The Pleasures of Fall BY DAN RATTINER
S
o autumn comes to the Hamptons and the play is over, the actors gone, the producers and directors and stage managers gone, the paparazzi and hangers on gone, the well-to-do entitled to everything, gone, the helicopters, the corporate jets, the limousines, the European fashion models, gone. They’re all gone, back to the city. But wait a minute, they’ve left the scenery. It’s beautiful scenery. It’s everything. It’s the magnificent gardens and lawns, the stunning flowers and landscaping, the great clipped trees and hedgerows, the great arching canopies of giant oaks and elms over our main streets, our windmills. There are butterflies, rabbits, swans, ducks, squirrels and deer, there are osprey and hawks and bluebirds and plovers. The seals, their mating rituals at an end (as are those of the actors in the play), are at rest, honking and hooting out on their boulders a hundred yards or so offshore. The sizzling heat of summer is gone, yet it’s still short-sleeve and bathing suit weather, and the sand is clean and the ocean is at its warmest, so let’s you and I go down to the beach and dive through the surf for a swim. Any beach. There are no longer crowds on them. And without the need for a parking sticker we can go to any of them anywhere. Yes, the play is over, but the order to take down all this scenery has not yet been given. And so it remains, the bays, the harbors and estuaries, the windmills and ponds and parks and cliffs and rocks, the lawns and hanging planters and street furniture in town all still here. Did I mention that fish in the ocean have not yet gotten the message that the play has finished its run? Bushels of them, tons of them, are still flocking to the waters off the Hamptons as if it is still high summer, hoping for a look at Steven Spielberg or Christie Brinkley or Billy Joel or
Ernest Hemingway or whoever else they hope to flap their fins and gawk at. Their number peaks in the fall in the ocean waters around the Hamptons. Suddenly the blues are running. It’s a phenomenon no one has ever been able to explain. Yes, it’s you and me, but it’s also the serious sportfishermen, highly focused, roaring in their pickups now through the empty streets of our towns on a mission. They head for the marinas, to pile out of their cars and into their boats to head out to sea to catch their share of all this abundance. God Bless the Fishermen. The fancy stores, most of them, are still open after Labor Day and into the fall, at least on weekends, hoping to sell just one more blouse for $1,000 or one more pair of $250 sandals or one more $100 floppy hat. But as I said, it’s just you and me. And the wild eyed fishermen. Oh, and the surfers. September is hurricane season. Forget the summer showers and heat waves of July and August. In the autumn, the weather becomes high drama. The surf is up, the sea crashing spectacularly on the sand both before the hurricane arrives and after the hurricane leaves. The wind is high. Surfing this coast in the fall is one of the great joys of the surfer world. Watch them ride the curl. Or go out to Napeague and watch the windsurfers soar. It will be just you and me out there to watch them. That’s all. Go wherever you want in autumn. The roads are no longer crowded, there are no longer lines of cars blocking your way, jamming the parking lots, trying to make left turns or making stupid moves as they do when the play is having its summer run. Park right in front of the store you want to go to. Just walk across the sidewalk. There you are. The harvest begins in earnest on the farms
and fields of the Hamptons in the fall. The abundance includes potatoes, new wines, fruits and vegetables and spices. The spring and summer have been for planting and growing. Now it is the time for the heavy lifting of harvest. It all has to go to the markets. So it’s just you and me and the fishermen and the surfers and the farmers. Drive out to the Shinnecock Canal, the entryway to the Hamptons. There is no gate there. There is nothing that’s closed, nothing that’s barred the way to anyone who might come and partake of this autumn abundance. Look west. As far as the eye can see, there is nothing. There is just road, with only a few cars upon it. They are not coming. Turn to face the east. The Hamptons quietly awaits, as magnificent and beautiful as it is in high summer, but it is just for you and me. Enjoy it. Enjoy it while you can. Soon the trucks will appear far off down the Sunrise Highway to the west, and in them will be the stagehands and packers, and furniture movers and workmen, on their way to strike the set and bring the grand summer in the Hamptons to a final close. But that may not be until the very end of September or the middle of October. In the meantime—just you and me and the fishermen, farmers, surfers, merchants, surfcasters and locals—can maybe go down to the beach tonight, build a nice big bonfire, make some burgers, toast some marshmallows, pour a few drinks and clink our glasses. To the season: now ended. To friendship and family and good times. Long may it wave. Halleluiah. Soon it will be time for Halloween parties, Thanksgiving dinners and the exchange of presents at Christmas. After that, it’s over. Finally.

