With a vineyard that dates back nearly half a century and a name linked to one of Australia’s most iconic television series, Wandin has had a long and fruitful history. In decades of operation, this iconic property has changed hands only a couple of times, and this month we speak with the team to find out what newest owners – Lipton and Linda Tsoi – have planned for the next half-century. Following on from a range of challenges including drought, bushfires, COVID and now Chinese trade issues, our local wine industry has had to pivot hard to survive throughout 2020. In what was a year of change, perhaps the biggest changes wrought by ever-evolving COVID regulations will prove to be the most positive for years to come. In this issue, we speak with Ken Sloan from Mistletoe Wines about the positives for both tasters and producers that have come out of these different times. The warmer months are here and with them come relaxation, festivities, and lots of sunshine. This

W

ith a vineyard that dates back nearly half a century and a name linked to one of Australia’s most iconic television series, Wandin has had a long and fruitful history. But with a reinvigorated focus on creating sensory experiences and a rejuvenated offering across the cellar door, restaurant and accommodation, the 40-hectare Lovedale property also has an exciting future ahead.

Wandin has been a part of the renowned Hunter Valley wine region since 1973 when local potter and winemaker Peter Dobinson decided to plant a vineyard in the rich, fertile soil on the slopes of the Molly Morgan Mountains, which he named Millstone. The property changed hands – and names – 17 years later when it was purchased by noted television producer James Davern and his wife, Philippa. The couple renamed the property Wandin Valley in honour of the fictional village in the much-loved television series James had created in 1981, A Country Practice, and set about turning it into a bonafide tourist destination with a winery, cricket pavilion, restaurant, manager’s cottage, modern cellar door, function rooms and tourist accommodation. Wandin Valley went on the market again two decades later and was snapped up by Mosman couple Russell and Katrina Leslie, who already owned other vineyard properties on Wilderness Road. The site’s evolution continued when current owner Lipton and Linda

Tsoi took control of the estate in 2016 with long-term plans to strengthen the brand’s offering. General Manager Manda Duffy said that the owners had invested heavily in rejuvenating the property and vineyard during the past few years, which is now known by the updated, abbreviated branding of Wandin. “The current owners bought Wandin with a long term view to improve the site and return the brand to a strong position from a complete wine tourism perspective,” she said. “Significant investment was required in all the buildings, particularly the accommodation and this has been successful. Like fashion, we keep updating the rooms to fit the style of the buildings and complement the surroundings. (Continued next page) F

(Continued) “Wandin has the luxury of two kitchens, which also require constant updating and together with the team, we continue to make changes to suit our team and our customers.” With most of the building and cosmetic changes already complete, Manda joined the Wandin team at the start of 2020 with plenty of plans for the future; however, the onset of COVID-19 soon saw the team shift their focus. “I remember signing on to start on January 6 with a bundle of plans and ideas. We reset opening times for the cellar door, we named the restaurant Wandin Kitchen and launched a range of new menus. Then COVID hit, and it was devastating for all. “Once the place was cleaned from top to bottom during lockdown it was the brand’s opportunity to focus on the wines, the way the wines and accommodation were presented and of course, the awesome food. “Our new direction has been so rewarding and, more importantly, our visitors enjoy all we have on offer.

It’s an authentic space run by a team who love the Hunter and appreciate that every customer has chosen the place we call home as their tourism destination. Wandin’s rejuvenated direction is based around the idea of creating sensory experiences for their guests, as the website itself proclaims: ‘We exist to create an experience for you that takes you on the ultimate sensory journey. From outstanding wines for every palate to the hospitality of our estate, let us shower you with the true country charm that is the Hunter Valley and Wandin’. Manda said this promise encapsulates everything Wandin has to offer, from the visual appeal of the property itself to the seamless melding of its mouth-watering food, and highly renowned wines. “When you drive through those big sandstone and iron gates and gaze down to the first of many water views, it is blissful and very calming,” Manda said. “The entrance road dotted with kangaroos and birdlife takes you up to the high point on the property, which provides the most amazing views back over the valley right across to the Brokenback ranges. “The centrepiece of the site is, of course, our cricket pitch, which is

