he Family Business 171 Years Under the Big Top! By Judi Johnson Back by popular demand, the Zoppé Italian Family Circus returns to Chandler December 26-January 5! Last season audiences were charmed and dazzled by this Old-World family circus and they can expect the same this season with new acts and audience favorites! If you’ve never been to see the show, the Zoppé Italian Family Circus is reminiscent of the intimate one-ring European family circuses of the last century. The inside of the tent is very colorful with strings of lights and festive Italian music playing in the background. This magnificent show is propelled by a central story featuring acrobatic feats, equestrian showmanship, canine capers, clowning and plenty of audience participation. At the end of the show, performers position themselves outside of the tent and thank patrons for coming, shake hands and take pictures. Giovanni Zoppe, the sixth-generation circus performer who plays Nino The Clown, says the show aims higher than the high–concept, high-dollar cirque shows. “Nobody knows what real circus is,” said the show’s front man and lead clown, Giovanni Zoppé, 46. “I’m not going to say we’re better than a Cirque du Soleil show at all. It’s a wonderful, wonderful thing. But it’s not circus. When a kid imagines a circus, this is what they think of. It’s exactly the way it’s supposed to be. It’s like the circus was 100 years ago.” Or, more precisely, as it was 171 years ago, in 1842, when a French clown named Napoline Zoppé met a ballerina, Ermenegilda, in Hungary, and they ran away to Venice. They were Giovanni’s great great-grandparents.

DeMille brought Giovanni’s father Alberto Zoppé here from Italy. Alberto appeared in “The Greatest Show on Earth,” Mr. DeMille’s Oscar-winning film, and rose in circus lore with his signature act: a backwards, flat somersault - his torso straight as a pole, not tucked into a ball - off the back of a running horse onto the back of a second running horse. He met his wife, then Sandra Kayler, in the early 1960’s on the road. “They asked for volunteers from the audience,” Sandra recalled. “No one would volunteer for it, and I felt bad, so I volunteered. He was 43. I was 17.” They married and had three children. Alberto passed away in 2009 leaving Giovanni as the patriarch of the family business. Twenty-three years ago, it almost fell apart. Giovanni was 30 feet from the ground, spinning end-over-end while standing on a trapeze, a highlight of his clown act. “I went outside the circle of centrifugal force. I came down headfirst. I remember falling, but I don’t remember much after that.” His mother said he landed in a fetal position in the sawdust of the ring and stopped moving. “I dream about it,” she said, still clearly shaken by the memory.

The following are reactions from each of AZ Weekly Entertainment Magazine’s film commentators in an effort to generate a wellrounded overview of this weekend’s new releases.

‘Saving Mr. Banks’

‘American Hustle’ Christian Bale plays a con man who, along with his seductive British partner (Amy Adams), is forced to work for a wild FBI agent (Bradley Cooper), who pushes them into a world of Jersey powerbrokers and mafia. (R - 129 minutes)

‘Inside Llewyn Davis’ Oscar Isaac plays a young folk singer who navigates the Greenwich Village folk scene of 1961. Guitar in tow, huddled against the unforgiving New York winter, he is struggling to make it as a musician against seemingly insurmountable obstacles - some of them of his own making. (R - 105 minutes)

Stan: Making my top ten movies of 2013, with eclectic characterizations by an ensemble cast totally playing against type, ‘American Hustle’ with the overall theme of ‘everybody hustles’, is quite the ride from start to finish. Notably Christian Bale whose usual persona disappears, and Jennifer Lawrence who sheds all references to her ‘Hunger Games’ role making my best supporting actress list.

Stan: Filled with music, humor, and capturing the essence of the 60s I grew up experiencing as I came to fruition of my formative years, ‘Inside Llewyn Davis’ presents a ‘snap shot’ view of the times as it focuses on one person among many, as the film highlights the determination to follow the beat of our own drum, no matter what the outcome maybe, is the basic element of living life.

Randy: One of the best pictures of 2013 features not only an intriguing and inventive plot, but also a fine cast of actors and actresses that shine in their roles. David O. Russell once again creates a modern masterpiece and is able to highlight the talents of Bradley Cooper and Jennifer Lawrence, as well as Christian Bale and Amy Adams. Lawrence manages to steal the show amongst strong on-screen competition.

Randy: This Coen Brothers musical drama easily ranks in my Top 10 for favorite films of the year. There is enough dry humor to identify it as a Coen Brothers film, but it is not their typical fare. The black and white cinematography along with fantastic set and production design transport you to the early 1960’s and the creative and memorable original music draws you in. A highlight is the supporting performance by John Goodman.

