Her duties include cleaning up any spilled grain by the mill and greeting guests on the tour route. Fun fact—the door placements between the office, production floor, and warehouse were specially designed so she would have the maximum square footage to roam in the distillery.

We Owe It All to Women Women in the Missouri Craft Industry WHAT CAME FIRST: BEER OR BREAD? According to Fred Minnick’s Whiskey Women: The Untold Story of How Women Saved Bourbon, Scotch, and Irish Whiskey, “Nearly four thousand years before whiskey was first distilled, Sumerian women invented beer.” In addition, Egyptian women designed the first alembic still around 3 AD, another tidbit from Minnick’s book. In Missouri, there are many women forging careers in the craft food and beverage industry. Sherry Wohlgemuth, Andi Russell, Stefanie Thomasma, Benay Shannon, Joleen Senter

Durham, and Danielle Shimeall are blazing trails and offering career advice for the next generation of ceiling crashers. Sherry Wohlgemuth, Executive Director of the Missouri Craft Beer Guild, is a not-for-profit sector veteran with more than 12 years at the Columbia Chamber of Commerce. Using her background in journalism and advertising, love of craft beer, and nonprofit management skill set, she promotes the entire industry across the state. “I believe any person who has the passion, drive, and creativity can be successful in the craft beer industry. Historically, women were the first brewers, so I think it’s about time that women are back in the spotlight when it comes to making great beer.” Distiller Andi Russell, with J. Rieger Distillery in Kansas City, took a roundabout course to her career in craft spirits. She started as a chemical engineer aiming to be a brewmaster. After working in oil and gas for ten years, she navigated to J. Rieger through networking. Her best advice is, “You’re not expected to know everything, and feigning knowledge will


not help you.” Andi continues, “It’d be great to see more women on the production side of the distilling industry. It’s a physical job. I go home tired and dirty almost every day, but I love it.” Just A Taste is a veritable craft-a-torium with various cocktails, wines, vittles, and venues. General Manager Stefanie Thomasma says “It feels like a good time to be a woman in the industry since there is a real movement to support and empower women in the workforce.” She intentionally embarked on a food and beverage career after college and has been in the industry for about eight years. things done.” Sound advice that transcends all professions. Former science teacher turned distiller Benay Shannon of Restless Spirits in Kansas City and her husband began distilling spirits to honor their ancestors. “In the process, I discovered I have a gift for producing delicious products using stills and barrels!” Since 2014, Restless Spirits has been crafting gin, whiskey, vodka, and poitin with the rogue attitude of their forefathers who emigrated to America from Ireland in 1853. Benay says, “Do [distilling] if you love it. Not if you’re trying to prove something.” She continues, “Be willing to ask for help, input, advice. Try not to take mistakes personally.”

THE FUTURE IS NOW “I think a woman talking to other women about craft beer is very welcoming,” said Joleen Senter Durham at Piney River Brewing Company in Bucyrus, Missouri. Joleen’s marketing career was an asset when she and her husband opened the brewery in 2010. She applied what she knows to what she loves—beer. It’s crucial to cultivate opportunities in brewing for other women. One hundred percent of her beertenders are female. It is less intimidating to learn about the nuances of craft flavor from other women. “I love looking around my taproom and …

seeing more women than men enjoying the atmosphere and a handcrafted beverage.” Relatively new to the industry, Danielle Shimeall has been in the field for about four years. Danielle is co-owner, general manager, event coordinator, and marketing maven at Springfield’s 4 By 4 Brewing Company. She wears many hats—a skill women have developed over the years no matter what industry they serve. “We have hired so many people who have zero experience in a brewery, but we have been able to teach them from the ground up all they need to know. If you have the passion for it, you can learn it fast!”

SUMERIANS, EGYPTIANS, AND MISSOURIANS, OH MY! Sumerians and Egyptians unwittingly laid the foundation, not only for the craft industry of today but for strong, professional women like Sherry, Andi, Stefanie, Benay, Joleen, and Danielle. Attack your career with passion, ask for help if you need it, rely on your team, don’t beat yourself up—everyone makes mistakes—do what you love. These six women are paving the way forward in Missouri’s food and beverage industry and the nation. U

ermann, MO, is known as the “Napa Valley” of the Midwest, but just a short drive southeast is Augusta, which is definitely expanding Missouri’s appeal as a winetourism destination. In June of 1980, Augusta was declared the first American Viticultural Area (AVA) in the United States. Its unique soil, microclimate, and history of wine production, dating to the German immigrants of the late 1800s, scooped this honor for Missouri ahead of California. Augusta is a quaint, small, welcoming town and an amazing destination for anyone who loves wine. The best feature of this wine town is the Augusta wine trolley which transports visitors to and from four different wineries, each now owned by the Hoffmann family. The best part about the Augusta wine trolley is that it’s complimentary. The trolleys run during the hours the wineries are open and pick passengers up at each winery about every 30 minutes. During the summer months, both the wineries and trolleys have extended hours for the peak season. As a result, patrons can drink wine without having to worry about who will be the designated driver! June is birthday month in my family, and Augusta seemed the perfect place to celebrate. We rented a cute house on Airbnb within walking distance from one of the wineries. There are several bed and breakfasts in town and hotels

