Core Brand Awareness in February By Jeff Maisey

F

orbes recently posted an article by contributing writer Tara Nurin headlined “A New #FlagshipFebruary Campaign Aims to Save Core Beer Brands Before They Disappear.” In the article, Stephen Beaumont, the journalist who is credited with creating the #FlagshipFebruary awareness campaign, is quoted as saying, “A lot of beer drinkers have developed a sort of ADD with respect to the beers they drink, so going for a glass of beer at the bar or pub becomes less a pleasant distraction and more a relentless search for what’s new and exciting. In this mad rush towards the unusual and unknown, we tend to forget the great, familiar and stillwonderful beers that guided us all along the path to the craft beer renaissance.” Craft beer is constantly evolving and with this revolutionary evolution comes a variety of new business models that highlight the innovative and imaginative process independent beer-makers are known for. In less than a decade, the number of craft breweries operating in Virginia has grown from 20-some to over 300. For those who got in the game early — either before SB604’s passage in 2012 or just after it — developing and identifying the core, flagship beers was the first order of business. Today, the retail market is saturated with craft beer and grocery store shelves are at capacity, and so for new startups, the ability to crack into a chain store is limited by the leveraging strength of a major distributor that may not be interested in adding a new brand to its already beefy portfolio. This, in part, has led to satellite models such as that of Three Notch’d as well as those breweries like The Veil who seem to unveil a new, must-have beer weekly from an ever-thirsty cult-like following. For the established craft breweries, keeping the flagship brand fresh as Starr Hill did with new packaging redesigns is key along with balancing those tried-and-true beers like The Love with seasonal and limited releases — plus one-off taproom only brews. Still, flagships remain the strong foundation that allows the company’s brewers to experiment for the consumers

obsessed with checkingoff another new brew. “El Guapo, our #1 brand, makes up a generous percentage of our business,” said O’Connor Brewing Company founding president Kevin O’Connor. “As you know, most of our beers would be considered flagship status, as they are available in the grocery and convenience outlets. A few of our flagships are more flat than down, but El Guapo is steadily growing, which is amazing in the ‘flavor of the week’ period we are in.” “I will say that there is definitely something of a mixed bag out there with flagships and limited releases,” said Porter Hardy IV, president of Smartmouth Brewing Co. “We all love limited releases; they are exciting and fun for both consumers and brewers. I will say, however, that to me, there is a different level of difficulty for the brewer in being able to repeat a beer consistently. Smartmouth is a little bit of an anomaly as we have several beers that can compete for flagship status. Alter Ego, Game On, Safety Dance and Notch 9 all make up a significant portion of our sales. Lickinghole Creek Expands International Distribution By Jeff Maisey

L

isa Pumphrey, CEO/co-founder of Lickinghole Creek Craft Brewery, and Chris Kotiza, brand ambassador, were recently in Hampton Roads to establish a business deal with a local freight forwarder that can handle their export shipments to their target markets of Colombia and Brazil. Lickinghole Creek is participating in a grant program provided by the Virginia Economic Development Partnership. Pumphrey and Kotiza visited Columbia on a fact finding mission, establishing distribution contacts and taste-testing beers in Columbia last year. They’ll soon head to Brazil on a similar tour. Pumphrey said she has found beer tastes vary from country to country, and noted the rest of the world is thirsty for craft beer. Lickinghole Creek has established roots in Jamaica where Lisa Pumphrey has friends. She has also gone the extra mile in listening to the Jamaican people and developed specific beers for their palate. She plans to open a small brewery on the island nation, in part, to teach locals about brewing beer. Opening markets in South America is part of Pumphrey’s global strategy to seek-out underserved markets where

craft beer is a relative unknown. International distribution is nothing new to the rural Goochland, Virginiabased farm brewery. Lickinghole Creek beers are also distributed to The Netherlands, France and United Kingdom. Lickinghole isn’t the only craft brewery from Virginia sending beers overseas. “While I don’t have specific export numbers from the craft breweries, I would say Hardywood is the one exporting the most, and Port City is probably number two,” shared Stephanie Agee, Director, Marketing and Development, Virginia Department of Agriculture and Consumer Services. “There are many others getting into the process of exporting and working with overseas buyers, but usually that involves selling a palette or two at a time and not on an ongoing basis. Hardywood and Port City both have distributors in the UK and send regular container shipments there

to fulfill orders. They also have sales in other international markets, but the UK has been the biggest market so far, and I believe still stands as the second largest market for all US craft beer, after Canada.” Virginia Economic Development Partnership and the Department of Agriculture have access to export numbers, but it’s not specific to craft beer or even independent craft. What they do know is that it’s growing. “For January-October 2018, Virginia beer exports were $37.96 million, which was up 120% from the same period the year before,” said Agee. “For full-year 2017, the total was $22.32 million, up 39.8% from 2016. I’ll just note that this data isn’t perfect. Sometimes it could include product produced out of state and exported via our port. But it’s the best data set we have and what we use to calculate all of our export numbers.”