Joseph: “American Hustle” boasts a spectacular cast, some stunning production and costume design and magnificent music. However, it suffers from a few too many cooks standing in front of the science oven, giving too many characters a narrative voice thereby making it a very verbose motion picture whose story is nearly impossible to follow from beginning to end.

Joseph: “Inside Llewyn Davis” genuinely moves through melancholy. What is essentially the story of a man whose struggle to barely get by parallels that of a stray cat works on several levels. It is not only a poetic observation of how struggle inspires art but also an extremely entertaining satire of folk music history, filled with wry laughs and a soundtrack that you will want to own the moment that you leave the movie theater.

Emma Thompson portrays author P. L. Travers who reflects on her difficult childhood while meeting with filmmaker Walt Disney (Tom Hanks) during production for the adaptation of her novel “Mary Poppins.” (PG-13 - 125 minutes) Stan: Providing an insider’s view of bringing the classic “Mary Poppins” to the screen, presented is the creative processes of fine tuning details from the production side and the ongoing quest of control as the author of the novel is determined to not to relinquish any of the core attributes to her story, with an outstanding performance by Emma Thompson, is more than worth a watch. Randy: Viewers can overlook the historical inaccuracies and fabricated plot points due to the fact that this Disney drama/comedy features fine performances by all involved and provides a glimpse into the mind of a dysfunctional writer who is known for creating one of the most recognizable stories of the 20th century. Emma Thompson deserves all of the recognition she has been receiving. Tom Hanks does a great job playing Disney and of note are the performances by BJ Novak and Jason Schwartzman as the Sherman Brothers. Joseph: There are moments during “Saving Mr. Banks’s” long and drawnout runtime that will bring a smile to your face while warming your heart but there are others that are too impassive and slow-paced. Having said that, Emma Thompson is terrific and it is an overwhelmingly pleasant motion picture. And you know what they say about spoonfuls of sugar...

Writer/Director Eric Heisserer (‘Hours’) By Joseph J. Airdo In “Hours,” which is now playing in theaters, Paul Walker plays a man who arrives at a New Orleans hospital with his pregnant wife (Genesis Rodriguez), who has gone into early labor, when the birth goes tragically wrong and Hurricane Katrina ravages the city, forcing an evacuation. Walker, who gives the richest and most multifaceted performance of his career in the film, was killed in a Nov. 30 car crash. “I am angry because [Paul Walker] worked so hard at this performance and he was eager for the world to see it. He had already had several studios here in LA take a look at the movie privately in a screening and he was starting to get offers for roles that he thought that he would never get and movies that he had been wanting to do for several years. As I told him at the press junket a week before his death, I really just warmed him up for bigger and better things and this movie was to be a springboard for sort of a turning point in his career. And it just makes me angry that he is not around to benefit from all of that hard work. “He approached this role by thinking

more about how he would behave in certain situations. It was sort of a peeling back and exposing a raw and emotionally vulnerable version of Paul Walker. Whereas some actors approach [their performances] as chameleons where they put something on, his was sort of a stripping down - metaphorically speaking. I tried to help him narrow the gap between the character of Nolan and who Paul was in real life because the more that we shortened that distance the more authentic his performance became. “He would come to me now and then and ask about his character’s father. That would lead us to discussions about Paul’s relationship with his own father and that informed some of the content in the movie itself. There is a moment when he is there alone in the room with his daughter and is placing artifacts from his wallet on the incubator and telling stories to her about them. One of them is a U.S. Cavalry card that Nolan got from his father. On the back of it is a quote that said, ‘There is no quit.’ All of that was Paul’s invention. All of that came from Paul. STAND UP PADDLEBOARDING MAKES WAVES IN ARIZONA The Experts at No Snow Stand Up Paddleboards say the Emerging Sport is Perfect for Arizona’s Lakes By Michelle Talsma Everson IF YOU THINK ARIZONA is the last place you’d find an up-and coming water sport, think again. Stand up paddleboarding (SUP) is a fast-growing aquatic activity that involves minimal equipment and maximum fun. Better yet, unlike surfing, there is no ocean required — the Valley’s lakes and other bodies of water do just fine. What is SUP? For starters, Stand up paddleboarding involves a few pieces of gear: • A flat paddleboard, which mirrors a larger, wider surf board. • A stand-up paddle. • A personal flotation device (like a life jacket). • Proper attire, such as a swimsuit, and sun protection. Once you have your gear, the object is to get up on the paddleboard, balance and row with the paddle. Many beginners start by balancing on their knees. The sport is ideal for calm water and — although it requires balance — is surprisingly easy to learn. SUP has become popular among surfers, snowboarders, skateboarders and other athletes in, addition to outdoor enthusiasts. “Stand Up Paddleboarding is something you can do in Arizona yearround,” says Court Fetter, who along with his wife Heather, own No Snow Stand Up Paddleboards in Mesa. “You can go anywhere from Lake Powell to any of the manmade lakes around town. We’ve seen people from ages 6 to 69 participate in SUP; almost everybody can do it.”