in nearby Washington. We invited a few aunts, uncles, and cousins along to help us celebrate. Our birthday wine weekend started on Friday night at Noboleis Vineyards. This is the only winery in town where the trolley does not visit as Noboleis is not owned by the Hoffmann family like the other four.

However, this does not mean it should be skipped. Noboleis is a five-minute drive outside of downtown. This winery offers flights of four wines served on a cute wooden paddle for $5. They also have their own line of canned wine seltzers. We chose to avoid the heat by snatching one of the few tables in the air-conditioning.


Just outside, they have a sizable tented pavilion to offer visitors an escape from the sun. The pavilion overlooks the rolling hills that cradle stunning vineyards. Saturday, was our trolley day. It was a sweltering day with the temperatures in the 90s, but we were excited to explore Augusta. We walked from our Airbnb a couple blocks down to Augusta Winery, where the trolley picked us up. Our first stop of the day: Balducci Vineyards. The countryside was beautiful as we rode to the wineries outside of town. Note

this trolley does not have the party atmosphere experienced on the trolley in Hermann. Balducci Vineyards is visible from the highway with its bright orange building accents and modern-looking barns. The beautiful outdoor wooden tasting bar greeted us as we stepped off the trolley. We couldn’t wait to taste all the Balducci wines and the refreshing wine slushies that came with a souvenir glass. They have a large, elegant, air-conditioned indoor seating area. At the center of the

action is an adorable patio with outdoor games like cornhole and giant Connect 4. The knowledgeable bartenders recommended a wine based on my request for something similar to pinot grigio. Balducci has won the Missourian Reader’s Choice Award for best winery 14 years in a row, and its wines and environment make it evident why. The second stop of the day was Montelle Winery. It has a party atmosphere. When we arrived, there was live music and a dance floor full of www.BrewViewMO.com •

tipsy guests. Being only one winery deep, we chose to get a couple bottles of wine before participating in the festivities. There is no indoor seating at this winery, but there are trees and umbrellas to offer some shade on the bluff-top deck with breathtaking views. There’s food at the Klondike Café, but we selected a charcuterie board from the winery. Montelle is the only winery in Missouri with its own distillery. My fiancé Jake was a great sport all day about trying wines with me, so I did a brandy tasting with him, and that is when the party started. For $15, we sampled four brandy shots. Jake loved it, but it was a little strong for me. About 15 minutes later, the band started playing some trending pop songs, and I was dragging my mom onto the dance floor. Their River White Blend wine was the perfect pair with an afternoon full of dancing and laughter. Next up, the trolley dropped us off at Mount Pleasant Estates. This was the fanciest and most expensive of the four wineries, and when I did a tasting, I could see why. The outdoor patio has a gorgeous view, especially at sunset, 18 • BREWVIEW

overlooking the Missouri River Valley. It was surreal to sit on their patio listening to the live music while enjoying the stunning scenery and sparkling conversation with family. In addition, there was a wedding taking place on one edge of the property. The couple’s pictures that overlook the river valley and vineyard must be stunning. The tasting room at this location is super fancy and offers port shots out of chocolate glasses

for just $4. The sommelier explained at length the process and flavors behind each of the wines he recommended. Just down the hill was our fourth and final stop: Augusta Winery. This winery had the least expensive wines of them all, but was not lacking in taste or quality. It was the perfect wrap-up to our wine adventure. We spent the waning hours of our day reminiscing under the delightful pergola laced with greenery while a local


band played music. It was a relaxing end to an unforgettable day filled with great wine and even better company. Visiting this rural town is a unique experience and perfect for any occasion from birthdays to anniversaries and bachelorette parties.

