the term Natural Flavor,” says Buena Gàve Founder Steve Poirer, “We like to tell you exactly what you are drinking.” Having real ingredients has become somewhat of a philosophy to Steve who, since 2020, has been creating only the most “South of the Border” certified canned spirits possible. Coming from a background in wine and spirits, Steve was always drawn to agave based spirits and found his interest was untapped potential.

Based in Manchester, Buena Gàve has quickly made its mark in the canned cocktail world in its first year. Being dedicated to only natural ingredients, Buena Gàve currently has two canned spirits on the market, both of which use only fresh fruit juices, and agave straight from Jalisco, Mexico. Ranch Water, their first flavor, is a take on the West Texas classic that consists of agave spirit, soda water, lime, and a dash of salt. Their second, Cantarito Spritz serves inspiration straight from the source of the agave spirit, Jalisco, Mexico and as Steve describes, “tastes like someone poured tequila in your mimosa.” Despite their tequila roots, both cans are a refreshing 5% ABV and the ingredients are pasteurized rather than using preservatives, so nothing is added other than what you can taste. The ciders of Moonlight Meadery are just a small sample of the amazing products that the company creates. Even when apple season is over, there is always something more to quench your thirst.

Taking a page from their mead-making roots, many of the ciders are made with a touch of honey to add a little depth to the drinks flavor. With a custom of making several fruit varieties of cider each season, Moonlight Meadery currently has on tap Currant Obsession, an apple and black currant cider that includes bits of honey during the fermentation.

“This variation is so close to the mead process, it technically is one,” says Michael, “The tartness from the currants make it super crisp and refreshing.” By adding the honey during the fermentation stage, the white wine yeast eats up all the sugars and creates a smooth alcohol without any bite. When the aging is finally finished and the yeast is removed, the result is a cider with brilliant clarity and high ABV. This touch of honey has become a not- so-secret ingredient with amazing results. Having won the best in show for the mead/cider division at The San Diego International Beer competition two years in a row as well as a top 20 spot from The National Honey Board for most influential honey beverage in the world, Moonlight Meadery has certainly hit the sweet spot. The honey is also True Source Certified or Certified Organic which guarantees they are using real honey that is ethically sourced to prevent damage to bees’ eco-systems.

While some might think that all ciders are made equal, Moonlight Meadery has made each recipe a little different. Little Apples, the company’s most traditional cider and a fan-favorite among drinkers, is made by combining fresh pressed cider from Gala, Cortland, Granny Smith, and Macintosh from local orchards before letting it ferment and age in Rye Whiskey Casks.

For Thirteen 5, their pre-prohibition style flagship cider, a touch of sugar and honey is added before fermenting for no less than 6 months. The result is a rich and sweet cider that has a kick.

Loon Mountain’s Oktoberfest offers views unlike any Oktoberfest you’ve ever seen. It takes place at the Loon Mt. Ski Resort in the White Mountains at the height of fall foliage season so while celebrating Oktoberfest on Loon Mountain, you’ll be able to check two things off your fall to-do list. The Oktoberfest is presented by Samuel Adams and it is the largest in the region. With free admission, there is a long list of fun games and activities besides just eating and drinking. What began as a hobby strictly for fun evolved into one of New Hampshire’s premier wine tasting destinations. Mark LaClair, owner and winemaker, couldn’t have predicted the founding of Seven Birches winery 12 years ago when he first started making hobby wine, but fate tells a different story. Coming from a background in market ing and hospitality, Mark moved to Boston from Upstate New York for school where he fell in love with the outdoor playground that New Hampshire offers. This awe encouraged him to take a position managing a resort in the White Mountains where he discovered not only his love for New Hampshire, but his love for wine. His wine journey was initially as a passionate consumer, when he started in his base ment with a home winemaking habit. “I was making hobby wine at home out of all kinds of fruit and taking it to dinner parties and events and everybody’s reaction was the same: ‘It’s not bad’,” recalls Mark. This inspired his first hobby wine label, ‘Not Bad AlthoughWine’.friends and community members encouraged him to try commercial winemaking, he was still on the fence about it admitting, “I had all the reasons not to do it.” However, a chance meeting with the owners of Windy Ridge Orchard in 2007 steered Mark’s path in a new direction. At the time, the family

22 BREWVIEW NEW HAMPSHIRE 2022 Issue 2 was looking for another experience to offer orchard visitors during their busy tourist season, and apple and blueberry wine seemed just the ticket. Furthermore, Mark seemed just the guy to help make it happen. Seeing the potential and the built-in safety net of a well-established business that people were already flocking to, Mark agreed and, when the first batch of wines sold out quickly, it didn’t take long for him to realize wine in New Hampshire just might be viable.“My marketing brain kicked in and I realized, [winemaking] in New Hampshire could actually work,” said Mark.

