Our history is our experience because keeping the Memory of an establishment such as ours alive becomes important when it is used correctly in the form of experience and respect for the World around us. Antico Molino Rosso is located in the Po Valley in the province of Verona. It has been owned by the Mirandola family since 1936, first with my grandad, Armando, then my dad, Remo, and, since the mid-eighties, with me, Gaetano. This ancient mill is near Verona, in the small town of Buttapietra, surrounded by countryside and close to the river Menago, which preserves a superb ex-

ample of a paddle watermill dating back to May 8th, 1858. Against this wonderful backdrop, Molino Rosso produces exclusively Organic flours, true to a belief I have had since 1990, inspired by my dad, Remo, who believed that too many pesticides were used in farming. And so I embarked on a journey of awareness, exploring the importance of following a balanced diet, with the need to re-introduce the correct amount of fibre, minerals and vitamins into our diets. We can achieve a balanced diet if we are aware of what we are eating, if we know about cereals and their confor-

mation, about their different characteristics and the advantages and benefits they bring. It therefore became necessary to launch a communications activity to raise awareness, aimed at farms growing cereals and at flour users, such as bakeries, shops and consumers. The aim was to help these people understand just how important it was to use food that had not been treated with pesticides (especially if made using semi-wholemeal and wholemeal flours) and to identify the potential benefits in terms of protecting our bodies, our families and the environment we live in.

Nowadays, when we talk about quality, it should not refer solely to the taste of the product, but should be synonymous with real controls implemented by the company and performed on a continual basis. Research, the selection of raw ingredients, a sustainable chain, clean plants, disciplined system implementation, passion, awareness of the difference between good and not so good and especially between healthy and not so healthy, are principles applied each and every day by Antico Molino Rosso. Just as the multi-residue analyses within a system, which are performed systematically and at regular intervals through credited laboratories, are the elements which, in addition to certif-

icates for Organic products, set apart safe, reliable products, offering maximum quality. We also have an internal laboratory within the company where incoming raw ingredients are sampled: here we run tests for humidity, specific weight, temperature, protein value and ash. Our strengths:

Antico Molino Rosso uses fine organic raw ingredients coming predominantly from Italian farmers. However, some crops can only be found in foreign geographical areas (Manitoba, Kamut, Spelt and certain seeds). All Antico Molino Rosso products are traceable. Our Sales office is therefore happy to clarify the origin of our products.
