We have had a great time hitting the breweries, wineries and distilleries all over Vermont. And the cider makers? Outstanding! We are so lucky to have such a great collection of crafters here in Vermont continually putting out quality prod uct. But you probably know this with the reaction of your friends and family from out of state when they experience the Vermont craft scene.

With this issue we bring you spotlights on Two Heroes Brewery in South Hero getting it done! And we spotlight one of the most consistent breweries in Ver mont recognized for their products….Foley Brothers in Brandon. Both have great stories to tell.

Can’t have a good brew without good products to make them. That’s where Vermont Malthouse comes in. We check in with the malthouse and learn just how much work, expertise and ingenuity it takes to provide quality products to brewers all over New England.

We’ve added a new feature called Biz Buzz that runs down the various awards, accolades, and other notables in the industry. We have a nice two page photo spread from Hill Farmstead and Lawson’s Finest, and we continue to bring you Cannabis Corner with reviews and information.

Creating a Space for Wine

Nestled

away on Pine Street, boasting beautiful glass windows and a European feel, stands Dedalus Wine Shop, Market, and Wine Bar—a haven for wine enthusiasts and novices alike. Given that Burlington is a place for people who love quality,

craftsmanship, and joie de vivre, it only makes sense that this burgeoning company would have started here. Now, the business has opened a third location in Stowe and has expanded across the country to Boulder, Colorado, where the first Dedalus store opened this April.

Dedalus was started by Jason Zuliani, a veteran of the hospitality business and a dedicated wine lover. When Jason made a career change and began an IT business in downtown Burlington, he found that he missed the experience of sharing great

Dedalus aims to create spaces that brings people together around wine. The cut-to-order cheese counter and wine bar help give context to the wine. “Many of the most transformative experiences our staff has had with wine has been at the winemaker’s table, with local food enjoyed with the wine,” says Ashley.

Founder Jason gives an example of traveling to San Sebastian, Spain, where the local markets offer bite-size snacks called pinxtos. “Think marinated sardines

wine with the community. “He really wanted to introduce folks to wines that weren’t otherwise accessible in Vermont,” explains Ashley Bryant, CMO of Dedalus. As an outlet for his passion, Jason started a small wine store in the back of his IT business, specializing in European wines.

The wine store grew such a dedicated following that he eventually sold his business and opened up a small shop on Battery Street. From there, the business quickly expanded to its current location on Pine Street, where they added a market and wine bar.

and tomato on toast,” adds Ashley. Dedalus has recreated these tapas, which are offered from their market space, along with Spanish wine.

Another wine-related snack that Dedalus has recreated is arrosticini, lamb skewers inspired by Abruzzo, Italy. “These skewers are meant to be served hot, right off the grill,” says Ashley. In order to fully re-create the experience, Dedalus cooks their arrosticini over wood-fired grills in their wine garden. Customers in both Burlington and Stowe can enjoy these paired with Italian wine from the same region.

NATURAL WINES

For Dedalus, creating a sense of place from wine and food is paramount. That’s why they focus on sourcing wines from small farmers who are dedicated to making a product that

truly represents their region and their community. The company only sources natural wines, which for them means wine farmed without the use of synthetic chemicals—often organically or biodynamically. That practice is extended to the winery, where the juice is fermented with native yeast and nothing else, and has little to no added sulfur dioxide at bottling. Think of it as: nothing added, nothing taken away. Additionally, they want to support farmers who are dedicated to sustainable practices in these special places. Sustainable farms require a variety of crops to be planted in the same soil to keep nutrients from depleting. However, the terrain of mixed crops means that most growers have to hand-harvest their grapes rather than use heavy machinery.

Dedalus hosts many events and wine tastings from vineyards around the world including a special tasting with two great winemakers—Denis Jamain of Domaine Reuilly in the Loire Valley and Pierre Ravaille from Ermitage Pic St. Loup in the Languedoc on November 10. U

Autumn is all about Pumpkins and apples! Here are four recommendations to get your picking fix!

