foodies from all quarters. A gastronomic gathering where chefs get to interact with their fans and one another, it’s an event where “everyone's in a great mood,” Flay offers, “and we get to eat some awesome cuisine made with local, fresh East End ingredients.” Local. It’s a term easily invoked, yet it has genuine meaning for Flay. Here in the Hamptons, surrounded by the farms and vineyards that stretch across the land, by the oceans and bays, Flay embraces a true locavore outlook. In honor of Dan’s Taste of Two Forks, if he had two forks right now he’d elect to stick them in “some grilled wild striped bass from Montauk. I eat it all summer.” He shops local farm stands and markets for fresh ingredients, produce and seafood to cook in his Amagansett kitchen. Wait, make that kitchens. Flay and his wife, actress Stephanie March, built a home in Amagan-

sett a few years ago, an escape from the hustle and bustle of the world like so many people here. Flay could have chosen any location, but “Stephanie only wanted to live in Amagansett, so frankly it made it easy for me to decide where to build!” he reveals. Befitting the chef who 10 years ago was the James Beard Foundation’s Rising Star Chef of the Year honoree and now boasts restaurants from the Bahamas to Las Vegas, the home has a pair of kitchens, one indoors and one outside that even includes a pizza oven. “I truly appreciate having a home on the East End,” he admits. It’s not just because of those kitchens, although when he’s not taking in some polo or playing golf, other of Flay’s favorite things to do in the Hamptons do tend toward the food-centric—the chance to “eat steamers and soft-serve ice

And those like Throwdown, Food Network Star and Iron Chef America have fundamentally changed the way we think about cooking and chefs. This year, the inaugural GrillHampton event kicks of Dan’s Taste of Two Forks Weekend on July 12, pitting East End chefs from both the North and South Forks against NYC counterparts in a cooking competition for the ages. One day it could be lending a hand to international diplomacy by preparing the menu—including lobster tamales, Porterhouse steak and cherry pie— when President Obama recently dined with Chinese President Xi Jinping in Rancho Mirage, California. Dining out and taking in a smorgasbord of culinary delights is one of the hallmarks of summer in the Hamptons and on the North Fork. The Topping Rose House Top Chef Tom Colicchio’s latest enterprise, the muchanticipated Topping Rose House in Bridgehampton, is enjoying its inaugural Hamptons summer season, offering a new experience not only for diners, but for Colicchio himself. Speaking about the new hot spot, Colicchio stressed that most of the entrées at Topping Rose are dishes he has never offered before. Chef de Cuisine Ty Kotz is charged with realizing Colicchio’s vision. As the emphasis is on local vegetables, with their own garden in the heart of South Fork farm country, they’re able to take this idea to its apogee. Kotz quoted Danny Meyer as saying

