Autumn is a time of transformation in the Hunter Valley. The rains have transformed our vistas from monochrome to a vibrant green, and the long rows of vines will soon change from deep emerald to shades of red, orange and purple before the leaves gracefully fall for the Winter months. The days are getting shorter, the temperatures are starting to chill out, and we’re all enjoying glorious sunny days with cooler nights. Autumn truly is a beautiful time in the Valley, and the wines that come with this particular season are as varied as the colours of the falling leaves. This month we uncover six very different wines to sip and savour during Autumn. Take a taste on page 30. This month we visit Margan Family Wines, which, over the past 25 years, has evolved into the leading winery in the Broke Fordwich sub-region. With a commitment to creating single-vineyard wines produced from grapes grown wholly and solely on their vineyards and a focus on produce that has been grown and made on-site, it's no wonder that this family vineyard has been a three-time winner at the Australian Tourism Awards for Excellence in Food Tourism.

MARGAN FAMILY WINES WORDS MICHELLE MEEHAN

W

hen you put your name to a product, you need to be passionate about what you are creating. While that may be easier said than done for some, it’s certainly not a difficult task for Andrew and Lisa Margan, who live, breathe and proudly advocate the values behind their award-winning winery, vineyard, cellar door and restaurant.

The experienced winemaker and the highly-trained chef set up their family-owned and operated business in Broke during 1996 after spending several years living in Bordeaux, France. Andrew already had a long history in the Hunter wine industry, having spent 20 years learning the art of growing grapes and making wine under the late, great Murray Tyrrell. Coupled with two science degrees and his experiences overseas, Andrew was keen to apply his unique hands-on approach to producing his own range of wines. Lisa came from a background in teaching, with a Bachelor of Education and Applied Science. But after moving from Sydney to the Hunter when she and Andrew married, Lisa shifted her focus to food, re-training as a chef under the

expert guidance of respected Hunter restauranteur Robert Molines (Bistro Molines). The couple’s years spent in France left a lasting impression on Lisa as well, who developed an appreciation for quality produce, technique and the unique appeal of dining in a premium wine region. After returning to the Hunter she completed a Master’s degree in Science and Nutrition, focusing on organic food production – a decision that would clearly flavour the direction of the food operations she would establish alongside Andrew’s winemaking brand. Lisa said the business was initially set up to complete contract winemaking, allowing them to slowly establish their own brand on the side, but it wasn’t long before their plan was turned on its head. “Andrew and I had been living and working overseas, mainly in Bordeaux France for a few years, and it was there that we conceived the rough plan of starting our own business,” she said. “The business started as a contract winemaking business with a tiny volume of our own wine label Margan, on the side. Within one year, this business plan was turned upside down, and we made more of Margan and less under contract for others. “Since then the wine brand has gone from strength to strength, and we now have 100 hectares of our own vineyards and produce around F


25,000 cases of wine annually, which is sold domestically and to select export markets.” In the past 24 years, the couple has carefully evolved Margan into the leading winery in the Broke Fordwich sub-region, with a commitment to creating single-vineyard wines produced from grapes grown wholly and solely on their vineyards. Margan’s Fordwich Hill vineyards offer a mixture of old vines planted in the late 1960's and more traditional Hunter Valley varieties, as well as some newer alternative varieties and field blends, with Andrew pioneering the introduction of Barbera and Albarino into the Hunter Valley. Lisa believes this homegrown focus is one of the key elements that sets Margan apart within the market. “We are dedicated to producing only Hunter Valley wines made from our own vineyards and made on-site by us,” she said. “While other regions produce grapes that we would love to make into wine, like the cool climate varieties Pinot Noir and Riesling, we choose to stay loyal to our region and make the wines that grow best here. “Our ethos has always been ‘Estate Grown – estate Made’, and we think people who love our wine have come to trust that.” The estate-grown focus has certainly not placed any limits on Andrew’s winemaking process, however, with Margan offering five different ranges of wines that contain numerous varieties within each: Originals, Breaking Ground, White Label, Aged Release, and Margan’s ground-breaking ‘Field Blends’ of Shiraz Mourvedre and Tempranillo Graciano Shiraz. In 2007, Andrew and Lisa expanded their operations with the construction of a unique rammed earth cellar door and restaurant. “That launched the wine tourism part of our business, which allows us to better connect Margan wine and food with our guests,” Lisa said. “Wine, food and good company… it all just comes together nicely.”