SUP growing in the Valley When it comes to SUP, the folks at No Snow Stand Up Paddleboards are helping to lead the way here in the Valley. Fetter said he always enjoyed surfing. Upon discovering SUP – he realized it was something he and his family could do together. A year-anda-half ago, he found an SUP board he liked and showed it on social media. One thing lead to another, and he and Heather began renting boards out and taking others on SUP trips. Eventually, their business outgrew their garage and they opened up No Snow SUP, which Fetter says is the only exclusive SUP shop in the Valley. “We rent and sell only the best SUP boards, paddles and accessories, and we also provide lessons through certified instructors,” Fetter said. “Usually people would have to wait to order a board elsewhere, but they can find one here and walk out with it.” Fetter said the sport of SUP is in its infancy and people are just now catching on to it. It is popular in places like California and Hawaii, and he hopes to see it take off in Arizona. “Looking to the next year or so, we’d like to have regular group meet-ups to go stand up paddleboarding; there is definitely a social aspect to it,” he adds. “No Snow SUP is the place to go if you’re even just considering the sport. Every person has different SUP board needs and you’re not going to have any fun if the board isn’t right. Typical prices run from $50 for a half day to $70 for a full day. • If you plan to buy, expect to spend at least $1,200 for a quality board and paddle.

Many of the problems I’ve faced in my life, I actually created for myself. Sometimes it makes us feel a little better in the short term to blame other people or circumstances for our problems, but usually you don’t have to look much farther than the mirror to find the root cause for most your problems. For me, it was putting things off…procrastination…just not getting started that kept me mired in underachievement. I used to think that if I simply waited long enough and did nothing, the problem would somehow take care of itself. It never did. Well, I shouldn’t say never. Sometimes it would go away, but not really. Just enough to make me believe that if I ignored it for long enough, it would go away. It always came back, and with a vengeance! Today, I am surprised to find how many people continue to think that way. In the words of Benjamin Franklin, “Never put off till tomorrow, that which you can do today.” We heard it from our parents, our teachers and we even say it to others, but do we adhere to the admonition? Unfortunately, most actually conduct their lives as if it read, “Never do today that which we can put off till tomorrow.” And, tomorrow never comes - and all the potential, possibilities just seem to waste away. Lives literally ‘fade to black’ like the end of a movie, due to procrastination. Of course there are degrees of procrastination, where you can put things

Procrastination is one of the deadliest of diseases and takes a heavy toll on personal happiness. To my way of thinking, happiness and procrastination are completely incompatible. In order to succeed, you MUST eliminate the tendency to procrastinate from your life. Develop the habit of not just doing it, but DO IT NOW! People who procrastinate are always saying things like, “I sure hope things get better or maybe somehow things will just work themselves out.” In other words, they’re wishing and hoping, setting up their self-support system for maintaining their putting-things-off behavior. Procrastinators also feel that their lives are boring. Boredom is frequently an offshoot of not doing the things that scream for completion. Incomplete actions are a major cause of stress and poor health, as well. Think of yourself as too important to continue living with the anxiety caused by procrastination. Plan the next hour instead of thinking of things in the long-term. If you want your life to change, don’t complain about it. Do something about it…change it…now! Think in the now and live in the now instead of using up all your present moments with all kinds of immobilizing anxiety over what it is you’re putting off. SOUR IS THE NEW HOPPY In case you haven’t noticed it, sour beers are becoming increasingly popular. In fact, just last week, we labeled sour beers as one of the big trends in craft beer . People are discovering that, once you get past the first couple of sips, sour beers can be refreshing and adventurous. For that reason, I always refer to them as “three-sip” beers. The first sip you want to spit out, the second sip is a little more palatable…and finally by the third sip you are starting to appreciate the simple complexity of the beer. So, where did these beers come from and how did they get so popular? Recently, craft brewers have pushed the envelope by creating increasingly hoppy (bitter) beers that have challenged the taste receptors and been part of the backbone of the Extreme Beer movement. By now they have created all sorts of new flavors whether through dry hopping, wet hopping, continuous hopping, single hopping (let’s leave triple hopping out of this…makes me think of domestic light beers) or whatever other type of hopping exists. Bitter is great and there is probably plenty more to discover, but people looking for extreme flavor are looking to be challenged with something other than bitter. And that’s where sour beers are starting to make their move. Not that creating sour beers is a new concept…as we will see a couple of paragraphs down, it is old as beer itself. It’s also not brand new to craft brewers either. Tomme Arthur created a beer called Mo Betta Bretta sometime around 2004 when he was at Pizza Port and I am sure that