“All boats rise with the tide.” It’s a fine time for sailing through the local restaurant scene, and The Topping Rose already has a growing cadre of local, regular customers. The one-acre garden plot, designed and worked by Jeff Negron of The Growing Seed, allows for beautiful, organic greens, carrots, turnips, radishes, peas and herbs. Next year the plan is to add figs, raspberries and blueberries, but, as Kotz says, “At the end of the day the soil and Mother Nature tell you what’s going to be possible. Next year’s gonna be a lot of fun. This is really something special, an amazing opportunity.” It certainly looks like Colicchio’s farm-to-table concepts are here to stay in Bridgehampton. When asked if he feels like he’s done it all now— with his restaurants and gardens and cookbooks and wine and the inn—Colicchio said no. A Cuddy Is… Restaurateur Jeff Resnik brings his new American comfort food joint called The Cuddy in place of his former Thai operation Phao. A Tree Grows in Riverhead The economic climate of recent years hasn't been a boon for all East End dining establishments, but In downtown Riverhead, Maple Tree deli recognized an opportunity in the down economy and has emerged a tasty success, Maple Tree BBQ. “We’ve always wanted to do this,” said owner Kevin Judge. “The economy went bust, and we decided that the only way out was to build and to specialize, and that’s what we did—we specialized in barbecue.” The new Maple Tree, which features country-style seating both inside and out on the Peconic River, as well as take-out and catering options, has an all-new barbecue menu smoked and prepared on-premises. “It’s really interesting fare. f you’re looking for a change from the famed wineries of the North Fork, you’re in luck. Woodside Orchards, a family owned orchard in Aquebogue, is now producing and selling hard cider. “The business is primarily an apple orchard, and we do pick apples and all that stuff,” says Bob Gammon, who, with his brother, Scott, purchased the Aquebogue location eight years ago (they have another location in Jamesport that was founded in the early 1980s). “We had the property, and for apple season we’re only open three to four months out of the year, and we thought, ‘What else can we do?’” So they began selling the cider last year as a way to bring in business during the off-season, and now instead of waiting until midAugust to open, their hard cider has created a summertime crowd. Woodside Orchards currently offers four varieties of hard cider: Traditional, Traditional Sweet, Apple Raspberry and Cinnamon Apple. A fifth variety, Apple Cherry, is in the works. The Traditional and Traditional Sweet are their most popular flavors; they are very similar in taste, but with subtle differences, and the sweetness of the latter is not overpowering. Apple Raspberry, which has a distinct semi-sweet, crisp flavor to it, was just released for the first time, but has already joined the ranks of Gammon’s personal favorites along with the Traditional. During its launch last year, the cider was a big hit with customers, and is now a permanent fixture at Woodside Orchards. “Our goal with hard cider is just to complement the existing business we already have, not to really get into distributorships and wholesaling and all that,” Bob says, although he adds that they may sell wholesale in limited locations for self-promotion purposes. He also confirms rumors that

Woodside Orchards is also starting to make apple wine, and said that they’re waiting to have their label approved; the wine is expected to be released within the next month or two. In case you were wondering, Gammon explains, “the difference between the apple wine and the cider, from a legal standpoint, is that anything above 7% alcohol has to be called a wine, and anything below that is considered a hard cider.” Woodside Orchards’ hard cider contains 6.5% alcohol. Gammon is also in the process of obtaining a satellite license to offer the hard cider at the Jamesport location, acknowledging the challenges he faces in making a seasonal product in only one location. “The drawback is that the cycle takes about six weeks, from pressing the juice, to fermenting it, to filtering it, and then there’s another two weeks of carbonation process, so it’s a six-to-eight-week process from beginning to end,” he says. “So what you tend to see here is what we have. “We only have the apples available from August through probably March,” he continues. “So if you do the math, you can only turn the tanks maybe five times, so that’s the volume you have. It’s not like beer, where you can just add more water and add more hops in, so the amount of product you have is limited to the amount of tanks you have.” But the Gammon brothers are not limiting their other offerings to hungry and thirsty visitors. In addition to the hard cider, Woodside Orchards also offers non-alcoholic apple cider and baked goods, as well as 30 different varieties of apples. Woodside Orchards at 729 Main Road in Aquebogue is open Friday, Saturday and Sunday from 11 a.m.– 5:30 p.m., May through August, and will be open seven days a week come September.

he third and newest addition to the Hampton Coffee Company is open, and the Southampton Coffee Experience is unlike any coffee house you’ve ever seen. The family owned java business set up shop inside what was previously a car dealership, so there was plenty of room to create a unique space for this urban-style hangout. The décor is retro-industrial with an urban, modern ambience, and there’s a whole world of coffee to discover inside, whether you’re a fanatic or an occasional drinker. With an enormous coffee-roasting machine sending a heavenly aroma wafting through the air and allowing

visitors to see the roasting process unfold, the goal is immersing visitors in the entire coffee-making routine. Grab a seat at the coffee bar and a specially trained barista will give you a coffee education. Choose your coffee bean, and the barista will brew it two ways: the pour-over brew and the siphon brew. The pour-over brew is what it sounds like—freshly ground coffee is put into a funnel-like vessel lined with a filter, sitting over another vessel that the coffee will flow into. The barista slowly pours the water—at 205°, the perfect brewing temperature—into the funnel, and the result is a drink that is “cleaner” than most brewing methods.