Unlike many wineries, which lease out their on-site restaurants to someone else, all Margan’s operations are 100 per cent estate-owned and operated, another factor Lisa believes sets them apart. “We entirely own and operate our wine tourism operations. I run the restaurant and cellar door, and Andrew runs winemaking and viticulture,” she said. “This presents an integrated wine and food experience for our guests, and we can control and curate this as we are across all operations.” Maintaining control of the restaurant has also allowed Lisa to apply that same ‘Estate Grown - Estate Made’ ethos to the food side of the (Continued next page) F

(Continued) business, which is widely regarded as ‘acclaimed agri-dining at its finest’, having pioneered the kitchen garden concept in the region. “As farmers, our first goal is to showcase the produce that we grow here and to build our menus around this in a true collaboration with the Hunter seasons,” Lisa said. “I was first inspired to do this when we lived in France decades ago and saw the absolute dedication of farmers towards quality produce. I also loved the regional pride that came with it and the unwavering allegiance to seasonality.

“I wanted to create a dining experience that tapped into that and respected the seasons, so we planted a very large vegetable garden and over the years have expanded this to include an orchard, free-range chickens, olive groves, estate-reared lambs and beehives. “This ‘hyper-local’ approach also supports our EMP (Environmental Management Plan) by keeping our carbon footprint low. Additional produce is sourced from local farm-gate suppliers and meats and seafood are sustainably produced and as local as possible.” This focus on sustainability sits at the heart of Margan’s operations, with Andrew using his second degree in Environmental Health to oversee the emergence of their Environmental Sustainability program. Margan is now the most accredited environmentally sustainable winery in the Hunter Valley. Lisa said their next goal was to become an organic operation - not a surprising direction given her own university studies. “As farmers, we always have been committed to looking after the land we are on so we can hand it over to the next generation in good condition. We have been doing this in some form for decades and are considered leaders in this area,” Lisa said. “In 2010 we decided to take this up a level and developed an EMP to reduce our impact across all business operations, which included calculating our carbon emissions. “In 2013 we became certified under the Winemakers Federation Australia Entwine Program, which benchmarked to the ISO14000 F

We were the first in the Hunter to achieve this. “In 2019 this certification was updated to Sustainable Winegrowing Australia and Freshcare, which is certified via independent on-site audits of our EMP. “We have been heading towards carbon neutral for the last five years, which has involved reducing our emissions via the four basic pillars of sustainability: reduction of greenhouse gases; energy efficiency; waste reduction and water management. “Our ultimate goal is to become carbon neutral and to off-set the amount of emissions we can’t reduce any further. “This can be achieved quite simply through purchasing carbon offsets, which would see us carbon neutral almost immediately. However, many of these companies are not Australian and the money goes to offshore projects, so we decided not to go down this easier path. “We want the carbon benefit to stay close, so we have just completed regenerating our local riverbanks, planting 450 native trees. Additionally, our Ceres Hill (home) property is officially ‘In Conversion to Organic Farming’. Full conversion with certification will take another three years and it is a big job but we are learning lessons along the way and enjoying the journey. “ Thankfully, Andrew and Lisa have a talented and passionate team to help Margan reach its lofty goals, with the original two-person business having grown to now incorporate a team of 40. Additionally two of the three Margan children, now adults have completed their University studies and are returning home to join the business. Eldest son Ollie is a qualified winemaker and will join the winery team while daughter Alessa has now begun her second degree, a Bachelor of Viticulture and is working within the vineyard operations and in particular across the property’s transition to organics. Youngest son James works in finance in Sydney but looks forward to returning home to the family business and being the boss of his elder siblings one day! The business soon celebrates its quarter century milestone and has

come a long way in 25 years. Lisa and Andrew feel fortunate to survive the fires and smoke damage from the 2020 harvest as well as the COVID shutdown. “Given we operate in three challenging industries of farming, the wine industry and restaurants we are actually pretty fortunate to still be in business almost 25 years down the track,” she said. “We have been awarded some industry accolades that we are very proud of, including wine trophies, cellar door of the year and the restaurant being recommended in leading guides and awarded its ‘hat’ in the National Good Food Guide. “We have also been three times awarded Excellence in Food Tourism at The Australian Tourism Awards in recognition of all our onsite experiences such as tours, cooking schools, winery experiences, garden workshops etc. That is a major accolade. “On top of that, Andrew and I have built this business from the ground up, work pretty hard to keep it all going and are still married so that’s an achievement. MEET THE MAKER