wasn’t the first of the American Wild Ales as they have come to be known. However this one sticks with me in particular because of a symposium I attended in 2005 at Papago Brewing Company in Scottsdale Arizona. The event was a brewers’ roundtable featuring Tomme, Sam Calagione of

Dogfish Head, Adam Avery of Avery Brewing, Derek Osborne from BJ’s Brewery, Andy Ingram from Four Peaks and Jim Scussel from Oak Creek Brewing. The topic was extreme beers and each brewer featured some outrageously strong beer. Except for Tomme Arthur. Tomme brought the aforementioned Mo Betta Bretta and made the point that extreme beers didn’t need to be high ABV hop bombs.

A simple 6% ABV beer could still be considered extreme because extreme is about flavor and nothing else. The beer was mouth puckering sour and it was refreshing and it was perfect. I had tried sour beers before, but after this one, I was hooked. As a side note, this beer was brewed collaboratively

with Peter Bouckaert of New Belgium Brewing in Colorado. Peter had come to New Belgium by way of Rodenbach, perhaps one of the best producers of sour style beers. Anyway, let’s see if we can’t dig in to the history of sour beer just a little, figure out where the styles came from and then end on a high note. Not likely, but here we go.

There are a variety of styles that get rolled up under the term “sour” and it may not be entirely fair to stick them all with the same label, but at some level the similarities in these styles outweigh the differences. There is so much going on with these beers that perhaps the descriptor sour may not even be appropriate. Jeff Sparrow, author of a book called Wild Brews, had originally titled it “Sour Beers.” But as he explored the Belgian brewing traditions that have contributed so much to the topic, he changed his mind. “I always say that this beer isn’t sour—it’s wild. I say that because, if all a beer was, was sour, who’s going to like it? There’s so much more going on.” What styles fall in to this category? There are lambics and their attendant variations made with fruit or by blending old and young in to Gueuze; there are the sometimes vinegar like West Flanders Sour Red Ales; the East Flanders Brown Ales, sometimes called Oud Bruins; the “champagne of the North,” as Napoleon Bonaparte dubbed the German Berliner Weiss and even the classic Pierre Celis Belgian Witbier. To understand these beers it helps to understand a little about the “bugs” that make them. There are four basic types and hundreds of variations. Brettanomyces is wild yeast that produces flavors and aromas that are best described as funky. Other descriptors like horse blanket, bandaid and sweat don’t sound quite as appealing…but they are accurate. The other three most common bugs are lactobacillus, pediococcus and acetobacter. But wait you say, struggling to recall your high school biology, aren’t those last CONTINUED ON 44...

...CONTINUED FROM 42 three some kind of bacteria? Of course they are and they provide absolutely wonderful flavors to these amazing beers. The first two produce lactic acid which is the same thing in sour milk, but in beer, lactic acid takes on more of a sweet and sour characteristic. The latter produces acetic acid which is responsible for the vinegar like flavors in some beers. These can all combine to produce esters which is a complicated chemical compound. All you need to know is that they provide some incredible complexity in a beer.

Lambics are produced in very few parts of Belgium and are typically done in a cobweb filled, dirty appearing brewery, sometimes with windows to throw open to the fields outside. The reason for all this is to capture the natural wild yeasts surrounding the area in an open fermentation process allowing them to bring the unique flavors of that particular region to the beer. Young and old lambics can be blended to produce gueuze and fruit can be added to produce a fruit lambic. In the case of fruit lambics, raspberry (Framboise) and cherry (Kriek) are the most common, but other fruits can be used. Beware of certain lambics that don’t have the funk you would expect from this process. These “coca cola” lambics, as they are called typically add Acesulfame-K, a type of saccharine, to artificially sweeten the beer to make it more appealing to mass consumption. This is loosely based on an old Belgian tradition of serving the lambic with two sugar cubes, allowing the consumer to determine whether or not to sweeten the beer and exactly how much. The Flemish Sour Reds are wonderfully complex beers that rely on the accumulation of bugs in the wooden vessels they are stored in to produce both lactic and acetic notes to the beer.

