Is anything more heartwarming than snuggling up with a good red on a Winter's night? We think not! It is with this in mind that we give you our annual Big-Red Issue

Australia's red grapes are among its greatest assets – after all, who could imagine a world without classic Australian Shiraz? The world's classic premium red grape varieties are abundant in the Hunter Valley, where some of the oldest vines and most prominent names in Australian wine can be found. This month we navigate the red wines of the Hunter Valley and take a tour of the best of the best on page 28. You can also shop the best online by scanning the QR codes provided.

One of the most well-known families in the Hunter Valley wine industry (and indeed for red wines) is the Peterson family, whose story in the valley began in the mid-60s. Fast forward to today, and the Peterson name is behind several wineries, restaurants, cellar doors and even a guesthouse.

A strong foundation in hospitality is at the core of what the Peterson family do, and now, as the third generation of Petersons prepares to take over the reins, the core values set down by the

founding generation have never been more at the forefront. We caught up with Colin and Savannah Peterson this month to talk about family values and big reds – read more on page 12.

There’s no denying that wine country is farming land, and visiting the area reveals more than just vines gracing our paddocks. With a host of country-style activities, The Farm in Pokolbin promises to add some good old-fashioned fun to your visit, with the interactive farm and adventure hub providing hours of entertainment for all ages. From pony rides and trail rides to tractor rides, hay bale rides, horse & carriage rides, Segway tours, and educational adventures, there's something for everyone to enjoy. Read more on page 22.

As we go to press with this, the last of our Winter issues, we are enjoying a day filled with sunshine and a month of higher-than-average temperatures. A few more of these will herald in budburst in just a few short weeks. Bring it on!

Enjoy!

One of the Hunter Valley’s best-kept secrets is Tintilla Estate - the family-run vineyard, winery, and olive grove that reflects the traditions of the old world with the flexibility and tastes of the new.

Tintilla is a little different from your average winery as an important aspect of Tintilla is its olives – with five different varieties grown over areas that were not suitable for the planting of vines. Sold exclusively from the Cellar Door, the olives are handpicked, debittered and fermented before bottling with various traditional herbs and spices. The boutique cellar door offers visitors a unique wine and food experience. Enjoy a tasting from a large Riedel glass while enjoying a cheese platter and an array of Tintilla condiments while soaking up the ambience of the vineyard. Tintilla Estate offers daily tastings of their wines and olives, seven days a week, from 10.30am until 6pm, for groups of less than eight.

FULL-BODIED, FAMILY-FOCUSED & FOUNDED IN HOSPITALITY

Petersons Wines & Savannah Estate

WORDS LIANE MORRIS | FEATURES WRITER IMAGES MJK CREATIVE

One of the most well-known families in the Hunter Valley wine industry is the Peterson family, whose story in the valley began in the mid-60s when Ian and Shirley Peterson purchased a hobby dairy farm at Mount View. Fast forward to today, and the Peterson name is behind several wineries, restaurants, cellar doors and even a guesthouse. Third-generation Savannah Peterson is poised to take over running the flagship Petersons Wines and Savannah Estate as General Manager in training under the wing of her father, Colin Peterson, who is an industry legend and son of Ian.

Ian Peterson was a chemist who ran cattle on his hobby farm in Mount View. He didn’t much like the cattle and paid to have someone take care of them. In 1971 when Colin was just 18, they decided to plant

grape vines on the property to sell the fruit to local wineries for the cash to pay the lady who looked after the cattle. They’d been told that the volcanic soil of their farm would be excellent for growing grapes, and this proved to be very true. Their first ten vintages were sold to McWilliams, but in 1981, there was an industry surplus of Semillon, and the family decided to make their own wine with the assistance of a wine consultant. Ian’s background as a chemist helped, and suddenly, they were truly in the wine industry.

Savannah is the only one of Colin’s three children to be so thoroughly involved with the business. Savannah’s sister Samantha has previoulsy worked at the family’s guesthouse in Armidale and now runs the social media across the wine businesses, whilst brother Simon has relocated to Broome.