Make sure to get gas and groceries before arriving in Augusta. Both are a 20-minute trip outside of town. Keep the weather in mind. Summer months may be uncomfortable for heat-sensitive individuals. Take advantage of the MVP Winery program. Registered wineries in Missouri provide codes to enter on the MVP website for points. Points accumulate and can be redeemed for different wine-related prizes, experiences, and sweepstake entries. All of the wineries offer wine tastings for $15, which includes a souvenir glass. Having to carry them around all day can be a hassle, but the wineries do not offer a cheaper tasting price without a wine glass, so safe to say Jake and I accumulated plenty of wine glasses. Taking the trolley is smart, and it’s free. Our second stop of the day, Montelle Winery, was my favorite of the trip, my favorite wines were from Mount Pleasant Estates, and my favorite wine would be Augusta Winery’s, seyval blanc. F

riends Making Beer, Beer Making Friends. This is the official slogan of Wentzville, MO’s Friendship Brewing Company, a paradise of brews, food, and fun in St. Charles County. They bought an entire city block, allowing Friendship to boast the largest outdoor beer garden in the St. Louis area. Friendship is a mustsee for beer lovers all over the Midwest. Brian Nolan has enjoyed a lifetime of beer. Growing up only blocks from an active brewery, Brian watched his father brew at home as a child. Brian spent time

studying in London during college. He was more interested in the classic English pub on the first floor of his apartment building than his own academics. Here, he sampled all sorts of traditional European beer styles, and his taste buds were never the same. Brian claims to be the only college student in history to turn down a Keystone Light. Brian ended up in the corporate world after college, where he stayed for decades. Then came a blessing in disguise —the financial crisis of 2008. Being laid off

from his corporate job meant the freedom to return to his lifelong dream; to make a living brewing beer. Brian withdrew the money from his 401k, rolled up his sleeves, and got to work. Brewing has always been a bonding experience for Brian. Even during his time doing corporate work, he could be found in a basement after hours with friends, trying to one-up their last homebrew. He decided to open Friendship Brewing Company in 2013 as a tribute to the friends that encouraged him every step


of the way. It took three years of intense renovation for the brewery to be up to standards and open to the public. Since its opening in 2016, it has been regarded as a top beer destination in its area and reached max brewing capacity after nine months of business. None of this would have been possible without Brian’s hard work and dedication, but credit is also due to his skilled team. His business partner, David Brewer, and his brew staff: Shawn, Bobby, Kent, Bob, Griff, and Kyle. Brian wanted his brewery modeled after the cozy pub in London where his

journey began. Fast forward to today and walking into Friendship’s indoor tasting room, you may forget which country you’re in. Over 3,000 pieces of beer memorabilia decorate the interior of the historic building, and you’ll feel right at home thanks to Friendship’s warm and inviting staff. The outdoor beer garden is lush and spacious and can accommodate large groups, families, and even dogs. The brewery partners with The Caboose Kitchen, where guests can order staples such as wings, nachos, flatbreads, and wraps to enjoy with their beer. Friendship

regularly hosts various events, such as live music, jam nights, and cornhole league. Their indoor and outdoor space can even be rented out for private events. Friendship’s beer menu leaves little to be desired. With nearly 30 taps available, there is something for everyone to enjoy. Their current menu features 17 of Friendship’s own brews, including IPAs, Hefeweizens, Blond Ales, a Barleywine, even their own hard seltzer, in your choice of flavor. Also available are four specialty beers of their own creation that offer something new and intriguing for the experienced beer drinker. The selection is rounded off with four crowd-pleasers from other breweries, such as PBR, Ace Pineapple, Classic Proper Cider, and Space Camper. plans in the works. Business has been so good that they’re unable to keep up with requests for beer. As a result, they’ve decided to expand and open an entirely new space in Flint Hill. This space will have even more square footage with another tasting room and an outdoor beer garden. This will increase their beer and seltzer production capabilities and allow them to host larger events. In addition, the new facility will contain a distillery space, where they will begin distilling spirits such as vodka, gin, and whiskey. Be on the lookout for news about their brand new facility. Brian Nolan wanted to create a space where people from different backgrounds could come and be friends, with beer as the uniting factor. Friendship Brewing Company has done just that, and so much more, becoming a staple for beer in Missouri. DISTILLERY finds New Spirit

B

ourbon is an all-American spirit, and it is generally agreed around the world that any product sold as “bourbon” must be produced in the United States. Although many identify the beverage with Kentucky, its history in Missouri goes back just as far. Living proof of this exists in the historic Holladay Distillery, constructed in Weston in the 1800s. The distillery has been located at the same site since it was established in 1856 by brothers, and Kentucky natives, Ben and David Holladay. Holladay Distillery is the oldest distillery west of the Mississippi that’s still at its original

site. The brothers recognized that the abundance of limestone springs in the area made it perfect for bourbon production.

