Fatherhood. Its a tough job and juggling kids and a career can be quite a challenge. I spoke to two busy dads to see how they did it and manage to keep a good balance between family and career!

YOUR REACTION ON FIRST HEARING THAT YOU WERE GOING TO BE A FATHER? Excited, a little apprehensive because we had been trying for a while and had gone through fertility stuff. We also found out over two months into the pregnancy but didn’t want to jinx it by always a cacophony of emotion because there is so much unknown.

It feels like yesterday. I was in Jozi and my girlfriend was in Durban at the time. I was a bit nervous even though as young as I was, it was planned, but I had learnt from the best, and that’s my father Victor Snr, I wanted to be what he was to me and my siblings growing up. I couldn’t wait for the day!

WHO WAS THE FIRST PERSON YOU TOLD, AND WHAT WAS THEIR REACTION?

WHAT HAS FATHERHOOD TAUGHT YOU THUS FAR?

Lessons from fatherhood can’t be summarised in a few sentences. There is so much to learn both about yourself and what it is like to be responsible for another being’s opportunity and future. Children are open, honest and don’t hold grudges. They also need boundaries and consistency. You have to be a lot more conscious of your own actions. Children follow your example. It is an ongoing journey but there is great opportunity to rediscover the world and the little things you take for granted. Raising my children also put my own father in perspective; I understood his motivations and actions a lot more, as he has been my only parent for most of my life.

It has taught me to love without any limit, it has taught me responsibility and patience.

MORE KIDS IN THE FUTURE?

When I grew up I wanted to have many kids, I enjoyed growing up with so many siblings. The

love and because we had parents that were so loving. I already have 4 kids, I would and in the near future if my life partner still want more kids and the issue of affordability is in place then I would love to have more, but one has to consider that the more kids you will have at this time in age you will limit resources for your other kids if you don’t consider the issue of affordability.

YOUR OPINION ON A FATHERS ROLE IN RAISING A CHILD?

I believe that children need both parents. are things that I am good with and other things my wife is good with. It’s also great to have someone on the journey with you so you keep each other sane and on track. I personally learned much about being a man and a human being from my father. My values, my perspectives all come from him. With my children, I hope that I can pass that on and to always show them that they are loved.

As a father you become a teacher, a friend, a provider, a life coach and most of all a great example of how a child should grow up to be like. I have a girl whom I want to see the good in me, she is my friend. I give her all the attention she deserves and whatever she needs she gets when I have the necessary resources. I have taught her respect. My sons are still young and growing very fast, those are my 3 ninja’s and we get along very well. It’s vital for us as fathers to be there for our kids no matter the circumstances.


DOES YOUR OCCUPATION GIVE YOU ENOUGH TIME TO SPEND WITH YOUR KIDS? I do travel a bit and my work does involve me being out of the house a great deal but I also work hard at being accessible. I try to ensure that we spend weekends together and, when I’m home on time in the evenings, I hang out with them and put them to bed with a good story.

I don’t get to spend enough time with them but I wouldn’t say it’s because of my job, but it’s the distance, me being here in KZN and them in Gauteng. Every chance I get, I spend with them and whenever there is something that needs my attention, I’m always there.

WHAT IS YOUR OPINION ON ABSENT FATHERS? It isn’t something that makes sense to me. My main parent has been my father because my mother passed when I was a baby. It is my duty, my responsibility and a blessing I am grateful for to be that guide, that support,for my children. So many men miss out on that blessing and how enriched one’s life can be with children .

“Do not bring innocent kids if you know you not gonna be there” is my message to them. We can make laws stricter but I think it all starts with an individual, there need to be ways whether it starts from school where young boys are groomed and in churches and in the work place where there are programs that will eliminate this virus of absent fathers.

WHAT DOES FATHERS DAY MEAN TO YOU? Cards made at school, hugs and kisses. That’s all I really need.

