Isn’t he the same guy who’s been dissing bread, salt, sugar and almost everything else that tastes good? Isn’t he the same guy who was trying to get caffeine re-classified as a prescription drug? And now he’s writing an article about the joy of eating…you must be kidding!!” Okay… I probably deserve some of that, but you guys have to admit that my heart has always been in the right place. I’ve always been interested in helping people get as much joy from life as I’ve experienced and helping people become as healthy as possible.

One of the main reasons I work out so hard and so consistently is that it allows me to eat almost anything I want (within reason) and almost as much of it as I want. Why? Because I love to eat!! I love food! I love everything about food…I love the way it looks…I love the way it smells…and I really love the way it tastes. I’ve always felt that food was one of the three gifts from God to all of us to stimulate our senses. The other two being music and dance. Yes, you heard me right. To me, food is much more than just nutrition for the body, it’s nutrition for your mind and your soul. I reward myself with food all the time. If I’ve been good and taught all my classes as I should and I’ve done a good job all week, maybe my reward is dinner at one of my favorite midtown restaurants. Sometimes the visual of a big, juicy ribeye steak coming off the broiler and being served with some fabulous baked asparagus, lightly sprayed with a quality olive oil and just a hint of fresh, cracked black pepper over the top and maybe a few grape tomatoes ringing the plate is enough to get me through a tough workout. Hmmm…that does

All that talk about calories, fat grams, glycemic indexes, carbohydrates, blah, blah, blah sterilizes food to a point where we feel we’re just eating to stay alive. There’s a lot more to it than that…there’s got to be. There’s got to be some joy. This is not an argument against eating right, I’m just saying that there’s room for both…to enjoy fabulous food, plenty of it and stay healthy at the same time. This is where your knowledge of food and what’s in it comes into play. After you’ve done your due diligence and educated yourself, it’s time to get down to some serious eating. When I see people eating in their cars, eating while they walk around on the go, all I can do is shake my head in amazement. These people don’t know how much joy they’re missing out on by eating that way, or they just don’t care. My advice is simple…make a ceremony out of every meal, even a simple meal. Never eat standing up. Never eat while driving or otherwise occupied. Take the time to sit down and make a ceremony of the meal and feel the joy. After the meal is served, take a moment to experience it visually and savor the aroma before you dig in. Don’t rush yourself while eating…slow down so you can taste the delicate flavor of rosemary or the incredible taste of chopped basil over sliced vine-ripened tomatoes with just a ribbon of balsamic vinegar over the top. Are you ready to eat yet? When you do that you’re feeling the joy of eating. Food and eating should never have any guilt attached to it. You should always feel good after a good meal. If you feel guilty after eating, maybe you’re eating for the wrong reasons. It could be that you’re eating to punish yourself for what you saw as inappropriate behavior in another part of your life. Maybe you were binge eating. Whatever. In those cases, it’s not the food you need to change, but it’s your attitude towards food that needs to change. Food is never the bad guy… food is our friend. We know almost every line to them and it seems no matter how many times we’ve seen it we still laugh, cry, and get excited over the same scenes. But could our favorite movies be teaching us something about love that we should be carrying with us throughout our daily lives? Here are a few of my favorite romantic comedies and the lessons I’ve learned from them.

Sometimes the person we’re supposed to be with is right in front of us and we don’t realize it because someone else has our attention. When your life reaches a point where you find two individuals fighting for your heart the choice is not always black and white. When it came to Rosalee’s attention, she had a movie star and her best friend both wanting to be with her. She knew that the movie star could give her anything that she wanted, but materialistic items can only go so far. When she found out her friend’s true feelings she knew that he was who she was supposed to be with. It’s not always easy moving from the ‘friend zone’ to a relationship, but if you can make it work there’s nothing like falling in love with your best friend.