HOLLADAY HISTORY Holladay Distillery hasn’t forgotten its roots. Though it took a 30-year break from producing bourbon, current owners McCormick Distilling Company resumed production in 2015, using Ben Holladay’s original 1856 recipe. The first batch of the rebooted bourbon will be released in May 2022. It will officially qualify as both Missouri Bourbon (a state classification) and Bottled-in-Bond (a federal certifica-

tion) — meaning that every step of the production process is Missouri-based and meets the federal quality regulation requirements for certification. And with the distillery in its original location, its rich history is apparent in more than just the bourbon. Holladay is listed on the National Register of Historic Places. Curious customers have always loved touring the 160 acres of beautiful rolling hills, limestone springs, and distilling facilities. The history and tradition of the distillery resonate with a lot of people. Unfortunately, the Holladay Distillery was one of the millions of businesses that had to make the difficult decision


to close its doors to the public in March 2020. They have not been able to reopen for consistent tours ever since. “The safety and well-being of our employees and guests have always been our top priority and will continue to be,” says Jordan Germano, communications manager at McCormick Distilling Company. “We look forward to reopening our doors to the public for tours as soon as we feel it is safe to do so.” Everyone at the Holladay Distillery has missed sharing their passion for what they do with visiting members of the public. Still, they know that tours will be every bit as magical when they are eventually able to resume. As Jordan stated, “It is our passion to develop and produce quality premium products for our customers to enjoy. We appreciate the brand loyalty of our customers and work every day at keeping the history and traditions of our business alive.” “[Holladay] has changed hands several times over the years and was acquired by the current ownership group in 1993,” said Jordan. McCormick operates the Holladay Distillery. “Over the last several

years, the leadership team has worked to build the business by developing a strong portfolio of premium brands.” This quite impressive portfolio includes brands like Five Farms Irish Cream, Tequila Rose, Whicked Pickle (pickle-flavored whiskey) and, 360 Vodka.

360 VODKA In 2007, the company began a number of “green initiatives” to make business and production practices more environmentally friendly. As part of this effort, they decided to create a vodka that would be sustainable and eco-friendly, and 360 Vodka was the result.

GREEN NEW SPIRITS The vodka is made from locally-sourced and sustainably-farmed grain, using energy-efficient distillation processes, and any leftover grains are dried and sent to local farms for feed. In addition, the bottles are made from recycled glass, designed to be reused, with labels printed on recycled paper using eco-friendly ink. According to Jordan, the vodka is “crafted to be as good for the planet as

it is to drink.” She believes the vodka is wildly popular both for its premium flavors, of which there are more than a dozen, and for its environmental mission: “Our customers appreciate the premium taste of 360 Vodka as well as the green initiatives behind the brand.” U

STEP RIGHT UP Beer is the Main Act at Fringe Beerworks

I

t all started in Mark Myers’s backyard in the early 90s when he was studying for his master’s degree in organic chemistry. A group of friends would sit around together and play cards, and like magic, he’d whip out the home brew for everyone to enjoy. Myers never expected his home brew hobby would lead him to where he is today, but he sure is happy it did. As brewmaster and co-founder of Fringe Beerworks, a brewery and taproom in downtown Lee’s Summit, Myers was able to find a way to combine his passion for science with his love of making beer. Myers says he has been interested in science all his life, and after a stint working at a lab that made pharmaceuticals, he found his happy place in the brewing business. “Now I get to do fun chemistry that people get to taste,” Myers says.

GO PRO Myers and his good friend and Fringe cofounder, Eddie Pease, had been hanging out for over 15 years before they decided to take Myers’ backyard brew and go pro in 2016. Both Fringe co-founders are from rural parts of the state who love magic and the aesthetic of the old-fashioned, small-town circus.

So, Myers and Pease wanted to create an experience that captured some of the nuances from that time period, and that is how they came up with the name Fringe for their brewery. “Fringe comes from the circus,” Myers says. “In the circus, you had the big top, where all the main acts were, and then on the edge of the big top, you had the freak show or the fringe acts.”

THE MAIN ACT In the case of Fringe Beerworks, the beer is the main act, and just a glimpse at the wild and tantalizing menu they’ve concocted tells more than just one story. While Pease comes up with the flavors, sometimes seemingly on the fly, Myers uses his background in chemistry and knowledge of flavonoids to figure out how to pull them off successfully. Myers, who calls himself the “mad scientist behind the flavors and taste,” started making a grapefruit wheat beer behind his house all those years ago. That humble brew he passed around during card games is now Fringe’s flagship beer, the Freshly Squeezed Grapefruit Wheat. “If you are up for it, it’s a tasty beverage, but it impacts the palate.”

