SUMMER FUn gUiDE! George Gershwin’s seminal “Summertime”opens with the lyrics “Summertime/and the livin’is easy”a notion that can easily be applied to summer on Long Island. Living here year-round, it’s easy to forget how much of a tourism magnet it is given our abundance of gorgeous beaches, historic sites and myriad golf courses and athletic fields. No further proof can be found than the fact that New York State recently ponied up $100,000 for a five-year plan meant to attract students, families and others to all that Long Island has to offer. With the breeze at your back and the sun in your face, we hope you use our Summer Fun Guide to plan out a fun-filled season. Families have no end of options be it a day in the water—either seaside or at one of the many public pools. If you’d rather stay dry in the pursuit of enjoyment, there are plenty of day-trip destinations to make where you can swing a bat or golf club, lace up some skates, hop on a roller coaster or even dive with sharks. For those looking to watch world-class athletes, options range from checking out major-leaguers shag flies in the Bronx and Flushing or duffers hit the links at Bethpage Black to wagering on a thoroughbred at Belmont. Foodies also have their time in the sun as Long Island is home to numerous world-class eateries steeped in a dizzying array of cuisines. Wine enthusiasts are also well served thanks to host of wineries on the East End ready to offer up tastings and tours. All these options and plenty more can be found in the pages of our 2nd Annual Summer Fun Guide. Enjoy a wide variety of events, including concerts; garden walks; kidsfest, stargazing, and other family programs; a Scottish Festival; classes in yoga and tai chi, and much more. The Sands Point Preserve on Long Island’s North Shore embodies the luxurious Gold Coast era. Its 216 acres of natural woods, beachfront, and beautiful open space provide the perfect location for all kinds of summer activities — including weekly fitness classes and family nature education programs that introduce children of all ages to the fascinating wildlife in our local environment. The following are some of the activities available to visitors: • Science Sundays & Nature Education At Phil Dejana Learning Center The Phil Dejana Learning Center & Outdoor Classroom offers year-round educational programs and activities for schools and families. For the complete schedule, see www.thesandspointpreserve.com. • Bee-Whispering At The Preserve’s Apiary The Bee-Whispering program will be held this summer at the Preserve’s bee apiary to ensure a healthy population of these beneficial insects and the production of local honey. Participants can attend one or both of the Saturday workshops on June 15 and July 20 from 10 a.m. to 1 p.m. • Seasonal Family Programs Families celebrate the four seasons at special events that include the Fall Village Day Festival (Sept. 29) and Holiday Tales at the Hearth (Dec. 8) and choral concerts in winter. Family yoga classes take place each season — July 14 and Nov. 10 are the next dates for 2013. • Fitness Activities In addition to family yoga classes, weekly Friday morning yoga is offered for all ages and levels — in the rose garden, overlooking Long Island Sound or inside Hempstead House’s summer living room. Twice a month, these classes are followed by a guided power walk through wooded trails and along the beach. • Performing Arts at the Preserve This summer’s music series begins with the Woodstock Revival that takes place on June 9 (rain date: June 16) from noon to 7:30 p.m. Five tribute bands will perform overlooking Long Island Sound while artists display their work on the Great Lawn and paint to the inspiration of the music. The Liverpool Shuffle — the definitive Beatles tribute band — performs two sets in the Great Hall at Castle Gould on July 19 at 8 p.m. The North Shore Music Festival returns for their third summer season with two chamber operas: Verdi’s “La Traviata” on July 27 and Puccini’s “Il Tabarro” on Aug. 17. • Filming, Private Events & Corporate Entertaining Film and television companies frequently select locations in the mansions or on the grounds; private and corporate events, including weddings, themed events, conferences, holiday parties, and fundraisers, can be held in picture-perfect settings — from ultimate Gatsby-era grandeur to the most intimate and elegant of spaces. • House Tours Harry F. Guggenheim’s French-Norman style home, Falaise, built in 1923, is open for docent-led tours every hour from noon to 3 p.m. from June through October. Private tours can be arranged for the magnificent Hempstead House—a 50,000-square-foot Tudor residence built by Howard Gould in 1912 and later occupied by the Guggenheims. The Preserve is operated by Friends of the of the Sands Point Preserve, a 501(c)(3) non-profit organization, committed to extensive conservation and renovation initiatives for the estate’s buildings and grounds. It offers a full range of nature education programs and world-class performing arts events. Ever since Jaws terrified moviegoers back in 1975, sharks have simultaneously fascinated and frightened the public. Knowing that, the Long Island Aquarium & Exhibition Center made its own version of Shark Week by creating the 120,000-gallon Lost City of Atlantis Shark Exhibit. Without the benefit of diving certification, (must be 12 or older; ages 12 to 17 must be accompanied by a parent/guardian), you can get in the cage with a trained shark dive instructor, and be immersed in the middle of circling sharks and an array of fish that cannot be found together anywhere on Earth. Shark Dive participants are provided with everything necessary for their dive, including wetsuit, scuba gear, and an underwater mask that allows normal breathing and underwater communications. Each Shark Dive adventure consists of an educational program about sharks, a lesson and safety briefing, and the dive itself. (All participants must sign and return a liability waiver prior to their dive.) Also included are:

