As we move into the back half of Autumn, the temperatures are settling into a more comfortable Autumn ambience. The leaves may be yellowing and falling from the vines, but there's no time to hibernate in Wine Country with a slew of unique events turning up the heat in the cooler months, like Greek Fest, The Gum Ball and of course, the annual Tocal Field Days. The Hunter Valley is a beautiful place to visit at any time of the year, but Autumn has that special magical something – a charming collection of quaint, boutique accommodation, mountain and vineyard landscapes complete with numerous hues of brown and red, cooler days and nights, warm open fires, cosy restaurants and cafés serving up heart-warming dishes, welcoming cellar doors and of course the wine. This month we look at local producers who have invested in a more health-conscious range of wines that include organic and preservative-free sips to savour. When Mark Davidson and a group of friends and family purchased Tamburlaine over 35 years ago, there were only a handful of winemakers advocating organics, but they were considered ‘odd bods or ‘hippies’, and they didn’t have access to the technology or substitutes that are available to organic farmers today. Fast forward to 2021,

and Tamburlaine is one of the country's largest producers of organic wines. Read more on page 20. From its 1893 beginnings as a dairy farm and fledgeling vineyard to the three successive generations who carefully cultivated it into a wine label of great renown, Oakvale has been proudly family-owned and operated. Currently, in its 128th year of production, two generations of another passionate family are writing their own chapter in Oakvale's winemaking history, and this month we caught up with them to find out what's in store for the next 128 years, including a more recent foray into the world of organic winemaking. See page 12. May wouldn't be May without recognising Mother's Day. Sunday 9th May sees various organised events throughout the Hunter Valley. From the simple to the extravagant, you would be hardpressed not to find a way to show your appreciation and love to the one person who knows all your quirks and loves you anyway! From its 1893 beginnings as a dairy farm and fledgeling vineyard under the establishment of Scottish immigrant William Elliott to the three successive generations who carefully cultivated it into a wine label of great renown, Oakvale has been proudly family-owned and operated. Fast forward to today, and you’ll find two generations of another passionate family – Richard Becker and his son James – writing their own chapter in Oakvale’s winemaking history. Working with the same dedication and innovative spirit shown by William Elliott’s son Bob, grandson Doug and great-grandson John as they built Oakvale into one of the true icons of the Hunter Valley industry, the Beckers are spearheading the brand’s return to its glory days of premium handcrafted wines. Richard Becker and his late wife Suzy began their association with the Hunter wine industry in 1995 when the couple purchased the O’Connor family property in Pokolbin and established Ablington Vineyard, planting 50 acres of Shiraz, Chardonnay and Semillon.

Fifteen years later, they acquired the 30-acre Oakvale estate and made the natural transition from vignerons to vintners, ably assisted by their son James, who was completing a postgraduate degree in winemaking at Charles Sturt University. While taking the reins of a winery with such a long and storied past can seem daunting, Oakvale Wines Sales Managers Adam Winder and Jess Perry said the Beckers have been more than up to the challenge. “Oakvale Wines is currently in its 128th year of operation,” Mr Winder said. “Since being established in 1893 by the Elliott family through to its present-day owners, the Becker family, it has never ceased operations, making it one of the longest operating wineries and oldest working wineries in the Hunter Valley. “The Becker family purchased Oakvale in 2010 and are the fourth custodians of the property. They have been committed to restoring Oakvale back its iconic status by producing small batch premium wines, while cosmetically and structurally they have reinvigorated the entire facility.” A major refurbishment of the cellar door and winery was completed in 2013, creating a plush new tasting area with huge plate glass picture windows that perfectly frame the clinical white and gleaming chrome façade of the rebuilt winery. A more recent refresh of the cellar door has delivered new furnishings and an expanded alfresco area that allows guests to sit back and truly immerse themselves in the Oakvale experience. But it is the changes made to Oakvale’s award-winning line of wines since the Beckers took the reins that have been turning the most heads among wine connoisseurs. While paying tribute to traditions, Oakvale isn’t afraid to push boundaries with innovative techniques, while the family’s commitment to a minimal intervention philosophy has also recently led to Oakvale achieving organic certification. “The finest things in life are those that allow Mother Nature’s beauty to shine bright – it’s this philosophy of minimal intervention that inspires

our winemaking team,” Mr Winder said. “We make our wines under a minimum intervention philosophy, meaning we don’t add anything unnecessary to our grapes or wines. All of our wines are wild ferments with native yeasts that occur naturally in the vineyard, while minimal preservatives and no heavy metals or animal by-products are used, meaning our wines are also vegan friendly.