Mudlark Studio Penny Davis is a Hunter Valley creative living with her three dogs – The Monster, The Horror and The Terror (but that’s a whole other story) in a little village called Blackalls Park, close to Lake Macquarie. She is also the proud owner of Mudlark Studio – a regular at Handmade in the Hunter Markets and much loved by market enthusiasts due to her broad range of highly unique products (think beanies made from yak or baby camel fibre). We caught up with Penny this month to find out a little more about her creative process. We love the name of your studio - please tell us what it means and how you came up with it? I decided on Mudlark as I work with clay and try not to take myself seriously! Please tell us what you create – and provide our readers with some details about the designs, materials used and process? Mainly, I like to make things that people enjoy using. As well as working with clay (I have been making pottery professionally for about 30 years) and making soap, I can spin a good yarn. It was less costly to set up spinning and easier to learn. Years ago, I used to have a few sheep in the backyard, and I'd shear them with scissors then spin their fleece and knit jumpers for my family. You could say I grew my own jumpers!

I love the range of colours found in natural fibres and enjoy spinning many different fibres, including wool, alpaca, silk, camel, yak, mohair, angora rabbit, synthetic fibres and clients' pet fur. I use mainly alpaca as it's such a luxurious fibre and is much warmer than wool, and comes in a great variety of natural colours. You also have a fantastic array of soaps - can you please expand on the soap range - in particular, we’d love to know about the dog soap, jelly soap and playdough soap? They are all very unusual - how did each variety come about? That answer could take forever to answer! I have dogs, one of which has sensitised skin. All my dog soaps are medicated, and I've checked with my local vet about any adverse reaction to the medications I use in the soap. With the jelly and playdough soaps, I wanted something different for kids to have fun with. I also have Donkey Milk soap which is supposed to be better for your skin than Goat's Milk soap. I came across that based on a special offer from one of my suppliers. It was close to Christmas, and I bought some as a joke/fun possible present. It turned out to be popular. The Gardeners' soap, Orange Peel soap and other exfoliating soaps again came about because I was looking for something different. Where does the inspiration for your designs come from? Inspiration can come from anywhere, really. You just have to be open to it. A Little Piece of History in Greta WORDS LIANE MORRIS

In the small town of Greta, there is one pub on the main street that you may often pass on your journey into and through the Hunter Valley.

It’s called Tattersalls, and at the end of May 2019, the Tattersalls Hotel Greta changed hands with Margaret Bancroft becoming the new owner of the 130-year-old hotel. Margaret is almost Hunter Valley royalty with a long family history going back to the first properties in Lovedale. She is also the owner-operator of Hunter Valley Horse Riding and Adventures and Hill Top Country Guesthouse and is passionate about where she lives and works. The hotel has a long history. Built in the late 1800's during the early mining boom, the first timber building was destroyed by fire and then replaced with the current brick building in 1910 for the Castlemaine Brewing Company. The pub walls have been witness to the stories and travails of miners and migrants (Greta was home to over 100,000 European migrants after WWII), locals and travellers. There were originally four pubs in the town, but Tattersalls is the last remaining and therefore an important part of the town’s heritage. When Margaret took over the hotel, it was in dire need of repair and rejuvenation. Her vision was to create a meeting place for the community, as well as to attract visitors to the area as they pass through. Every effort has been made to create a family-friendly community space where people come together to enjoy a good meal, a fun atmosphere and even a haircut! There had been a barber’s shop on site for over 30 years, and when the barber retired, the opportunity was embraced to add a family hairdressing business instead. A Little Off The Top Greta can serve you a beer while you get your hair cut or a crisp glass of white while you have your hair braided. During the COVID lockdown and restrictions, many improvements were made to the venue, with more ongoing since the COVID restrictions have been lifted. Downstairs the bar area has been painted, the bar itself replaced as well as the flooring and the light fittings. Upstairs the rooms are being renovated, and there is now a common room with a TV. F