always ‘game ready’, while the adjacent cricket pavilion ticks all the boxes for weddings and for corporates who want the benefit of privacy. “The sensory experience is heightened by the sounds of the wildlife, the sight of a kangaroo bouncing past you, the geese waddling down to the dam and the beautiful buzz of the workers in the Wandin hives producing our vineyard honey. “Then you mix in the beautiful aromas of the flourishing kitchen garden, and as you wander past the kitchen, the smell of the sourdough baking in the ovens is truly lovely. “Someone is always having coffee here with friends, which is delicious and then as lunch commences you start noticing the sizzling sounds and smells. “All of this is then topped off by the wine – it’s very easy to be delighted by what you see, hear, taste and smell around here.” When it comes to the tastes on offer at Wandin, the renamed Wandin Kitchen is nothing short of sensational. Manda said executive chef John Rutherford and Tim Richardson had done an incredible job with all the menus, although she admitted the Friday and Saturday night degustations are her top pick when five courses are calling you. Of course, 2 and 3 courses are on offer as well. Other favourites included the Togarashi tempura king prawns with black garlic mayonnaise and wakame herb salad wrapped in a crisp lettuce leaf, the Woodville duck breast lightly roasted over pecan, charred cauliflower puree, shitake mushroom and quince jam, and the brown butter and popcorn parfait, five-spiced apple, hazelnut praline, candied popcorn and muscat caramel. “John brings an excellence to the kitchen, he raises the standard and loves refreshing the menu to take advantage of what our Hunter providores have on offer,” Manda said. “He’s also keen to make sure the wine and the food match well and that the plates are a treat for the eyes as well as the tastebuds. “If you haven’t been to Wandin Kitchen you are missing out.” For those more interested in tasting the fruits of Wandin’s wines rather than its kitchens, a visit to the refreshed cellar door is a must. “Fortunately, wandering into the cellar door and making friends with the various staff as they take you through the favourite wines of the day is still allowed to happen, albeit in a COVID safe way,” Manda said. “Seated tastings are more fun and something I started doing nearly 20 years ago. Where possible, you should taste the wine varieties in flights so as you can choose what suits you best. Our ranges extend from all the varieties the Hunter does well.” F


Most of the wine produced at Wandin comes from the grapes grown on-site, with the original vines planted by Peter Dobinson in the early 1970s still bearing fruit alongside more recent additions to the vineyard. A deep understanding of the site, soil and regional history has a strong influence on Wandin’s wines, with sustainable viticulture practices complementing a gentle approach in the winery to ensure expression and refinement are the signatures of the brand. “The vineyard hosts 12 acres of vines, predominately Shiraz, Chardonnay, Cabernet Sauvignon and a tiny parcel of Malbec,” Manda said.

“My vintage wish for the year is that we put to good use our estate fruit, as we have invested heavily in bringing the best out in the vineyard in 2020 and it looks set to pay off. “I will need to buy some lovely Semillon from a friend here in the Hunter, and I will have a small parcel of Sauvignon Blanc come from some of our cooler vineyards in NSW, but outside of this, I hope not to need much more fruit to set us up for sales over the next 18 months. “This year I am also delighted to have the talents of Liz Silkman making the wine for Wandin. Quality over quantity is undoubtedly our focus for the year and keeping an estate-only focus where we can. “For us, Chardonnay and Shiraz will be our heroes, and I can’t wait for the 2021 vintage, which is looking terrific at the moment with the grounds cared for by long term team member Greg Hardy.” For those who want to indulge in Wandin’s wine and food tasting experiences without worrying about how to get home afterwards, the property also has a range of luxurious accommodation offerings nestled amongst the vineyards. “The seven vineyard villas have all been updated with various features and are very popular for all types of visitors,” Manda said. “They’re a great option for brides and corporate groups, however, they’re also perfect for groups who want a few days away with close friends or family, and for those that prefer self-contained accommodation. “It is, however, becoming more and more popular for visitors to choose to stay and dine with us at Wandin Kitchen - there’s nothing nicer than a moonlight stroll back to a villa after a stunning meal, no taxi required and just watch out for wombats!”