The siphon brewing method is like something out of science class. Water in a circular beaker is heated by a Bunsen burner, and fresh coffee grounds are put into an attached cylindrical vessel. Once the water begins to boil, science takes over and the water is sucked up into the vessel with the grounds. Then the barista shuts off the heat and the fresh coffee slowly drains through the filter into the circular beaker, and voila—another perfect cup of java! I

t’s overcast, an unseasonably chilly afternoon on Chef Keith Luce’s family farm in Jamesport. The farm is not far from Iron Pier Beach (where the Luce family originally landed in the 1600s), and the smell of salt water mixes with, and is eventually overtaken by, the earthly smells of fresh manure, freshly rooted soil and livestock. Standing atop a small knoll, which “is one of the best places on Long Island to grow cabernet grapes,” according to Luce, one can look down across the 10-acre rolling farm. The options for the farm seem to be limitless. Eventually, Luce would like to have the 10 acres

sectioned off for perennial plots of herbs, an orchard, row farming in the center, and a small vineyard on the knoll up top. After a short drive down a dirt road to the main area of the farm, Luce gets out of his pickup while 30 head of Mangalitsa hogs come trotting and snorting their way to the fence to see if they are getting an unexpected second meal. The wooly hogs occupy a generous six-acre section of the farm. Luce has big plans for his family’s centuries-old property, plans that revolve around his most recent restaurant ventures. Which brings us to Greenport. A small brick path on the corner of Bay and Main Streets leads to

historic Stirling Square. It's a small walk-around village unto itself, just off the beaten path of the larger village. Stirling Square is home to the former North Fork Oyster Com pany, as well as th ree other small spaces, all of which are now owned by NoFo Hospitality Holding LLC. Three couples are partners in the operation. The CEO is Luce, and he’s the driving force behind the project. His wife, Marta Luce, along with Scott and Veronica Hunzinger and Jason and Kara Graves, are all partners in the LLC with him. The project started when Luce moved back to Greenport and the farm after years of perfecting his culinary craft


Food Content around the U.S. and Europe. Luce learned how to cook by doing. His career began in New York at high-end stalwarts such as the Rainbow Room, Le Cirque and La Côte Basque. After his time in the city he lived in Europe for two years, cooking at top Michelinstarred restaurants in France and Italy. Returning to America with the knowledge and experience of working under culinary masters, Luce bounced around the country, cheffing at top resorts, and even served as sous chef at the White House during the first Clinton administration. Paying his dues in Europe, and having cooked all over America, Luce realized something. The place where he grew up, the North Fork of Long Island, had the same qualities as the regions in Europe famous for the best food in the world. Greenport has exactly what the Spanish, French and Italian countrysides have: small artisanal farms, local wine and fresh seafood. “That’s why I moved home,” Luce said. “I grew up on a farm, I have kids now, and I want them to grow up in a place like this.” The Luce family farm, which dates back to the 1600s, had lain fallow for 25 years. Luce decided it was time to “wake the soil up.” Any good farmer is first and foremost a dirt farmer, according to Luce. Dense, nutritious soil is needed to raise healthy livestock, and to grow nutrient-rich vegetables. The natural way to do this is to bring in the pigs. The Mangalitsa breed is especially known for rooting around fence lines. The hogs aerate the soil and provide nitrogen naturally, which brings the earth back to life. Luce feeds the hogs trimmings from his restaurants, spent grain from Greenport Harbor Brewing, whey from local cheese makers, and leftover seasonal vegetables like pumpkins.