We’ll release our first certified organic wines this year, which has been a long term goal for us, and it’s been motivating and rewarding to work with Mother Nature rather than against her. “Organic practices are a sustainable method of farming and winemaking, done without the use of harmful insecticides, herbicides or inorganic fertilisers. Conventional methods damage soils, fragile ecosystems and ultimately work against our ethos of having minimal intervention and sincerely allowing the region and vineyard to speak through the wines. “We seek to add complexity, richness and finesse to every bottle by adopting innovative winemaking techniques. We also make use of our two 600L Nomblot Concrete Eggs, which allow us to create more textural wines taking advantage of the micro-oxygenation that is made possible by the clay-cement material. “Having shaped the history of wine in the Hunter Valley for nearly 130 years, we are confident that Oakvale will continue to deserve its place as a leading winery well into the future.” Oakvale sources the fruit for its wines from both cool climate vineyard regions and the family’s historic Pokolbin vineyards. “The Oakvale site consists of 30 acres with a small planting of Shiraz that is used for our Harvest Party, as well as to produce a members’ exclusive Liqueur Shiraz,” Mr Winder said. (Continued) “The Ablington Vineyard is a sprawling 400 acres with 65 of those under vine. The first vines were planted in 1980, with the vineyard predominately made up of Semillon, Chardonnay and Shiraz; however, we like to experiment and so have 14 different varieties planted, including Pinot Noir Dijon, Riesling, Schronburger, Brachetto, Garganega, Pinot Gris Entav, Gewurztraminer, Viognier, Carignan, Muscat Rouge and Blanc.” As the Becker family moves to organic practices, the classic Hunter varieties and these experimental plantings, along with Ablington’s natural attributes, will ensure a wholly innovative and unique wine character for all Oakvale wines. “The wines we are known for include Chardonnay, Rosé and our Sparkling Peach Bellini,” Mr Winder said.

“Our Chardonnay is barrel matured using older barrels, which creates beautiful harmony between fruit and oak where the gentle oaking showcases the beautiful Hunter Valley Chardonnay flavour profile. This uncovers all the delicate, subtle nuances without the distraction of the wine being over-oaked, ending up with a luscious and textural Chardonnay. “The Rosé is dry, which is where most people’s palates are leaning to these days with Rosé – lean, crisp and pretty in pink! Unlike the Chardonnay with its beautiful complexities, the Rosé is very much a lovely light, crisp, easy-drinking wine. Not to say that it isn’t a serious wine – with more and more people enjoying a tipple of Rosé, our Rosé is stylised and not just a mish-mash of leftover fruit, it’s picked from the same parcel of Shiraz every year, so it remains consistent, which keeps bringing people back to us for it! “Our Sparkling Peach Bellini is a twist on the famous cocktail where instead of using Prosecco, we use Hunter white varietals for the base. We then pit, puree, and press the juice out of white peaches and add the juice from the peaches to the finished wine base before sparkling and bottling. The end result is a beautiful light, peachy sparkling cocktail for you to enjoy without the mess and clean up!” Aside from its renowned red and white varietals, Oakvale has also become known for another kind of fermented fruit drink – cider. “Our cider was first produced in 2012, and that was predominately due to the dismal vintage that year with it raining intermittently throughout the white harvest and then the constant rain throughout February and early March hindering the reds,” Mr Winder said. “With the minimal quantities of usable fruit, the winemaker started looking outside the box (or crate if you will) at other opportunities, and it came in the form of apples from Batlow!

