MEAT MAGNIFICENCE MY DINING OUT EXPERIENCE – Ribs and Rumps In the heart of Milton Ribs and Rumps is the best thing to happen in Milton for quite a while – accessible from all parts of Brisbane by road, rail and even River City Cats. I can see Ribs and Rumps, Milton, becoming the “go to” place for great food in the Western Suburbs. The dining area is a very attractive open space with a well-planned bar for that predinner drink or get together. We were greeted by host Stephanie who pointed out that Ribs and Rumps Milton also has a “private dining room“ for that special occasion or business function. ENTREES We started our evening with a quiet drink – a cocktail – which was the perfect start … followed by Share Plates as our Entrees. The mouth-watering starters comprised of Seasoned Panko Crumbed Calamari with nam jim dipping sauce and grilled lemon – the

best calamari in Brisbane – followed by Grilled Banana Prawns – butterflied then grilled with garlic & herb butter, absolutely out of this world then the best Sticky Roasted Pork Belly with sweet soy caramel glaze & fried shallots. THE MAIN COURSE “Meat Magnificence“ Three little words: O.M.G. An unbelievable visual presentation when the “Meat Magnificence“ arrives at the table, it is absolutely mind blowing. 1 kg of Grainge Angus Rump dry rubbed with Ribs and Rump’s signature basted beef, lamb and pork ribs accompanied with seasoned fries, steamed vegetables with herb & garlic butter, red wine jus and pepper sauce – simply magnificent – a must try. The rump was cooked to perfection – juicy, melt in your mouth and together with the unique basting on the ribs, definitely finger licking good – make sure you use the bibs supplied. DESSERT Our host, Stephanie was a great help in recommending two desserts for us. Sticky Date Pudding, I must confess

is one of my favorite desserts wherever I go – it was served warm with butterscotch sauce & vanilla bean ice cream – without a doubt the best Sticky Date. Also we had Chocolate Brownie [Chefs Special] with vanilla bean ice cream and custard, what a surprise. I can see why it’s a Chefs Special – simply yummy. After a good look at the menu it was refreshing to see menu prices very reasonable and competitive which can be important in choosing a Restaurant when dining for two, family outing or that special occasion. What an experience - the staff were great, warm, friendly and most important very efficient and we managed to share a laugh or two during the evening. We had a great time and a wonderful dining experience for all visitors / tourists and naturally locals I urge you to come to Milton- it’s really worth it.

“WHAT A PERFECT SPOT” On our arrival the first thing I noticed was the spectacular view over the Brisbane River toward the Story Bridge in all its glory. Mr & Mrs G is an intimate, cosy place to enjoy that private drink with tapas and share plates to accompany your drinks. Manager Antonio, explained how popular Mr & Mrs G is for visitors and locals alike with opportunities for party groups to business functions in this intimate bar. Andy and Marcia Georges are your hosts and they are both well respected in Brisbane as our finest restaurateurs. Il Centro, the best Italian restaurant in Brisbane is one of their venues. 26

We started the evening with a variety of the very popular tapas: Keftethes - greek meatballs with tomato salsa and greek yoghurt. Grilled tiger prawns with pea & broad bean salad, crisp. Spicy chorizo with tomato, basil & lemon arancini with romesco. Pork & olive empanadas, fennel salad & tomato jam. Truffle gnocchi, goats curd & apple remoulade. Roast chicken & sweetcorn slider. These tasty, beautifully presented tapas were individually unique, with fresh ingredients and all sourced locally.

ULTRA FRESH

WHAT separates top quality fish from the mediocre? Freshness surely, putting the whiting pulled in at the beach and in the pan an hour later somewhere near the top of the pile. And those barramundi swimming in the live tanks in the local Chinese restaurant leap from vitality to plate in a matter of minutes, so perhaps Chinatown is fish-mecca. Unfortunately things aren’t quite that simple. Life is crowded and stressful in those tanks and the water – no matter how well maintained – is a far cry from that from which the fish were plucked days, weeks, possibly months before. It’s a jail. And that line-caught whiting may have flopped around on the sand in a desperate bid to escape until dying of asphyxiation, releasing lactic acid into its blood, tearing membrane, bringing on a fast and extreme rigor-mortis and doing some serious damage to its eating quality. Even though it is less understood and documented than it is for chickens and cattle, we know that there is a significant correlation between the quality of fishmeat and the way in which the fish was caught, killed and handled. The trouble is that very few fishcatchers, mongers and restaurants recognise that difference and go to the trouble of giving the fish the sort of handling that makes for a great meal! 40