It’s a reminder and a chance to do right. If you are an absent father, it’s a chance to apologise and start afresh, if you are a good father its another chance to say im still here and im gonna be around for as long as im still alive, and I’m here for you always.

WHAT FAMILY ACTIVITIES DO YOU ENJOY? We tend to do stuff as a family when we go out to do things but also spend a lot of time at home. We like to try new things. I recently took my son camping overnight at the Joburg Zoo to see if it was something we liked. And I am taking my daughter to see Barney. We are also working to holiday more as a family – Sun City, etc. Last year we went to Club Med in Mauritius.

New Rules Of Men’s Casual Men really don’t need to overthink what they are going to wear, as choices in most mens wardrobes are pretty limited! The reason for this, is often the fact that its just much easier that way. Alternating a few shirts and pants, some t-shirts and shorts, is just so much less of a hassle and that’s that!

I don’t want to get into the whole “Men are from Mars and Woman are from Venus” scenario, but bottom line is that we are just different. Why would you want to add in too many choices, when you can get by on the bare minimum? BECAUSE…. Fashion has become more than just a pair of chinos and a checked shirt, boxers or briefs, plaid or paisley. What you wear on your back says something of what you bear on your heart, who you are and what makes you you. So a little more effort is needed… It is probably easier to put effort into your work wardrobe, as often there is a dress code that needs to be followed. Casualwear can be a whole different story.

Comfort seems to be at the top of the list, which can really make things look even worse….

Leave sports jerseys or ‘hoodies’ to professional athletes D. Fitted is okay, but tight is dicey E. Khakis of any kind are best worn in the bush F. Leave acid wash or stone wash in the past, unless you are a teenager who is wearing the G. The more shine in a shoe, the more formal. Keep those for work. H. Shirts with a rounded hem are for tucking in! I. Never wear 2 types of denim at the same time J. Even casual style demands good shoes. please get rid of it.

I am sure that many are guilty of a few of the no no’s that I have mentioned. Style is really about embracing who you are, and looking at how you can best present yourself. It doesn’t mean investing thousands into high end fashion, or trying to look like the guy on the cover of GQ magazine, it’s really all about “being the best YOU!”

Fashion Week this September. The Gauteng based designer took some time out of his busy schedule to sit down with us and talk about his 5th season as a solo designer showcasing

David was born in Vosloorus, Gauteng into a family who for generations were domestic workers. A product of the Bantu education system, David took a decision to break the cycle and become a “Better Me” as he puts it. “Keep building, Keep growing and always be the Best YOU can be”. With this kind of “I Can” attitude David made his dreams a reality and constantly keeps pushing the boat out to achieve new dreams and new goals.

Gracious and charismatic, David told us of vision of changing the perception of South African design. He believes that the story of South African fashion has yet different cultures of our country has always contributed to world of couture, how concepts like “Colour Blocking” which are on the lips of every fashionistas mouth have been a part of South African fashion for ages. The Ndebele people for instance are the best at colour contrasting, and this has always been a part of their culture. David’s collection this year will be of global appeal but global buyers must enjoy the collection not because it is ethnic or tribal but rather the ethnic elements should enhance the pieces rather than being the focal point. is how he describes it. The collection will have 45 pieces of which 33 will be Ready To Wear... all will have the elegant, timeless sophistication which has become the trademark of David Tlale, Icon of South African fashion.

So it is no surprise then, that his Internship programme which began in 2013 in conjunction with the KZN’s Department of Economic Development & Tourism, had many young designers vying for a place. In 2014, and Ayanda Mthembu both had an opportunity to launch their collections at Mercedes Benz Fashion Week under the watchful eye and expert guidance of this master in the fashion industry. We are quite certain, that come December, when applications for the new season of internships opens, there will once again be quite a jostle to see who gets to win this coveted prize.