Mr Winder said they offered a COVID Safe experience on-site that had been adjusted to the current conditions, while the pandemic has also produced an entirely new tasting experience for Oakvale customers. “COVID has been a very interesting time, for not just us but the entire industry, forcing us to re-assess the way we do our tastings,” he said. “All our tastings are seated, and we have expanded our tasting space with the extension of our alfresco area to allow you to sit in the shade of the umbrellas in Summer and around the fire pit in the cooler months. “We try to keep our group sizes under 12 people due to the intimate nature of our space, so we are introducing a new off-site tasting experience called ‘Cellar Door 2 U’, which caters to the larger groups that our cellar door can’t accommodate. “The tastings also have a charitable side to them, with $5 from each being donated towards our efforts working with Meals on Wheels, producing ‘Piccolos’ to accompany the Friday evening meal. To date, Oakvale has produced more than 67,000 bottles for Meals on Wheels clients.” Another great way to experience Oakvale is to become a member of the Wine Club. Beenatree Creations Beenatree Creations was so named because every item was once – well – a tree. This month we caught up with owner and creator Jan Mikula in between stints at Pokolbin’s Handmade in the Hunter Markets to find out how he got into creating such cool stuff. HVMag: Hi Jan – thanks for taking time out to chat. Tell us a bit about yourself. Yep, that’s me. You pronounce my name yarn (Jan), and I’m married to an amazing woman, Anna. We live in Warners Bay, with two Leonbergers (Henry and Lucy) and unfortunately were one of those couples that couldn’t have kids. (Editors note: a Leonberger is a giant fluffy dog!) How did you get into woodworking and running a market stall? I’ve been in sales most of my working life, which comes in handy when running the market stall. I honestly never thought that I would make this my full-time job as I only got into woodworking to give it a go and see if I could make some cool stuff, but it’s been one of those things that I regret not trying sooner. I make a range of different items, everything from timber earrings to bottle openers, spoons, butter knives, bowls, resin eggs and vases. Oh yeah, I also make wombats!

We’ve noticed that you have an actual wombat ‘modelling’ with your Wombat creations – is there a story there? The wombat carvings were something that just happened. My mother-in-law knew that I liked wombats and sent me a picture of a carving she had seen. I hadn’t started carving at that stage, so I thought I would give it a go and put my own spin on it. I mostly use camphor laurel as the colours in the wood are amazing, and I get a lot of it from a sawmill up north that works with landcare clearing of farmers' properties and planting native trees. The response to the wombats was a bit overwhelming, especially after I donated a couple for fundraisers to ACT Wildlife after last years bush fires. They took some photos with a wombat that one of the careers was looking after, ‘Wilbur’, and that little guy honestly saved me during COVID. I started getting orders from all over the world, particularly America, where I ended up selling to 22 states! It has been a fantastic learning curve, with a few visits to the ER, but it’s one I’m happy to have found, and it’s one I am sticking with! What do you like most about the Handmade in the Hunter Markets? When deciding what to make for the markets, I try to put myself into a customers shoes. If they were walking around a market, what would make them stop and want to buy? A lot of what I make is unique and not something you can readily get in a homewares store. I also think people are moving back to buying handmade products and enjoying meeting the maker and talking with them about what they do. You’ll find Jan (pronounced yarn!) at Handmade in the Hunter Markets, in the ground of Kevin Sobels Wines on Broke Road. Upcoming market dates are: April 17+24 and May 1+8+15.

Crafting organic wines is nothing new to Mark Davidson, Managing Director and Chief Winemaker at Tamburlaine Organic Wines. After all, he's been doing precisely that for too many years to count (without giving away his age), and it's been Mark's commitment to and passion for sustainability practices that has led to Tamburlaine becoming one of Australia's largest producers of award-winning organic wines. This means that Tamburlaine adheres to strict rules regarding agricultural farming practices and production. Soil health is critical to maintaining organic standards. Mark is understandably proud to have vineyards in both the Hunter Valley and Orange wineries certified organic under the Southern Cross Certification. "Sustainability and organics just make sense," says Mark. "There’s plenty of evidence to prove the harmful effects of modern agricultural practices that aren’t organic in nature. We’ve proven that organic winemaking can be done, that it works, and I’m excited by the fact that consumers are now asking for it.” Historically, before the development and use of agricultural chemicals, all winemaking was in effect organic. Many agricultural chemicals were developed during the world wars – Mustard Gas, Agent