2012 HAMPTONS INTERNATIONAL FILM FESTIVAL BY JOAN BAUM A
dmittedly, it’s pushing it to say that china, the material symbol of a 20th anniversary, would be appropriate for the 2012 Hamptons International Film Festival which is marking its 20th year over the Columbus Day weekend, October 4-8. But china, or porcelain ceramic, a staple of art fired to hot degrees in the making, is known for its toughness and strength, even in fine form, words that could easily describe many HIFF filmmakers, directors and actors as well as their films. According to HIFF executive director Karen Anikian, the festival, “founded expressly to celebrate the best in independent film in its various forms,” continues to attract determined, innovative filmmakers from over 20 countries, screening 140 films, over five days including shorts, and attracting approximately 18,000 attendees each year. Although a potential blockbuster such as a Disney’s Frankenweenie, with Tim Burton, may slip in, as a kind of pre-festival Kids’ Red Carpet treat, the mission at HIFF remains to encourage and show independent mid budget films. The timing and location of HIFF couldn’t be better for visitors, residents and business owners -October in The Hamptons, which Anikian calls a “spectacular and immersive environment.” She points out that the fall film fest gives audiences a chance to be “surprised” by debut films, some of which may go on “to great success in the awards season.” But the festival, Anikian emphasizes, extends well beyond the showing of films. Over the four years of her tenure, she has instituted programs that clearly show HIFF moving toward being a year-round celebration of film, and increasingly focusing on collaboration and partnerships with major arts institutions, such as MoMA, Lincoln Center, The Water Mill Foundation, The Parrish Art Museum and now, The Academy of Motion Picture Arts and Sciences and its UK equivalent, The British Academy of Film and Television Arts, NY, as well as with schools.
The Summerdocs series at Guild Hall, now in its fourth year and hosted by Alec Baldwin, HIFF’s Honorary Chair, has become a “signature program” of the festival. Also this fall, reflecting Anikian’s interest in celebrating all manner of cinema art, the American costume designer Ann Roth, who has over 100 films to her plus an Academy Award, not nominations, will receive special tribute for her contributions to both the craft and the art of film. The embarrassment of riches goes on, as HIFF
continues its Breakthrough Performers series, highlighting the work of “exciting young actors,” several of whom are starring in 2012 HIFF films. This 20th Anniversary year, the festival is partnering with the film trade magazine Variety which, for the 15th year, has selected these “thesps” and will sponsor “a number of activities, seminars and social events” with them. They include: Adam Driver (“Inside Llewyn Davis”), Domhnall Gleeson (“Anna Karenina”), Bella Heathcote (“Not Fade Away”), Dree Hemingway (“Starlet”), Boyd Holbrook (“The Host”), Elyas M’Barek (“Turkish for Beginners”), Scoot McNairy
a Box,” a website dedicated to encouraging “open first submissions,” and he relies as well on recommendations from producers and distributors he’s come to know over the years who tend to represent bigger films. In his experience, based on ballot numbers and audience response, he’s found that late-night horror flicks don’t particularly play well on The East End, but what most certainly does play well is a “good European drama or a Romantic comedy.” Also a film that deals with the arts. Approximately 55% of offerings this year are American, but some international participants are new – an Aboriginal Australian and a Uruguayan filmmaker. The festival is much more, however, than the showing of films. Over the years it has taken on an educational component, giving out “grant packages” totaling over $200,000 that enable filmmakers to “keep telling their stories.” And it has more than kept up with the tech times, enhancing its website (thanks to PointBurst, a social media management firm), and now features a digital media program that includes on-the-spot social media reporters engaged in real-time coverage at various related events and a new blog that will feature posts on “everything from the latest film industry news and commentary to compelling interviews with industry insiders . . . and a behindthe-scenes look” at the festival. The program booklet is designed by London born, New York City based Cecily Brown, whose semi-figurative luminous abstracts seem well suited to the contemporary HIFF scene. The artist was selected by Michael Lynne, a founder of New Line Cinema and a specialist in contemporary art who sits on the boards of, MoMA and Guild Hall.