The Mangalitsa are also known as curly-hair hogs. They are hairy pigs that have higher mono-unsaturated fat levels than other swine. Luce’s six-acre plot is a very generous space for the pigs, but Luce said there are soon to be more: a few of the sows are currently pregnant. By next year there will be crops growing on the farm as well as livestock. A USDA facility in Pennsylvania will handle processing the pigs. While the hogs were bringing the farm back to life, Luce launched a Kickstarter campaign to raise funds to open a facility to cure the meat he raises. Luce’s partners Jason and Kara Graves live in Peconic. After taking a charcuterie class they became interested in curing meat as a hobby. A friend pointed out Luce’s Kickstarter, and they loved the idea and invested. “It’s how you want to see animals raised,” Kara Graves said. “Yes, they are happy pigs,” her husband Jason Graves agreed. After meeting Luce in person the couple realized that they had the same vision, and Luce had the ability to carry it out, so they became partners in the LLC. “The need for local charcuterie is the drive,” Kara Graves says. Prep, one of NoFo Hospitality’s outlets in Stirling Square, offers Luce’s artisanal charcuterie along with handmade flatbreads. The former North Fork Oyster Company, now renamed Main, is the restaurant out of the group. The two other smaller stores are a café called Nosh, and a tasting room called Gather. All of the new spaces in Stirling Square are now open for business. Luce’s vision for The Square is a bustling and fun culinary village, which will also be respectful to the neighbors. “What I’m trying to do is make a good spot that’s approachable,” Luce said, “that everyone will come to.”

L u c e wants The Square to be both localand touristfriendly— inclusive not exclusive. He would like to be open year-round. “I’m sincere when I say that I want locals to be comfortable here.” Luce wants to give the community that raised him a business that will sustain jobs and positions for people. A missing niche in the food industry, according to Luce, is a restaurant that is mid-level priced, but where one can still get a great meal. That’s the niche that Main is trying to fill. The idea for Prep is to be a production kitchen for Main, but in a facility that is open to the public. Old street-cart doors on the side of the Prep building provide passersby with a street-vendor look into the production operation. Among the delectable items made for both Main and customers alike are fresh pasta, handmade ravioli, flatbreads and loaves of bread baked in a woodburning oven, ice cream and cured meats. Bacon, prosciutto, salumi and mortadella are the items that Prep is curing with the hogs from Luce’s farm, but he said he will go as far as he can take it. Over at Nosh there are two windows, each facing the walking path of The Square, where wafts the scent of fresh waffles and crepes into the summer air. Nosh is a bakery, deli and café all rolled into one. Sandwiches, fresh baked goods, coffee and tea are available in the morning and throughout the afternoon. Across from Nosh is the tasting room Gather. This small, elegant room has a tasting bar for customers to try products as they walk through, and sells canned and jarred items

made at Prep. Original wide plank wooden floors, and a brick wall lend a historical, very hip feel to Gather. Main restaurant space seats approximately 150 when the outdoor patio is open. Appetizers on the menu are $7 to $14 and entrees are $15 to $30. Luce wants it to be more casual, and feels it will provide a good summer job for people in the restaurant business. Main features moderate prices, with fresh seafood, charcuterie plates with the in-house cured meats and an oyster bar. The locally farmed oysters are the stars of

the oyster bar, but Luce will also have some West Coast offerings for comparison. There will be a succinct beverage list. The wines are 75% local but a few bottles from other regions are peppered in. “There are some people doing an amazing job with Long Island wine,” Luce said, “it's getting better and better.” Alfred Hand will be the chef at Main. The previous owner brought Hand in, and he’ll stay on with Luce. “I had never met him, but I had heard of him,” Hand said of Luce. “I like what he does.” Hand said the cured meat and other

projects in Prep will be new for him, and he is excited to learn. The menu will be a collaboration, and the two chefs are a great fit. Hand is a native of Hampton Bays who now resides in Riverhead. He’s a Johnson and Wales University’s College of Culinary Arts graduate who has a long resumé. Hand’s career started with the first season of Oakland’s Restaurant in Hampton Bays, and then he worked at Georgica, Starr Boggs and many other East End restaurants. “I’m really excited because there’s so much potential,” Hand said. Total in-house production is a chef’s dream, it will help make everything from the quality of ingredients to food cost better. Sow, nurture, finesse, serve. This is the mantra of Luce. As the weather improves the farmto-table project is gaining speed and Luce said it’s becoming more real now. The end goal is to be as self-sufficient as possible, from the Luce farm to the restaurants. This is a long-term project; Luce said it will take five to ten years for his dream to be fully realized. F a r m - t o - t a b l e i n t h e p u re s t sense. John Luce is Keith Luce’s father, patriarch of the Luce family farm, and the father-and-son team work together on the dayto-day operations. Some of the buildings on the farm date back to the pre-Revolutionary War era. John Luce said that in the 1930s his family would mix their own fertilizer to save $2, a lot of money in the Depression Era— factoring in inflation it would save about $32 today. The Luce family roots run deep on the North Fork, and Keith Luce has a vision of strengthening that bond.