Orange and the like. Round-Up, so commonly used today, contains many of the active ingredients used in Agent Orange. The use of these chemicals makes sense from a business perspective because it makes the farms more productive, able to feed the 9 billion people on the planet. But the result is an accumulation of chemicals in the environment, the food chain and in humans that persists long after the initial application. Mark Davidson and a group of friends and family purchased Tamburlaine in 1985. At the time, there were a few winemakers advocating organics, but they were considered ‘odd bods or ‘hippies’, and they didn’t have access to the technology or substitutes that are available to organic farmers today. When Mark started the process toward organic practices, he did so cautiously and quietly because he didn’t want the brand to be negatively affected. He was told that it was impossible to do and that there was no prestige in the practice within Australia, unlike in Europe, where some of the world’s most prestigious and expensive wines are unashamedly organic. Through a long process of research, trial and error, Tamburlaine gradually moved into certified organic status. With a background in psychology, Mark understood the impact of brand development and communications strategies on consumer behaviour and applied his broader life experience and perspective to the industry and to how Tamburlaine was run. Throughout the 90s, he built up a network of distribution for his organic wines. Nowadays, Tamburlaine production has grown to be five times what it was in the 90s, and the market for his wines has also evolved, with consumers now wanting to know the provenance of their food and wine and details of the supply chain from which it comes. There is a growing demand for ethical, organic and sustainable products. To cater to this growing demand, Tamburlaine has a well-developed Organic Rewards program that operates exactly as a frequent flyer system does – buy wine, earn points, redeem for cash off purchases. It is a highly successful e-commerce business model that rewards loyalty. There is also a membership program that rewards members with access to exclusive small production wines, member’s prices and member’s lunches and wine tastings. When Covid hit in March 2020, it forced The Cellar Restaurant in Pokolbin to downsize. Two of the four chefs in the partnership decided to move on, leaving Vanessa Blake and her partner Gary Schofield as the landmark restaurant owners and operators. We caught up with Vanessa to see where they’re at now. What changes have you made to the restaurant since taking over? The only real change we’ve made is to the menu. It’s changed a lot – it’s more casual, more budget-friendly and smaller. We like simple food with twists and surprises to excite our regular customers. What plans do you have moving forward? Just to keep serving great food. The restaurant was opened in 1973, so we’ve got the 50th year coming up soon. As ex-Sydneysiders, we love the Hunter Valley, so we’ve got no plans to change locations or anything. We’re happy with the status quo. Where do you get your inspiration from? We just love food. Between us, we have over 50 years of experience. We still get excited about food when we go out. And we are committed to making everything in-house – even the ice cream. How often does the menu change? It’s seasonal. We change it every three months. About halfway through each season, we start talking about what we’d like to do next. Gary tends to do the mains, and I do the entrees. We begin by deciding what the protein component will be, looking at what’s in season and then designing the meals around that. There are multi-cultural influences Asian inspired foods, but it’s really a free hand, and then we fine-tune together. Does the fact you are partners outside of work ever cause a problem? No! We get on really well, and we’re both motivated by the same goals, drive and passion. We do spend time apart outside of work too. Gary is a keen golfer, and I would like to play netball but haven’t found a team yet! What is your favourite dish at the restaurant? Our Lamb for Two is amazing. Slow-cooked and served with roasted carrots and potato rosti, it’s the perfect comfort food, but to be honest - we love all our dishes. Aside from the necessary downsize, how did Covid affect your business? It’s been amazing. We are so busy, and we are looking to potentially open for Sunday breakfasts. Domestic tourism has obviously increased and has been good for our business. We love what we do, and we just want to share our good food and great service with as many people as we can.

In Australia, the organic wine industry is well established, and wines produced organically are heading toward unprecedented heights as consumers increasingly turn to wines that reflect their raised consciousnesses – drinking more sustainable, organic, and preservativefree wines from winemakers who have embraced these values in their winemaking philosophies. This heightened emphasis on ingredients, authenticity, self-care and the environment are increasingly shaping consumer purchasing behaviours, as are general concerns about wellness and additives in our food. For wine producers, this is a crucial driver behind the growth of the organic and low-intervention wine movement. The term "organic" is used for grapes grown in accordance with principles of organic farming, and like organic foods, is produced without the use of artificial chemical fertilisers, pesticides, fungicides and herbicides to tackle pests and disease in the vineyard. Wines labelled preservative-free means the winemaker has not added any preservatives during the winemaking process. Having said that, a small amount of sulphur dioxide is released naturally by the grapes during fermentation (nature's preservative) – so all wine contains trace amounts of naturally produced preservative. Here in the Hunter Valley, Tamburlaine Organic Wines is one of the most recognised organic wine producers in the region. Others include Krinklewood Estate, Macquariedale and Oakvale – and together they have a deep commitment to the environment and a passion for making wines that capture the unique flavours of the Hunter Valley and are reflective of the local terroir. With more than 300 hectares of organically farmed vineyards in the Hunter Valley and Orange, Tamburlaine is a pioneer in the region and renowned for its delicious, award-winning wines. That range includes