There’s no denying that COVID has changed the world we live in and that many of the changes we’re experiencing now may never revert to the way things were done pre-COVID. One of the industries that has been most heavily affected by COVID is that of the wine industry. Following on from a range of challenges including drought, bushfires, COVID and now Chinese trade issues, our local wine industry has had to pivot hard to survive and will need domestic support to flourish. Despite all this gloom and doom, however, it’s not all bad. COVID has enabled wineries to assess their business model and make necessary changes that bring them more into line with international practices and inspire innovations that in the long run, it is hoped will improve the bottom line. Wineries have relied on their cellar doors to provide the face-to-face tasting experience for consumers with the intent to initiate sales. We’ve been lucky in Australia, that we’ve been able to enjoy this experience, F

for the most part, completely free of charge. Free wine tastings are not as common internationally and have been gradually declining in Australia over recent years. In 2019, 50% of Australian wineries were charging for wine tastings, but COVID has accelerated the trend out of necessity.

Cellar doors are hospitality venues and are bound by the same laws as restaurants and bars. This means that the number of people is limited to the space's size and the current COVID space restrictions. Hygiene and contact tracing requirements are paramount and required by law. Each cellar door now has to comply with the following: • Have a COVID safety plan • Have a Service NSW QR code for contact tracing purposes • Comply with current social distancing requirements • Have a COVID safe hygiene marshall dressed in distinctive clothing to oversee all aspects of the requirements • Comply with current mask requirements • Provide signage reflecting all COVID safety information • Separate entry and exit doors • Floor markings to provide direction and spacing requirements • Tables, counters and stools to be cleaned after each use • All glassware and utensils to be cleaned by commercialgrade dishwasher between use or disposables provided • Hand sanitisers freely available • Water can only be provided as take-away water bottles • No shareable items including menus, buffets, condiments • Disposable spittoons • Tasting sheets to be laminated for easy cleaning or disposable • Electronic payment preferred • Staff to clean all surfaces regularly

To manage the new rules, bookings have become almost essential, and most wine tastings now come at a small charge. Local winemaker Ken Sloane of Mistletoe Winery has had to make significant changes to his venue to accommodate a new normal. They no longer use the bar anymore and have had to extend the space to create more seating, enlarge the licenced area, and cater to more customers. NSW Health has complimented Mistletoe Winery as one of the most COVID-safe cellar doors, and Ken is proud of his wife Gwen and daughter Cassandra who run the facility. “My wife is an ex-nurse and is totally on top of the COVID safety requirements. The warmer months are here and with them come relaxation, festivities, and lots of sunshine. This is the time of year when lighter, brighter styles of wine come into their own. Think crisp, refreshing white wines – lighter, simpler, fruit and acid-driven dry or slightly off-dry whites, served well chilled. But don’t discount the reds – many red wines are also excellent on a hot day, especially during a hot Australian Summer. Many Australian Pinot Noirs can be lightly chilled without losing personality and character, and grapes such as Gamay, Sangiovese, Barbera and Grenache that originated in Mediterranean climates, are just perfect for drinking in warm weather. How to find the best wines to enjoy over Summer is simply a matter of preference and to help you reach for the perfect bottle every time, we’ve compiled a selection of wines to take you through the season Sparkling Wine might very well be the wine world’s best answer to Summer heat. A glass of Sparkling Wine is always appropriate, regardless of the time of year (or time of day), but in Summer, a glass of bubbly

feels almost mandatory. The wine’s temperature and the bubbles themselves make it a refreshing, cooling beverage, and its high acidity makes them perfectly suited to Summer foods such as ham, salads, chilled soup and a variety of seafood. Rosé has been taking over wine lists for the past few years and is now the tipple of choice for long lunches. The ensuing flavours range from red fruit and flowers through citrus and melon to celery and rhubarb. Characterised by their light body and crisp finish, they are the ideal wine for Summer and perfect when served with seafood such as tuna, barbecued prawns or swordfish. With or without food, as a pre-dinner drink or as a refresher at the end of a long, hot day, Hunter Valley Semillon is the wine to drink this Summer. Naturally low in alcohol and almost devoid of residual sugar, Hunter Semillon is the perfect partner for the season's lighter fish and seafood meals. When young, it's great with fresh oysters, cold cooked prawns and simply cooked white-fleshed fish. With some age, it is lovely when served with smoked trout or salmon, roast stuffed chicken, lobster with burnt butter and other flavoursome dishes. Originating from the Portuguese island of Madeira, Verdelho’s suitability for Mediterranean-style climates with warm-hot, dry Summers makes it a superb fit for Australian Summers. With its fresh, tropical fruit characters, un-oaked style and sheer drinkability, Australian Verdelho is very much the crowd-pleaser. It’s well-matched when served with a host of spicy Asian cuisines including Thai, Vietnamese and Malaysian, or simply enjoyed kicking back by the pool. When the sun is shining, there are few things more refreshing than a glass of Pinot Grigio (also known as Pinot Gris). This wonderfully easy-drinking wine is a Summer wine through and through and is fast becoming one of Australia’s most popular white wines. It can be paired with a variety of foods with ease, and depending on the region in which it was created, the flavour profiles can vary significantly. The acidity of this easy-drinking wine pairs perfectly with seafood.