A girl never forgets her first kiss. (8th grade during theater practice backstage)…and most girls have their first kiss in their teenage years. But for Josie Geller, her first kiss didn’t come until she was 26 years old standing on a pitcher’s mound at a high school baseball game in front of the entire crowd. When it comes to dating and relationships we struggle with patience, we want what we want when we want it, but when that special moment happens with the right person it makes everything worth the wait. Mark Ruffalo, Tim Robbins and Josh Gad play three men dealing with different stages of sex addiction. As they navigate the rocky shores of recovery, they become a family that encourages, infuriates and applauds each other on the journey toward a new life. Gwyneth Paltrow, Joely Richardson and Alecia Moore also star. (R - 112 minutes)

Jonathan Groff plays a cocky young man who travels to Oregon to work at an apple farm. Out of his element, everyone who crosses his path picks his lifestyle and notions apart. (R - 92 minutes)

Stan: Although the basic theme of sex addiction is the prevalent factor, ‘Thanks For Sharing’ metaphorically transcends that theme to cover any type of behavior or simply habits, that either society or each of us individually may want, or need to change.

Joseph: Although “C.O.G.” may also leave you feeling at least a little flabbergasted, it is as poignant a portrayal of the rocky road to self-discovery that we all must take at some point in our lives as possible - thanks in part to a complex performance from star Jonathan Groff.

Joseph: “Thanks for Sharing” is real, honest and heartfelt, affecting anyone who has ever struggled to open their self up to love, relinquish all control or face life’s hardest truths. Taking viewers on a remarkable range of emotions, it is undoubtedly one of the year’s very best movies.

That was sort of the germ of the idea - exploring how people take an unhealthy relationship to sex and transform it, hopefully, into a healthy one. It may sound kind of cheesy - some of the best things in life are - but it is sort of the idea that we may all be broken inside but if we are broken together we just might have a chance at putting the pieces back together. We can really only heal together.

When that addiction broke, I thought, ‘This is a fascinating addiction because, unlike drugs or alcohol, healthy people should have sex in their lives.’

For an NFL quarterback, being known as a gunslinger isn’t always a good thing. It means you throw early and often – long, short and in between – probably 30 to 40 times a game. Fans love this because games fought in the air are usually more fun to watch. The trouble is, if a quarterback is throwing that frequently, conventional wisdom says that more passes will fall into enemy hands. And if more passes are being intercepted, it makes it harder for your team to win. Such has been the career of the Chicago Bears’ Jay Cutler. Long respected for his strong and talented right arm, the 30-year-old Georgia native has seen his completion rate fall every year since becoming a starter in 2007 while his career interception rate has hovered well above 3 percent. And the Bears have made the postseason exactly once since acquiring him in 2009. This year under new head coach Mark Trestman, the Bears are instituting a West Coast offense, a scheme predicated on using the run to establish the pass; short timing routes, screens and flares; getting first downs and not turning over the ball. Can a dyed-in-the-wool gunslinger like Cutler adapt to a more conservative system? As training camp broke, he was saying all the right things, but certainly time will tell.

BEER STYLES PART 3 Let’s get into Beer Styles this week by starting with a unique style, the lambic. Incredibly tart and complex from spontaneous fermentation, this is one of those beers that you either love or hate.

Because of the aging and blending, gueuze lambics are often more balanced and complex in aroma and flavor than straight lambics. Unlike their unblended counterpart, gueuze lambics are carbonated. Lambics - Unblended Lambic - A tart and sour, golden, wheat-based Belgian farmhouse ale that is traditionally brewed through spontaneous fermentation from wild yeasts and bacteria. Straight lambics are tart and acidic in character with full attenuation and no carbonation. Hop levels are quite low and aging tends to soften the sharp tart character of “young” lambics. Lambics - Faro - A blended lambic with added sugar, faros are sweeter than the straight and gueuze versions and have less tart, sour, and wild flavor profiles. Faros are carbonated, generally more drinkable, and sometimes spiced. Lambics - Fruit Lambic - A tart and sour, fruity, wheat-based Belgian farmhouse ale that is brewed through spontaneous fermentation from wild yeasts and bacteria with fruit normally added during the aging process. Typical fruits used are framboise (raspberries), kriek (cherries), peche (peach), and cassis (courant) and the beer takes on varying shades of the fruit used. In many of the classic examples, the fruit plays a