ON THE MAP The grapefruit wheat is what put Fringe on the map, even before it was open for business. Myers’ brew won the Lee’s Summit Oktoberfest competition in the craft homebrew category in 2017, along with a stout that is now on Fringe’s menu as Madam X. Another story told is Doc Myers’ Snake Oil, a black IPA named after Myers’ father, a Kansas City physician for many years. “The imagery for that is a picture of my father, who has passed, so it is kind of a homage to him,” Myers says. During the height of the coronavirus shutdowns, Fringe remained open and was able to keep its people employed. “We were able to stay open as an essential business because if Missouri had shut down alcohol businesses, people would not be happy,” Myers says. In order to continue satisfying humanity’s insatiable

desire for craft beer, Fringe broke out the crowler and started selling brews to go. At one point, Diametric Brewing Co., another Lee’s Summit brewery, spearheaded a program called Together We Can. The program allowed a slew of local craft breweries, including Fringe, to pool together resources and sell their beer on Saturdays during the shutdown. Cars snaked around the building in long lines in Diametric’s parking lot, where beer lovers would receive a menu detailing the available products from each brewery. “Kansas City has a big craft brew following, and so, people knew that if they wanted to have craft beer after this was over, then they needed to help support the local businesses,” Myers says of Together We Can. During the pandemic, Fringe was able to expand its operation after acquiring the adjacent building, essentially doubling its space, allowing for adequate social distancing. “And so really we were able to do a lot, during that time. And now that helps us have more spread-out space. During the social distancing, we have more space,” Myers says. The extra space allows Fringe to have pinball machines and a dartboard in the back room and more activities for people to do while they enjoy a beverage.

IN CRUST WE TRUST Fringe is also collaborating with Lee’s Summit’s Long-Bell Pizza Co. on what they are calling #InCrustWeTrust. Fringe is using Long-Bell’s pizza crust to brew their crust beer. The crust beer was released on the 18th of February, Myers says. To learn more about upcoming events, such as pinball tournaments and beer specials at Fringe, check out the brewery’s Facebook page. Or stop by Fringe’s quirky, circus-themed taproom for a flight and some kicks, and maybe you’ll get to meet the men behind the brew-madness. “I never would have thought that I would be doing something that I love so much,” Myers says. Whenever he pulls up to the brewery, Myers is reminded that Fringe all started from a thought in his head. “That’s pretty awesome when you think about it. It went from just a thought to reality. And it’s something that people look forward to coming to, and people enjoy,” he says. “And who can ask for more? We all drink to that. I get to live the dream, right?” U 30 • BREWVIEW

An Added Bonus to an Already-Thriving Brewery 4 By 4 Brewing Company to open new facility

W

hat started in 2017 as a joke in someone’s garage became a serious venture for four couples. The result is all eight would realize a dream come true: 4 By 4 Brewing Company. Now, the brewery will expand to a second location to increase production and bolster distribution. Owners Danielle and Derek Shimeall, Justin and Stacy Steenburgh, Chris and Shila Shaffer, and Steve and Kelly Dobbs decided to build the brewery after a birthday trip to Nashville that involved several craft beers.

MAKING SPACE FOR CUSTOMERS TO ENJOY BEER “We came back home and started researching,” says Danielle, general manager/event coordinator/creative maven/social media guru. “It took us about 13 months to get things up and running, and now it has grown far past our expectations thanks to all of our amazing customers.” 4 By 4 Brewing is a locally based, community-and-family-minded taproom and brewing company. It specializes in

NEW, LARGER FACILITY Opening in fall/winter 2022, the Fremont location will have an even larger taproom with an event center. The 12,200 square-foot facility in Christian County will have a 10,000 barrel capacity, significantly greater than the 2,000 barrel capacity of the current location. This larger facility and increased production will allow 4 By 4 to further expand its distribution in Missouri.

As was true for many businesses, the pandemic forced 4 By 4 Brewing Company to become creative and malleable. With curbside pickup their only option, the 4 By 4 owners quickly jumped into canning. They purchased a canning line and now continue to have six beers consistently in the market. They also can everything else in their taproom from their Oktober machine, which seals one can at a time for a complete grab-and-go selection. Currently, the business is operating at 100 percent capacity, and its owners are deeply grateful for their customer support. Future plans are focused on their new building. “We’re building from the


ground up, which has led to a lot of learning for all of us,” says Danielle. “We’re excited to build and learn through the process in order to have a new destination taproom and production facility.” The new brewery will have a spacious patio with green space plus private event space for rent. HURTS

It’s a HURTS DONUT World in Springfield, Full of Sweet Treats and Infectious Optimism

M

ost of us have all used the phrase “world of hurt” in some form of conversation. It usually evokes an effort of trying to overcome something that is painful and despairingly difficult. The year 2020 provided a world of hurt the size of Jupiter. Thankfully, we have turned the calendar to 2021. We should also be thankful that we can put ourselves into a “world of Hurts”. A world of Hurts Donut, in Springfield, Missouri. In that world, pain and pandemic despair are replaced for a little while by fun, sweet goodness, and hope.

