Looking back at this issue last year, there is a niggling feeling of wishing we’d known what was just around the corner! At that stage, we were dealing with a battering by bushfires and flooding deluges, and the 2020 Vintage was well and truly under threat. But what a difference a year makes (in more ways than one!) This year’s Vintage looks very promising with high-quality fruit and reasonably good yields, provided to us by Mother Nature – who frankly has a lot to make up for! Hunter winemakers and vignerons are extremely optimistic about this year’s vintage – and for good reason. The above-average rainfall left the vineyards looking bright and healthy with strong canopies and good crop levels – and we can’t wait to taste the results! Matt Dillow is a man of many talents and just about the closest thing we have in the Hunter Valley to a celebrity chef. With a busy restaurant, thriving produce business, interstate gourmet tours, cooking schools, Lovedale Long Lunch and his now-famous COVID-pivot Degustation to your Door, one would think Matt might have just about enough on his plate.

Not so, apparently, with Matt also taking over longterm Lovedale favourite – Gartelmann Wines when founding owners Jan and Jorg Gartelmann retired at the end of 2020. This month we caught up (literally) with Matt to chat about his move from chef to vigneron and his fabulous plans for the future. Read more on page 12. Local couple Renata and Fernando Antao have delighted visitors (and a good many locals) with their decadent desserts and tasty treats straight from the kitchens of Sabor Dessert Bar for ten yummy years. We talk to the dynamic duo about all things sweet and get the low-down on their favourite desserts in this issue. Tempt your taste-buds on page 20. From Chef to Vigneron {and everything in between!}

att Dillow is a man of many talents and just about the closest thing we have in the Hunter Valley to a celebrity chef. If you’re interested in local food and wine, then you have no doubt heard of him. He ran both The Verandah and Twine restaurants to great reviews and loyal followings, before settling into The Deck Café Lovedale on the Gartelmann Wines estate in July 2013. His time there has been such a success that when the opportunity presented itself in December last year, he bought the winery.

Gartelmann Wines was established in 1996 by Jan and Jorg Gartelmann and celebrates its 25th year of operation this year. Jan and Jorg developed the winery which specialises in award-winning handcrafted wines using grapes sourced from the Lower and Upper Hunter Valley, Mudgee, Rylstone, and Orange regions of NSW. They’ve been partners in the Lovedale Long Lunch since 1999 and enjoyed a strong membership base. The peace and quiet of retirement was calling them, and so they decided to sell the winery. When Matt heard, he

jumped at the chance to buy the cellar door and estate. “It’s a dream come true,” said Matt. “When I first laid eyes on the estate eight years ago, I fell in love with it and knew that one day I would own it. I adore the bushland setting with the dam and outdoor seating that we’ve extended over the time I’ve been here. I want to continue the legacy that Jan and Jorg have left, but right now, I’m still pinching myself. It feels surreal and hasn’t quite sunk in yet.” Purchasing the winery is a natural extension for Matt – it provides certainty of location for his restaurant which has never been busier, despite COVID. The Deck Café showcases a tapas-style menu and is open seven days a week for breakfast and lunch and dinner on Friday and Saturday nights. They also do weddings and private functions, and with the COVID backlog of weddings this year, they have a number of them booked in already. The setting of the café is something that every review mentions with outdoor seating overlooking the beautiful dam and all set in bushland – it’s an idyllic country food and wine experience. Despite this busy and demanding restaurant, as chef and owner of The Deck Café, Matt created a well-received line of products called, fittingly enough, “Matt’s Produce”, based on his love of, and enthusiasm for, the local agriculture. The gourmet range includes Apple Balsamic Glaze, Rosemary and Parmesan Oil, Olive Tapenade, Smokey Bbq Sauce, Beetroot Relish, Asian Basting Marinade and Preserved Lemon. It’s a popular choice for fans of the restaurant, enabling them to take home some of their favourite flavours.

(Continued) environment and is excited to be running regular cooking classes set up outdoors on the cellar door verandah. The classes culminate in the enjoyment of the five courses prepared by the participants and matched with Gartelmann wines. The classes cost $160pp, including cooking class, dinner and wine and run for five and a half hours. There are plans to run the classes every month. Matt is keen to freshen up the estate and work has already begun on a pop-up coffee, juice and gelato bar which should be ready for next summer and be a hit with families. “It’s important to me to offer a beautiful food and wine experience that is welcoming for all the family,” said Matt. “We’ll be expanding this aspect of the estate. I want it to be a

place where the kids feel free to roam and run about, to have as much fun as Mum and Dad when they visit.” The estate is home to several farm animals, including alpacas, “Dash of Class” and “Bentley”. There are silky chickens, Shetland ponies, a miniature pig, and 2 Galloway cows will join the petting farm at the end of the year. The estate is also pooch-friendly so long as the “Pooch Rules” are followed, and if they’re really good, there may even be a treat provided. Matt’s daughters are incredibly excited about their Dad’s latest venture. Brittany 15 and Bianka 14 can often be seen working around the estate, running food, taking orders and helping in the kitchen, but by far, their most favourite aspect of the winery is the animals. F

I’m lucky that I have an excellent cellar door manager in Jimmy Smith, and he will continue to create beautiful wines. We’re keeping the magpie and using the slogan ‘Gotta Love the Magpie’. Eventually, we’d like to extend on our varieties, some sparkling and Moscato and more reserve wines, maintaining the high level that Jan and Jorg established and maybe even exceed that if we can.