The vision does not stop there, David is set to open his New York showroom in July on 4th Avenue, right in the heart of the garment district, SPACE 530, is set to take the world of fashion to new heights with the best of SA fashion. The David Tlale brand was established in 2003, just 11 years later and the brand goes global, what an amazing achievement for someone who started out studying Auditing, was curious about the design students on campus, fell in love with their energy and creativity and swiftly changed direction to the world of fashion. The fashion industry in South Africa has never been the same. David has made bold decisions, his designs have graced the runway of many prestigious events and his clientele include some of the most famous names in the country. 16

KZN is about to experience the magic and genius that is David in Durban. “30 on Marriott” will be opened on the 1st June 2014. The store will include the ranges of the two interns that have spent a year with the Master himself.

The idea for David is simple,

“Success is a journey, not a destination” and in order to change the face of fashion, to make the experience of fashion memorable in a beautiful way while ensuring that the element of ‘luxury’ is always applied one must always strive for more. One way of doing this is to nurture fresh talent, help them to become better than they think they are, even to the extent that they become better than David Tlale himself... so that the customer always has the best experience available. In David’s words, fashion should be as glamorous as sin, as decadent as you like, as colourful as you want but above all, “fashion should

be wearable.” As I sit talking to him, the one thing that strikes me is his humility, his true commitment and passion for sharing his knowledge and how little ego has to do with it and I am enchanted. David Tlale is an inspiration to many and he himself is inspired by many things but a designer that truly stands out for him is Galliano.

We wish David Tlale, Bon Chance, in all his future endeavours and look forward to the next chapter on the David Tlale journey.

Sirshin Moodliar and Jason McCall are the pioneers in this new endeavour. The Duo spends their weeknights discussing the latest trending topics of the day. Delightfully controversial, current trend, with active listeners sending in their own opinions and suggestions. The team are both experienced in the art of radio, passionate, and love what they do.

They admitted to being both nervous and excited show radio. However their apprehension turned to enthusiasm at the prospect of their new adventure. After a month of being on air their passion and commitment to the challenge is obvious. Sirshen and Jason are both at the studio hours before the show begins and eagerly begin preparation for the daily adventure that begins at 9pm.

The passionate pair have opinions about everything and love sharing these opinions whether good or bad, right or wrong with their audience and encourage the listener to either agree or disagree. They both admit they learn as much from the listener as the listener learns from the show. Their guest line up has included Tony Leon, Kyla Ross from Freshly Ground and Pravin Gordhan who have shared their professional thoughts with the audience. One of the main missions of the show is to open minds. The team’s goal is to keep people informed on up to date trends, share opinions with all the active listeners and help people to see the trend from all angles

Cameron Delport

Cameron Delport, opening batsman for the Sunfoil Dolphins is a star on the rise. We spent a great morning catching up with him over a cup of coffee at Vida e Caffe. Cameron arrived sporting a typical which I might add showed off his unique sleeve tattoo on his right arm, perfectly.


To my surprise, the incredibly talented cricket star admits that as a student, he wasn’t that interested in Cricket and actually preferred Golf. He did play cricket at school though and his coaches soon realised that the young man had potential and could well make it all the way. Life certainly had other plans for the sportsman because while he was celebrating the ‘End of Days’ of high school during Matric rave, he was asked try out for the Dolphins side. Cameron made his professional debut for the Dolphins in 2009 in the MTN Domestic

Gentlemen, Start Your Engines My family are Formula One nuts and it was always on my husband’s bucket list to watch a race ‘live’, and his destination of choice, well, Monaco. And I must admit, having been to several races, there is no better time to visit the small principality than on race weekend. It is alive, vibrant, busy but most of all super exciting. The ideal place for dad to enjoy his weekend and for mom to indulge in some retail therapy! Monaco abounds with fast cars and beautiful women, even dad won’t resist a peek!