With another beautiful fall season upon us, it’s time to plan out some fun activities to really celebrate all things pumpkin and apple in Vermont! Here are two apple orchards and two pumpkin farms on our go-to list. Each offers fun activities and delicious goodies for you and your entire family to enjoy to make the most of your fall festivities.

greenhouse, farmer’s market and a shop. This family farm really goes out of its way to cover all the bases when it comes to fall fun.

A tractor will take you out to a pumpkin patch to pick your own pumpkin or you can purchase a pumpkin that has been already picked. Along the way, there is a market filled with homemade pies, cakes, breads, seasonal favorites and more. This scenic family farm offers visitors the classic Vermont farm experience along with delicious seasonal fares: apples, apple cider, pumpkin pies— if it’s a fall favorite, it’s here.

They also have three miles of corn mazes to enjoy. A one mile maze and a two mile maze, each with a separate entrance. Access to both are included with an entrance ticket, which costs $8. The corn maze is open seven days a week from Labor Day weekend through October and is open Monday through Saturday, 10am to 6pm and Sundays from 10am to 5pm.

ADAM’S APPLE ORCHARD & FARMERS MARKET

This lovely apple orchard has been operating for 25 years and is located in the scenic Champlain Valley. Come to enjoy the panoramic views of the Green Mountains

from their orchard, where you can pick apples until mid-October.

Their farmer's market is open 7 days a week from May 1st until December 24th. Here you can find a delectable assortment of quality Vermont food products, apples, apple treats, apple cider, maple syrup, gourds, mums, pumpkins, herbs, annuals and local produce.

WHITCOMB’S LAND OF PUMPKINS

This pumpkin farm was established in 2003 and added their corn maze 2006. They have 6 acres of pumpkins, gourds, corn, squash and offer some of the biggest and best carving pumpkins in the area—all shapes, sizes and colors.

Explore their 4-acre corn maze where you will search for 5 checkpoints which have educational facts about the process of growing apples before solving a word scramble. While searching for checkpoints you will also be looking to find the candy jackpot! Kids four and under are free and kids five and up are $6. This year, they will be open on Saturday September 27th. Hours are Wednesday 2pm-6pm and Sat/Sun 10am-5pm. Dogs are welcome!

YATES FAMILY ORCHARD

You can pick your own apples at Yates Family Orchard where they offer 26 different varieties of apples, pears and plums. This is a family owned and operated apple orchard on Monkton Ridge with a spectacular view of the Adirondack Mountains.

They also make and sell a delicious variety of apple-made treats at their orchard stand. This year, the orchard opens to visitors on September 1st through November. They have hot, made-to-order cider donuts, Kingdom Creamery Creemees, baked goods, local honey, orchard jams, maple syrup, pumpkins, mums, jams and local artisan works for sale.

Special note: don’t forget to try a Dreamee while you’re there. Their delicious signature creation is a hot, fresh made cider donut with Vermont maple soft serve ice cream on top!

Two Heroes Brewery in South Hero is About to Expand

Reaping Sweet Rewards

WELL WORTH THE WAIT

After several years of planning, partners Daren Orr and Matt Bartle are expanding their taproom, Two Heroes Brewery, in early 2023. When they first came up with the idea for a brewpub five years ago, they had no idea their plans would be derailed by the COVID19 pandemic. The pair was perfectly

poised for a successful venture. Daren was a home brewer for much of his life, earning a certificate in advanced brewing theory from the Siebel Institute of Technology in Chicago. Matt has a B.S. in mechanical engineering and has been the proprietor of Wally’s Place since 2008, with connections to some of Vermont’s many venerated farmers.

A LOCAL TAPROOM

In February 2021, the pair pivoted and opened Two Heroes Brewery, a pilot taproom located at 1 Ferry Road in South Hero, the original home of Wally’s Place, as a temporary space until their new facility was completed. It bills itself as “a small island brewery that seeks delight in malt and hop modification.” Daren is the

head brewer, and his wife Danielle serves as the taproom manager.

