3 tablespoons olive oil 6 Chicken Thighs 2 Thin skinned Preserved Lemons 2 tablespoons Dark Olives 1/2 teaspoon of saffron in hot water 2 Onions 4 Cloves Garlic 2 tablespoon of Ground Ginger 1/2 tablespoon of Cinnamon 1 bunch Parsley 2 bunches of Coriander
In a heavy bottomed shallow pan add the olive oil, sliced onion and crushed garlic. Once the onion has wilted add the ground spices. Saute the onions with the spice and then add the chicken. Gently fry the thighs until slightly browned, and then add the preserved lemon chopped up into small pieces. Add the chopped up herbs, saffron infusion, olives and 175ml of water. Season with salt and pepper then cover the pan and allow to simmer slowly for around 45 minutes. The dish will be ready to serve with warm bread, rice or couscous. As with curries tagines taste better the following day.

St Peter’s Ale House THIS is certainly not your average pub. St Peter’s Ale House is Bedford’s first micro-pub and brings a different approach to drinking. Joseph Kearney and Rob Taylor, who run Red Brewery in Great Staughton, opened the doors at the end of November last year to rousing success. There is no fruit machine or mass produced lager in sight. Joseph said: “We wanted to get away from the typical ‘pub’ feel and create a relaxed atmosphere for people to pop in for a drink after work, or for those who appreciate real ale. Owning a microbrewery allows us to be a lot more flexible with the beers, giving our customers far more choice. We often swap our beers with other similar breweries both locally and further afield.
Rob added: “Our venue is much bigger than people would expect for a micro-pub. Many people imagine a tiny dark room, our pub is completely the opposite. We are in a great spot, surrounded by restaurants and the rugby ground is literally next door. We use the pub to showcase not only our beer but other local brewers, we gravity drop all beer and are CAMRA LOCALE accredited. We also serve 8 or 9 ciders and perry from local Cideries such as Hardings, Cromwell, Eversheds and Dunton.”

Five Greens Lasagne Serves 2-4 depending on appetite. Preparation time 15 minutes Cooking time 20-30 minutes. A bunch of spring onions Few anchovies in oil (optional) 3 cloves of garlic 175g asparagus 175g broccoli 250g frozen peas 150g frozen broad beans Handful fresh mint 150ml single cream 1/2 lemon (zested) 150-200ml vegetable stock 250g cottage cheese 1 packet lasagne sheets (dried or fresh) Parmesan cheese Fresh thyme (or a pinch of dried thyme)
Half fill and boil the kettle. Pour a little oil from the anchovies (if using) into a thick-bottomed saucepan and place on a medium heat. If not using anchovies use a tablespoon of olive oil. Finely slice the spring onions and half of the anchovies and then add them to the saucepan. Crush the cloves of garlic into the pan and fry until soft but not too coloured (burnt garlic is bitter). Snap the woody ends from the asparagus and discard. Finely slice the remaining stems asparagus into 1.5cm pieces. Break the broccoli into small florets of a similar size and add both broccoli and asparagus to the pan with a splash of boiling water from the kettle. After five minutes, add the peas and broad beans along with a pinch of salt and pepper. Stir well. Roughly chop the mint leaves then add them to the saucepan along with the cream. Grate in the zest of the lemon to taste. When the vegetables are soft, use a potato masher to mash some of the filling to create texture. Add the vegetable stock; bring to the boil before lowering to a simmer and adding half the cottage cheese. Give everything a good stir and cook for a few more minutes. Preheat the oven to 200°C. Take the vegetables off the heat and spoon around one third to a half of the mixture into a deep lasagne dish (approx dimensions 20cm x 15cm). Top with a lasagne sheet and a generous grating of parmesan cheese. Repeat the layers of vegetable and lasagne sheets until you have used all of the filling and then top with a final sheet. I prefer less pasta to filling so use fewer layers but it works as well with three layers. Mix the remaining 250g of cottage cheese with a splash of boiled water and then spread over the lasagne. Sprinkle over the thyme along with another good grating of parmesan and a final drizzle of olive oil. Bake in the oven for around 15 minutes until the topping has browned. Serve immediately with a green salad.

Tea consumption increased dramatically during the early nineteenth century. It is around this time that Anna, the 7th Duchess of Bedford is said to have complained of “having that sinking feeling” during the late afternoon to her butler. At the time it was usual for people to take only two main meals a day, breakfast, and dinner at around 8 o’clock in the evening. The solution for the Duchess was a pot of tea and a light snack, taken privately in her boudoir during the afternoon.

Later friends were invited to join her in her rooms at Woburn Abbey and this summer practice proved so popular that the Duchess continued it when she returned to London, sending cards to her friends asking them to join her for tea and a walk in the fields. Other social hostesses quickly picked up on the idea and the practice became respectable enough to move it into the drawing room. Before long all of fashionable society was sipping tea and nibbling sandwiches in the middle of the afternoon.

eatcure is an obsession in the spirit of New York burger joints. They have principally taken simple street food and made it good. The butcher is local and sources prime cuts to make their patties. They sandwich them in between the daily baked brioche and smother them with carefully selected toppings to craft the perfect burger.
Brunch is done properly sourcing local produce and the coffee is their own single origins blend. On the menu are shakes, hard shakes and sundaes, the old 1950’s diner kind of way. As for the kids they don’t do that any differently. They simply take a patty, break it in half, press and cook. They even have the baker make the kids brioche too.
They serve good craft beers with Camden Hell and Pale on draft. Their wine has been hand picked, is affordable and most important extremely drinkable. All this in an environment that is interesting and just pretty easy going with an epic soundtrack. They believe in up-cycling or at least making what they can themselves.
All in all they are about being at the heart of the community. It’s about family, your family joining their family!