Hunter Shiraz, Semillon, Chambourcin and Verdelho, to name a few. All preservative-free and vegan-friendly too. Since the integration of biodynamic methods into the organic management of their vineyards in the 1990s, co-owners Mark and Lou Davidson have seen a noticeable difference in the health of their vineyards and the quality of the fruit. Mark sees organics as "the embodiment of terroir in its sustainability and connection to the soil." As a result, Tamburlaine has committed to using naturally derived products in the vineyard and winery, composting winery waste (grape stems etc.) which they spread on the vineyards to increase organic matter, reducing energy use thanks to solar panels on the warehouse roof, as well as recycling water. Today, the 55-year-old winery has an enviable reputation in the Australian market with one of the largest wine clubs in Australia. It is recognised as one of the largest certified organic wineries in the Southern Hemisphere – based on 100 per cent organic and biodynamic farming and turning out more than 80,000 cases a year. From relatively slow beginnings, preservative-free wines are growing in number and popularity, and an increasing number of Hunter Valley wineries are turning to producing preservative-free and vegan-friendly wines to meet market demand. These include Becker Wines, Oakvale Wines, Tyrrells, De Bortoli, Briar Ridge, Pepper Tree Wines, and Hungerford Hill. Established in 1967, Hungerford Hill has a long-standing reputation for producing wines of character and interest that focus on the Hunter Valley and NSW's cool-climate regions, including Hilltops and Tumbarumba. Guided by Bryan Currie, a highly accomplished and awardwinning winemaker, Hungerford Hill now also include a range of vegan and preservative-free wines at the cellar door, including the 2017 Tumbarumba Chardonnay and 2018 Hunter Valley Semillon. "These wines have zero sulphites added and are natural expressions of fruit from our Hunter Valley vineyards without animal products or any other additives," says winemaker Bryan Currie. "In reality, they are natural wines with the exception that they have been filtered, so they are clear, bright and fruit-driven." "The goal in producing preservative-free wines is to keep intervention to a minimum, and because of the minimal intervention approach, we find our preservative-free wines tell a pure story of the fruit and vineyard. They are easy-drinking and packed with flavours," says Bryan. "For me, it's more than just making wines for people who prefer to avoid preservatives – it's also about producing wines with different flavours and aromas – wines that have character and are interesting in their own right."P

Hungerford Hill Wines Hunter Valley Semillon Preservative Free 2018 – RRP $27 Semillon from the Hunter Valley is a distinctive and unique wine. Semillon thrives in the warm and humid climate of the Hunter and produces high quality fruit. The wines are light bodied and delicate with distinctive citrus fruit and a textured palate. TASTING The 2018 vintage was warm and dry in the lower Hunter Valley, resulting in beautifully ripe Semillon with fragrant lemon and lime fruit and crisp natural acidity. FOOD MATCH Panfried flat head fillets with a goats cheese and tatsoi lettuce salad. CELLARING Best enjoyed as a young wine, it is not suitable for cellaring.

Tumbarumba Chardonnay Preservative Free 2017 – RRP $27 Preservative free wines are made without the use of any added sulphites. It involves very careful handling, minimal interference and good technical capabilities to ensure that the wine remains pure and is of the highest quality. This Chardonnay was barrel fermented by natural ‘wild’ yeast in new and seasoned French Oak barriques. TASTING Hailing from the high-altitude region of Tumbarumba ensures this Chardonnay has intense fruit characters of peach and honeydew melon, while a small amount of malolactic fermentation has lead to a creamy palate. FOOD MATCH Chargrilled halloumi, walnut and rocquette salad. CELLARING Best enjoyed as a young wine and is not suitable for cellaring.

Tamburlaine Organic Wines 2020 Wine Lovers Pinot Gris RRP $24/ $16 each for 12 or $14 each for 24 The once relatively unknown Pinot Gris grape is now one of Australia’s most fashionable white wines and a super cool, serious wine style that is adored by the wine-drinking public.
