Rod Ashman, a Portland native and the owner of the Celina Lynx Golf Club, has invested many years into his love for golf. Starting in high school, Rod worked for the Jay County Golf Club—washing dishes—and quickly moved up to the pro shop the following year. “Gary Biddinger, who was a four-time, NCAA all-American, a Big 10 champion, Indiana amateur champion, and an Open champion, not only taught me about golf, but he ultimately changed my life,” Rod says. “I

went to college to become a physical education teacher, since I really enjoyed playing basketball and baseball in high school. “But after spending all that time with Gary at the golf course, I learned what playing golf was really all about. He taught me how to deal with people, how to teach the game, and all the ins and outs. I finished my college education and my student teaching on a Friday, and on that next Monday, I started as a golf pro in Fort Wayne,” Rod explains. About fourteen years ago, Rod came back to this area and began working at the Golf Club of the Limberlost in Geneva, Indiana.

Throughout the years, Rod has become a well-known face there, as he manages the course and has accumulated some ownership in the business. It was in Geneva, actually, that Rod learned the financial responsibilities of running a golf course. “You never really know how much it takes until it’s you that is signing the checks. It makes you pay attention to how much is coming in, versus how much is going out,” Rod says. When the opportunity came along for Rod to purchase the Celina Lynx Golf Club, it proved to be a rather lengthy process that produced many sleepless nights. “My wife would fuss at me and tell me that I needed to get some rest, and I honestly would lose sleep worrying about what would happen. “But the hardest part of it all was finding a bank that would loan me the money.” Rod chuckes. “I had to pull a rabbit out of the hat for that one, you know? I knew it would be a lot of work and cost a lot of money to get it all going, but I also knew this golf course had loads of potential, and it would be worth it.”

When the golf course was built in 1996, no costs were spared. The world-famous designer Jim Fazio, whose name can be tied to a couple of Trump’s national courses, was contracted to construct the 290 acres, Scottish Lynx-style golf course. “This place was designed to host tournaments and was brilliantly built. We have a massive driving range and lots of practice greens. “It’s pretty exciting that we are having the ACAC (Allen County Athletic Conference) tournament here. It gives the players neutral ground to play on that is still close to home. The local Celina high school team, as well as Parkway both play here, too, and since Indiana and Ohio golf schedules are different, it works out well.” Although Rod spends seven days a week between the two golf courses, he still depends quite a bit on his manager, Aaron Daniels to keep things together. “I hired him and showed him around, and just like that, the people over here took to him and noticed that he was sincere in showing his appreciation for them and genuinely wanted to get to know them,” Rod says.

I

t’s not the building. It’s not the location. It’s not the menu or the wine list. It is the experience. That is what separates Joseph Decuis from other restaurants. “First and foremost, it is about the experience,” says Alice Eshelman, proprietor of Joseph Decuis in Roanoke, Indiana. “Part of that experience is great food. Food that is fresh and of high quality adds to the ambience. “The better the freshness is, the better the quality of the food. The better the quality, the better the experience of dining.”

But all the other things add to the encounter. The personnel at Joseph Decuis strive to deliver the total experience. “The most important thing is to sit down and talk to each other across the table. The beautiful surroundings, the setting, and delicious food that is well served and prepared, all add to that,” insists Alice. “It all began with a horse,” she explains. “We lived in a subdivision of Fort Wayne, and Pete bought a horse, so we had to have a place to put it.”

They settled on the farm and Alice’s husband set up his insurance business there. Pete’s clients were from large cities with sports venues.

“So, Pete comes up with the idea that we are going to name it after his ancestors,” Alice recalls, smiling. “I said, Nobody is going to know how to say that.

“But he kept bringing clients home, because where do you go in Fort Wayne that will rival what they were used to?” says Alice. “We were able to control the setting, the food, the whole business atmosphere. It worked very well for us.”

“There are still some people who say, ‘We are going to Joe’s tonight.’”

At first, dinners were served at the Eshelmans’ house, with the kids and all. The evenings with clients became more frequent. “So, we bought the bank in Roanoke, and we were able to entertain there. People kept wanting to dine at the restaurant, which was private and open only for corporate events,” remembers Alice. “So eventually, we opened to the public, and that became the restaurant, Joseph Decuis.” The restaurant was first known as Club Creole because Pete was originally from New Orleans. But, when the establishment became a public one, they could not get the rights to that name.