“The girls can’t wait until we get our super cute Galloway cows at the end of the year,” confirmed Matt. While family groups are enjoying the petting farm and the fabulous food, the serious wine connoisseurs will be as well catered for as ever. “Gartelmann’s wines have won multiple awards, and we have no plans to change anything dramatically,” said Matt.

There are plans to develop the Wine Club membership benefits with a new Members Manager joining the team. Judith Boskett is enjoying a tree change from corporate life in the big city to join her friend Matt on his new venture and help him run the place. “Judith is fantastic, and she’ll be working hard to make sure our members get the value they deserve,” said Matt. There is no joining fee to become a member; the commitment is simply to purchase two cases of wine per year. Members will enjoy free events, opportunities for members’ cooking classes and most notable of all, the July Mid-Winter Festival where members will enjoy themselves at no charge. Matt’s vision for the property as a whole is inspired by The Farm at Byron Bay and The Grounds of Alexandria. The Farm at Byron Bay is a working farm housing a collection of micro-businesses such as a restaurant, bakery, produce store, florist, gelato, market garden, nursery and farm animals including poultry, pigs and cattle. The Australian Alpaca Barn is a family-owned business that was originally established to sell and promote Australian Alpaca products made from alpaca fibre grown in Australia and manufactured by the strategic partners of Australian Alpaca Fleece Limited. Since then, both the business and the industry as a whole have grown exponentially, with the store now also specialising in the quality alpaca products made from alpaca fibre grown and manufactured not only in Australia but also from New Zealand and Peru. Karen Rowe can’t remember a time when she wasn’t being creative. From winning art awards in primary school to trying her hand at almost every craft she came across, putting her creativity into practice has been a lifelong passion. It’s little wonder then that the founder of the popular Handmade in the Hunter Market isn’t satisfied with merely organising the artisan event, which is held several times a month – she runs three of her own stalls as well, selling everything from handcrafted novelty items to hot air balloon mobiles. "I can’t remember a time when I wasn’t creating... and then in year 8, I learned to sew, and it opened up a whole new world." “Over the years, there isn’t much I haven’t tried – macramé, knitting, leadlight, calligraphy, jewellery-making, cooking, woodwork, Celtic illumination, folk art, cross-stitch, tapestry, embroidery, mosaics, tie-dying, decoupage, card-making – the list goes on and on. “However, I seem to always come back to sewing in some form.”

Karen’s sewing skills are certainly evident in the products she lovingly handcrafts for her Up, Up & Away Balloon Mobiles stall. Featuring everything from one-balloon designs to her most challenging project, seven balloons arranged in an ascending spiral, her whimsical mobiles are a hit with customers of all ages. “Many people falsely assume that mobiles are for babies only,” the Lorn woman said. “In fact, they can be used as a valuable educational tool to assist in numerous developmental stages, spark the imagination as well as promoting emotional well-being in children up to the age of 12. “Using the fabric design and the addition of a toy creates the child-like whimsy that appeals to ‘kids’ of all ages. (made with my grandmother's original recipe) throughout greater Sydney and Queensland – so we brought that with us to the Hunter as inspiration for Sabor Dessert Bar, which we opened in 2011. It's now been nearly ten years since we moved to the Hunter and we've never looked back. How has Sabor changed over the years? Five years ago we moved from our original location in Lovedale to our current Dessert Bar on Broke Road in Pokolbin. It’s a larger venue and has impressive views of the vineyards below and the mountain ranges. It gives a whole new atmosphere to Sabor by adding to the enjoyment of your dessert with views. Ten years ago, we started with a much smaller range of desserts, about 20 or so, but we’ve expanded our range to over 60 desserts over the past ten years – the largest range in the Hunter Valley. Tell us a little about what’s on offer at Sabor in the Hunter Dessert Bar? What types of delectable delights do you serve up? With over 60 desserts, we try to accommodate different tastes and dietary requirements. We have Portuguese Tarts and Macarons for something small to have with your coffee, or we have our individually crafted desserts from your old favourites like Chocolate Mud, Lemon Meringue, Mars Bar and Snickers Cheesecakes, ice cream and waffles to more elaborate desserts like our Green Apple Royal, Lychee & Summerberry Cheesecake and Chocolate Mousse Crown (just to name a few). All our desserts can also be paired with local wine, dessert wine, cider and much more or with a coffee made your way. We also have a range of sweet products mostly locally sourced such as Hunter Valley Cookies, Rocky Roads, Fudges and Callebaut Belgian Chocolate. Do you have a favourite Dessert? Can you tell us a bit about why it is your favourite and what we can expect to taste? This is