MAKING IT BIG Mark began sourcing grapes from outside the area along with more equipment, slowly expanding over the next five years. In 2015, he decided to make the full-time commitment to producing wine in New Hampshire, moving his operation to the popular ski town of Lincoln, where a five-star RiverWalk Resort was being built. Mark set up his winery and tasting room to provide a whole new experience for tourists coming to town. “Moving the production from the orchard to the tourist town was big,” said Mark. “I was able to work and pour year round.”

Nestled just two hours from Boston and two hours from Montreal, Lincoln has long served as a getaway for those needing a break from the city. With visitors coming from these cultural hubs, Mark felt it was necessary to focus on producing quality wines like those people are familiar with.To do so, Mark sources grapes from California, Washington and reaches as far as Chile and South Africa. With fruit arriving all throughout the year, the team at Seven Birches is on a mission to take what they

In addition to quality wine and a portfolio of fruit wines, Seven Birches recently embarked on a new project making hard cider. When the Covid pandemic cut off the Southern Hemisphere grape delivery, Mark was left with extra tanks and nothing to put in them. This prompted him to buy some apple juice from local orchards and see if cider could help meet production demands.Withofferings like barrel-aged cider, Mark applied winemaking techniques and principles to his cider program with the end product drinking more like champagne or that of traditional ciders from the Basque and Normandy regions of Spain and France. With success pouring in from the cider program, the Seven Birches tasting room now offers the Rhythm Studio for a unique experience tasting non-grape wines. For the future, Seven Birches planted a one-acre vineyard with 7 different hybrid vine varieties. With the first years of grape production coming in, Mark is excited to experiment with different varieties to see what might do well in the New Hampshire climate and soil.

“I can’t explain it but the site is growing incredible Marquette, it’s the one I’m most excited about,” says Mark of the hybrid grape variety. With two tasting rooms and a new winery expansion in the works, Mark hopes to take his 5,000 case production to 10,000 cases in the future. With the addition of an event space, he also expects to draw people from all over to come experience the space. HOMECOMING “Beer has been in the family for a long time,” says Tucker Jadczak. The founder of Feathered Friend Brewing, Tucker has made it his business to live up to a lineage of beer lovers. “My great grandfather started the first Anheuser Busch distribution in the north when prohibition ended,” he explains, “Beer is part of my heritage in a way.”

Having opened their doors in March in the up-and-coming southern district of Concord, Feathered Friend Brewery has been a sort of homecoming for Tucker who originally grew up in the area. After living in Boston for many years while working in the music industry, he decided to return to his roots in New Hampshire and was reminded of the fondness he had for the community that surrounds the beer culture. “ I missed the atmosphere that comes from the beer world, especially after working in various other fields for so many years. I got the idea for the brewery when I came back and started bartending again and realized how much I missed the feel of working withTwobeer.”years since they originally laid eyes on their desired location, the brewery has opened this year with a tasting room of 24 taps, a patio space for events, and a seven barrel brewery system which includes canning. Now with 13 different varieties in cans, the brewery hopes to distribute throughout

Being a seven barrel system, Feathered Friend has more wiggle room than most to experiment on new variations while sticking with the classics. Always keeping a wide variety of IPAs, lagers, and sours on tap, they also recently expanded into making seltzers like Bursting Bubbles which is made with real fruit and has a revolving array of flavors like blackberry apricot or prickly pear. “I wanted to make a seltzer that was light and low in calories but still tasted good,” says Tucker. “I didn’t think it was really possible since most other seltzers have some sort of weird taste, but it turns out using real fruit makes it delicious.”

The new kid on the block so to speak, Feathered Friend hopes to expand their brand while keeping the greater community in mind. Always looking for collaborations or new friends, Tucker sees a friendly future with restaurants and breweries alike. Sharing their space with Smokeshow BBQ, the brewery also hopes to bring events to the space and currently hosts live music on Saturday

Despite growing quickly, Tucker always keeps his family close in mind. Wanting to honor his great-grandfather who worked for Budweiser so long ago, Tucker was set on keeping a bird theme for the brand. “ Since Budweiser has the eagle, I wanted something that would be a reminder of where we started,” says Tucker. “ Also, when a lot of my family members have passed, Cardinals have been present. It seemed fitting to use birds for the brand.” Working alongside his father to make Feathered Friend come to life, the heart of his family and heritage can be felt with every sip.