Albert Decuir was an immigrant from France—and an indentured servant. But, just two generations later, Joseph Decuir was one of the largest landowners in Louisiana. “It is a real rags-to-riches story,” Alice says proudly. “We changed the spelling, the ‘r’ to an ‘s,’ and later, we realized it sounded like ‘cuisine.’” Joseph Decuis is an award-winning restaurant and known for its farmto-fork cuisine. “When we opened up in 2000, I looked at some of our bills and realized we were being charged 75-cents per squash blossom, plus shipping, and I thought I could grow some squash and blossoms for less money,” Alice remembers.

“The horse was gone, so we started raised gardens in the corral. We took the riding ring and turned that into more gardens. Then, we added some chickens for the eggs. That was easy.” What isn’t easy is coordinating what is available at the farm with the menu at the restaurant. The addition of a hoop house, utilized in the winter months, has helped. The menu is changed often to reflect availability of fresh ingredients. “I have a new staff at the restaurant that has figured out how to incorporate all the items from the farm—the beef, pork, chicken, vegetables and herbs.” Alice continues, “You have to go with the flow. We are farm-tofork in the sense that what we raise on the farm is served in the restaurant—but not everything there is from our farm. We subsidize items. We try to not to import from other countries and try to buy from like-minded producers.” Another noteworthy part of the Joseph Decuis menu is the Wagyu beef. There is some confusion as to the difference between the terms

Wagyu and Kobe. “Wagyu is the breed of cow. The Kobe beef is Wagyu beef grown and raised in Kobi Japan,” explains Alice. The confusion is in the labeling. The majority of Wagyu beef sold in the United States is crossbred with Angus beef. The cross breeding produces a very different product. “We are on a real mission to try to force restaurants or suppliers to say that it is pure bred or state what percentage is crossbred,” reports Alice. “We have very close to 100-percent Wagyu. It looks and tastes different.” What causes the difference? Japan did not eat beef until the 1700s. The cows were strictly work animals, and their bodies adapted by building up this intramuscular fat for energy. That is where the marbling comes from. “The marbling is what gives that amazing taste,” informs Alice. How the Wagyu are raised is quite different from domestic stock. Japanese husbandry emphasizes stress-free living.


“The cows are at their mother’s side for six months,” Alice says. “We chop the hay into small pieces so it is easier for their digestion. Full-blooded Wagyu are 36 months old before they are harvested. Classical music is played in the finishing barn. Special grains are given.” It is this unique approach that produces a quality product. Combine the quality of the products raised on the farm with the emphasis on detail, and attentive service by the staff, and what is created is a dining experience not soon forgotten.

THE WORLD’S WILDLIFE IN INDIANA SHEETS WILDLIFE MUSEUM & LEARNING CENTER KATHY SCHWARTZ

A

small boy on a rural Huntington, Indiana farm had a big dream—he wanted to see and experience the world. Sumner Sheets became a farmer but held onto his dream and realized it many times over as a world-class hunter and fisherman. Sumner’s home became a show place for the animals he collected. As the number of specimens reached over 100, his friends and acquaintances realized the exhibits needed to be displayed and preserved for generations to come. That marked the beginning of the Sheets Wildlife Museum.

“He literally had every nook and cranny in his home filled,” explains Chelsea Heiney, executive director of the museum. “One of the bear mounts was in the front foyer so you could see it through the front door. I would never have trick or treated at that house.” The mission of the museum is to promote and educate others on conservation and ethical hunting. Sumner Sheets was an ethical hunter—he always hunted legally, having the right permits and licenses, and only in season. Several of his trophies were taken on conservation hunts, those focused on animals that are causing problems with surrounding populations.

“We have animals in here that had killed people, or they had become a nuisance to the society that they were around. Some had left the protection of preserves repeatedly and were attacking cattle and people,” says Chelsea. In 1996, Sheets' last safari turned into a conservation hunt. Lions had left the Kruger National Park and its wildlife preserve and attacked cattle. The lions were brought back to the preserve and left again because they had gotten the taste of fresh meat. It was becoming a problem for the cattle growers in that area because their livelihood was based off cattle sales. Local authorities called Sumner.