“When I was three years’ of age, I used to hold tea parties and ask if people wanted red or white rather than tea. I’ve been working in the

cellar doors since I was about seven, helping to pack bottles and following my dad everywhere. I loved going to work with him because no two days were ever the same. It’s still like that. Every day is different.

“Believe it or not, it wasn’t a foregone conclusion that I would make my career in wine. Mum and Dad were very careful never to force any kind of appreciation for the industry. When we drank wine, we simply enjoyed it; we didn’t discuss the terroir. I started thinking about it as a career when I was 17; by 20, I was on the path. Dad has always said that I could sell ice to Eskimos though, and for a while, I was tempted to get a job as a real estate agent.

“Both Mum and Dad have a background in hospitality, and that’s really our focus. Everything we do is about creating joyful moments for our guests. My work in the cellar doors until now has basically been getting paid to talk and appreciate good food and wine!”

A strong foundation in hospitality is at the core of what the Peterson family do. Mum Judy ran the Tallawanta Hotel, now known as Harrigans, in the 1990s. Colin himself trained in Hotel Management in Sydney, then began Calais Estate to separate his work from his parents, and finally took on work in the family business. Today, besides Petersons Wines and Savannah Estate, they run three restaurants – Baumé, Cuvée and Blaxland Inn and the Armidale Guesthouse. The family are also behind the wellknown Peterson House, a public company that they own majority shares in, and have other business interests and partnerships that include Ben Ean and Two Rivers.

Colin partnered with Brian McGuigan to purchase Ben Ean in order to preserve the 174-year history of the winery. They are developing the estate as a salute to some of the best-known Hunter viticulturists and winemakers of the last 170 years, with the cellar door hosting a range of wines, including Petersons Wines, Savannah Estate, Lisa McGuigan Wines, Lindeman’s, Neil McGuigan Wines, Penfolds, SOMM, Gun Powder Wines and Weerona. They also offer tastings of Penfold’s world-famous Grange.

When Colin’s father first began Petersons Wines, they concentrated on whites like Chardonnay because they grew quicker, and at one point, they were awarded Best Chardonnay in the world. When they started making reds, they concentrated on low-yield, high-quality fruit to make a fuller-bodied style of red wine that they still make today. The fruit for these fuller-bodied wines mostly comes from Mudgee and South Australia, as the Hunter style is lighter. Currently, the Petersons use 30 per cent of fruit from the Hunter Valley, 30 per cent from Mudgee, and 10 per cent from Armidale, with the remaining 30 per cent coming in from South Australia and other locations.

“It’s important to spread the risk factor,” says Colin.

“If one area has a hard season, we can still get fruit from our other vineyards. We’ve just reopened some of our museum stock from our private cellars, such as the 2014 Hunter Reserve, the Back Block Shiraz, vintages 2009, 2011, 2013, 2014 and several more surprises worth investigating if you like your red wine.”

Petersons Wines are known for full-bodied reds and Chardonnays. Their loyal members rely on the consistency and dependability of these more traditional-style wines, and there are no plans to change this. Savannah Estate, on the other hand, is more open to experimentation.

Colin started Savannah Estate in the early 2000s when vineyard licencing issues made it imperative for him to open a new small vineyard in the Hunter where he could experiment with different styles. It was also an opportunity to allow Savannah to stretch her wings away from Petersons, just like her father did with Calais Estate when he was young.

Savannah took over the reins at Savannah Estate eight years ago when she returned from overseas, experimenting with less traditional grape varieties such as Tempranillo, Chambourcin, Vermentino, Durif and others.

“Petersons Wines as a brand is committed to more traditional styles, and if people are looking for something different, they’ll be referred to us here at Savannah Estate,” says Savannah. F

yhv 13 | AUG-SEP 2023

“This has allowed us to develop our own brand and identity. It was the best day of my life when the cellar door takings here beat the cellar door at Petersons. That was such a huge feat and really satisfying.