(“Killing Them Softly”), Nate Parker (“Arbitrage”), Imogen Poots (“Knight of Cups”) and Alicia Vikander (“Anna Karenina”). Of course, The Big Questions concern the films. David Nugent, head of Programming for HIFF, picks movies with The East End’s “smart and engaged audiences in mind.” Starting in January he goes to Sundance and Berlin, among others, and also consults “Without

Honoring Richard Gere Each year, the Hamptons International Film Festival offers more than just screenings of films for audiences to see, but great lectures, intimate interviews and special series, like A Conversation With.. This year, HIFF was thrilled to announce Richard Gere as one of the guest speakers. An evening with Richard Gere, humanitarian, actor and Golden Globe winner, moderated by Alec Baldwin will offer an intimate look into the career, the craft, the films and the performances of Gere since he captured audiences more than 30 years ago with films like Looking for Mr. Goodbar, 1977, American Gigolo, 1980, An Officer and a Gentleman, 1982, Pretty Woman, 1990, Primal Fear, 1996, Chicago, 2002 and most recently, Arbitrage starring opposite Academy Award-winner Susan Sarandon and Brit Marling. Join host Alec Baldwin for a behind-the-scenes look into the amazing career of Richard Gere. At the end of the evening, Gere will also be honored with the Golden Starfish Award for Lifetime Achievement in acting.
FRANENWEENIE Tim Burton brings his unique, sometimes dark, but always entertaining genius to the Hamptons International Film Festival with the debut of his box office release, Frankenweenie, a featurelength adaptation of short film from 1984. This latest animation film from Burton stars Martin Landau as Mr.Rzykruski who inspires an aspiring young scientist, Victor Frankenstein, to experiment with bringing his dog Sparky back to life. This 3D stop-motion animated film is both funny and sensitive at the same time. Starring the voices of Martin Landau, Martin Short, Catherine O’Hara, Winona Ryder, Charlie Tahan and Frank Welker.
alan Cumming Other intimate conversations include Alan Cumming, acclaimed actor, director and Tony Award-winner (for his role in Cabaret). Cumming is perhaps best known for his performances in Emma, X2: X Men United, Titus, Spy Kids, Romy and Michelle’s High School Reunion, as well as for starring in CBS’s The Good Wife as Eli Gold for which he was nominated for an Emmy, Cumming is also a successful director. The Anniversary Party was collaboration with Cabaret co-star, Jennifer Jason Leigh: they co-wrote, produced and directed the film, which was nominated for an Independent Spirit Award at the 2001 Cannes Film Festival. Cumming also stars in Any Day Now and will be hosting the Golden Starfish Awards Ceremony at Guild Hall on October 7.
ZEN OF BENNETT An intimate portrait of Tony Bennett conceived, created and produced by the singer’s son Danny Bennett under the direction of Unjoo Moon. The film offers an intimate look on the recording process of Benett’s latest album, a duets collection. At 85, Bennett’s fans get more committed and Bennett’s career just gets better and better. The artists he works with on his latest project include; Andrea Bocelli, John Mayer, Lady Gaga, Aretha Franklin, to name a few. The audience will experience great insight and inspirational views on life. ome people get all starry-eyed about a hint of ginger or vanilla in their grandmother’s apple pie. Take it from this farm girl, all you need for most fruit pies is “cinnamon and half again nutmeg.” My favorite pie apples are Haley’s Pink Ladies but they don’t ripens until November. In the meantime Briermere’s Gravensteins will do very nicely. For pie filling: 6 medium apples, cored, peeled and sliced 1 cup brown sugar, packed 2 tablespoons corn starch 1tablespoon lemon juice 1 tablespoon butter, diced 1 teaspoon cinnamon 1/2 teaspoon nutmeg

or spoon. Incorporate liquid into flour mixture about a third at a time with potato masher. Flour a flat surface and roll out dough for two crusts. Line pie pan with one crust. Fill with pie filling and cover with top crust. Use a fork to seal edges together and to poke holes throughout the top crust. This pie with leak in the oven, so wrap the pan loosely with a solid sheet of foil to catch spills. Bake for 1 hour, 15 minutes. Allow to cool for at least 15 minutes before serving. Serve warm with ice cream or a chunk of cheddar cheese.