The pub is back to being busy with the billiards room in full swing with the jukebox playing, Karaoke nights on the last Sunday of every month and meat raffles every Thursday and Sunday. The Joker’s Draw and jackpots are growing every week, and the trivia nights every Wednesday are lots of fun with great prizes for everyone. According to Margaret, she still has lots up her sleeve to make even more improvements and create the community meeting place for locals that she has envisioned. When asked how she relaxes and what is next for her, she says, “I love what I do. It’s not work to me, and I plan to just keep on doing the same!” With Margaret at the helm of all her thriving Hunter Valley businesses, the local community and visitors alike are the beneficiaries. Margaret won’t be drawn on why she purchased the pub, but one can speculate that with her love of the Hunter Valley, she may well have felt the need to conserve a part of the history of Greta and build on her legacy of creating and sharing aspects of the place she loves and calls home. IN WINE! The fun side of seeing a winery in action is when the grapes are being picked and put through the crusher at the winery – which for the Hunter Valley happens mostly in January and February – for the rest of the year, action in the winery is generally pretty quiet. Luckily, you can experience a whole year of winemaking condensed into a short 15-minute visual presentation at the Hunter Wine Theatre at Hunter Resort. The presentation gives the audience an insight into the Hunter Valleys wine heritage, grapevine maintenance and the steps in the winemaking process. After the presentation, you are invited to a 15-minute wine tutorial with the Cellarmaster. What’s the difference between a wine tutorial and a wine tasting? A wine tasting involves tasting various wines with a view to purchasing, whereas a wine tutorial takes participants on a learning experience with a bracket of four wines. The Cellarmaster will teach you how to taste front palate sweetness, acidity, and back-palate tannins, and most importantly exercising your nose to appreciate the bouquet of the wine. The full half-hour experience is just $30pp, and the Hunter Wine Theatre is open every day at 10am and 3pm. Individual bookings are not required; however, numbers are limited for each show, and times may

Thai fish cakes, stir-fried vegetables with soft tofu, chicken cashew nuts, green curry chicken and other fragrant Thai curries. The menu is further enhanced by a range of Japanese dishes that include assorted sushi and sashimi selections. There are also a variety of vegetarian dishes. We decided on the chicken satay and assorted sushi and nori rolls for the entree as well as the miso soup, which proved to be a perfect accompaniment to the Japanese dishes. We then made a selection of three Thai dishes, all served with steamed rice for main courses. Our first selection was the red curry king prawns. This dish was superbly presented, and the king prawns cooked to perfection with just a hint of lime and deliciously fresh vegetables. The chicken with crunchy cashew nuts was colourful and healthy, served with seasonal vegetables and with an incredibly delicious sauce. Our final dish was also our favourite and a very traditional Thai meal.

We’re clearly not alone, as the Panang duck curry, as I later discovered, is also one of the most popular dishes amongst Oishii's patrons. It came served with juicy and generous slices of skinless duck sitting within a deep-flavoured Panang curry sauce, and after the first taste, it was easy to see why this dish was such a favourite – it was delicious and left us wanting more. The dishes are perfect for sharing and ideal for families or groups of friends, and the Japanese menu also offers Teppan Yaki and Terri Yaki options for those looking for a ‘taste of Japan’. The setting is minimalist and with a Thai-themed dining room. Diners also have the option of dining outside on the terrace overlooking the vines – a perfect setting for those warmer Autumn days. From there, it was on to the highest of heights: as well as taking over his old master’s contract with Carlsberg, René was appointed to the

The Hunter Valley is a wonderful place to visit at any time of the year, but Autumn has that special magical something – mountain and vineyard landscapes with hues of brown and red, cooler days and nights in front of warm, open fires, cosy restaurants and cafes serving up hearty dishes, welcoming cellar doors and of course the wine. What could be better? Change is everywhere at the start of Autumn and as the seasons change, so do many of our drinking habits. For many of us, the changing seasons come with changing preferences in wine. It might even be an excellent time to try something new. Those crisp white wines we crave in Summer tend to give way to light to medium reds and heavier, more textural white wines to suit the cooler nights and days. It is that time of year when our wine choices can be as varied as the days themselves. So, what wines do you “pair with the season”? The lighter, brighter reds you might have enjoyed over Summer are still relevant now; however, Autumn will see them served at warmer temperatures and with more decadent ingredients. Think beef bourguignon with Pinot Noir or succulent lamb meatballs with Cabernet Franc.