Farmers Markets & Farm Stands Think Local, Eat Local It’s a great time and place to be a locavore. Suffolk County is New York State’s most productive agricultural county, and the East End—which has been growing European crops in its rich soils since the 1600s—is blessed with a wealth of farm stands and farmers markets. Impress your friends by knowing the difference. A “farm stand” is a platform or building set up by an individual farm to sell produce and farm-derived products. In New York State, a “farm stand” must sell not less than 80% its own products. A “farmers market” hosts a number of farmers and producers at a site, allowing farmers, fishermen and local food artisans to sell directly to consumers. Everything from breads, baked goods and preserves to raw honey, grass-fed beef, artisanal cheese, local fish, flowers and more is available. Here’s where and when to go.

40 he Long Island wine industry will proudly celebrate 40 years of wine production this summer. It’s been a long journey from that first seedling to the varied vineyard weddings venues that now dot the East End. As you taste your way from Baiting Hollow to Sparkling Point—or the other way around—consider the rich history of the 60 active vineyards that populate this fertile land. It began in 1972 with a young pioneer couple, Louisa and Alex Hargrave, who were looking for a different way of life. It was a “real farming community,” Hargrave says about the Cutchogue neighborhood that became home to their dream of a vineyard. “People grew up with nothing but what they grew or fished

or hunted for.” It seemed like just the right place to begin. And dreams have a way of expanding. The following year, retired pilotturned-farmer Dave Mudd planted the first vines on his acreage on County Road 48 in Southold. Where once oats and wheat grew, now grapes for Sauvignon Blanc, Chardonnay, Gewurztraminer, Cabernet Sauvignon, Merlot and Pinot Noir were being cultivated. Cabernet Sauvignon was added in 1976. The early years were busy but not easy. Hargrave and Mudd Vineyards were followed by The Old Field, Lenz, the now-defunct Bridgehampton Winery, and Pindar. It was a decade of education and discovery. “Did we make some bad wines then?” Hargrave smiles and reminisces. “Yes!

But we called other winemakers...We talked to these people, we learned...in the ’70s we were all learning.” Hargrave sought out hard information to support the endeavor and applied the science to the land. There were farming issues specific to Long Island. “It’s a humid environment… and we have specific funguses here,” says Hargrave. “We learned about oak aging. We had stainless steel tanks before 90 percent of wineries in Bordeaux.” Steve Mudd, who worked with his father and eventually took over their business says “In 1979 (we) installed the first drip irrigation system on Long Island at Island Vineyard (now Pellegrini).” With the (literal) groundwork established, other growers came.

While the South Fork was sprouting a colorful collection of newsworthy celebrities and East Coast Hollywood parties during the 1980s, the North Fork was quietly laying the foundation for a world-class industry. Bedell, Pugliese, Laurel Lake and Peconic Bay set out vines, followed by Palmer and Paumanauk. The late ’80s brought Channing Daughters, Jamesport Vineyards and Wolffer Estate, to name a few of the 20 wineries that opened then. Ron Goerler, Jr Vineyard Manager and Winemaker at Jamesport Vineyards, and president of the Long Island Wine Council says of his 87-year-old-father, Ron Goerler, Sr., “My dad was a visionary. He looked at a piece of property in 1980, bought the land and started planting. ’What

can I do to improve it,’ he asked, ‘to build for the future?’” Those early winemaking days were one that fostered the pioneer spirit. Take Macari, formerly Mattituck Hills Winery, which was established in 1995 with one of the largest plantings on the North Fork. “If I am going to see this while I am alive,” said founder Joseph Macari, Sr. at the time, “I better do it!” And so he also started planting, cultivating 200 acres that led to the opening of their tasting room in 1998. In addition to Macari, the ’90s saw the development of Lieb Family Cellars, Duck Walk Vineyards, Martha Clara, Sherwood House, Raphael and Baiting Hollow, where they also have an active horse rescue operation. Shinn and Diliberto also emerged during this time.