“COVID was a game-changer for us. When people had to be socially distanced, they couldn’t always get into the cellar doors that they would usually visit, so they tried new cellar doors like ours. Then during the second lockdown, I was bored at home and decided to trial virtual

tastings. I thought I might sell ten in the first week. By the end of the lockdown, we had sold over 2,500 – they were incredibly popular. Some days we would run tastings back-to-back from 1pm to 11.30pm at night. We had to hire extra staff, and it felt wonderful to bring joy to people in the midst of a pandemic.

“The other venture I began during COVID was Savannah Estate and Petersons Wines Events. I started doing the occasional farmer’s market, and before I knew it, I had 25 staff in Sydney, four warehouses and five work vans running events in Sydney, Canberra, Brisbane, Melbourne and the South Coast. I’ve employed a manager to run it now. I moved home to the Hunter Valley permanently at the start of this year to begin my General Manager training with Dad.”

Savannah is now responsible for over 250 employees across their businesses, some of whom have been with Colin for 30 to 40 years. As some of those people retire, Colin sees Savannah building her own contingent of staff.

“I’m very proud of Savannah,” says Colin.

“She’s one of the few young people who are really making a go of it. She’s clever, astute and has a real talent for relating to others. She’ll make a great General Manager. I know she thinks I won’t ever retire, but I will slowly step back over the next few years.”

As that future unfolds, Savannah is busy preparing for a new Savannah Estate cellar door to open on Broke Road by early next year and maintaining the traditions that her family are renowned for.

“It’s important to me to uphold the core values set down by my grandparents – we’re a premium, high-quality, boutique business with a family feel. When you become a member of our wineries, you join our family. When you visit our cellar doors, you are welcomed like an old friend and treated to genuine hospitality. I never want that to change.”

We love the name of your stall - how did you come up with it? The name came about as I've worked as a Bush Regenerator for over 15 years, plus my love of all things plants and our beautiful natural bush.

Can you please tell us a bit more about your products?

My products all share the goal of helping my customers (and their pets) deal with common ailments. For example, my Calendula Salve is a versatile ointment tough enough to take on the most debilitating of skin conditions but also gentle enough for our children and pets; it is a miracle product that gives relief to so many people.

I grow my own Calendula flowers and infuse them into oil, clean my own wax from local apiaries, and then add beautiful ingredients from all over Australia, such as lanolin, coconut oil, apricot kernel oil and tea tree oil. Unlike other calendula products, my unique blend leaves the skin feeling like velvet and with no greasy residue.

Who are your products created explicitly for?

Calendula products treat ailments like eczema, dermatitis, psoriasis, cold sores, burns, and more. They are safe for external use from head to toe or in soap.

Pet Calendula benefits dogs with foot biting, grass irritation, and ringworm and horses with rain scald, greasy heel, and dandruff.

Beetlejuice Insect Repellent, a blend of essential oils and demineralised water, deters mosquitos, flies, leeches, ticks, and bull ants with a pleasant chai latte fragrance. Calendula's exceptional healing abilities have made it my go-to remedy for decades.

Huntlee Tavern...

Where the Hunter Unites

Back in 2017, in the picturesque outskirts of Hunter Valley Wine Country lay an empty paddock and an exceptional opportunity that caught the eye of experienced tavern operator Jason Gavin. Nestled near the growing township of Huntlee, Jason saw potential in the expansive rural paddock and wasted no time in acquiring the land.

Fast forward six years, and the once vacant paddock has been transformed into the thriving Huntlee Tavern—a destination tavern

strategically located at the gateway to Hunter Valley Wine Country. Boasting its centrality to the bustling city of Newcastle and being close to several growing regional towns, Huntlee Tavern has earned the title of 'hub in the hunter,' serving as the central meeting place for surrounding communities with great food and amazing service.

And with a swag of awards under its belt (AHA Awards 2022 Best Live Music Venue and finalists in multiple categories including Best Family-friendly Venue, Best Regional Chef of the Year, Best Regional Development, Best Wagering Venue and Best Meals $15 and under), it’s the perfect tavern for both locals and visitors alike.