Mild Ale - Mild Ales are lightly to moderately flavored and bodied English session drinking ales that are “mild” in their hop bitterness and flavor, generally low in alcohol content (<4% ABV), and of light to medium body. They can come in pale or dark (amber red to dark brown) varieties and both tend to emphasize a malty character with either a sweet or dry finish. The pale versions can be lightly fruity with a light sulfuric or buttery aftertaste, and they generally do not travel well. The dark versions often take on deeper flavors just short of an English porter (grainy, caramel, toffee, toasty, roast, nutty, chocolate, dark fruity, molasses, or licorice) and do not make for much better travel. Several examples have adjunct sugars incorporated in their recipes, and stronger version mild ales are sometimes produced for special occasions. Old Ale - As their name implies, old ales are typically stocked or stored for long periods of time before consumption, upon which they were traditionally served by blending the

old ale with another “fresh” beer like a mild ale or bitter. Old ales could be viewed as strong mild ales that fall out somewhere in between strong bitters or brown porters and English barleywines (often overlapping the latter with only arbitrary distinctions). They are normally dark amber to deep brown in color with a head that may or may not impress (due to the age and relatively low carbonation). The style builds on several remaining unfermented sugars to offer chewy malty flavors (caramel, toffee, vinous, nuts, molasses, even light chocolate or roasted flavors and fruitiness), a firm and warming alcohol presence, and relatively low hop levels (especially after aging). Additionally, these beers can often take on oak, oxidized, and sour or lactic flavors after aging. English Pale Ale - English pale ales are quite similar to and include the bitter sub-styles (ordinary bitter, special bitter

American Pale Ale - America’s spin on English pale ale, the American pale ale is similar to its English counterpart, but differs due to a brewer’s use of American hops, malt, yeast, and water. The American pale ale will generally be cleaner and have less of a caramel malt profile, less body, and often more finishing hops. Overall, the American pale ale is refreshing and hoppy with an adequate malt base which balances the beer. Porter - The porter style is broad and covers a range of beers light brown to very dark brown/black in color. It originated in England as working class beer (appreciated, of course, literally by porters) and is believed to be the precursor to stouts. Porters range in malt, alcohol, and hop strength from mild to moderately strong. The earlier English versions were mild and highly drinkable, while the later “robust” versions can feature strong bodies, alcohol levels, and hop content. Generally, porters tend to be less burnt or roasted in flavor than stouts, although the distinction between porters and stouts can be gray. Higher alcohol strength porters (7% ABV and higher) are specifically classified as Imperial Porters. Story continued on page 42

Hello again beer lovers, today let’s chat about SanTan Brewing Company and their newest brews, Friend of the Devils and Super Monk IPA. First off, did I mean to say Devils Ale? Well, kinda. This brew is indeed the famous Chandler pale ale we all know and love but with a twist, it’s Nitrogenized! Yes you heard that right, Devils Ale running on nitrogen as opposed to carbonation and let me say that it’s DELICIOUS! For those who don’t quite understand, allow me to elaborate; imagine Devil’s Ale pouring like Guinness, soft and creamy. Now imagine all those hops and all that malt balanced by a smooth silky texture on your tongue - and you are on board. Produced in very limited quantities for their Jerry Garcia Celebration last weekend, it’s a beer that you don’t want to miss and won’t last long so get on it! Next up, Super Monk IPA. A Belgian style IPA and great for the transition between summer and the cooler winter season. One might ask, exactly what makes it Belgian style and the answer is the yeast. Brewing with very specialized yeast cells gives this beer an almost tangy, fruity character not usually seen in IPAs made here in the states. It’s got the hop bite, but also a unique and refreshing citrus character that sets it apart from the norm.