Hargrave and her husband sold their winery to Marco and Ann Marie Borghese in 1999, only a year after the couple had come to Long Island to taste wines. Castello di Borghese is now the longest-farmed vineyard. And Hargrave, an accomplished writer who penned a memoir, The Vineyard, about her incredible journey, has become a revered resource for all things winerelated. As the industry has continued to blossom into the next century, over 30 new wine makers have embarked on agricultural missions. “I don’t think this industry would be here if it wasn’t for my father’s contribution,” says Steve Mudd. “He had such a positive attitude, always encouraging other potential owners to go forward.”

I

s there anything more idyllic than sipping a local pour while gazing out on the water? The new Kontokosta Winery is the North Fork’s first tasting room and winery with a waterfront location, providing the perfect opportunity to make that idyllic scene a reality. Having just opened its doors this June, Kontokosta Winery is perched atop sweeping bluffs on 62 acres. The Long Island Sound provides a dramatic backdrop to the 23 acres of vinifera vines, which include cabernet franc, merlot, cabernet sauvignon, syrah, viognier, sauvignon blanc and riesling. The property also includes an organic community garden that supports local nonprofits, food programs and soup kitchens. Visitors may enjoy the deep blue of the Sound, but the Kontokosta family is also all about the green, as they’re dedicated to employing sustainable agricultural practices in the management of the winery and vineyard. Reflecting that mindset, the newly constructed tasting room is registered with the U.S. Green Building Council under the LEED New Construction 2009 rating system, making it the first gold-certified winery on the North Fork. The winery is owned by brothers Michael and Constantine Kontokosta and is under the direction of General Manager Polly Brown. Consulting winemaker Gilles Martin, who has had his hand in numerous North Fork wineries, will be lending his expertise to the development of the Kontokosta wine program. Though this is the first season the winery will be open to the public, the first vines at Kontokosta Winery were planted in 2002. The vineyard has served as a prime source for several Long Island wineries and winemakers since its first harvest in 2006. Kontokosta Winery, located at 825 North Road in Greenport, will be open daily from 11 a.m.–5 p.m. The tasting room will offer wine sales and wine tastings. osé is the go-to wine to pair with grilled fare. No other wine type or style offers so many options and so much versatility at the table. Wellmade rosé combines the complexity and structure of red wine with the refreshing, thirst-quenching qualities of whites. From seafood to steak— and every food in between—there is a rosé that’ll work. And we’re lucky here on Long Island to have so many delicious renditions made in a variety of styles. Nearly every local winery makes rosé. Much of it is good. Some is very good. And two wineries have a distinct focus on rosé—Croteaux Vineyards and Channing Daughters Winery. In fact, Croteaux only produces rosé— but in a variety of styles, including wines made from individual clones of merlot, wines made using ambient yeast fermentation, a wine that is 99.5% sauvignon blanc with .5% cabernet franc added for color, one made from cabernet franc, and a sparkling rosé. The vineyard is worth a visit on a beautiful afternoon because the wines match well with the courtyard tasting area. Channing Daughters started their

Tre Rosati (Three Rosé) program several years ago, but that’s expanded over the last couple vintages. In 2012, winemaker Chris Tracy made seven different rosés. Tracy uses the usual Long Island suspects—merlot, cabernet franc and cabernet sauvignon—for varietal rosés, but also uses some of the more offbeat grapes they grow as well; things like refosco and lagrein. New this year is a field blend rosé from the winery’s Sculpture Garden Vineyard. Their first blended rosé, it includes merlot, Blaufrankisch and Teroldego. Rather than each grape being grown, picked and fermented separately and then blended before bottling, everything for this rosé was picked and fermented together. If you want to try the pink wines from Croteaux or Channing Daughters, get them soon. Some of the Channing Daughters wines have already sold out, and Croteaux typically sells out by September. The new batch of 2012s have largely made their way into tasting rooms. Here’s a sampling of tastings so far. Wölffer Estate 2012 Rosé is a Hamptons classic and with good