Chelsea emphasizes, “His trophies were taken at a time it was legal to hunt these species. Back then, when he first started hunting, conservation was a new idea that people were starting to realize. “We have tigers here at the museum. We have a black rhino. These species are considered endangered or extinct now. People have to remember he hunted before the Endangered Species Act of 1973.” As people became aware of the importance of conservation, educating the public on the necessity of preserving and managing animal populations became apparent. Sheets traveled the world. It is not surprising that the museum is arranged showcasing the various continents of the world. Each of the 130 or more taxidermy specimens is of high quality. Each display is

accompanied by information not only concerning how and where the specimen was taken, but including facts about the species, as well. Sheets Wildlife Museum has a 3-D theatre that seats 56. It also doubles as a meeting room. “We have an intro video that is about Sumner, but we also have National Geographic 3-D videos that are available,” Chelsea says. The fourth Saturday of every month is movie night. After a movie is shown, patrons can tour the museum. “Any other time, you need to call and set up an appointment because it does take time to set up the theater, sync the digital viewing glasses, and prepare the video.” Chelsea adds,. “We hope to have Meerkats in the theater soon.” Sheets Wildlife Museum is a notfor-profit organization. There is a ten-member board that oversees the business of the museum. Brenda Knepper, Sumner’s daughter, is one of the board members. “We always welcome more board members,” Chelsea adds. “I am the only paid employee. We are mostly a volunteer staff. “ Operating funds are always a concern, but the Huntington County Foundation has been very supportive. The latest grant enabled the museum to purchase the 3-D projector for its theater. An annual banquet remains the main source of income for the museum.

“It is August 26th at the Forks of the Wabash,” says Chelsea. “Last year, we had our biggest attendance of 150 people. It keeps growing every year. Our target audience is hunters and youth. When they find out we are auctioning off a gun safe and guns, the tickets almost sell themselves.“ As for the future of the museum, Chelsea realistically states, “We would like to be sustainable and to run efficiently.” In regard to the everyday workings of the museum, Chelsea is planning on expanding the programs available. “In the past, we have not focused on school groups. That is my goal—to get more school groups in here. I have worked on making new packets to send to the schools and lesson plans that are fun, interactive, and easy.” Chelsea is also working on creating interactive programs to run on iPads that visitors can use. Technology is the key to getting more involved. Reaching out to the community is another goal for the future. “A goal is to be known and visited by members of the community. We have had nursing home groups taking a day trip, YMCA day camp, and even a cadet program.” Chelsea is also looking forward to beginning her masters program in not-for-profit management at Indiana University in the fall. She can’t wait to return and apply her higher education at the museum.

GIBSON’S BARNYARD BBQ FLAVORFUL DISHES MADE FROM SCRATCH DEE FISHER

T

here's nothing quite as good as homemade, especially homemade food. Mom's and Grandma's old recipes, written on yellowing recipe cards or old scraps of paper—or just passed along by word of mouth—can be some of the most mouth-watering concoctions! Sometimes, those recipes can do more than just be the hit of the annual family reunion. Tom Gibson has built Gibson's Backyard BBQ, a catering business, from old family recipes along with some of his own creations. "Everything we make is homemade," Tom says. "We don't use premade mixes or canned vegetables for our sauces. We even grow our own organic tomatoes and peppers for our salsa in a garden plot at the back of our property."

Homemade means a lot of work. For example, Tom and his wife Chris offer four different types of BBQ sauce, all made in their kitchen: Black Raspberry Jam, Strawberry Habanero, Pineapple, and Apple (specially made for the Van Wert Apple Festival in the fall). And, all those sauces are made as needed the day before an event! Tom has always been a good cook. The youngest of five boys, he spent a lot of time with his mother, who worked in the Crestview Schools’ cafeteria. "I watched what she did and helped her. I guess a love of food and cooking rubbed off on me," Tom admits. "Mom still does all our baking for us. I'm not really a baker, but she is. Pies, cookies, cakes—Mom does all that for us in her own kitchen."

Some time ago, Tom made a smoker for his own use at parties he and his wife hosted. Friends and family enjoyed his cooking so much that they began asking him to cook for their own gatherings— graduations, weddings, anniversaries, birthdays. "At first, I did only the meat cooking for them,” he explains. “That began to branch out into side dishes, too." Then, seven years ago, Chris was laid off from her job. Tom was (and still is) working in the family masonry business. As they looked over their prospects, Chris mentioned their food business sideline. "After all," she reasons, "we were already doing all the hard work of cooking. Why not start a catering business?" The first job for Gibson's Backyard BBQ was actually a donation to "the Convoy Preschool fundraiser," Tom recalls. "Since then, we have celebrated our business' yearly anniversary by donating the food to that fundraiser."