GENESIS OF HURTS DONUT According to husband-and-wife co-owners Kas and Tim Clegg, the mission statement of Hurts was to make their own 36 • BREWVIEW

donuts to eat rather than spend money at other donut shops. In a true confession, Kas says “it was cheaper to open a donut shop than to support my donut addiction. I was eating a six-pack of donuts per day!” To satisfy that addiction, the creation of a donut shop was a bit chaotic. Purchasing equipment on Craigslist was more of a leap of faith than most businesspeople are willing to take. Careful development gave way to a scramble to learn how to make a donut, 12 hours before the grand opening of the first Hurts Donut. Even the creation of the shop’s name was more whimsy than meticulous market research, according to Kas. “We just liked the old joke told by my husband’s grandfather. He was a boxer, and he used to playfully give Tim a ‘hurts donut’ all the time.” Kas says ample amounts of fun have been important to the success of Hurts. “We had a vision for a donut shop that was not like any other. When we train our employees, we always say that we want them to be as bright as the donuts in the case. We have a really bright donut shop—lots of colors, and lots of things that you wouldn’t see in another donut shop.”


As the world of Hurts Donut completed its first year of business, it would soon show that it would be a different planet within the galaxy of other donut makers.

EXODUS FROM THE ORDINARY It is not extreme hyperbole to state that there are as many varieties of Hurts Donut, as there are stars in the Milky Way. Kas notes that there are far more choices for the donut enthusiast in a world of Hurts than just the glazed, cake, powdered, and jelly standards. “We have over 70 varieties of classic and specialty donuts. We want things that are going to catch your eye. Sometimes we even say, ‘I don’t even know if anybody would want this, but we’re making a pickle-flavored glazed donut.” The outer limits of donut exploration extend far beyond pickles. To paraphrase Captain James Tiberius Kirk from Star Trek, the world of Hurts goes boldly where no donut makers have gone before. Kas lists some of the exotic flavors that have been brought to Hurts Donut. “We’ve done pizza donuts, we made history with our sausage and gravy stuffed donut, we’ve done root beer float and banana split donuts. And you can pick any donut in our case, and we will make it into a donut milk shake for you.” Yep, and the donut becomes the lid for the shake, and the straw into the cup goes right through the donut hole. Kas adds that Hurts Donut went a light-

year farther, when COVID-19 shut down county fairs last summer. “When the fairs got cancelled, we had a fair food day! We did long johns with hot dogs inside covered with chili and cheese; along with fried Oreo and funnel cake donuts.” Donut lovers are fortunate that the world of Hurts was created by imagination’s version of the Big Bang Theory.

PUTTING A HURT ON THE PANDEMIC When COVID descended upon us in early 2020, everyone had to adapt quickly to avoid becoming economic victims of the virus. Hurts Donut was already ahead of the COVID curve by establishing its nowfamous quote of being open “25 hours a day, eight days a week.” The world of Hurts is even open on Christmas according to Kas. “We are a donation drop-off for people in need, and we deliver donuts and food and clothing as well.” Along with expanding its hours of operation, Hurts expanded its service footprint in an unconventional way by making donut deliveries in an Emergency Donut Vehicle. An ambulance has been repurposed and wrapped to look like a chocolate-sprinkled long john. So, when COVID arrived, Hurts Donut already had evolved to meet the economic challenges that the virus presented. Kas says the owners forfeited their paychecks so their employees could

HURTS DONUT is heavily involved in helping charitable endeavors championed by the owners and employees. Of particular interest is multiple sclerosis, which afflicts Tim Clegg—a co-owner and the husband of Kas Clegg. Kas says Tim is doing well and thriving. Kas adds that “the water bottles we sell benefit the National Multiple Sclerosis Society every day. continue to work, and then they put the Emergency Donut Vehicle to work— making deliveries and using it as a food truck where people could meet it and put the stress of the pandemic aside for a little while. “We really had some great days doing that, and it gave people who couldn’t get out because of COVID a chance to put smiles on their faces when the donut ambulance came out.”

REVELATIONS OF HURTS’ FUTURE When Hurts Donut opened in November of 2013, it had just learned how to make donuts by watching YouTube videos, and it had less than seven dollars in the bank. But, in 2016 and 2017, Hurts won the Springfield Business Journal Economic Impact of the Year Award for businesses one to five years in operation. Now, the world of Hurts is nationwide and will soon open its 17th location. U

DogMaster Distillers is run by a small litter of dedicated professionals who didn’t embark on a career in liquor production, but here they are. Three couples formed a puppy pile around the idea of making good spirits, and they have been chasing squirrels ever since. 40 • BREWVIEW

an Hawxby is a self-proclaimed “Oklahoma farm boy who married a Missouri girl.” Since the late 90s, Van made Missouri home. However, during a sojourn to Portland, Oregon, he realized that his knack for distilling paired nicely with the living he had been making behind the bar. So, about seven years ago, Van and his wife Lisa started DogMaster Distillers in Columbia, Missouri. Today, the company is a force in the industry, with an impressive lineup of decorated spirits. “A little light bulb went off in my head,” he said about his earlier days on the West Coast. His background in bartending, plus a love of spirits, meant "with a little bit more knowledge and the appropriate equipment, I could be dangerous.”


