EMBER & IRON OPENS AT SHOPPES OF ST. JOHNS PARKWAY

Chef Mike Cooney serves “ember roasted” dishes in a live fire kitchen

E

mber & Iron, rustic American fare, opens its doors today for the first time beginning at 4 p.m. at the Shoppes of St. Johns Parkway, 60 Shops Blvd., Suite 80, St. Johns, Florida 32259. The restaurant will be open for dinner only to start, adding lunch and weekend brunch at a later date. Ember & Iron is the creation of husbandand-wife team Mike and Brittany Cooney. Signature menu items include “ember roasted” dishes in a hearth, live fire grill. Chef Mike’s specialties are a half buttermilk chicken with grilled lemon and roasted pepper salsa verde, ribeye and frites with beef dripping fries, lemon and herb whole roasted fish, and brunch items such as sourdough toast with smoked salmon, lemon and black pepper ricotta, and a poached egg. A selection of dishes are served in cast iron frying pans, including cornmeal fried flounder with Logan Turnpike Mill grits, as well as lobster mac and cheese. Ember & Iron also serves appetizers, soups, salads, pastas, sandwiches, and a healthy kids menu. House made sweets include the chef’s warm cookie plate, seasonal cobbler, and E&I s’mores. Ember & Iron has an eight-foot-long custom, oak burning grill that Chef Mike uses to infuse smokiness and intense flavor into his dishes. This grill was made by Grills by Demant in Atlanta, Ga. and is the heart of the Ember & Iron concept. “I’ve been dreaming of my own restaurant since I was a teenager. The idea for Ember & Iron came from my memories of cooking around a grill or fire with my family,” says Chef Mike Cooney. “Cooking over an oak-burning grill produces flavors that you can’t get from a gas grill. Combined with fresh, seasonal ingredients, live fire cooking allows us to offer a menu unlike any other in the area.” Cooney has been in the restaurant business for 17 years. Most recently he was the chef de cuisine at Restaurant

Ember & Iron serves dinner from 4 p.m. to 10 p.m. Sunday through Thursday, and 4 p.m. to 10:30 p.m. on Friday and Saturday. The restaurant has a full bar with a specialty Bourbon selection and liquors and beers from local and regional purveyors, such as Palace Pale Ale from Dog Rose Brewing Co., an assortment of spirits from Manifest Distillery and St. Augustine Distillery, and Tippler’s orange liqueur by St. Petersburg Distillery. A cocktail menu includes signature drinks such as the Real Housewife of SJC, the Cooney Claw, and I Know the Owner, served with St. Petersburg Distillery’s Oak & Palm Rum. The 4,598-square-foot restaurant seats 161 indoors and offers a 34-seat outdoor patio. With a build-out cost of $1.5 million, the well-appointed restaurant, designed by Brittany Cooney, is sophisticated casual.

“We designed Ember & Iron to be a warm, inviting atmosphere where you can gather and celebrate with frends and family while we prepare ember roasted dishes that comfort you,” says co-owner Brittany Cooney. “We’ve all had good days and bad days over the last year, and we want our guests to walk in and feel welcome, and know that when they are with us, they will be treated like family.” The restaurant features a horseshoe booth that is by reservation only for parties of four to six wishing to have a more intimate celebration. A communal table allows neighbors to dine with each other without a reservation and enjoy a front row seat to Chef Mike’s live fire kitchen. Ember & Iron accepts reservations via emberandiron.com, and welcomes walk ups as well. Take-out and online ordering will be added after grand opening week.

Design Ideas to improve the value of your home.