After that, the events began to pour in. "The Convoy area community has always supported our business," says Tom. "We have always catered to them first." Now, besides multitudes of private events, Gibson's Backyard BBQ regularly brings their food trailer to the Van Wert Rib Fest, the Paulding and Van Wert County Fairs, the Van Wert Apple Festival, Berne Swiss Days, and the Mushroom Festival in Osseo, Michigan. "We go to Hillsdale County in Michigan quite a bit to pick morel mushrooms to make morel butter. We feature it in our Morel Tater Kraters, baked potatoes specially made for the Mushroom Festival," Tom shares. Besides those "taters," Tom and Chris offer a menu of savory meatbased treats: sandwiches made of pulled pork, brisket, and pulled chicken; "lolli-chops" (maple sugarcured loin on a stick); and nachos.

"We call those 'Natchur Ordinary Nachos,'" says Tom, with a smile. "Tom comes up with the names," says Chris, shaking her head. Besides large events and festivals, Gibson's caters a large number of private events throughout northeast Indiana and northwest Ohio. "We can serve a full menu, everything from appetizers to entrees to desserts," Tom says.

Family recipes help round out the list of side dishes, including his mother's cole slaw dressing and his grandmother's cooked potato salad dressing. Tom confides, "Those recipes are a family secret; all I can say is they are unique in that no mayo is used in them!" Besides the usual private parties, including graduations, weddings, and anniversaries, Gibson's also caters dinners and lunches for civic groups. "Our brand tag line is 'Specializing in your occasion.' No event is too small or too large for us. We can serve groups of 1500 as easily as groups of 12.

“If necessary, we have the equipment and workers to serve groups of up to 3,000 people. We even do company picnics and dinners for local factories and warehouses. They give us the meat, and we prepare it for company events." Holidays provide special opportunities for Tom and Chris' business. "We've been doing Thanksgiving dinners—mostly turkeys—for some time," Tom says. "Our customers bring their birds over to us, and we cook them in our turkey fryer. They'll pick them up just before the dinner, and their family can chow down without the fuss of cooking their own turkey." Tom's father brought his family to Van Wert County from the Decatur, Indiana area. "Dad was originally from Van Wert, and he loved this area," Tom explains. "He instilled his love of this area in all his sons. “I've always thought that Van Wert County is a great place to live and work and raise a family. My dream is to eventually open a local restaurant, probably in Convoy."

Gibson’s Barnyard BBQ keeps Tom and Chris hopping, but they are adamant about a shorter timeline for expansion. "Chris and I originally decided to start this business as a leap of faith. If you wait too long, you can miss an opportunity," says Tom. "In the next five years, I'd like to open a place in Convoy while still maintaining the catering business." Gibson’s Barnyard BBQ is a family concern, started by family, staffed by family, and maintained by family recipes and cooking ability. Perhaps in a few years, we'll all be taking our families to eat in a restaurant birthed many years ago in a homemade smoker in Tom Gibson's backyard.

Audrey Muhlenkamp, owner of The Tipsy Glass Winery in Bryant, Indiana, had that exact thought when her family and friends would make the drive to Wisconsin to visit. “Microbrews and wineries were becoming a big thing then, and I was astounded at how much better the wine coming from the local wineries tasted in comparison to those bought at the store,” she explains. “It came down to, they were using locally-grown produce, as well as making smaller batches, and it produced a higher quality wine that I enjoyed drinking. It was there actually, in Wisconsin, that I fully came to appreciate Midwest wines, and all the hard work that goes into making a wine that is approachable.”


Although it may have been in Wisconsin that she discovered she enjoyed drinking wine, it was here in Indiana that she learned to make her own. “A friend of mine that I attended Purdue University with invited me down for a wine and beer tasting fundraiser hosted by the Lafayette Historical Society,” Audrey recalls. “There was a tent set up there that showed you exactly what equipment, as well as what products you would need to make wine at home. A couple of months later, I bought the equipment and the juice kit, and started making my own wine.”

The first wine that Audrey ever made was a Zinfandel— because she didn’t think she could mess that one up, she says with a smile. It turned out well, so she made three more batches and gave those away for Christmas. The wine proved a success with family and friends, so giving bottles of homemade wine as a gift became a habit for her.