Brisbane’s Jellyfish restaurant says its kitchen team do and that’s why it has the reputation as the foremost fish restaurant in Queensland, possibly the country. Its seafood is purchased from both farms and live-catch suppliers, but both are carefully chosen and the restaurant has built strong, long-term relationships with them. Jellyfish favours smaller wild-catch fishermen. “We prefer small boats because they tend to look after the catch better and are less likely to have the fish lying under a tonne or two of others,” says Jellyfish owner, John Kilroy. “And they spend less time at sea so the catch gets to us faster and fresher.” Fish farms are a more predictable and sustainable source. “We buy from farms with impeccable practices. It can be seen in the quality of its fish.” It’s a long-winded way of explaining that Jellyfish weaves its magic long before the fresh fish enters its walls. Inside those walls it is all kid-glove treatment – wet towels, designated cool-rooms and a fishmonger on the kitchen team whose sole job is caring for the fish and ensuring that the handling, filleting and processing is top-notch.” Wild fish don’t provide a constant and predictable source, so our menu is printed after 11am daily to accommodate the morning deliveries. We buy from all over Australia and New Zealand to source what is fresh. Summer House has easy access in central Kangaroo Point for local residents and visitors alike, however only a short trip from Fortitude Valley/Wooloongabba and the CBD via motor vehicle/cab or the very popular Brisbane River City Cats. SUM M ER HO USE IS T H E “HO USE OF TAPA S ” “We started our night with a Platter of the most popular Tapas dishes on the menu...what a wonderful surprise. Thai Fish Cakes with an Asian Slaw - a lovely spicy/sharp flavour. I think this was my favourite, but many more to choose. Pan seared gnooci with vegetables, feta balsamic reduction — mouth watering. Szechuan Calamari and citrus mayonnaise — I like my Calamari — this was very tasty and I can’t wait to get back to Summer House and have this and the Soft Shell Crab bao, chilli jam and coconut sambal — a very different and well presented dish. By this time we couldn’t wait for the next dish and the Hoisin Duck Pancakes with fresh herbs &

chilli did not disappoint — fresh and again served as a pancake was a refreshing presentation. I noticed on the menu the choice of mains if you wish to enjoy a “main dish” instead of tapas. The selection of wines, craft beers and cocktails (Summer House Creations) are very extensive. All day breakfast (Sat & Sun) is also available which I’m sure is very popular.

D ES S E RTS To finish off our night we shared Sticky Date with ice cream and Brownie Cookies with ice cream for our desserts-- well - for those diners who love their desserts - they were absolutely beautiful and most importantly homemade on the premisest — they tasted just like Grandma use to make. The staff were very friendly and most helpful and very busy - on the night we were at Summer House the diners were arriving thick and fast. I must say the ingredients were all fresh and very tasty - the combinations used in each dish were really memorable and we will definitely be going back to Summer House to continue our experience.

THE PERFECT STEAK

Did you know that Australian Beef is some of the finest in the world? We are highly adept at rearing multiple breeds and cross breeds, we have pristine pastures, organic and biodynamic farming practices, we grain and grass feed, dry age, wet age, in fact we do everything but sing to our cattle. So why do so many of us think Argentinean Beef is superior? The answer is not only in the marbling, the cut or the texture of the meat although those are all contributing factors. It’s about the cooking. Take a piece of high end wagyu, heat a barbeque grill plate, a wood fired oven, a flat grill and an open flame barbeque then cook the same piece of meat on each one for the same amount of time. The results will surprise you. Aged beef takes longer to cook and responds well to open flames. Younger grassfed beef breeds like Bos Indicus and European breeds work better on a high intensity flat grill or pan. A wood fired oven is the place to cook highly marbled cuts like wagyu and some cuts have higher sugar content which means they caramelise well when cooked on an open flame. Most of us don’t have an open flame char griller or a wood fired oven at home and neither do most restaurants. Argentinean Steakhouses do and that is why it is a world renowned commodity. 58

What an exciting venue, with a specially designed bar set in the awesome atrium on the 6th floor of the iconic Hilton Hotel on Elizabeth Street. Nothing is left to chance when visiting the Hilton. While waiting to be seated, we enjoyed a cocktail from Hiltons’ uniquely “staff created” Cocktail Menu. What a pleasant surprise...does this inspire you? We chose “Snow White” with coconut, orange, caramel and cream. An absolutely wonderful taste experience—I recommend this one. “Le Mexican”—a margarita with a twist. Enjoy Buerre Noisette tequila, lime juice, homemade fresh pear and sage syrup combined perfectly and served with a parmesan salted rim. This was the most unique cocktail experience of my life —savoury but very nice—give this one a try. Many more unique creations for all Cocktail lovers.

ENTREES For starters we shared two dishes: Tuna, smoked tuna, fennel and citrus. This was presented brilliantly and had a clean, simple distinctive citrus flavour—what a great way to commence your dining experience. White scallops served with corn puree, popcorn and corn snow. Head Chef, Heuman, tells me this is one of the signature dishes at Vintaged Bar + Grill. I was initially cautious about the popcorn, however I was so impressed with the unique dish. I enjoyed it very much—it was delicious—you must try it.

MAINS By this time we were very excited about what the Head Chef had in store for us, and we were not disappointed. 300g wagyu scotch fillet—350+ days, grain fed and locally sourced from Oakey in Southern Queensland. 400g rib, free range, grass fed and dry aged (40 days) from Cape Grim, Tasmania. We shared both of these steaks with fresh side dishes of grilled eggplant and peppers, garlic and goats cheese. We also had green beans, snow peas, peas and baby chard. The two steak dishes were cooked to perfection, with the Wagyu scotch fillet tender, mouth watering and easy to cut. The rib on the bone was aged to perfection. Both steaks were magnificently succulent—both are signature dishes on the menu at Vintaged Bar + Grill. Obviously Vintaged Bar + Grill is a leader in quality steak dining, however I noticed the menu caters for all dining choices such as seafood, vegetarian and much more. All the ingredients are fresh and sourced locally. The service was exceptional—our waiter Alisha really looked after us and she made many recommendations when it came to choosing the best wine for that special dish. The Vintaged Bar + Grill have an extensive wine list catering for every occasion. In fact, when I thought about our experience tonight from the pre-dinner cocktail to the exquisite wine to the memorable food dishes, Vintaged Bar + Grill certainly has a lot to offer Brisbane’s discerning diners. You will enjoy your experience.