The tavern features a bistro area with a three-storey children's playground, a kid's entertainment room, function seating, and an outdoor terrace accommodating up to 100 people.

On the other side of the hotel, patrons can enjoy a lounge bar that doubles as a live entertainment venue with a dance floor, a public sports bar with TAB facilities, a gaming room featuring 22 machines, and a second entry. The bistro, with a dedicated bar, serves all-time gastropub favourites and is open for breakfast, lunch, and dinner every day of the week.

The Terrace offers an inviting space with numerous screens and state-of-the-art audio for social gatherings and catching favourite sports or music events. Meanwhile, the Lounge Bar stands as the heart and soul of the Huntlee Tavern, offering an extensive selection of spirits, liqueurs, and delectable cocktails, along with an unrivalled wine list for celebratory moments and good company. Live music and DJs grace the venue every weekend, making it an irresistible destination.

As if that weren't enough, Huntlee Tavern ensures convenience for its guests with a courtesy bus service for pick up and drop off from various locations around the region.

It’s easy to see why the tavern has become the go-to destination for residents and visitors alike. To discover more or find out what’s coming up, visit www.huntleetavern.com.au and experience the charm, hospitality, and excitement that await you at Huntlee Tavern—the epitome of a perfect tavern in the heart of Hunter Valley Wine Country.

A Taste of the Hamptons in the Hunter

WORDS LIANE MORRIS

If you’re seeking a quaint country cottage full of style and luxurious comfort for your next getaway to the Hunter Valley, then Hamptons on Hunter House delivers a divine experience. Conveniently located just a five-minute walk from Cessnock's cafes and shops and a 15-minute drive from the vineyards, Hamptons on Hunter House feels like the rural holiday home you’ve always dreamt of.

Recently purchased by new owners Leearne and Nathan, the pre-war home is easily over 100 years old and has been completely renovated to a

very high standard with original features such as dado panels and ornate cornices creating an effortless charm.

“As soon as I saw it, I knew my search was over,” said Leearne.

“I’d been looking for an investment property for over three years, and this one just felt right. It was already renovated and had that real Hamptons feel that I love, retaining the original character of the home and with luxury at its heart. It was done exactly the way I would; it even has the same bathroom tile we have in our house.”

Leearne works in the travel industry and was a producer on the TV program Getaway, so she knows what she’s looking for in holiday accommodation. Travel is her passion, and she has created the kind of home she wants to stay in on holiday.

“We’ve made sure that it doesn’t just have the basics. It’s got everything you need to be truly comfortable even if you were staying for a month – things like a slow cooker and a blender in the kitchen, smart

The home attracts guests all year round, sleeps six and is reasonably priced. It’s a firm favourite for wedding guests, concertgoers, girls’ weekends, couples and just about anyone visiting the Hunter Valley.

“The outdoor area is really popular. I’ve created a party atmosphere with a neon sign that references my grandmother’s name, which was De Vine. People love to take photos with the sign and share them on Instagram. It’s a lovely way to pay homage to her and is something just a little different that appeals to people with the play on divine and vineyards.”

The home's exterior features a front porch and a rose garden with

a white picket fence on a large, quarter-acre fenced block. Inside is a gourmet kitchen any chef would be happy to use with a pressed tin splashback to add extra historical charm and character and a luxurious bathroom with a free-standing soaking tub that will have you rushing for the bubbles. It’s a beautiful, old country home with all the necessary conveniences. The finishing touches that add a warmth and homey vibe include artisan candles, premium toiletries, bathrobes, coffee machine, board games, puzzles, and even a bar cart.

“I’ve been told I’m running this with my heart, not my head, but I’m ok with that. This is our home too. We holiday here, and we love it. It feels like a special place with a beautiful energy. I want people to love it as much as I do and return time and again. There’s so much on offer here in the Hunter Valley, and I’m excited to be a part of that.”