The brewery produces 200 barrels annually, with 5 to 9 beers on tap on any given day. It also offers a limited menu, as well as cans and growlers to go. Two Heroes has gained a large local following and is a must-stop destination on Vermont’s burgeoning brewery trail.

A WIDE VARIETY OF BEERS

Daren believes the brewery’s ability to produce a wide variety of beers sets it apart saying, “We pride ourselves in a lot of different styles of beer, so that all types of beer drinkers can come here and find something they like.” There are typically IPAs, two different types of lager, a stout, and two Belgian ales including a sour on tap. Daren continues, “About half the time, we offer a double IPA.” Two Heroes also produces specialty beers such as an altbier, a German ale produced with top fermenting yeast which is fermented in cooler temperatures.

In a unique move, Two Heroes also makes its own hard cider, produced with apples from local farms. As Daren explains, “We use the same equipment to make the cider—and the apples are prepared and pressed by local orchards.”

In addition to its indoor and outdoor tasting spaces, Daren and Matt make deliveries to a faithful following in Grand Isle and Chittenden counties, with plans to expand to the Plattsburgh, NY area where a lot of their regulars are from.

realized. They hired AES Northeast, an architecture and engineering firm in Plattsburgh, NY, and Hayward Design in South Hero to construct a 4,200 square foot building that will house both the expanded brewery and a 50-seat restaurant, to be named “Two Heroes Public House.” Designed as a monitor, or raised center aisle (RCA) structure, it is modeled after a traditional Vermont barn design that features a raised center section. The new facility will have the capacity to produce over 1000 barrels a year.

The brewpub will offer unique pub food made with local ingredients. As Daren describes it, they will soon be serving up “simple pub food that goes well with beer.” The focus will be on creating an experience, not just a place to drink beer, for individuals and families alike.

“We’ve been keeping an eye on the brewery market for over a decade,” Daren concludes. “We believe that a small town nano-brewpub is a great model for producing beer and running a restaurant. The community is the most important aspect of South Hero, and our goal is to fill the void by creating a local gathering place for both members of the community and visitors from all over.” U

VERMONT MALTHOUSE

A regenerative farm and a model for other agriculturalists

Whenpeople think of beer and how it’s made, the first ingredients that come to mind are likely barley and hops. In reality, it’s malt that serves as the centerpiece.

BrewView spoke with Rob Hunter, the General Manager of the Vermont Malthouse. He explained, “Malt is the workhorse of all beer. If you look at the color of beer, the sweetness, the alcohol content—that’s all dependent on malt.”

He says you can make a beer without hops, but you can’t make one without malt. If malt is the steak and potatoes, hops are the salt and pepper.

Rob is part of the new team that took the business over in 2021. Since then, the facility has grown exponentially in a variety of ways.

Rob and Jamie Dragon, the Head Maltsers, worked at the previous rendition of the Malthouse. “Because we were part of the previous incarnation of this site, we knew the flaws and hiccups,” Rob explained. “We were able to hit the ground running, identify these problems, and then come up with a plan to revamp the entire malthouse from top to bottom.”

Right now, the malthouse farms grains like wheat and rye, but they’re hoping to expand that. The grains they work on now are grown in massive quantities, to the point where they’re looking for more growers. What they can’t get locally, they still source regionally, though they always keep quality in mind.

Hoping to grow different types of barley moving forward, they're looking to add oats and experiment with new types of malts, pilsner, wheat, and rye malts. They want to create Vienna, Munich and Pale malts that require

higher-temperature kilns. Getting to work in smaller batches will help with those experimental, customizable grains while working directly with brewers.

To make that happen, they’ve upgraded all the equipment and made moves to go solar and decrease their carbon footprint. A new flaker system will come online at the malthouse in April. The new technology gives them more room to improve and more ability to experiment with different base grains.

When the new owner, Will Raap, bought the property, he bought much more than just the malthouse. He has a bigger mission. “Essentially, it’s an agricultural incubator space,” Rob elaborated. “What that means is, we have a bunch of different businesses that are tied to what we produce here as a farm on the property.”

the land, a slow-fire bakery, and now a microbe business is also thinking about coming on board.