The tiny prinicipality which is about six times larger than the Vatican City plays home to many of Europe’s elite and if they don’t live here, it certainly is their playground. Now contrary to popular belief Monte Carlo is not the capital but rather one of four districts Fontvielle (recreation), Monaco-Ville (the old which make up the country. Monte Carlo is the business and recreation hub, and the area where we stayed for our visit. The country itself does not have its own airport so you arrive in Nice, which is about 40kms away and then you can choose your means of getting there, either train, taxi, bus or chauffered limousine, the choice is yours. Or of the train as it was race weekend, the mood was viby and almost everyone was in party mode. Needless to say, the views from the train were spectacular and apparently just as amazing on the bus. An important point to note is that because Monaco is really small, it is not a bad idea to stay in Nice and do a day trip to the famous principality, it may also just be a little kinder on your pocket. That said, Monaco is a true fairytale land of opulence and glamour. Even though the total number of residents is just about 30 000, rest assured they are the creme de la creme of wealth. Bentley, Rolls Royce, Lamborghini and various other super cars are not an uncommon sight. The designer boutiques are too die for and you can shop till you drop, at Louis Vuitton, Hermes, Dior. As you browse the shops at the Le Metropole Shopping Centre don’t be surprised if a recognisable face you can’t quite place is right there next to you. But more about race weekend, Free Practice on the Thursday gives you a chance to enjoy watching the teams in action on a quieter day and if celebrity spotting is your thing, you so we had a great view of the pits as well as is that your seats change for the weekend so you get a chance to view the track from various vantage points in your stand.

But it’s at night that the party really kicks off , as the track is by the port and the hotels are built into the surrounding mountains, the music drifts upwards and even if you’re nowhere near the parties, you can easily get into the mood of things. We had a late start that evening and after browsing around the area for a while and stopping off at the famous Fairmont Hotel we were thoroughly famished. Now late at night, when you’re hungry, we were told that Tip Top was a great place. And it was, we thoroughly enjoyed our very expensive vegetarian pizza here. The music was great, lots of people and most were happy to regale us with stories of who had eaten here and who had booked to watch the race from here. We met a great guy who called himself Jackie, who had something to do with the Cannes Film Festival and who happily invited us along to Amber Lounge on the Saturday night. Amber Lounge hosts an exclusive Formula One party on race night. Apparently, it is where all the drivers eventually end up and has quite the guest list of celebrities and royalty alike. My beloved of course was very keen to go, but I was, just a tad apprehensive. You can of course buy a ticket, for a tidy amount of Euros which is what we decided to do, but of course as with everything else, we were too slow and tickets had been sold out.


A quick way to see most of Monaco is to jump on the tram which runs you through the entire country and most of the sites and even takes you as far as the Royal Palace. I must say I was pretty surprised at how close you can get to the actual palace. Even more surprising was the number of vendors and little shops so close to the building, almost as if the Prince could just step out into his yard and buy a can of cool drink or a packet of chips. The views from up here though are spectacular. From the one side you can clearly see Fontvielle with its yachts on the bay and rows of waterside restaurants and the Monaco stadium from the other side, a spectacular view of Condamine and the race track and surrounding Monte Carlo. We skipped the aquarium but as most of my friends know, I love buidings and art so we spent quite a long time outside the church where Princess Grace both got married and is laid to rest. It was a weird feeling though, the feeling of sadness that comes from nowhere when you think of how the once gracious and beautiful princess passed. And believe me, there are so many other tourists who leave the building with the same look on their face. We wandered around the old city with its beautiful buildings, stopped on the cobble streets for a something cool to drink and spent a great deal of time in the beautiful manicured gardens. Truly magical. Of course, back in Monte Carlo, there are a few things you just ‘have to do’..One of them is enjoying a meal at the famous Cafe de Paris. I was in heaven, I loved the atmosphere, the people and the energy. For those who enjoy a whisky though, these do not come cheap. A single shot can set you back upwards of 19 Euros, an that’s not even the really good stuff. All my other half kept telling me was about James Bond and Casino Royale and how we had to go in, so we did, and I lost all my money. But the highlight has got to be, Race Day, this is any adrenalin junkie or petrol heads dream come true. Although we had great seats, we discovered that from our hotel room we had an absolutely clear view of the track, we made the decision that next time round, we hotel and would watch from the cool comfort of our balcony. Because, boy oh boy, it was seriously hot on the track. But, there is no better feeling than being part of the action, watching these legends race by and for me, I am THE biggest Lewis Hamilton fan, I was in Formula One Paradise. The yachts across from our stand had their music going, beautiful women lounging on the decks in their bikinis, gorgeous guys in their ‘South of France’ tans cheering on their favourites, an absolute memory making experience. The yacht of Vijay Mallya, team principle of the Force India even before the race was done. Lots of action both on and off the track, but what an experience. I stood in line waiting for the ladies room and right beside me was Jason Statham. It was so surreal that I didn’t even recognise him until my hubby pointed him out. That night, we were both exhausted but there was no way we were going to bed, not with all the activity around us. So we took a walk to The Buddha Bar and thought we’d stay for a short while and then move on, but what a great evening it turned out to be that we did not leave until they asked us to. I think for hubby though, the best day for him was the Sunday, we walked the track, strolled around the pits and spent a long time lingering while the teams packed up and made ready for their departure. It was a little quieter with most of the day visitors had left and you walk around with relative ease. This was really a one of a kind experience. That, and the fact that I have not climbed as many hills or stairs as I had in Monaco.