Williamsburg-based The Virginia Beer Co. earned a European Beer Star Award (Silver medal) in November for its Elbow Patches Oatmeal Stout in the worldwide Dry Stout category. The brewery was one of 23 from America to receive a medal in a competition that included 2,344 beers submitted from 51 countries. Members of the Virginia brewery will participate in the Craft Beer Rising festival held in London in late February.

Virginia Sets 20% Rule for Brewery Taprooms By Greg Kitsock

V

irginia law is generous to breweries operating taprooms. The Old Dominion’s breweries can sell as much beer as they want through their taprooms (as opposed to neighboring Maryland, which sets a 2,000-barrel limit on such sales). And the state’s breweries can open as many satellite taprooms as they want. But now, Virginia is pulling on the reins. As of January 1, 2019, SB306 sets a new restriction for brewery taprooms: “not less than 20 percent of the volume of beer sold for on-premises consumption in any calendar year be manufactured on the licensed premises.” “We don’t expect enforcement to begin until after July,” says Brett Vassey, CEO of the Virginia Craft Brewers Guild. “The Virginia ABC Authority is a little behind in developing guidelines on how the 20% rule will be applied.” The Guild, he says, is working with state officials to make sure that “manufacture” is defined as broadly as possible. Vassey expects, for example, that beer brewed at one location but sent to the remote taproom for conditioning will count towards the 20%. “It’s popular for small breweries to do barrel-aging, blending, a variety of things off-site to free up space,” he says. On the other hand, contract-brewed beer will not count toward the 20% minimum, he adds. Additionally, brewpubs, defined as breweries with contiguous retail

restaurants, will be excluded from the provisions of SB306. “We met frequently with distributors and retailers, and they’re quite fine with what we’re doing,” Vassey maintained. “They were concerned about ‘faux breweries,’ that some multi-national would be able to snap up a restaurant chain and ship beer in from a central hub, creating a chain of tied houses. “Right now, we have white smoke, everyone’s happy, we just need it in writing.” SB306 doesn’t appear to be causing a great deal of consternation among Virginia breweries. “We are aware of the 20% ruling and all operations will be in compliance,” said Cassandra Bard, event and social media manager for Strangeways Brewing Co., in regard to a third site the company is planning for Richmond’s Scott’s Addition neighborhood. Starr Hill Brewing Co. in Crozet operates a remote taproom in Roanoke called the Starr Hill Pilot Brewery & Side Stage. Despite the diminutive size of the 5-barrel brewhouse, “in 2018, we brewed 2.5 times the amount required by law, and are on track to brew even more in 2019,” asserts Starr Hill brewmaster Robbie O’Cain. One remote taproom that might have trouble complying is the Deschutes Brewery Tasting Room, also in Roanoke. The Bend, OR-based regional brewer opened the facility in 2017 in anticipation

of building a large East Coast production brewery in Virginia. There, brewer Jeff Schauland brews weekly on an 18-gallon pilot system that supplies about 6% of the beer sold in the taproom (so estimated Deschutes president and CEO Michael LaLonde last year). SB306, however, contains language that grants an extension of over three years for Deschutes to comply. Deschutes will have until April 30, 2022 to upgrade brewing facilities at the taproom, close it, or perhaps move it to their planned production brewery. The company might well need the extra time. Because of a downturn in growth, Deschutes has indefinitely postponed a June 2019 groundbreaking on its East Coast plant. Erin Rankin, Deschutes’ associate marketing manager for PR and communications, stated that “we will meet our commitments to let the city of Roanoke know our updated plans this year. At this time, we will continue to watch trends for the right time to build a brewing facility in Roanoke.” In the face of such uncertainty, it’s business as usual at the taproom, however. Rankin notes, “There’s a lot of experimentation in the small brewhouse with single hop beers and unusual yeast strains. The tasting room is a community gathering space and hosts events weekly that include Community Pints supporting local charities, group mountain bike rides, old time jam sessions, comedy nights and more.”

Mitch Steele at New Realm Brewing Co.