“The bigger push on this property is really about becoming a regenerative agricultural center for Vermont and the model for other farms who are struggling with agricultural access,” Rob said. “It’s pretty sweet,” he added, laughing.

Being so close to the breweries who partner with the Malthouse is also a plus. If they need something special or different, they can request it directly; if they need something on short notice, they can simply drive over.

Rob says there needs to be changes made to the way farming is going. He’s happy to be at the center of it, and he’s proud to keep Vermont as the green, agricultural state that people have become accustomed to.

“It’s not just us they’re supporting,” Rob said of brewers and farmers who partner with the Vermont Malthouse. “Going back to the mission of the larger organization that we’re part of, we’re really trying to support the farming communities throughout Vermont. It’s a slow growth bringing people on these different farms. We’re experimenting ourselves with growing most of our own grains on-site, so that we can go to the next level, which is working with the local farmers down the road and then hopefully statewide.” U

A FAMILY AFFAIR FOLEY BROTHERS BREWING Goes from B&B to Winery

New Englanders Bob and Rhonda Foley purchased the Neshobe Inn in Brandon in 2006 as a bed and breakfast. A classic Vermont farmhouse built in 1786, it sits on six lush acres at the foot of the Green Mountains. A year later, in a quest to establish a niche for themselves, the couple created

a small vineyard and opened a winery: Neshobe River Winery. This was a natural direction for them to go in, since the family had spent a significant amount of time visiting and working in wineries and breweries in the US, Europe, Africa, Canada and New Zealand. Offering wine made on the premises from regional

grapes, the tasting room soon became popular with the Inn’s B&B guests as well as with local folks from Brandon.

Meanwhile, Bob and Rhonda’s sons, Dan and Patrick, had other plans. Both were involved in the wine-making business from the start, but after five years they began to experiment with

beer-making, starting with a ginger wheat and brown ale. In 2012, the pair opened Foley Brothers Brewing.

A BREWERY IS BORN

While Bob, a professor of business planning and marketing at Rochester Institute of Technology, lent his business expertise to the start-up, he remained focused on wine making, and continued to operate the small-scale winery, which shares its space with Foley Brothers Brewing on the grounds of the inn.

Patrick and Dan learned their wine making skills during their travels and various apprenticeships, and quickly figured out how to turn their knowledge of equipment and the fermentation process into brewing beer. As Bob Sr. says, “They were always good wine makers, but they are excellent beer makers. They turned their beer production into something much larger than I had ever imagined.”

The business took off. Bob explains, “When the boys started 10 years ago, there weren’t many breweries in Vermont

– maybe 20 at most. They got into the industry right at the beginning and established themselves very quickly.” He attributes their success and solid customer base to excellent brewing techniques and the quality beer they produce, as well as a superb distribution plan. Currently selling in New Jersey, Pennsylvania, Rhode Island, New Hampshire, Connecticut, Massachusetts and Vermont, they recently entered the Scandinavian market, and have plans to add Asia as well.

THE BREWERY TODAY

The tasting room is located in a charming, early 1800s barn, creating an authentic Vermont experience. A popular destination for tourists on the Vermont brewery trail as well as for locals, the brewery has regular visitors from Massachusetts, New Hampshire, New York and Pennsylvania. They include parents whose sons and daughters attend nearby Middlebury College, families gathering for the

holidays, and skiers eager for something to do when they get off the mountain. The inn no longer functions as a bed and breakfast, but from May to October, the entire farmhouse is available for rent.

The family also runs a spinoff: Foleys Taco and Bean on Park Street in Brandon in a beautiful federal style building with outdoor seating. As Bob explains, “Brandon didn’t have a lot of options for dining, so we decided to fill the void.” While the restaurant opened at the height of the COVID pandemic to a rocky start, today it is thriving. The locals affectionately refer to it as simply “Taco.”