Born in Le Havre, Normandy, France, Annie-Claude Bergonzoli always had a passion for travelling and so a career in the hospitality industry was a natural progression. After completing her studies in Paris she married at the age of 18 and soon after relocated to South Africa. She took up a position as a ‘Passenger Service Agent’ based at Jan Smuts International Airport (now O R Tambo International Airport) with UTA French Airlines, and then Air France, when UTA was bought over. During her 25 years in the dynamic world of the airline industry she successfully held several positions, studying in all departments such as ticketing, reservations, operations and in managerial positions. UTA recognised and applauded her for her dynamic yet compassionate people and leadership skills coupled with her ability to build strong customer relationships. After further studies in France, Annie Claude at UTA a position she held for 15 years. After reaching the pinnacle of her aviation career she took an early retirement in 1998. After the sudden death of her husband in 2001, she was approached by Relais & Châteaux and duly appointed General Manager for Southern Africa. It was an association that she knew well as she and her husband used the Relais & Chateaux guide to organise all their holidays worldwide and she related to the spirit and soul of the association, which assisted her a great deal in her new position. “I am passionate about people, enhancing and nurturing their potential, luxury travel and the small details that make up the bigger picture”, states Annie-Claude. woman behind the prestigious brand, Relais Chateaux.

Ingredients: For the foie gras: (This recipe makes more than you will require, but it will keep in the freezer and is a pretty cool snack to have lying around, all you need is crispy bread)

For the onion marmalade: 2 red onions (thinly sliced) 30 grams butter 1 tablespoon olive oil 50 grams light brown sugar ½ cup raspberry vinegar Salt

250 grams foie gras For the braised celery: 10 millilitres brandy 10 millilitres port Salt 50 grams cream 85 grams cocoa butter 2 leaves gelatine For the raspberry gel: 200 grams frozen raspberries Juice of 1 lemon 10g castor sugar

2 stalks celery (washed and trimmed clean) 1 tablespoon olive oil ½ cup water Salt For the pistachio dressing: 80 grams toasted pistachios 10 grams chopped chives 3 table spoons vinaigrette (3/1 ratio)

For the onion sherbet: 1 large shallot (thinly sliced) 1 cup of oil for frying 1 teaspoon Umami (MSG) 1 teaspoon ascorbic acid 1 teaspoon castor sugar 1 cup maltodextrin Salt