Porters - Baltic Porter - Baltic porters are a dark red-brown to dark brownblack style of beer that originated in the countries surrounding the Baltic Sea as a virtual hybrid of Russian imperial stouts and basic English porters. Most (but not all) Baltic porters are lagers and take on smooth lager-like qualities. They are typically rich in malt content, featuring in their flavors, light roasted notes, caramel, toffee, complex blends of dark fruits (plums, raisins, prunes, grapes, and cherries), molasses, chocolate, and / or coffee. Baltic porters are never burnt like an imperial stout or heavily roasted or strongly hopped like an imperial porter (hops are a minor component of the aroma and flavor of a Baltic porter, playing only a complementary - if any at all role to the rich maltiness). American beer style, and are - as their name suggests - porters of higher malt, alcohol, and sometimes hop strength. They add to their base style qualities thicker mouthfeels, increased warmth from the alcohol content, and richer flavor. Many imperial porters are significantly hopped and can have alcohol levels of 10% ABV or even higher. They are distinguished from Baltic porters in that they are always ales (although some Baltic porters are ales), and are more intense in their roasted and bitter flavors.

Rye Beer - As their name suggests, rye beers are brewed with at least 20% rye malt and varying degrees of bitterness, although moderate to high hopping levels tend to draw out the unique tart rye flavors in American rye ale. Their appearance can range from straw and amber to darker amber and brown colors when roasted malts are used. be comparable to an American wheat beer. A specific German sub-style of rye beers is the roggenbier, which originated in Regensburg, Bavaria. The roggenbier is normally brewed with less hops, is unfiltered, and utilizes yeasts that produce phenolic (clovelike) and fruity ester (bananas and citrus) character (much like a hefeweizen or dunkelweizen). Saisons - originated in Belgium as a summer seasonal beer, intending to be both refreshing and firm in flavor and body. The saison typically has a fruity (citrus is common) aroma that can be accompanied by a combination of spicy, hoppy, herbal, earthy, yeasty, even musty aspects. The flavor is moderately malty with an assertive hoppy balance and sometimes has peppery and spicy notes. Frequently, acidic and sour (Lactobacillus) aspects finish out the flavor profile of a saison, which can finish with a dry and highly carbonat-

ed finish. The appearance of a saison ranges from yellow-orange to deep amber and distinctively pours with a very generous and fluffy pillowy head that leaves behind some of the best Belgian lacing known to beer. Alcohol strengths are most often in the 5 - 8.5% ABV range, but some examples are stronger. Normally, the alcohol in a saison fills out the flavor profile but is not warming or hot. More great styles for you to file away this week. Saisons in particular are extremely interesting beers and tend to pair very well with a variety of food. They are highly recommended for holiday meals. Next week we will try to finish up the Ale styles, maybe touch on a couple of hybrids and get ready to start on lagers. Although, something else may come up between now and then as well, so it could be completely different.

Gabriel’s Angels Presents Salud! 2013 Wine Dinner Non-profit, pet therapy organization, Gabriel’s Angels, will host its annual Salud! Wine Dinner on October 11th beginning at 6pm at the Montelucia Resort & Spa. The Third Annual Signature Wine Dinner is Gabriel’s Angels’ only formal fundraiser event of the year. The event is expected to bring together more than 400 Gabriel’s Angels supporters and raise an estimated $100,000 to support Gabriel’s Angels pet therapy Programs. As a pet therapy provider, Gabriel’s Angels reaches over 13,500 children a year and visits over 150 other non-profit facilities working with children at no cost. Money raised will help therapy teams continue delivering healing pet therapy to at-risk, abused and neglected children throughout Arizona. Honorary Co-Chairs, Nancy White of RedBookAZ and Alfredo Molina of Molina’s Fine Jewelers will be there to welcome guests into the Scottsdale resort for a night of fundraising and fun.

A silent auction will begin at the reception, followed by dinner, a live auction and dancing. Some additional fun activities will include a photo booth and a “cigar-roller” making cigars on the spot.

