Rainbow Popcorn

1 ½ cup corn kernels •6 tsp water food coloring • 18 tbsp sugar

Pop the corn kernels according to the instructions. Grab 6 zip-loc bags and scoop 3 tbsp sugar into each bag. Add food coloring to each bag. Use a few drops of liquid food coloring or a pinch of gel food coloring. Shake/knead until the sugar is evenly colored. Heat 1 color of sugar with 1 tsp water in a pan over medium-high heat. The sugar should be melted/caramelized. Remove the pan from the heat and stir 2 hands of popcorn into the colored syrup. Place the colored popcorn on a plate to cool. Repeat with the other colors.

Salted Caramel Popcorn

1⁄2 cup unpopped popcorn • 4 tablespoons vegetable oil 4 ounces butter • 1 cup light brown sugar • 1⁄2 cup honey or maple syrup 2 teaspoons vanilla extract • 2 teaspoons salt flakes ⁄2 teaspoon baking soda

Preheat oven to 300˚f and line two baking trays with baking paper add oil to a large saucepan with a lid on medium-high heat place 2 or 3 kernels to test if the oil is hot enough add the rest of the popcorn, pop the lid on, and shake the pan occasionally while the corn is popping.

Salted Caramel

Melt the butter in a separate medium saucepan over medium heat. Add sugar, syrup/maple, and 1 teaspoon of salt, and swirl the pan so the butter covers the sugar. Bring to a simmer for 3-4 minutes without stirring. Add vanilla and baking soda and whisk till the sauce is smooth and glossy. Pour caramel over popcorn and mix to cover the popcorn. Divide the popcorn between the baking trays and sprinkle the remaining 1 teaspoon of salt flakes over the popcorn. Bake for 30 minutes stirring every ten minutes or so. Remove from oven and allow to cool.

January 19th is National Popcorn Day. This delicious snack is great all by itself, but it is also a versatile treat that you can easily dress up. Try out these great recipes during your next movie night!

This year for Martin Luther King Jr. Day, we wanted to shed some attention on the beautiful memorial that has been created in his honor. The Martin Luther King, Jr. Memorial is located in West Potomac Park next to the National Mall in Washington, DC. The memorial covers four acres and includes the Stone of Hope. The Stone of Hope is a granite statue of Martin Luther King Jr. that was carved by sculptor Lei Yixin.

The memorial opened to the public on August 22, 2011. It took two decades of planning and preparation for this remarkable statue.

A ceremony dedicating the memorial happened on October 16, 2011, which was the 16th anniversary of 1995 Million Man March on the National Mall. President Obama, First Lady Michelle Obama, Vice President Joe Biden, Congresswoman Nancy Pelosi, Congressman John Lewis, Congressman Elijah Cummings and former Congressman Walter E. Fauntroy were among the more than 10,000 people that attended the event.

A fun fact about the monument is that King is the first African American honored with a memorial on or near the National Mall. He is also only the fourth non-President to be memorialized in this way.