In the United States, July 4th represents the founding of our nation and the holiday Americans recognize as their independence day. Americans of Latin heritage celebrate other independence days as well. Mexican Americans even celebrate at least two independence days from the ouster of Spain and France — on the 5th of May, Cinco de Mayo, and on the Cry of Independence, Grito de Dolores, Sept. 16. Given the growing popularity of these holidays in the United States, I thought it appropriate to recommend an Independence Day meal that combines American and Latin dishes as well that focus on healthy cuisine that is low in fat, high in flavor and easy to prepare. I promise this won’t be your run of the mill enchilada or quesadilla at your favorite pub.

Appetizers Grilled Corn On The Cob Cut or break 12 ears in half. Pull the stalk off the cob and roast the ears of corn on a very hot grill about 1.5 minutes per side until somewhat blackened — turn 3 times. Remove from the grill and brush a light covering of mayo on each ear. Coat with shredded Parmesan cheese on all sides. Lightly season each ear with chile powder and smoked paprika. Finish by squeezing juice of ¼ lime per ear. Insert a wooden stick in each end or eat by holding corn with aluminum foil. Very tasty so you may want to prepare more. Tomato Salsa & Chips Blend two 15-ounce cans of plum tomatoes — pulse 2-3 times leaving somewhat chunky. Add 1/2 cup diced Vidalia onion with one diced jalapeño removing seeds and pith first.

Independence Day Entrees Poblanos Stuffed With Shredded Chicken This is the celebratory meal called Chile en Nogada or chile with walnut sauce, eaten by Mexicans on both Sept. 16 and the 5th of May. Regardless of one’s native origin however, I can attest to the fact that this dish is special and extraordinary worldwide. Roast 12 poblano chiles at 425 F for 20 minutes; turn once and roast additional 25 minutes. Remove and steam by placing a towel over chiles. Cut a thin slice in each chile to enable stuffing. Peel and remove the seeds under warm water. Roasting and peeling enhances the flavor dramatically. It’s okay if some parts are blackened more than others. When finished, place each whole chile in a large casserole dish ready to be stuffed. Next roast 5 large chicken breasts at 350 F. Season with sea salt and freshly ground black pepper. Insert 1/2 tablespoon of butter under the skin of each breast. Roast for 45-60 minutes and remove from oven. Chicken is done at 165 F or when chicken is white, not pink, but still juicy. Remove from oven and allow to cool. Cut the breasts off their bones and shred or pull apart by using two forks. Place all chicken without skin into a large bowl. Add a picadillo mixture consisting of 1/4 cup small or chopped raisins, 1/4 cup toasted and chopped walnuts, 1/4 cup finely chopped cilantro. Mix all together. Carefully fill roasted poblanos with the picadillo mixture. If chiles are torn, merely borrow a piece from one of the others and place on top of the torn chile.