1 stalk fresh celery (sliced thinly on the bias) 8 raspberries (halved top to bottom) 12 yellow celery leaves (has to be the yellow ones from the heart of the celery, the green ones are too bitter) 5 small radish sprouts with the roots still attached Maldon salt Good quality olive oil

Method:

First you have to clean any veins from the foie gras, if there are any, then you need hour before placing it in a vacuum pack bag and cooking it sous vide for a minute the cream on the stove over a medium heat in a heavy based sauce pan and then dissolve the gelatine in the cream mixture. Mix the cream with the foie gras and then leave it to cool slightly. Then pour the mixture into an Isi cream gun and charge it twice with nitrous oxide chargers.

into an ice bath and into a chamber vacuum pack machine. Run the machine on full and when the mixture rises to its apex, unplug the machine and leave it standing for at least aerated foie gras into the freezer for when you need it.

Next you will need to make the raspberry gel. Place the raspberries in a stainless steel bowl, wrap with plastic and leave to cook over a double boiler for 15 minutes, making sure that the water does not touch the bottom of the bowl. Once discarding the berries and reserving the liquid, add the lemon juice and the sugar the mixture in the fridge and leave it to set. You then blitz the jelly in a high speed blender until it has a gel consistency. Place it in a squeeze bottle or piping bag for later and store in the fridge.

To make the sherbet, fry the sliced onions in the oil until they are lightly golden brown and crispy, dry the onions on paper towel and then reserve the oil (the oil can always be used again). Blend all the ingredients – but only use 1 tablespoon of the remaining cooking oil – in a high speed blender until everything is incorporated properly and resembles a sherbet, season and taste. Place in an airtight container and reserve for later.

In a heavy based sauce pan over a low heat, cook the sliced onions for the marmalade in the butter and oil. Once the onions are soft and transparent, add the sugar and leave it to caramelize slightly before deglazing the pan with the vinegar. Check the seasoning, if the onions are not cooked properly by the time the vinegar has evaporated, add a few drops of water and cook further until the water is cooked out and the onions are soft. You do not want any heavy caramelization of the onions. Once cooked, leave to cool, place in an airtight container and reserve for later.

Dissolve the sugar in the vinegar and water for the pickled onions, season and then pour the hot liquid over the sliced onions, and then leave the liquid to cool with the onions in them before wrapping tightly with plastic and placing it in the fridge for later.

Sautee the celery in a heavy based pan (we prefer using a sturdy cast iron pan for the job) with the olive oil, only for a few seconds. Season the celery well, and then add the water, let the water get to the boil and then place a lid on the pot. Cook the celery for three minutes, no more, and then remove from the pot and leave to cool. Slice the

Tuna Tataki & Oyster, Wasabi Cream, Cucumber Apple Salsa, Ponzu Dressing

Serves 4 Tataki 120g Yellowtail, skinned & trimmed of bloodline Salt 10ml vegetable oil 20ml teriyaki sauce Immerse the yellowtail in boiling salted ice water to cool and stop the cooking. Remove from the water and pat dry, season with salt, vegetable oil and the teriyaki sauce. Sear on very high heat for on a charred taste in this amount of time.

Add the cream to a pan and bring to the boil, stir in the gelatine off the heat until it is completely melted. Mix the cream mixture into the crème fraîche as well as the wasabi and salt to taste. Place the panna cotta in a small mixing bowl and allow it to set in the fridge. Before use, whisk the panna cotta until smooth and serve.

Syringe the soya liquid into the cold oil in a concentric circular motion, caviar balls should form and sink to the bottom of the oil. Apple & Cucumber Salsa 20ml diced Granny Smith apple 20ml diced cucumber 10ml diced red onion 2ml chopped coriander Salt 20ml simple vinaigrette, 3:1 Vegetable oil to white wine vinegar, salt Combine all the ingredients and serve at once. Powdered dressing 125ml mirin 125ml soya sauce 125ml water Salt Boil the mirin for a minute until all the alcohol has burned off. Add the rest of the ingredients and simmer for 5 minutes. Remove from the heat and steep for a further 10 minutes. Strain off the bonito liquid nitrogen and pound into a powder, serve the powder from a chilled copper pot at tableside.