You should have enough dough left over for one more bottom crust - so try your hand at my pumpkin pie recipe on.
PUMPKIN PIE
For crust: 3 cups flour 1 1/2 cups vegetable shortening 5 tablespoons water 1 egg 1 tablespoon white vinegar pinch of salt Preheat oven to 400 degrees Mix all filling ingredients together in a bowl. In a separate bowl, cut shortening into flour with a pastry knife or a potato masher. Mix water, vinegar and egg together in a cup with a fork
I love the idea of pumpkin pie - spicy, sweet autumn bounty in a crust - but I’ve never cottoned to using evaporated milk in anything. So I developed this recipe - no one has ever missed the milk. If you don’t like canned stuff yourself - cook your own pumpkin, here’s how: Preheat oven to 425 degrees Remove stem and cut pumpkin in half. Scrape out the seeds. Put about an inch of water in a rectangular baking dish. Place pumpkin halves open side down in pan. Bake for 1 hour.
Preheat oven to 350 degrees. Mix all filling ingredients together with an electric mixer until smooth. Line pie pan with crust. Pour filling into crust. Bake for 1 hour. Allow to cool for a least 15 minutes before serving. Served warm or cold with ice cream or a dollop of whipped cream. --STACY DERMONT

After all, wouldn’t it be great to impress your guests with some savvy understanding of wine at that next fabulous dinner party? Here are a few tips to help you become better acquainted with wine and food pairing at a glance. Fish prepared in a rich buttery sauce should be paired with a full flavored wine like chardonnay, and when prepared in a lemon sauce, sauvignon Blanc is the perfect choice. Beef is matched well with cabernet, merlot, malbac, Bordeaux and Shiraz. Tannins found in red wines help break down the fats left in your mouth and cleanse the palate, while pork is best paired with a light wine like Beaujolais offers the subtle hint of strawberry flavor. Barbeque pork barbeque is best suited to a dry white wine like pinot grigio. Chicken prepared in a heavy sauce (full flavored sauce) is complemented well with chardonnay or white burgundy and for duck, a red burgundy or pinot noir. When it comes to shellfish, lobster and scallops are rich in flavor and pair well with chardonnay, while shrimp is perfectly matched with sauvignon blanc or Champagne. And then there is CHEESE, my favorite food item. I could live on cheese, wine and, French baguette every day of the week. What’s not to love? Soft cheeses like brie and chevre are best paired with a glass of chardonnay, pinot grigio or sauvignon blanc. Hard cheeses like parmesan, asiago and cheddar go well with pinot noir (tannins in a pinot noir help balance the sharp flavor.) And a creamy delightful bleu cheese, gorgonzola or Roquefort is best paired with a fine glass of port wine. Salute! --KAK

HERON YACHT CHARTERS BY KELLY KRIEGER aptain Cameron McLellan has never had Captain Shannon McLellan, navigates guests for a job on land. It wasn’t long before he found the perfect vessel and new direction with Heron. This grand catamaran, built in 1998 by designer Chris White, was in need of refurbishment and a lot of love, but once it was returned to its original, pristine condition, it was ready to carry Cameron to further adventures. It was during a sail from Maine to the British Virgin Islands that he met Shannon, “and a week later, we were engaged,” he says. The perfect sailing pair was complete. Shannon has more than ten years experience sailing passages between New England and the Caribbean and a degree in Environmental Science. Additionally, she extensively studied coastal ecology as well as participated in bio-survey and coral reef studies around the world. Her expertise, personality and attention to fine detail are inspiring. After another summer on the East End, the couple recently set sail for New York City for the
first time, docking at North Cove Marina on the Hudson River in Battery Park City (aka Monaco on the Hudson) and offering private charters for corporate outings, rehearsal dinners and other special occasions. Then as the weather turns colder, it’s down to Anguilla for some Caribbean adventures—surfing and diving trips, spear fishing and snorkeling—and another tropical winter on the water. MONTAUK DELIGHTS What to do in the Fall By Kate Maier
Autumn is arguably the best time of year to experience Montauk, a sacred and blessed season where locals and longtime visitors enjoy the waning twilight of summer, minus the crowds. With the Chamber of Commerce sponsored Fall Festival and Chowder Contest as the main event of the season (Oct. 6-7) it is a far cry from the frenzy of Labor Day Weekend. Live music is scarce, restaurants are working on limited hours, and it’s too cold to go in the water, unless you’re wiling to invest in a really good wetsuit. But the casual vibe that Montauk is most celebrated for is running strong. While visitors will not find themselves grooving at Ruschmeyer’s, The Crow’s Nest, or the Surf Lodge, the town will not be fully populated by ghosts until sometime around mid-February. Here’s a list of things to keep you going in the Hampton’s most laid back hamlet, post season. Go Fishing. Recreational fishing out of Montauk Harbor continues through the fall, when porgy, sea bass, and bluefish are running through October, with blackfish in November. On the offshore side, bluefin tuna are abundant in September and October – and likely to be the stars of the show at the Montauk Marine Basin’s “Last Hurrah” tournament (Sept. 28- Oct. 13.) Take a Hike. Lest we forget, Montauk is home to an astounding number of nature trails. Explore the cliffs at Shadmoor State Park, take
a trek in Hither Woods, or check out the Seal Haulout Trail near the lighthouse. The colder it gets, the more likely you’ll be to spot a seal, migrating from Nova Scotia to enjoy his own Montauk vacation. Scared to walk into the woods alone? Guided tours are offered by groups including the South Fork Natural History Museum and Nature Center (sofo.org) and The East Hampton Trail Preservation Society (ehtps.org) on most fall weekends.