Red Wines of the Hunter Valley

WORDS QUENTIN VON ESSEN

Throughout the world, the goal of winemakers is to make the best possible wine, and in Australia, for many wine enthusiasts, the quest for that "perfect" Australian red wine starts in the Hunter Valley, where for almost 200 years, winemakers have developed a reputation for producing remarkable wines, showcasing a harmonious blend of tradition and innovation.

There is no mistaking the quality and variety of red wine on offer in the Hunter Valley, where the region's terroir - a combination of climate, soil, and topography, plays a pivotal role in shaping the distinct characteristics of its red wines. Here, the warm climate and deep friable loam and red duplex soils of the Hunter Valley produce superb examples of Shiraz, Cabernet Sauvignon, Pinot Noir, Merlot, and Petit Verdot, as well as an increasing number of Mediterranean varieties that include Tempranillo, Sangiovese, Barbera and Nebbiolo, to mention just a few.

Whatever you're looking for, the Hunter Valley provides a diversity of red wines perfect for those looking for something different.

Shiraz is the Hunter's premium red variety and is tremendously flexible in its ability to adapt to almost any combination of climate and soil. The typical young Hunter Valley Shiraz is a medium-bodied wine showing red and dark berries, spices, and much tannin. However, its real character is seen in wines with longevity. With age, the wines become a far more complex, full-bodied, yet smooth and richly flavoured wine with some earthy tones.

Cabernet Sauvignon is the world's most loved red wine, renowned for its ability to age for decades. As a result, this classic red variety of Bordeaux is second only to Shiraz in importance in Australia. Cabernet Sauvignon wines can be medium to full-bodied, elegant, aromatic and a rich bouquet with fruity notes of black cherries and currants and herby notes of peppers and olives.

Described as "the most romantic of wines'' due to its sensual and gratifying perfume, Pinot Noir tends to be light to medium in body with a broad range of textures and flavours, including a variety of complex aromas reminiscent of black or red cherry, raspberry, currant, and

blackberry. While widely considered to produce some of the finest wines in the world, it is also highly reflective of its terroir, with different winegrowing regions often producing very different wines.

In Australia, Merlot is one of the most important red grape varieties - coming in third after Shiraz and Cabernet Sauvignon. Originating from Bordeaux in France, Merlot is renowned for its wonderfully fruity, well-rounded, even fleshy character and is grown in just about every wine-growing region of Australia. The summer heat of the Hunter is considered to provide the ideal growing conditions for this versatile grape variety. Hunter Valley Merlot has experienced a surge in popularity in recent years, with a vibrant bouquet providing one of the most pleasurable wine experiences.

Originally from Spain, Grenache is one of the world’s most widely planted grapes. In Australia, it is well known as part of a blended trio with Shiraz and Mourvèdre – the so-called GSM blend, which can be found in numerous Hunter Valley tasting rooms. Grenache is now increasingly popular as a superb single varietal medium to full-bodied wine, with red fruit flavours that are layered with a peppery spice. Its balanced tannins and acidity make it easy to drink, although it does tend to have higher alcohol levels.

Tempranillo is a premium grape variety originating in the Rioja region of Spain, where it is often blended with varieties such as Grenache and, to a lesser extent Cabernet Sauvignon. This variety is exciting because it is an easy-drinking, medium to full-bodied wine with lower acidity and full fruit flavours that match well with a wide range of foods. The wine is ruby red, while the aroma and flavours can have plum, cherry, strawberry, and herb characteristics.

Originally from the Bordeaux region of France, the bold-yet-floral expression of Petit Verdot is something that all red wine enthusiasts should have the opportunity to try. In Australia, Petit Verdot is planted in warmer climates like the Hunter Valley, producing full-bodied wines with concentrated flavours and integrated tannins.

Whatever you're looking for, the Hunter Valley provides a diversity of red wines perfect for those looking for something different. Enjoy wine, enjoy friends, and most importantly, enjoy yourself.