A Match Made in IPA Heaven

New Realm and Stone collaborate on new beer By Annie Tobey

I

caught up with Mitch Steele at the Stone Brewing, Richmond taproom on Jan. 10, after he and his team from New Realm Brewing in Virginia Beach had finished up a brew day with the Stone team. The fruits of their labor will be released in early March as New Realm/Stone LITERALLY Wrote the Book IPA. The background of this collaboration goes deeper than many collaborations. Mitch Steele was brewmaster at Stone - 12 -

Brewing and helped to build the Richmond location. He left in June 2016, after 10 years at Stone, to start a new venture – or shall we say, a New Realm. The Atlanta brewery opened January 2018 and expanded to Virginia Beach later that year. Steele is also author of IPA: Brewing Techniques, Recipes and the Evolution of India Pale Ale. Of the collaboration, Steele told me, “We wanted to brew an IPA going back

to some of the things we’d done at Stone over the years … and add some touches to it … It took inspirations from New England IPA and the traditional Stonetype of IPA and mashed them together.” The recipe included mash hopping, two dry-hops, bright tank hop additions and traditional pellets, cryo-hops and hop oil blends of Ella, Citra and Azacca. Flaked oats and flaked wheat were added to create a smooth mouthfeel and

support the intense, unfiltered juiciness. The name of the beer goes deep, too. Steele described discussing the collaboration and the beer’s name with Stone co-founder Greg Koch. I asked why “Literally Wrote the Book,” but immediately blushed, realizing the answer — Steele did literally write the book on IPAs. “Greg suggested we name it ‘Wrote the Book,’” says Steele. “I suggested some other names, and he kept coming back to that one, and I said ‘OK, but you’ve got to put the word literally in front of it because everybody says it that way. So that’s what it’s being called.” Steele laughed, with that full-face joy that anyone who’s been around him will recognize. “We tasted the pilot batch today,” Steele said, “and it’s really nice. It’s got a lot of tropical and a lot of citrus in the hop character. This Richmond-brewed, draft-only release will clock in at 8 percent ABV and 35 IBUs. Brewers Association’s Ambassador Spreading the Word About Diversity

G

o into most any craft brewery in the country, and you can find an impressive array of beers, ranging from honey-gold lagers to obsidian stouts. Look at the folks who brew the beers and own the businesses, however, and you’ll find a far narrower range. The industry is dominated by white males, many sporting bushy beards. “Dr. J” wants to add some faces with a little more color and less facial hair. “Dr. J” is J. Nikol Jackson-Beckham. When she’s not tending to her day job as chair and assistant professor of communication studies at Randolph College in Lynchburg, she’s traveling around the country in her role as diversity ambassador for the Brewers Association. She was tapped for that position in April 2018, and numbers bear out the need for addressing diversity among both producers and consumers. More than 85 percent of craft beer drinkers are non-Hispanic whites, according to the association (about 68 percent of the U.S. population is non-Hispanic white). Among females, just over 31 percent say they drink a craft beer “at least several times a year.” Anyone familiar with the industry knows that there are relatively few breweries owned by women and even fewer owned by AfricanAmericans. Groups such as the Pink Boots Society have worked to create community among female brewers, just as Fresh Fest and the Beers With(out) Beards festival were created to nurture bonds among minorities and women. Jackson-Beckham, in addition to being a homebrewer and longtime lover of craft beer, seems particularly suited for the job as a black woman. “My identity and my experiences do give me perspective,” she says, “but honestly, I think my ability to speak to these issues comes from more than a decade of studying the industry as a researcher and some extensive review and engagement with the scholarly literature on organizational diversity and equity initiatives.” Her research has included analyzing the marketing ploys behind malt liquor as well as shedding - 14 -

light on historic figures like Peter Hemings, Thomas Jefferson’s slave who was trained by a professional brewer. I caught up with Jackson-Beckham while she was on the road raising awareness of diversity, and she graciously took time to answer several questions. How did you first become interested in craft beer? I understand you were working at a sports bar in southwest Virginia at the time. Yes! I was an undergrad at Virginia Tech, drinking pretty much whatever came out of the most inexpensive keg available. Occasionally, I would hit a party where a group of housemates

would have sprung for a keg of Saranac or something. I registered that this was tastier but wasn’t really motivated to really pursue craft beer until I started working at the bar, getting shift beers of some more interesting offerings. Right after I graduated, I was gifted a Michael Jackson beer-of-the-month subscription. That really sealed the deal. How did your position as diversity ambassador come about? The Brewers Association Board of Directors created a diversity committee who met for the first time at the Craft Brewers Conference in 2017. I was brought on just before CBC in 2018. Today, the Brewers Association is