At renowned Rodenbach, brewmaster Rudi Ghequire defines the acidification of the beer as “a late Middle Ages conservation method” that prevented spoilage by pushing pH levels too low for dangerous bacteria to thrive, as older, more acidic beer was mixed with younger batches. Foeders, the giant oaken tuns where the beer matures, vary enough from one to another that several different foeders are tapped for the final blend. Oud Bruin beers rely on the introduction of the bugs directly and are fermented in stainless steel to help control the final product a little better. These beers tend to be sweeter than their red counterparts with flavors of caramel, toffee and dark fruit. The final product is very malty with undertones of sherry. Berliner Weisses are different in that they are typically made from unboiledwort (unfermented beer) which is even more conducive to the lactic acid producing bugs. Berliner Weisses can be out of this world tart and have been compared to incredibly tart lemonade. These beers can be absolutely refreshing on a hot day. The Berlin brewers took notice of some people’s aversion to too sour of a beer, but instead of sugar cubes as with the lambics, Berliner Weisses are frequently served with one of two syrups. A himbeer or raspberry syrup to provide a sweeter fruit counterpart to the sour beer, or a woodruff syrup which is an herb grown in Germany. The woodruff syrup is more woodsy, but takes advantage of the natural sweetness of woodruff. Finally, the Belgian Wit…Pierre Celis, who recently passed away in his late eighties, is credited with reviving this style at a number of breweries both CONTINUED ON 46...

In reality, according to legendary beer author, Randy Mosher…well let him tell you in his own words. “Pierre Celis was pretty generous with details about his beer, but I understand he had a locked room in the brewery in Texas where only he had the key, and he did some sort of lactic 
fermentation in there. It’s a minor detail, but it’s an important part of the overall flavor profile of those white beers to have a kind of a bright, palate-cleansing acidity that helps balance the creamy, milkshaky texture.”

Well there you have it, a not so brief primer on sour beers. One final thought, we spoke earlier of hoppy beers and the bitterness that has pushed the boundaries for the past ten years or so and the trend towards other flavors, like sour. Well the best example that I know of that blends these two concepts is a beer from New Belgium Brewing called Le Terroir. This is a traditionally brewed sour ale right up to the point

In the era of the reset button, everybody loves a do-over, especially baby boomers, who can turn to spas, smoothies, surgeons and Spanx to keep reliving their eternal youth. And no boomer loves a mulligan better than that Yuletide gremlin, the Grinch. Born fully grown in Dr. Seuss’ book “How the Grinch Stole Christmas!” in 1957, then given a new animated life by Chuck Jones in 1966 (there was a Jim Carrey movie version in 2000, but we’ll leave that one unwrapped under the tree), everybody’s favorite holiday crank has been terrorizing the sweet Whos of Whoville since the Cold War and shows no signs of slowing down now. In all that time, two things have never changed about the Grinch: He starts out mad, then he gets glad. What happens in the middle is Christmas, which even old Grinchy-claws decries as an overcommercialized holiday, full of clanging bells and crashing cymbals. After stealing all the Whos’ tinsel and treats, intending to tip it all over a mountaintop, the Grinch waits for the wailing and gnashing of teeth at dawn. Instead he sees a Christmas star light up the little town of Whoville, over which wafts a heavenly song emanating from happy Whos holding hands, with nothing to their names but one another. Puzzled, cold-footed and shocked, the Grinch suddenly realizes that pure love from above is the reason for the season, causing his pinched heart and puny strength to grow to miraculous dimensions. Animated Christmas characters Christmas is just a couple of days away, and now that the heavy lifting should be just about done and it’s time to figure out what you will wear. Let’s look to a movie character and take some fashion tips for Christmas. Jack Skellington (“The Nightmare Before Christmas,” 1993). Yes, everyone else is wearing red or green, but really, haven’t you been packing it on since October? Remember the kids’ purloined Halloween candy? Should we even mention Thanksgiving? Two slices of pumpkin pie not enough and you had to have that midnight sandwich with mashed potatoes in the middle? Yes, you need to wear black, and pinstriped black is just that much more debonair. It’s all about the slimming effect, and let’s be honest, that’s pretty necessary right about now, isn’t it?