where Renata and I differ. When it comes to desserts, Renata prefers a dessert with fruitier flavours, whereas I love chocolate and caramel based desserts. Renata's favourite is the Gluten-Free Lychee & Summerberry Cheesecake. It's a mixed berry mousse cheesecake with a lychee centre, covered with our raspberry glitter glaze and topped with fresh berries and white chocolate leaves. My favourite has to be our Flaming Chocolate & Caramel Brownie, both for the flavour and the dessert's theatrics. (Continued) strawberries and our housemade biscotti, served in a hot skillet. The server then pours whiskey over the hot brownie and sets it alight. Very dramatic! It must be extremely difficult for diners to choose just one dessert from the menu. How many desserts do you have on offer – and is there a way we can taste a few in one sitting (without sounding greedy!!)? Yes! We have the SABOR tasting plate and the MEDLEY tasting plate. Both have a selection of 5 mini boutique desserts to savour. The Sabor tasting plate is more chocolate and caramel based desserts which includes our Portuguese Chocolate Mousse, Sticky Date Pudding & Mini Black Forest, and yes, you guessed it, the Medley tasting plate has more of a fruitier selection including Mini Lemon Meringue, Mini Green Apple and Raspberry Opera Slice. Maybe they should be called Fernando’s Tasting Plate and Renata’s Tasting Plate! What else – apart from desserts – is on the menu? We hear your coffee is a must-try – what are you serving up to the coffee-connoisseurs amongst us? We also have a minimal savoury menu (which is still somewhat considered dessert), with plain and ham and swiss cheese croissants, housemade scones with jam and cream, raisin toast and a cheese platter for two. We know there are varying food allergies and we do our best to cater to all if not most with a large selection of gluten-free desserts and a smaller selection of dairyfree, egg-free, vegetarian and vegan desserts. We also have a dedicated kids menu that is as much fun if not more than the adults with our Oompa Loompa Sundaes and Willy Wonka Waffles – which are topped with smarties, marshmallows and popping candy. We pride ourselves on having great coffee and teas. We have had a hand in developing just the right roast for our 100% Colombian Arabic beans with all the flavour and none of the bitterness. Our Hot Chocolates

are also well known throughout the Valley as we serve them with pure melted chocolate and various flavours. Not to mention we use Bondi Chai for our large variety of chai drinks, hot and cold. WORDS QUENTIN VON ESSEN After a disastrous 2020 vintage severely impacted by drought and bushfire smoke taint, closely followed by COVID, this year's vintage is looking very promising with high-quality fruit and reasonably good yields. Hunter winemakers and vignerons are extremely optimistic about this year’s vintage, which typically kicks off in the first or second week of January each year. Semillon is one of the first varieties to be picked, followed by Chardonnay and Verdelho. The red varieties are harvested after the whites – which can take place from the first week in February. Ken Sloane, owner of Mistletoe Winery, said that all is on track for a good vintage, thanks mostly to the December rains followed by some warmer weather. “After four years of drought, the wet start to the year concerned many, however, the (above average) rainfall left the vineyards looking bright and healthy with strong canopies and good crop levels. The warm to hot days then leading up to the harvest were ideal for ripening the fruit and producing good flavours,” said Ken.

In a region with notoriously wet vintages, many were concerned that the November storms and the December and January heat would damage the grapes, but the damage has been minimal. Extremely high temperatures - such as the 40-degree temperatures that can occur leading up to harvest puts too much stress on the vine and can make the vines shut down and stop accumulating sugar and ripening the fruit. Also, sunburnt grapes can have a terrible impact on the juice – making it taste bitter like burnt sugar or toffee. To avoid this, winemakers and vignerons let the leaf canopy grow longer on the vines to give the grapes increased shade protection from the hot afternoon sun. While a few days of rain often do not necessarily pose a problem, a sustained and heavy downfall could be dangerous to the crop. Direct rain can cause the vine to take in a lot of water, making all the cells turgid, including the grapes – which can burst. Hail, on the other hand, could destroy the whole crop in less than an hour. F

In winemaking terms, 'vintage' is the process of picking grapes (harvesting) and creating the finished product. In some parts of the world, it is known as 'the crush'. The harvesting of the grapes is understandably one of the most critical stages in the winemaking process. The timing of the harvest is determined by the grape's ripeness, which is measured by the sugar content and acid and tannin levels. The weather also plays a crucial role in deciding when to pick with the threat of rain, hail, humidity and heat potentially delaying vintage or at worst damaging the grapes and even bringing about various vine or grape diseases like Botrytis (Grey Rot or Noble Rot). The Hunter Valley is the first wine region in Australia to begin vintage and

the first to finish. January and February are when harvesting of the fruit typically occurs, and at this time of the year, the winemakers and growers work closely together to determine the optimum time to pick the fruit to ensure the best wine quality. March can be a continuance of harvest, depending on the temperatures and how the vintage year developed over the Summer. Fermentations are monitored by checking how rapidly the grape sugars decline as the alcohol level increases. April is typically the completion of the harvest. All the wines are now in the tanks or barrels. The winery crush equipment is thoroughly cleaned and put to rest until next year. The grower may perform some postharvest irrigation and fertilization of the vines in the vineyard before they go dormant. ■
