2010 CLARET |||||||||||||||||||| ONLY AVAILABLE IN THE REDS ONLY CLUB TASTING NOTES: This wine is comprised of five traditional Bordeaux varietals; Merlot, Cabernet Sauvignon, Malbec, Cabernet Franc and Petit Verdot. Lush, fruit-forward Merlot is combined with Cabernet Sauvignon, giving the wine structure and depth. Malbec balances the wine and contributes dark spices and floral notes. The Cabernet Franc adds to the herbal characteristics, and the Petit Verdot seasons the blend with spices. The marriage of these noble grapes has resulted in a complex and layered wine. Rice (uncooked) Peppers or green beans (optional) DIRECTIONS Fry the chops very slowly; and get the fat off. If too dry, add a couple of tablespoons of oil. When chops are brown add tomatoes. When tomatoes are bubby and you see oil add 4 cups of chicken stalk. Cook on very low for 20 to 30 minutes. Next add garlic and saffron. You can also crush the saffron in-between paper towels to make the saffron a powder. Next add rice. When it starts rolling boil add lid and turn down to simmer gently for 12 to 15 more minutes. Add green beans if wanted. This recipe came from Jolee’s friend, Amy Charter, who originally got it from her Spanish grandmother. – GOES GREAT WITH DEL RIO CHARDONNAY.

In the Winery Each winter and spring we are filled with anticipation as we await what the next growing season has to offer. Every vintage has its own challenges and with each vintage we strive to create our highest quality product. This year, as we move towards spring, we ponder the impact of the unusually cold winter. As we patiently wait, we are busy preparing the winery for bottling our 2012 reds and 2013 whites. To help us this year is our very own assistant winemaker, Aurélien LaBrosse. Aurélien arrived at Del Rio in 2012 as our harvest intern. We have asked him to officially stay on at Del Rio providing his experience to our winemaking team. Originally from Burgundy, Aurélien has a solid professional background working with Pinot Noir in particular. As an intern he showed a strong work ethic with great attention to detail, which is highly valued in the wine industry. As Del Rio Vineyards diversifies our process of production from grape to wine sales, we seek to continually increase our level of quality. We work hard to create hand crafted wines and to do so a Our Winemaking Team: Joaquim (Harvest greater attention to detail is very important. Intern), Jean-Michel (Head Winemaker), Aurélien (Assistant Winemaker) and Jonathan Here’s to the 2014 vintage! (Cellar Hand). Santé Jean - Michel Jussiaume