Back at the brewery, the art of making craft beer is in full swing. “We brew small batches in our 15-barrel brewery. We’re always experimenting with new recipes,” Bob tells us. Its annual production is 2000 barrels, with the capacity for 3000. He goes on to explain, “We don’t see the need for a larger facility. Our market right now is exactly where we want to be.” But with many more craft breweries opening up in Vermont and throughout New England, one of their goals is to keep up with market trends to ensure their brand continues to stand out.

Foley Brothers is known for its IPA, but based on demand for beer with a lower alcohol content, it is introducing lager as well. When asked what the brewery’s “secret” ingredient is, Bob doesn’t hesitate. “It’s the water. After all, beer is 95% water. Brandon’s water, which comes from an aquifer and is not chemically treated, is some of the best quality in the world.”

When the family isn’t at the brewery perfecting their craft, they’re on the road, attending beer trade shows, conferences and festivals. It certainly is a family affair. U

Reviews: purple haze & sundae brunch

LB farms is in St. Albans, and is owned and operated by Amy and Miguel Lopez, a lovely green thumbed couple, who will be entering the market starting October 1, 2022 as organic growers with a tier 1 mixed license.

Miguel's cultivation journey began as selfless and noble as one could, to heal his own family when they were in desperate need; a true labor of love.

As we started our own labor of love, sniffing, grinding, inspecting, rolling and consuming Purple Haze, we took a few moments to chat amongst ourselves with our guest reviewer, Kelly McDowell.  With Kelly and cannabis combined, we knew this one would be a laugh!

Kelly is now a cannabis-consuming professor and goddess at UVM for hemp textiles, fashion and sustainability.

This was a fun review, with Jessilyn having just come back from passing her Ganjier certification in the Emerald Triangle of California. In the tradition of the wine sommelier, cigar aficionado, or master chocolatier, Ganjiers are certified experts qualified to accurately distinguish and assess the nuanced qualities of cannabis.

Purple Haze (the cannabis) originated in the hills of the Emerald Triangle, with a bit of mystery and magic … much like Jimmy. It is said to be a hybrid of both haze genetics and Purple Thai, hence named rather appropriately.

Ganjier has a specific assessment protocol for cannabis review, so it was exciting to fuse our old school thoughts and the Ganjier style (SAP-systematic assessment protocol). Ganjier has four categories, each having several distinct criteria in it: appearance, aroma, flavor, and experience.

When we discussed the initial appearance, we all mentioned the fox tail look, with its finger-like presentation. We didn’t feel this was a negative trait, just something to note.

On first smell for aroma, there was a grassy scent possibly from a short lived cure (weeks rather than months) with grape undertones. The prevalent aromas were earth, sweet and a touch of fruit.

The essence was described, after a bit of banter and chuckles, as Stoner Grape Juice or Hazy Manischewitz (Grape Mint Spritzer-ish kosher wine.)

The earth reminded us all of dirt, like playing in the dirt box as a kid, with a bit of that cannabis catpiss smell in the undertones.

Knowing that everyone has different preferences with cannabis, especially on the visual “bag appeal” and trim jobs, we heard one comment that this was “trimmed closer to your liking then mine…with lots of trichomes intact.” As reviewers, we have our preferences too.

Another reviewer felt this was trimmed really well, especially for a nugget that was generally a bit looser than the standard. The closer and tighter the trim job is, the more likely one will cut open the trichomes. With what many call the “farm trim,” trimmers leave some smaller sugar leaves and work around the nuanced shape of each individual nugget which allows ALL trichomes to stay intact.

This trim job gained a score of 8 on the Ganjier SAP, which is quite high, pun intended.

As we looked closer with a jewelers loupe for appearance, there were definitely a lot of trichomes intact, moderately, if not mostly covering the flower, even after some mishandling of the jars by one reviewer. These delicate trichomes can break off just by bouncing around a jar or by touching the nugget with your fingers.  It’s always a great reminder to treat your cannabis like a delicate piece of ocean coral.

As we continued to assess, we felt there may have been some room for

improvement with the cure category, as the stem held some moisture and did not make that typical stem snap you’d want to hear and feel when breaking it up. This can sometimes be the difference between a shorter cure phase at a few weeks as compared to longer (several months), or it could even be the horribly humid Vermont weather this summer!