Here are a few wine picks to stock your cellar this colourful season. The cooler weather may be here, but that does not mean you need to stop sipping on a glass of your favourite Rosé. As a fantastic food wine, the versatility of Rosé is its standout feature as it can be paired with a wide variety of foods and flavours and handles spices and heat very well. Those lighter-style reds you have been enjoying in the warmer weather remain an optimal choice for the cooler moments of Autumn; however, now is the time to enjoy your Pinot Noir, Merlot, Sangiovese, Grenache, Cabernet blends and medium-bodied Shiraz at room temperature. Delivering the amazing flavours of Autumn, Pinot Noir is the vinous star of the season and a popular alternative to some of our famously big bold reds. Typically lighter in colour, with a perfumed nose and hints of

cherry, raspberry and plum flavours balanced by smooth tannins, it is a particularly flavoursome wine and ideal with roasted meats, salmon and tuna dishes. Medium-bodied but deceptively light in colour, Grenache is a varietal packed with aromas of raspberry, red plum and tobacco. This is a crowdpleasing wine and is excellent alongside those cooler weather dishes such as grilled, stewed, or braised beef, veal, pork and chicken. The typical young Hunter Valley Shiraz is a medium-bodied wine showing red and dark berries, spices and a great deal of tannin. With age, the wines become far more complex, full-bodied, yet smooth and richly flavoured with some earthy tones. The bold flavours give Shiraz the reputation as a very food-friendly wine. Sangiovese is perfect for Autumn sipping. Not only does it offer you flavour satisfaction, but it is the ideal match for the creamier and richer meals that you crave once the cool weather moves in. With the cooler months, those crisp and fresh whites we have been savouring the last few months make way for wines with minerality and richer textures, savouriness and concentration. Most Chardonnay lovers will drink Chardonnay regardless of the season, but it is the perfect choice for Autumn. The style that has emerged today is all about letting the fruit take centre stage, with other elements such as oak taking a supportive role. It is one of the best Autumn wines and suits the richer style of food the season is famed for. Semillon is proof that Autumn is not just about red wines. This Bordeaux-borne grape is often blended with Sauvignon Blanc, giving an otherwise lush, mouth-filling wine a welcome hint of zippiness and an excellent match for those Autumn-inspired dishes. Pinot Gris (or Pinot Grigio) is a great choice for Autumn weather – it's rich and textural with notes of apple and pear (how fitting for Autumn!), with just the right amount of spice from some time in oak. A great one for transitioning from dry, crisp whites to something a little more complex.

2017 Mudgee Chambourcin – RRP $35 Savannah Estate Wines are produced from small select parcels of premium fruit grown in renowned viticulture regions throughout Australia. Chambourcin in its own right is a very interesting hybrid with one of the few red grapes to have red flesh. Lifted and aromatic fruit aromas of blueberry, boysenberry and blood plum. TASTING The palate is full-bodied, ripe, generous yet remarkably soft. The upfront fruit flavours are black fruits such as blackberry and mulberry. The mid-palate is broad with flavours of crushed nuts and smoky bacon. The back palate is soft, long and juicy. FOOD MATCH Pork and fennel sausages, creamy garlic mash with thick onion gravy. 2019 Home Vineyard Semillon – $24 Another high-quality off-dry Semillon from the Mistletoe Home Vineyard. The fruit is hand-harvested from low cropped 25-year old vines, and cold-fermented without any oak influence. TASTING Fermentation was halted at 7 grams per litre residual sweetness and the wine was bottled early to retain the crisp acidity and lemony grapefruit characters typical of this vineyard.