Lastly, pour one 8-ounce can of evaporated milk and 1 tablespoon of sugar into a small saucepan. Heat until sugar dissolves. When ready to serve, reheat chiles for 10 minutes at 400 F; remove and pour evaporated milk over chiles. Place a small handful of red pomegranate seeds without the pith over all chiles, which now have the colors of the Mexican flag — red, white and green. Very festive, no? Card Burger Sliders These delicious burgers are smaller versions of those we ate as kids while our parents played cards. Add 2 medium, diced yellow onions to 3 pounds of 85 percent chuck hamburger rather than sirloin or 90 percent top round. Sliders are smaller in size — 3 inches in diameter—but tastier since you are using onions with meat that has a bit more fat — always a winning combination. Both adults and children will enjoy these mini-burgers as do adults. Also try small chunks of cheddar inside each burger. Extraordinary. Bluefish And Halibut Seafood Skewers Marinate a couple of pounds of skinless bluefish and halibut chunks — 2x2 inch chunks in size. Soak your skewers in water for 10 minutes so they don’t catch fire. Marinade with 1/4 cup each of light soy, rice wine vinegar; juice and zest of 1 whole lime; and 2 tablespoons canola oil. Mix and pour over fish that you have skewered with alternating pieces of Vidalia onion, fish, and green peppers — all 2x2 inch chunks. Grill for 3 minutes per side. Enjoy with yellow rice on the side seasoned with turmeric, and thin slices of 4 garlic cloves. Top with ½ x ½ inch fresh pineapple chunks.

The Cosmos began play in 1971, spending 14 seasons in the North American Soccer League (NASL), winning five Soccer Bowl trophies and bringing some of the biggest names in world soccer to the USA. This included Pelé, Franz Beckenbauer, Giorgio Chinaglia and Carlos Alberto. It’s been nearly 30 years since the Cosmos, an iconic global soccer club, have played in a professional league. Yet throughout their absence, the club has maintained a loyal and dedicated fan following. On July 12, 2012, it was announced that the New York Cosmos would return to the NASL, beginning play at Hofstra University’s Shuart Stadium. The Cosmos first game is Aug. 3 at 7 p.m. against the Fort Lauderdale Strikers. Tickets

This 111-acre park is one of the oldest in the Nassau County parks system, and one of the most beautiful, bordered on the south by Flat Creek with East Bay beyond. The park has several baseball and athletic fields, a large playground area, tennis and basketball courts, a two-mile fitness trail incorporating a variety of exercise stations, and walking paths along the scenic bay. The spectacular summer water theme park incorporates an Olympic-size pool, two 32-foot water slides, diving, kiddie and training pools, and an interactive water-play area.

Dates: July 1 – August 8 (Closed on July 4) Program day: 9 a.m. – 3 p.m. or full-day option of 9 a.m. – 5 p.m. Important notes: Rain cancels the program. The program will not commence if there is rain at 9 a.m., and the program will be cancelled should rain begin during the day. Continuous days of excessive and high heat indexes may also cause the closing of camp. Refunds will not be made due to the closing of camp for either rain or excessive heat. Parents must retrieve children immediately.

Pickup is promptly at 3 p.m. and 5 p.m. Failure to pick up a child in a timely manner may result in additional fees and surcharges. Parents are encouraged to provide child with sunscreen and instruct child in using it. All clothing and personal items that children bring to camp must be properly labeled. Ages: 5 - 12 are separated in the following categories: early childhood (5 - 6); juniors (7 - 8); intermediate (9 - 10); and seniors (11 - 12). Grouping with friend requests will be honored to the best of the camp’s ability, but may be limited to number of friends and age categories of children.

The summer season is a time for outdoor fun. Whether you’re at your local pool, beach or even in your own back yard, make sure you know the rules when it comes to hanging out near the water so that you can get the most out of the next few months. Miriam Furman, board member in charge of marketing at the Roslyn Pine Pool and Tennis Club, gave Anton Community Newspapers some tips for you to remember. Most importantly, parents have to watch their children at the pool, Furman said. Although lifeguards are on duty at the pool club, mom and dad should always know where the kids are. Be sure not to run on the pool deck and keep the roughhousing out of the water. This includes throwing balls while in the pool. Observe the rules at your local pool such as where diving is permitted. At the Roslyn Pines Pool and Tennis Club, headfirst diving is prohibited, Furman said. Take note of the maximum capacity as well, she said. Everybody wants to get that summer tan, but make sure you give yourself time in the shade too. “Some shade and keeping yourself hydrated by drinking water will help prevent dehydration and heat stroke,” Furman said. If you think you are dehydrated — if you feel lightheaded or nauseous — drink water. However, drink it slowly and steadily. Drinking it quickly will not help. When it comes to sunblock, Furman said the rule of thumb is to apply it 30 minutes before jumping into the pool. Make sure to reapply every time you come out to dry up, even if the bottle says “water proof” or “water resistant.” Keeping these tips in mind will help ensure you have a fun and fantastic summer.