When broken up, it was a bit sticky, the flower was fluffy and a bit moist on the grind, with a heavy grape aroma; much more intense than the jar opening effect.

The dry hit of the joint (dry hit means inhaling without lighting it!) was grape-y with a haunting and lingering grape flavor. On combustion, the smoke was moderately smooth, typical of a haze and burned better than we had expected through the entire joint.

With a light and fresh feel in the mouth, the flavor was mild but lingered, much like iceberg lettuce.

The flavor brightened in the last half or so of the joint. A good reminder when reviewing or judging is to take your time and assess (and enjoy) the entirety.

For one reviewer, the “effect” came on quickly, with effects taking time to manifest and lingering some for another. We all agreed the effects were more of a cerebral high than the body buzz, leaving a feeling of calm and cool. It elicited a balanced energy, not leaving you on the couch or ready for a fun kind of jazz, but somewhere in between.

The quotes that best explained the mood were, “I got the bops going” and “this is some actionable weed” as pastel colors and music ran through our heads.

By the time the crew was finished, everyone felt physically energized and that this was definitely one we would want to share with friends and take out on the road with us!

After spending years in the cannabis industry in California and now running her own Maple and CBD company in VT, Kyla knows a thing or two about pretty flowers.

Donated by a newer grower with the excitement of a kid looking at gifts under a Christmas tree, Jay from Longbottom Farm out of Plymouth, Vermont started growing outdoors only a few seasons ago.

From there, the indoor escapades began with seeds popping and lessons learned.

Today’s cannabis is named Sundae Brunch, a Sundae Driver x Mimosa cross bred by Woodstock Farmacy.

To begin the review, we start a quick survey of the appearance and an overall visual inspection. As we noted, this particular nugget is visually very pleasing.

As we move onto aroma, or the nose, we all agreed on the famous mothball smell, or maybe grandma’s talc and the smell of fresh cannabis and mowed hay. Initially, the intensity was mild. But as we dug our noses deeper, the complexity was intriguing to say the least.

In the layers of aromas noted, earth was prevalent with both a fuel and a fruit kick that left us wondering where this was going. As a group, we always come back to the aroma assessment, description, and complexity rating after grinding up the flower for consumption (the joint). For some, the best part is the aroma hands down. The aromas can change a lot from a nugget in hand to a ground up pickle, so be sure to check it

out next time if you don’t normally. Before grinding or handling the flower too much, we want to assess the appearance more, and the trichomes specifically.

With our trusty jewelers’ loupe and scopes, we were excited that this sample had a moderately dense forest of trichomes coating this fresh looking flower, tip to stem.   It was just as pretty to see up close under the microscope/ jeweler’s loupe as it was to the naked eye.

The trichomes were glistening milky white, boasting what we would call the moderate side of maturity. Many were intact and beaming with resin just waiting to be enjoyed. We continued on to discuss the trim job, noting these flowers were neatly trimmed, and optimal for our liking.

When we opened the flower, breaking

it up for the grind, the earthy and herby aroma had undertones of pepper and spice, which seemed to compliment what some of us thought were grapefruit and licorice undertones. Sweet, almost cake-like, with a hint of fuel punched through when ground up. The aroma was sophisticated and complex for sure!

Once we sparked our joint, the complexity waned, with sweet being the dominating taste. “Tastes like sugar…like Pixie Sticks.” It was almost a comforting sweetness. The aftertaste was that of the famous moth balls, and the final conclusion was: “tastes like weed!”

After our joints, and we all weighed in on the effects, we were collectively left with a balanced, happy mood and a gentle level of intensity.

Kyla, our guest reviewer shared how great and fun it was to look at, smell,

and enjoy, but this one might not be top on her list to get again. The general consensus agreed and rated this high on the munchy scale with “ice cream sandwiches being killed” in conversation.

For a new grower, Longbottom Farms sure does make some pretty and potent smelling flowers! Keep on growing Jay… we can’t wait to see how much your knowledge and plants grow every year!