reason. On the lighter, crisper end of the rosé spectrum, this blend of 69% Merlot, 16.5% Chardonnay, 5% Pinot Noir, 4.5% Cabernet Franc and 5% Cabernet Sauvignon offers floral and red berry aromas and flavors—with hints of citrus and juicy acidity. Happy on its own by the ocean or pool, it’s also well-suited to grilled shrimp or scallops. Shinn Estate Vineyards 2012 Rosé offers something different. Coowner David Page prides himself on not making “wimpy” rosé—and this wine shows that intensity and concentration. This is always a favorite for char-grilled burgers or even skirt steak tacos. Roanoke Vineyards 2012 DeRosa Rosé is yet another animal— fermented in old oak barrels, it has a creamier, silkier texture while remaining bright and fruity. Try it with grilled lemon chicken or fatty salmon. Anthony Nappa Wines 2012 Anomaly, made with pinot noir, has the weight of a light red wine and the complexity and delicacy of pinot. Cherry and strawberry flavors—and a squirt of acidity—make it a good pairing for pork and duck dishes. Time to uncork and enjoy.

WOLffer Estate Vineyard

h e S o u t h F o r k ’s premier winery will be packaging a whole lot more summer in a bottle. As Wölffer Estate Vineyard celebrates its 25th anniversary and looks toward the future, the enthusiasm of new co-owner Joey Wölffer only grows. This past January, Joey and brother Marc Wölffer purchased their namesake Sagaponack vineyard, founded by their late father, Christian Wölffer, 25 years ago, and are intent on preserving their family legacy while expanding Wölffer’s brand and audience. “We’re going to own ‘summer in a bottle,’” says Joey of the winery’s longterm plans. The phrase has always been synonymous with Wölffer, specifically the rosé, and the winery has proven to be a Hamptons favorite for the weekly live music series on Thursdays, Fridays and Saturdays. But plans are in the works to turn Wölffer into a worldclass destination for more than just the local pours. “We’re trying to build a lifestyle brand,” explains Joey. As a part of the new vision, Wölffer will be launching numerous initiatives, with a focus on the arts scene. Beginning

on July 3, the winery will be partnering with two young, up-and-coming artists to set up a gallerytype exhibit in the tasting room and wine stand. And Joey will make Wölffer the home base of her mobile accessories boutique, The Styliner. The time is ripe to be in the Long Island wine business, as the region celebrates 40 years this summer. And at a quartercentury old, Wölffer is clearly among those who don’t plan on slowing down. “It starts to give you integrity, having 25 years in the business,” says Joey, adding that the appeal of many of the area vineyards, particularly on the South Fork, is that they’re still family owned. “It was a huge decision for me,” says Joey of purchasing the estate, and the thought of having something to pass on to her children ultimately swayed her. “[The property] is something to be proud of,” she adds. Joey brings the creative element to the team, working on the marketing and design aspects of the vineyard. Brother Marc, who is in the food and wine business, has taken control of the nuts-and-bolts side of the operation. “So we’re

not competing,” says Joey. Also key to the Wölffer Estate family is longtime winemaker Roman Roth, who was recently made a partner. Wölffer has purchased his label, Grapes of Roth. “Bringing in his label is showing that we’re one team,” says Joey. Plus, “now we have a great riesling!” Of course, it wouldn’t be summer without the vineyard’s famous pink nectar. “This year’s rosé is spectacular,” says Joey. “The flavor is light and airy,” with floral hints and a touch of sweetness. She adds that the dusty pink color is key, as it evokes warm summer evenings. When the nights turn cold, however, Wölffer still wants to be a go-to Hamptons entertainment destination. Plans are in the works to open a wine bar and lounge area inside the tasting room. “Winter shouldn’t be a forgotten season,” says Joey, hinting that since she has trouble finding downtime, she wants to provide a place for people to get together outside of the house, even in the quieter months. But those are still far away. For now, it’s time to pour some more summer.