“On birthdays, anniversaries, holidays, and for weddings, I would gift cases of wine. Those people would take a bottle with them when they would go to other events, and before I knew it, I had people that I didn’t know calling me, asking me if I had wine for sale. It made me think that maybe there was a business venture there,” Audrey says. The Tipsy Glass Winery opened in early February of this year, and started with wine tastings only on Fridays. “Saturdays 37

and Sundays were saved for racking, filtering, and bottling wine for inventory, until we could get enough made and on the shelf to keep things going,” Audrey explains. “With a minimum of a two to three month waiting time for the wine to mature enough to be sold, it has been extremely busy around here. I couldn’t have done any of this without my mom and dad, though, who have given up so much of their time to help me make my dreams come true here. “My mom helps serve, clean, and set things up, and my dad comes and helps make the wine and bottle it, as well, just to list a few of the things that they do. They are both a big part of the success of this business,” she adds. Currently, The Tipsy Glass Winery is open from 5:30 to 9 p.m. on Fridays, noon to 6 p.m. on Saturdays, and 1 to 6 p.m. on Sundays. “We have more in the mix coming up for the summer. With longer days ahead, it only makes sense to have longer hours at the winery, so we are looking at getting some musicians in here for tastings and live music,” says Audrey. “We also are hosting our first wine and canvas event next week and

have had multiple requests to do other events. Things are really picking up quickly, and I believe it’s going great here!” When asked her favorite wine make and drink, Audrey answers, “I don’t make a wine that I don’t enjoy, and I make them all with the intentions of them appealing to the public, as well.” With names like Goober Grape, a grapey red wine with a splash of peanut butter flavor; Love Potion, a sweet red grape wine with a blueberry flavor; Apple Cliff, a sweet apple wine made from 100-percent local Jay County apples; and Patriot Red, “grape jelly in a glass” (this homemade wine also won a gold medal at an Indy International Wine Competition), there is sure to be something to appeal to anyone’s palate! He and young assistant, Alexis Rhoades leave home at 6:15 a.m. to be ready by 9 a.m. "We have a system. It usually takes 30 to 45 minutes to set up", he says. Despite the early morning start, Rhoades' comment on working the market is, "I love it."

of Greenville, Ohio. In May, most of the food comes from southern states, but by the end of the season, 90 to 100 percent of the fruits, vegetables and flowers are home grown on the farm. Bowman Produce participates in farmers' markets in Sidney, Troy, Greenville, and Piqua, in addition to Celina. "Celina is the busiest and brings in the best revenue," Turner reports. Cassie Menchhofer of Cassie's Country Cupboard sells a variety of mixes; soup, cornbread, and pancake are just a sampling. The business began in 2011 out of necessity. Living far from town means there is no quick trip to the grocery store. She started making her own mixes, discovering how artificial ingredients and unnecessary fillers are added to many convenience foods. The following year, she decided to sell at the market and share what she learned. She enjoys finding solutions to help others. "The best part is meeting new people, learning their dietary needs and how to meet those needs," says Cassie. Peg Rotondo of Celina has been at the market for three or four years. In addition to jams and jellies, she has landjaeger, a German hunter sausage. The meat is cured, smoked, and hung to dry. Rotondo provides samples to those who would like to taste before buying. Shellabar offers organiccertified soaps. The business uses all-natural ingredients with different bases of goat

Christine James makes jewelry and crafts for One of a Kind Creations. One of her biggest sellers is a little girl's bracelet. She has several selections; one has a Celina theme with a fish and lighthouse. Christmas and summer ornaments are also popular at her booth. James and her friend, Bruce, are originally from the New York City area. He comments that "Celina is a nice town with nice people." Joni Bensman of G Free Joni is at the market for her second year with gluten-free products. She has been gluten-free for seven years and is eating to heal. She wants to share her knowledge with anyone struggling with health issues.

The 2017 Celina Farmers' Market is open Saturdays from 9 a.m. until noon from May through September. Vendors set up on the sidewalk at the corner of Market and Main streets. The booths head west on Market and north on Main. Spaces are on a first come/first served basis with no assigned spots. Sellers respect others' areas. All are there with the same goal and mindset. Street parking is available near the market, and there is a public lot north of the courthouse behind the post office on Fulton Street. The market is open rain or shine,

but not all sellers will brave the weather. Buyers are encouraged to come early for best selection.

The history of Celina Farmers' Market goes back to a group of people getting together and selling their products. At first, it wasn't an organized, structured event. Some of the sellers had a business started in their garage and were open to the thought of expanding their customer base.

2016 was the market’s biggest year with over 20 vendors. The 2017 season began with 17 vendors and is expected to surpass last year's numbers. The cost to participate is $35 for the entire season. The market is endorsed by the CelinaMercer County Chamber of Commerce.

A spokesperson from the CelinaMercer County Chamber of Commerce office said after a couple of years, the chamber took charge and planned for the seasons. When asked if there have been any unusual vendors, her response, with a chuckle, is "No comment." She adds, "We have a nice variety of products, ranging from jewelry to foods, produce, and mums."

The market does not accept nonprofit fundraising or information booths. Application and rules for vendors can be found online.