Taking its name from Vitis Apiana, "the vine beloved of bees", Fiano wines can range in style from light and fresh to full-bodied and rich. Its love of hot and dry climates has seen it thrive in wine-producing regions such as the Hunter Valley and is the perfect Summer wine to suit a range of cooked or raw seafood. While Chardonnay makes for great drinking all year round, the warmer months are the perfect time to get to know the world’s most popular white wine. To beat the heat, with Chardonnay, choose an unoaked Chardonnay without the heavy, buttery texture of malolactic fermentation. It’s a simple and effective way to compete with the warmer temperatures and great with a crunchy salad, sushi and sashimi; crayfish or lobster on the BBQ, steamed or grilled fish and it is heaven on earth with fresh oysters. Viognier is Summer in a bottle! This full-bodied white wine is much loved for its perfumed aromas of peach, tangerine and honeysuckle. This elegant sparkling Chardonnay was made in the classic Méthod Traditionnelle and underwent secondary fermentation in the bottle with a minimum of 24 months of lees contact. IRON GATE ESTATE 2019 Hunter Valley Verdhelo – $25 The hot and dry drought conditions experienced in the 2019 vintage meant that the grapes were picked a week earlier than the average. The grapes were harvested at a lower Baumé to retain the acid crispness and yet still retain the lovely fruit salad flavours associated with the variety. TASTING The wine is light straw in colour with green tints. The bouquet is reminiscent of melon, passionfruit and pineapple aromas that leads to a palate full of succulent passionfruit and confectionery flavours that have a refreshingly dry, sherbet finish. FOOD MATCH This wine will go well with seafood dishes such as sushi, grilled tuna steaks and salmon or shellfish. It will also complement spiced Asian dishes or enjoyed by itself as an aperitif. MISTLETOE WINES 2019 Home Vineyard Semillon – $24 Another high-quality off-dry Semillon from the Mistletoe Home Vineyard. The fruit is hand-harvested from low cropped 25-year old vines, and cold-fermented without any oak influence. TASTING Fermentation was halted at 7 grams per litre residual sweetness and the wine was bottled early to retain the crisp acidity and lemony grapefruit characters typical of this vineyard. FOOD MATCH An ideal luncheon wine, and perfect with freshly shucked oysters or cooked prawns. CELLARING Drink now or cellar with confidence to 2028.

WINMARK WINES 2019 Rusty’s Run Chardonnay – $32 With a rich viticultural history dating back to 1972, the former Pooles Rock property is enjoying a revival like no other. With a team of winemaking and viticultural experts, the vineyard is once again producing premium Chardonnay. TASTING The wine expresses peach and citrus notes. The fruit was harvested at night and following initial oak fermentation was matured in stainless steel until its release in October 2019. The subtle oak handling emphasises elegance and a crisp dry finish. FOOD MATCH One of the great things about Chardonnay, is that it is very versatile throughout all seasons. However it is certainly best enjoyed with great food and great company! CELLARING It is drinking beautifully now and can be cellared for up to 5 years.

TALITS ESTATE 2013 Blanc de Blanc – $40 This Méthode Traditionnelle wine is made entirely from 40 year old Chardonnay vines. The wine underwent secondary fermentation in the bottle and was aged on lees for 7 years before riddling and disgorge – A Votre Santé (cheers!) TASTING This Blanc de Blancs is fresh and lively with the palate displaying citrus, green apple and grapefruit characters with some yeasty overtones. It has a creamy mousse, a fine elegant bead and a crisp long finish. FOOD MATCH Perfect with oysters and caviar as they match the intensity and freshness of the wine. It will also match well with crab and lobsters (they’re going for a bargain this Summer). CELLARING A beautifully elegant vintage wine ready for drinking now as it has already been gracefully aged.