The Hawxbys weren’t the only ones who thought the idea was tracking, and before long, Van was the alpha dog. Lisa’s best friend from kindergarten, Stephanie Batliner, and her husband, Dan Batliner, jumped in as co-owners and operations managers. Joe and Amanda Pangborn are the third couple who form the DogMaster pack, contributing to the company in a variety of ways in addition to being co-owners.

“NET!” TO RUSSIAN VODKA The brand started off with clear products, such as its recognized white whiskey and craft vodka. Since DogMaster’s inception, Van’s thirst for distilling knowledge intensified, leading him to workshops around the country. “I find that people in the industry are very friendly and accommodating.” At seminars in the Midwest, he was not afraid to ask “stupid questions.” As his knowledge grew, so did DogMaster. Eventually, DogMaster retrieved an award-winning gin from their diligence in the distillery, landing it in the top 10 gin brands to try in 2020 by USA Spirits Ratings. “I was really pleased with the accolade.” Currently, DogMaster is

developing some new products. Most notably, rye whiskey is in production.

LOCATION, LOCATION, LOCATION DogMaster gets most of its corn, oats, and wheat from central Missouri growers. The malted barley is a Canadian product that is purchased from a malting house in Chicago. According to Van, “It’s important for us to support local agriculture, so we buy as much raw material as possible locally from local growers. [DogMaster spirits are] definitely a Midwestern product.” The folks at DogMaster like to showcase their inventory in cocktail form, so the best way to sample the distillery’s award-winning lineup is at its full-service tasting room. Though it can be purchased throughout the area, they anticipate expanding to Kansas City and St. Louis in the near future. A car ride to Columbia? Oh boy! Stop by the DogMaster tasting room to grab a cocktail and be surprised by Missouri spirits. And Van’s message for the bourbon snobs out there who say that if it’s not from Kentucky, it’s no good? “Let me prove you wrong.” U

SOCIAL DISTANCE IN INTIMATE QUARTERS PUBLIC HOUSE BREWING ADAPTS TO THE DEMANDS OF THE PANDEMIC

ike lots of kids, Josh Stacy was expected to do chores. Unlike many young helpers, his tasks included “a lot of hoses.” Aside from gardening and canning, his parents were into making beer in the late 70s and early 80s—way before homebrewing was considered cool. He was milling grain and cleaning out bottles for reuse from a tender age. Not seeing himself as a future brewer, he was more into playing music and writing songs. Stacy and his friend Josh Goodridge were aspiring musicians. They jammed, played some gigs, and

fantasized about spotlights and crowds. Broken dreams, like broken guitar strings, sting a bit when they pop but are quickly replaced.

BROKEN DREAMS LEAD TO BREWING CAREER By the time they were in their twenties, the two Joshes realized their rock and roll life had stalled, and they spent a lot of garage time drinking beer. Beer they were making. A new ambition began to form. The fact that Stacy had been involved in making beer most of his life boded well

when they pitched a crazy idea to their wives in 2007. Why not start a craft brewery? With permission from their other halves to quit proverbial day jobs, the two cashed out retirement and gathered all the funds they could to start Public House Brewing Company. The Joshes’ vision was “focused on the overall experience, not just the liquid in the glass,” says Stacy. He continues, “From the very beginning, the idea was to create an atmosphere and a space where people could seek respite from the day-to-day.”


What they had in mind was a good old-fashioned English pub. A welcoming environment. A gathering place. A watering hole. In 2010, there were just three beers and a couple of Missouri wines on hand at their brewpub. In 2014, they launched the St. James Taproom and their partnership with St. James Winery. “We now have a full [food] menu at both locations,” says Stacy. Not to mention five year-round beers, seven seasonals, and five limited releases. He continued, we “focus on partnering with local producers and manufacturers as much as we can.”

UP CLOSE AND PERSONAL The idea from the onset was to highlight flavors that are unique to the region. “Most breweries are doing that at a distance,” says Goodridge. But because of the second location’s proximity to St. James Winery, “We’re next door. We can visit, we can talk with the winemaker, we can test barrels.” Their first location, in Rolla, is the flagship and still the heart of the whole operation. It concentrates on pulling the local community together, whether that means striking a balance between Fort Leonard Wood and Missouri University of Science and Technology or giving a group of townies their own “Cheers.” The St. James Taproom, by contrast, offers a pit stop and a leg stretch from Interstate 44.