Not ready to risk life and limb to prove your prowess? Drive down to the dirt lot at Ditch Plains and watch the professionals do it, from the safety of the shore.
Delight Your Dog. Canine companions are welcome on Montauk Beaches all day, every day, starting in mid September. Keep a watchful eye on your furry friends as they frolic in the surf, and remember to clean up after your pet. Play with Fire. Fires are permitted on most beaches so long as they are contained and doused by midnight. What better time than fall to host a sunset beach barbecue? Just remember to bring a bucket, to put the fire out, and carry away the ashes. Go Shopping. We doubt that Cynthia Rowley or Surf Bazaar will make it through the season, but the girls at Kailani, Montauk’s full service Hawaiian fashion stop, will keep things going with fun fall merchandise. Getting chilly? Pick up a sweatshirt at the Montauk Clothing Company, or commercial fishing worthy rain gear and Under Armour at Plaza Sports. Wine and Dine. There are plenty of places still open in Montauk during the fall season, in some cases with limited hours. Longtime stalwarts, serving seven days through the wretched winter, include The Shagwong, O’Murphy’s, and Manuccis. The Dock Restaurant in Montauk Harbor remains open until midNovember, drawing heat from a woodburning stove, and places like Westlake Clam and Chowder House and the new Swallow East will truck on through the weekends. (Swallow promises Reggae Sundays through Columbus Day Weekend.) Cozy up to the bar (keep in mind that the Shagwong has a quick draw machine) and learn a thing about two about life, love, and fish. Just be sure not to harass or feed the locals.

November 10, 2012: The Unveiling of the New Parrish Art Museum
The Parrish Art Museum is scheduled to open its new Herzog & De Meuron-designed building on November 10, 2012 to the public. The $26.2 million project has been a labor of love not only for the arts, but for the East End community. The opening of this new state of the art 34,400 square foot museum designed by world renowned Swiss architects Herzog & de Meuron is going to be one of the biggest celebrations this fall. The museum will be offering free admission all weekend long from Saturday, November 10 through Monday, November 12, Veterans Day. The Inaugural Exhibition is entitled, Malcolm Morley: On Paper. The museum’s collection includes more than
2,600 masterworks by American Impressionist William Merritt Chase and post-war American realist Fairfield Porter in addition to important works by contemporary sculptors and painters April Gornik, Chuck Close, Elizabeth Peyton, Alan Shields and Keith Sonnier. Other works include those from masters Dan Flavin, Willem de Kooning, Lee Krasner, Roy Lichtenstein, Jackson Pollock and Esteban Vicente, among others. In a recent newsletter, Director Terrie Sultan shared her passion for the project as well as highlights about the new building and how much it means to the East End community.“We could not be prouder of this amazing accomplishment,” said Director Terrie Sultan. “The new building is a beautiful embodiment if the creative legacy