Camembert Cheese Cake, Roast Pineapple Ice Cream, Pineapple Compote And Pine Nut Biscotti Cooking time: 1 hour

The ‘Camembert Cheese Cake’ idea is just one of those moments where everything comes together in such a way, that when all the elements were put together, nothing could be said or done, it was there has changed very little, and only the compote and the ice-cream changes with seasons, with us using been the most popular dessert on our menu for a long time now.

Ingredients: FOR THE CHEESECAKE: 15g Egg Yolk 40g Castor Sugar 60ml Cream 60ml Milk 15g Grated Parmesan 60g Superior Cream Cheese 1 Gelatine Leaf 1 Lemon FOR THE ICE-CREAM: 3 Egg Yolks 45g Sugar 110ml Milk 110ml Cream 1 Whole Star Anise 1 Large Pineapple Roughly Chopped Butter Sugar 1 Gelatine Leaf

FOR THE ICING: (This recipe the rest can be frozen and used at a later stage) 250g Butter (We make our own, whisking the cream until it splits and then hanging it in mus lin until all the excess moisture has been released)

SPONGE TO COVER CHEESECAKE: (This recipe makes be frozen and used at a later stage)

150g Egg White 150g Castor Sugar 100g Cake Flour (Sieved) 150g Pine Nuts 1tsp Vanilla Essence Zest of an Orange FOR THE ALMOND CRUMBLE: 125g Butter 125g Castor Sugar 125g Ground Almonds 112g Flour 1g Salt

Method: butter and sugar in a tray and roast in the oven until caramelized. Whisk the eggs and the sugar, and then heat the milk and the cream. Once the milk and cream is warm, pour over the eggs while whisking and then add the sponged gelatine, making sure to squeeze out any excess water. Blend the pineapple and then add to Strain and then churn, or place directly into a Paco Jet container and freeze for later.

over the egg mixture and then cook it as per an Anglaise. Once cooked, whisk in the cream cheese and the parmesan, and then add the sponged gelatine, squeezing out the excess water. Add the lemon juice and then strain. Take round moulds/cookie cutters (approximately the same size as a normal camembert), wrap the bottom with plastic wrap, pour the cheesecake mixture into them and then place them in the freezer for later.

To make the compote, place the pineapple and star anise in a small heavy based pot, heat, add the vinegar and reduce slightly. Once reduced cover with stock syrup and then cook until soft. Leave to cool and reserve for later. The biscotti recipe makes one bread tin. Firstly, whisk the egg whites and sugar to meringue greased tin and bake at 165 degrees centigrade for approximately 20 minutes. Once baked, remove from tin, wrap and place in the freezer. Once the cake is frozen, slice very thin on a meat slicer and line in a cylindrical terrine mould and dry at 130 degrees centigrade (no fan on in the oven) for about 9 minutes or until lightly golden brown. Once cooled, place in an airtight container for later use.

To make the sponge that covers the cakes, you have to whisk the sugar, yolks, vanilla and zest butter to the yolk mixture, and then also all the dry ingredients sieved. Fold in the whites, then pour into a lined and greased tray and bake at 165’c for 20 minutes. Once the sponge is cooked, cut into more manageable sizes, wrap and place in the freezer.

Once solid, grate onto a silpat mat and bake in the oven at 165 degrees centigrade for 8 minutes. When the cheesecakes are frozen, take them out of the moulds and place disks of sponge, which have been thinly sliced and then matched in size on top and then the bottom of the cakes. Also, take small strips of sponge and wrap them around the circumference of the cakes. Once the cakes have been wrapped with the sponge, place them individually on small squares of wax paper and then ice the top and the sides and then place them back into the freezer. Once they them in the fridge for later use.