From September 21 through September 29, food lovers statewide will have the opportunity to choose from multi-course, prix-fixe dinner menus at more than 200 restaurants across Arizona as part of the semi-annual celebration. But, I know what you are thinking…what about the drinks!? We’ve got you covered. Here is a handy dandy list to all of the Arizona Restaurant Week venues that will be including beer, wine or even a signature cocktail with their prix-fixe menus this year: Beckett’s Table–Arcadia The comfort food favorite is offering a glass of pre-selected red or white wine–or draft beer–in addition to its $30 (per person), three-course menu. Brat Haus–Old Town Scottsdale Got brats? If you’re a lover of highend bar fare and the most innovative sausage-style food in town, be sure to check out this venue for Restaurant Week, which not only includes a beverage of choice for each guest, but is offering a menu at $40 per couple. Brio Tucson Grille–Scottsdale Quarter This Italian hot spot is offering a house adult beverage included in its $30 per person menu. Carlsbad Tavern–South Scottsdale This Mexican staple will be offering couples the choice of Sideyard Cabernet Sauvignon or

District Kitchen–Downtown Phoenix The innovative new American venue will offer one glass of Rosenblum Vintner’s Cuvee Zinfandel, DeLoach California Cabernet Sauvignon, Chalone Vineyards Monterey County Chardonnay or any of their craft beers with their $30 per person menu. Fuego Bistro–Phoenix Feeling Hot, Hot, Hot? If not, you will be after a glass of sangria and this $30 per person menu. Fuego Cityscape–Downtown Phoenix Also Latin in vibe and flavor, this downtown venue is offering a $40 per couple menu, including any seven dishes from their signature menu items. Fuego Tacos–Biltmore Like its CityScape cousin, this venue will also offer a $40 per couple menu, including any seven dishes from their signature menu items. Kazimierz World Wine Bar–Old Town Scottsdale Among the original Old Town hot spots, this globally focused menu is actually offering two totally separate menus for Restaurant Week–one meat and cheese focused and the other street food focused, but both with full wine flights featuring U.S., Spanish, Argentinian, Italian and French wines at $30 per person. Kelly’s–Old Town Scottsdale It is a Cupcake (wine) party at Kelly’s this restaurant week, with each $30 per person menu including an assortment of Cupcake brand wines or draft beer to choose from. Pane e Vino–North Scottsdale

Celebrating 15 years, this Italian favorite is offering each guest a glass of wine of their choice from the available menu as well as a $40 per person food menu. Pita Jungle–Arcadia Thirsty for more than a glass? Then head to Pita Jungle in Arcadia where they are offering a bottle of wine along with their $30 per person menu. Pointe in Tyme–Phoenix Since the inception of Arizona Restaurant Week, Pointe in Tyme is the only restaurant to offer guests their choice of any first-course selection from the regular menu! Singer-songwriter Sarah Jarosz’s third album, Build Me Up from Bones, is fantastic. The prodigious mandolin, banjo and guitar player’s honey-smooth voice combines effortlessly with evocative lyrics, and in addition to her usual bluegrass and folk sound, she adds jazz (“Book of RightOn”), rock ‘n’ roll (“Over the Edge”) and Americana (“Dark Road”) to the mix too. Jarosz showcases her impressive vocal range by singing subtly on the bluegrasstinged title track, before becoming a siren on the entrancing folk rock number “Mile on the Moon.” Jarosz’s penchant for weaving picturesque tales continues on “1000 Things” when she deftly personifies Fear and Youth, and the romantic, mournful ballad “Gone Too Soon” will make you believe Jarosz is singing about a night she is spending with you. This album is spellbinding.

Texas-based singer-songwriter, bandleader, activist and sometimes actress Patricia Vonne has delivered a saucy new record in Rattle My Cage. With a voice that is equal parts seductive and soulful, it is not hard to become ensnared by her voice and the album’s musical variety. Like bluesy rock? The gritty title track will suit you just fine then. Love a romanticsounding Spanish-language ballad? “Que Maravilla” will be right up your alley. The country rock song “This Cat’s in the Doghouse” shows off her playful side, the gorgeous Flamenco number “Dulce Refugio” will make you want to dance, and the instrumental Americana-meets-Flamenco closer “Mexicali de Chispa”—which she co-wrote with her brother, filmmaker Robert Rodriguez (yes, that Robert Rodriguez)—is all kinds of beautiful. Rattle My Cage is a thing of beauty.