e are often asked, “can a foolish fad design effect the sale of my home in the future?” There is rarely a simple answer to this question because what is one person’s fad is another person’s favorite. It is why white subway tile has been “in” for nearly the last decade; why wood-look tile continues to be the most popular flooring choice for Floridians; why white shaker cabinets are our best seller. But, if you’re tired of the same-old design choices, you can make a few that will likely help your resell value and buck the trend. PLAY WITH TILE: Backsplashes and an easy way to add color, texture, and pattern – and they are easier to remove and replace as trends change. The most neutral choice would be a traditional natural stone backsplash. A slightly bolder choice would be a mosaic pattern with a few accent colors. The boldest option would be a tile accented by gold or silver in a loud

pattern. Coupled with a more traditional cabinet and flooring, the tile can be a focal point that displays your personal taste. ADD COLOR: Two-toned cabinetry is an excellent way to bring bold color into a space. The key is to choose colors that accent each other and keep the room’s feeling intact. In a smaller kitchen, you might select a dark cabinet for the base and a white cabinet for the uppers to keep the space feeling light and bright. In a large kitchen, using bold, deep colors to fill the space can help it feel homier. In a

modern home where white is the word, using colored cabinetry can break up the space. CHOOSE TEXTURE: Stone accent walls in entry ways, around fireplaces, or heading up the stairs are an excellent way to add interest to a space. Adorning a space with stacked stoned, dark wood tones, or raised panel brick bring style and sophistication to a traditionally “boring” space. We agree that considering your resale value is critical when making design choices. But don’t be afraid of fads, instead see how they might add to the value and choose them wisely.

FOOD ALLERGIES

HOW COMMON ARE THEY? If your pet seems itchy, has frequent skin and ear infections, or has ongoing diarrhea or vomiting, your vet may have mentioned food allergy as a possible reason for that. True food allergies are complex and at times, difficult to treat without complete supervision by your veterinarian. There are dozens of reasons pets have skin problems or gastrointestinal problems; food allergy only makes up 1-5% of all the possible causes, and unfortunately, there isn’t a quick “test,” to determine if food allergies exist. Food allergy occurs when your pet’s immune system misidentifies a protein from a food as an invader rather than a nutrient or food item and mounts an immune response. Most allergies are to a meat-based protein source – chicken, beef, pork, etc, while even fewer are due to a protein that comes from certain grains and vegetables. Once your veterinarian determines that food allergy should be explored as a possible cause of your pet’s issues, they will recommend a specific prescription diet either consisting of a hydrolyzed food – where protein is broken down into such small molecules their body cannot recognize it as such and no immune response occurs, or a limited-ingredient diet using novel protein sources that your pet has not been exposed to before – such as kangaroo, venison, or duck. The food that is chosen needs to be fed exclusively for a period of about 3 months, with absolutely no other food, snacks, treats, or flavored medications being fed. Prescription food is fed for a determined time, and then if the signs improve dramatically, it is suspicious that food allergy was the reason for their

problems, but this can be just a coincidence without a re-challenge. The sure-fire way of determining 100% is to begin feeding their old food again after the food trial is complete and if the pet has a quick relapse of symptoms, It’s likely an ingredient in the food. Getting to the specifics of what ingredient(s) cause the immune response can take a long time, so many vets do not have pets go through adding back in one ingredient from the old food at a time until the ingredient is identified, but there are times it may be the appropriate next step. Many times, staying on the prescription food long-term is the best option for the pet to control symptoms and avoid risk of contamination from other ingredients. Many boutique food manufacturers have jumped on a bandwagon of touting their ingredients as “hypoallergenic,” or “limitedingredient,” as well as using other clever marketing terms, but the truth is those foods actually do very little to help if your pet truly does have food allergies. Only prescription diets are suitable for food trials, and they are only available through prescription by your veterinarian. These foods are developed by veterinary nutritionists and are made in separate facilities built specifically for just that type of food– eliminating any chance for cross contamination. There is so much science and testing that goes into their finished product, that it can be guaranteed, and these foods are the gold-standard for doing a food trial. You may have seen or heard of allergy testing from blood or saliva that can diagnose food allergies. This is not something that has been proven to be true, in fact, for

years vets have been researching whether these tests work- because they would certainly make things a lot easier! But unfortunately, there is just no proof that they do. Rather than wasting money on these tests, please get your vet’s opinion on them first! Overall, food allergies are not common enough to immediately recommend changing a pet’s food if they have mild symptoms. Environmental allergies – to pollens, grasses, dust mites, etc. actually make up a lot more of the things our pets can be allergic to. If you think your pet is having an allergy to a food ingredient, talk with your vet and make a choice together on a food that will be beneficial for them.