Preparing your Home for fall

ith the high cost of heat and electric, getting ready for the upcoming season is important for not only energy efficient reasons, but for safety reasons as well. Make a checklist to be certain your family and your home is protected and properly equipped for fall. Starting with maintenance, it’s imperative to have your heating system (furnace) and water heating system (boiler) serviced before use. A service company will check everything out to make sure the system is running safe and is clean and, more importantly, that there is no carbon monoxide leakage. Cleaning your gutters is a must as well. As the leaves fall and fill the gutters on your home, water collects and seeps into the foundation that will inevitably cause costly damage. It is also recommended to add an extension on your gutters leading drainage at least 3 to 4 feet away from the foundation.

Have your roof checked, whether you eye it yourself or have a repairman take a once over to analyze the condition of the roof and shingles. There may be a few minor spots that need a quick repair. ips for preparing your yard for Fall and Winter Now that many of us have closed our pools and began to put our patio furniture into storage, it’s time to prepare the rest of the outdoors for the approaching cold front of weather. We pride ourselves on maintaining the greenest lawns and beautiful gardens each and every year, but there are a few important items to take care of before we head indoors for the winter. Fall is the best time to make sure your lawn is pampered. By fertilizing your lawn in mid to late September, its health will survive even the most severe weather. By the end of November, it’s time to fertilize one last time before the ground freezes. It’s important to use low nitrogen fertilizer or make sure your lawn care specialist is using it if you don’t care for your lawn yourself. Trees and shrubs can be watered less in the fall. However, once Maple or Mountain Ash trees have dropped all their leaves, it’s important to water them to moisten their roots to the fullest in preparation for the winter dormant stage. Also wrap their trunks before the ground freezes if you are concerned that your trees may suffer during those extreme cold months. As far as pherennials are concerned, nurseries recommend cutting them back to approximately 6 inches and then again in the spring. Mulching can also help add protection to some of our precious shrubs and special rose bushes. When Collé creates or “recreates” a home, he blends old-world craftsmanship with modern day luxury and works with only the most skilled carpenters, custom cabinet makers and mill workers. Whether Jeffrey is designing a new home or renovating an old one, his work is superior. Intricate moldings, spectacular wood flooring and unique architectural designs are carefully recreated or renovated to precision. Jeffrey combines beauty and tradition with new technology and he is also passionate about providing the best quality materials and craftsmanship for his clients. “The truth is, I fall in love with my homes: it’s actually hard to hand over the keys to the new owners. I love the challenge of transforming a raw piece of land into a masterpiece - turning it into a home for a family while preserving the beauty of the natural environment”, said Collé. “Over the years, I have had the unique opportunity to study the work of great architects by deconstructing their designs, figuring out how they made certain decisions after the fact, and then putting the pieces back together. Much like a chess player tries to understand how a grand master played a game to victory, I begin to think like the architect. What strikes me most about Stanford White; (Collé’s most recent renovation) is that he used simplicity of design to convey elegance, which is a complicated task for any artist. My challenge was to maintain White’s original “intention” (elegant lines, and traditional concepts) and, at the same time, meet the demands of the modern world,” he shared when asked about the renovation process. Old-world craftsmanship is a fine art and in this case, Collé is the artist. It takes great skill and talent to maintain the integrity of any historic home. “There is an interesting relationship between old-world craftsmanship and new-world reality, so I am usually guided by two thoughts: design and function. I like to introduce magnificent, stand-out amenities and furnishings into my homes, but only if they support the practical lives of the inhabitants. I consider visual, auditory, and kinesthetic impact when choosing both classic designs and modern technology. If, for example, I find an 18th century Louis XV limestone fireplace, I will immediately envision the family that gathers around it for warmth, or the photos that will rest on it. How does it look in that context? How does it feel? I apply this to all the remarkable materials I use in my homes, from the site selected Carrera marble counter tops to the antique European parquet floors. Every piece, new or old, has an energy, and that energy is either working with or against life.” The most important question to ask yourself when deciding on the design or renovation of your home - is “how do you want to live? Collé believes in building a home based on how people live. When Collé is not hard at work designing yet another magnificent home, he enjoys the luxury of living in the Hamptons. “I consider it a privilege to work and live in one of the most beautiful places in the world.”