With Christmas coming at midweek this year, that still leaves several days for networks to offer signs of the season ... some of which have been shown already this year but still are hugely appropriate for viewing. Here’s a sampling of some of the home-screen gifts being presented in the coming days. “CMA Country Christmas” (Sunday, Dec. 22, ABC): It’s been shown a couple of times already this season, but this latest installment of the annual special – with host Jennifer Nettles introducing Lady Antebellum, Luke Bryan, Sheryl Crow, Rascal Flatts and others – provides an instant, pleasant roundup of sounds of the season. “The Sound of Music” (Sunday, ABC): Carrie Underwood did a televised live staging recently, but this Oscar-winning 1965 screen version of the musical offers Julie Andrews’ take on the character Maria that is beloved by several generations. “White Christmas” (Monday, Dec. 23, AMC): Bing Crosby and Danny Kaye make a delightful team in the 1954 movie classic infused with Irving Berlin songs. “Shrek the Halls” (Monday, ABC): It’s holiday time for the ogre (voiced again by Mike Myers), Princess Fiona (Cameron Diaz), Donkey (Eddie Murphy) and their friends in this animated special. “The Polar Express” (Monday, ABC Family): Thanks to motioncapture animation, Tom Hanks plays several roles in director Robert Zemeckis’ genuinely magical 2004 version of the Chris Van Allsburg book. “A Christmas Carol” (Tuesday, Dec. 24, Turner Classic Movies): Reginald Owen makes one of the screen’s very best Scrooges in this 1938 rendering of the Charles Dickens classic.

Sweet Sipping: Dessert Wines By Rhonni Moffitt, publisher of AZ Wine Lifestyle So, you’ve finished a wonderful dinner, maybe a perfectly seared filet with blue cheese paired with a delicious wellrounded California Cabernet Sauvignon and now it’s onto dessert… Wine connoisseurs look at dessert wine one of two ways—maybe the wine is the perfect pairing for their crème brulee or raspberry cheesecake or maybe the wine is dessert. And just because a dessert wine is sweet, doesn’t mean it’s subpar or should play second fiddle to that aforementioned Cab. The sweetness of a dessert wine can be produced in a myriad of ways. The grapes may be left on the vines, raising the Brix level, creating natural sweetness in the grapes. Sometimes this effect is also created by drying the grapes on the ground until they are basically raisins, concentrating the sugars in the grapes. And, surprisingly, the sweetness may also come from allowing a certain type of rot to occur on the grapes, known as noble rot, or Botrytis. Some wines may even be fortified with neutral spirits, typically brandy, to create a sweet wine, such as Port.

Most of us started training our wine palates with sweet wines (think Bartles & Jaymes), and some palates prefer to stay there (your aunt’s box of White Zinfandel), but dessert wines are a different animal entirely. They can be as sophisticated as any French Bordeaux and as complex as a California Pinot that takes you on a pleasurable ride from the first sip to the last. Some dessert wines that can’t steer you wrong: Sauternes. Sauternes is an example of a wine that is sweetened by the natural introduction of Botrytis cinerea, or

otherwise known as noble rot. These wines can be very expensive (Chateau d’Yquem) but you can find mid-priced treasures that won’t break the bank. Try a Sauternes paired with your cheese course, especially with a creamy Brie or a Danish Blue. Ice Wine (or in German, Eiswein). The sugars are trapped in the grapes when they freeze while still on the vine. Although the wines are typically very sweet, they are also balanced by high acidity. In the United States, you can find these wines produced in northern Michigan, and internationally, you’ll find high-quality ice wine produced in Germany and Austria. Try pairing this wine with a fresh fruit course or a delicious crème brulée. Moscato. On the lighter side, you may find Moscato used as the basis for Asti Spumante and Muscat d’Asti wines, a sweet sparkling that is a great choice for those wanting to dip their toe into the waters of dessert wines. Try pairing your favorite Moscato with some mascarpone drizzled with a fig reduction. You can even find Arizonamade Moscatos at Lightning Ridge Cellars in Sonoita or at Saeculum Cellars, sold at the Arizona Stronghold tasting room in Old Town Cottonwood. Port. My favorite after-dinner dessert choice is a nice 30-year Tawny Port. To me the balance of sweetness with the traditional higher alcohol content is a wonderful way to relish in the meal I just shared and relax with pleasant after-dinner conversation, wrapping up the evening. To be called a Port, the wine must be produced in Portugal, but you can find Port-style wines made from all over. Although, because it’s fortified, some may say that Ports are not technically a dessert wine, for me, I’ll take Port as my dessert over chocolate cake any day.