Both are an inviting shelter for individuals and groups alike. Each space serves as meeting room, conversation area, and a place to forge a bond.

COVID-19 pandemic moved in and made itself comfortable. The Joshes jostled and rallied. They adopted new practices to stay within local, state, and federal guidelines. “We had to adapt,” says Stacy. “The team did a good job of constantly pivoting to meet the customer needs, all while staying safe.” The taproom location was shut down. The hours of operation, the menu, and seating were restricted at the brewpub. Online ordering, curbside pickup, and to-the-door shipping began all over Missouri. Of course, sanitation practices needed to be intensified, too. Throughout it all, Public House Brewing Company kept their eyes on providing a memorable taste experience for their customers. Not even a pandemic could dampen the spirits of Public House Brewing Company’s co-owners Josh Stacy and Josh Goodridge. The reward for 10 years of serving the local community is a fanbase that returns the favor post-COVID. THE CONTINUED SUCCESS OF WAGES BREW COMPANY

I

t was nearly five years ago that a small brewpub, called Wages Brew Company, opened its doors in West Plains, Missouri. Despite the unexpected pandemic, it is bouncing back and on the road to normalcy, according to co-owner Phil Wages. Founded by Phil and his wife Amber, Wages Brew Company opened its doors on August 26, 2016, with head brewer Amy Fischer. The small brewpub carries

three regular beers plus three to six seasonals, one Kombucha, and two sodas—all homemade.

PANDEMIC IMPACT “Last year, sales were down 65 percent, especially during the early lockdown, curbside-only days,” Phil says. “Between the drop in sales, social distancing, and additional expenses related to the pandemic, we

needed both PPP loans and a state grant to get through it. But we also learned ways to be more efficient, so

I think we’ll come out stronger when things finally return to normal.” When the COVID-19 lockdown began, for instance, Wages Brew Company immediately switched to curbside, working with a local chef to provide food along with their canned beers to go. There were also shortages of aluminum cans. Phil contacted a brewery friend to buy 16-ounce cans, enough to allow the curbside service to continue from April through June.

BACK TO BUSINESS In July 2020, the brewpub opened outside only with beer being served in plastic cups. After a month or so of that, plexiglass was installed on the bar. Better glassware that wouldn’t break in a commercial dishwasher was purchased. “That allowed us to fully re-open along with socially distanced tables,” says Phil. “The state also allowed us to offer deliveries and cocktails to go, which worked great with our single-can seamer and house-made sodas.”

PIZZA PARTNER After a time, however, the arrangement no longer worked for the brewery’s chef partner, so that initiative ended. In November, Wages Brew Company partnered with Ozark Pizza to offer a limited menu of their pizzas, which was a significant factor in bringing customers back. 48 • BREWVIEW

The brewpub is now fully open, although still following CDC guidelines with socially distanced tables. “We’re now ready to attend festivals and are starting to add back our regular events such as Trivia Night,” Phil adds. “We also host many community fundraisers, host live music, and we’re looking forward to partnering with other local restaurants.” Moving forward, Wages Brew Company intends to expand its staff and eventually add lunch hours while also rolling out draft to local restaurants, Phil notes. “I don’t believe much of any of this would have happened without having to be creative during the pandemic.” U

BeerSauce Shop opens in KCMO FANS OF FLAVOR CAN NOW HEAD TO BEERSAUCE SHOP KANSAS CITY for their craft beer fix, artisan barbecue sauces and rubs, small-batch whiskey, and a full BBQ menu. BeerSauce Shop’s fourth location opened at 1219 W. 103rd Street in early 2021. Owners Rick Duree and Andrew Tessmer offer a restaurant, bar, and bottle shop all under one roof. “Since the first BeerSauce Shop opened … in 2017, the goal was to put a bunch of our unique flavor experiences in communities that we think would really get along with our mission,” said Andrew Tessmer, Beer Guy and co-owner. His team curates “a rotating selection of 500+ craft beers, 200+ BBQ sauces, hot sauces & rubs, and local craft whiskeys [for] the community,” Andrew said. He continued, “We’ll have some 60 new beers land on the shelves each week —about 25 of those are allocated beers that have never been released before. Plus, we’re always finding the latest draft brews to fill our taps,” Andrew said. “Another exciting part of our beer program is collaborations, which allow us to work with some of our favorite breweries to bring original, premium, never-before-released-beers exclusively to BeerSauce locations.” BeerSauce Shops rotate through their vast inventory of barbecue and various condiments, including pickles, hot sauces, and rubs.