taking some really positive and proactive steps in diversity and inclusion and (more importantly) is devoting resources including adding me as an ambassador. The BA has multiple ambassadors to advance craft breweries in areas including beer quality, draught systems and beer service, safety, sustainability, beer and food pairing and now diversity. What are your goals as diversity ambassador? Broadly, the goal is to treat diversity and inclusion as any other best-practice area that is critical to the current and future health of the craft brewing community. Those of us who are passionate about craft beer often become vocal advocates—we want to share the creativity, new experiences, unique business models, the sense of community. I would love to see anyone who is inclined to discover what craft beer is all about to feel that they belong. Why do you think the craft beer industry is lacking in females and African-Americans? You’ve written about “black beer culture” as a factor. This is honestly a question that merits a book-length response. However, the short answer is that the craft brewing industry, like all other industries, doesn’t exist in a vacuum. It is part of, and shaped by, American culture at large. You could look back over the past century and trace the ways that beer has been marketed using explicit appeals to masculinity. You might consider that when the craft beer industry was starting up, schools were still being desegregated, civil rights victories were tenuous, the effects of red-lining were devastating to black wealth, and it was a near impossibility for a person of color to walk into a bank to get a loan for a start-up business, especially one with an unproven business model. You and I are both fans of Peter Hemings. Talk about the importance of history in raising awareness about diversity.

I think, for many Americans, the story of American beer comes from one of two broad cultural trends. The “tastes great versus less filling” era of market consolidation in the American brewing industry and/or the contemporary origins of the craft. Neither of those stories has acknowledged the influences of many types of people from many walks of life very well. Achieving diversity isn't simply a matter of invitation; it is also a matter of belonging. Visiting history allows us to say, “You belong here, because you have always been here.” You’re a homebrewer. How did you get started and what are your favorite styles to brew? I started brewing when I lived in San Diego in the mid-2000s. Southern California at that time was a heady place to be for a craft beer lover and I just wanted to know EVERYTHING I could know about it. It just so happened that my personality and interests really clicked with homebrewing, and I’ve been sort of obsessed ever since. I don’t know that I have a “favorite” style to brew (as I don’t really have a favorite style to drink). I love running experiments, playing with the impact of specific ingredients, playing with water chemistry and fermentation temperature, building new contraptions. I’m honestly just a lover of the process; the fact that beer comes out at the other end is an incredibly awesome bonus.

Something dark and divine for Valentine’s.

Valentine’s, Meat Juice, History and Beer By Wade Reynolds

A

rdent Craft Ales is continuing in its series of historic craft beers, this time in partnership with the Valentine, Richmond’s museum that focuses on the history of Richmond and the central Virginia area. After a successful release in December of a winter warmer celebrating the museum’s participation in Court End Christmas, a February release is planned to help celebrate—no guessing needed here— Valentine’s Day. Danny Fain, a former history major at Virginia Commonwealth University and now packaging head at Ardent, is combining his love of history with his love of beer to create these limited-volume brews. After working recently with Preservation Virginia and the John Marshall House to celebrate the former chief justice’s birthday last fall, Fain has turned to the Valentine for collaboration on his most recent projects. Although there is a section on Richmond’s beer history in the - 16 -

museum’s permanent display, this is the first time the Valentine has partnered with a brewery in this manner. “We’re very excited that we’ve had the opportunity to partner with Ardent,” said Eric Steigleder, Valentine’s Director of Public Relations and Marketing. Brewing on a 15-gallon Sabco system that looks more like it belongs in somebody’s kitchen rather than in the brew house of even the smallest of craft breweries, Fain combined mulled spices, ginger and nutmeg, among other ingredients, to create a “bigger beer’’ for last December’s winter warmer. For now, these are one-off brewings. When you consider the total volume of each brew yields the equivalent of approximately one keg (“it’s really more like a 12-gallon yield” Fain admitted), releases are, by necessity, of a limited nature. For December, two releases were planned, one on a Friday night at Ardent and one the following Sunday at the Valentine


during Court End Christmas. The Friday night event went off without a hitch, but an early winter snow storm effectively canceled Court End Christmas. As a result, a second release at a later date in December at Ardent was substituted with many Valentine personnel on hand. The half keg was easily drained to the tune of many compliments on the beer. One taster said it reminded him of a well-brewed schwartz beer with spices. With Ardent’s normal 15-barrel system cranking out beers with regularity, there’s no real schedule for Fain or the Sabco system which is the original system used by the co-op of brewers in a Church Hill garage that later morphed into Ardent Craft Ales. Like Ardent, Fain, a member of that co-op, has come a long way from those days prior to Ardent’s opening in June 2014. Back then, they would brew on Sunday, bottle on Wednesday, and the brewers would get paid in beer. For the February brewing, several ideas were discussed. One possibility was a chocolate stout involving historic chocolates from the 1812 era. The Wickham House, built at the corner of Clay and 11th Streets in 1812, was later purchased by the Valentine family. One of the oldest standing residences in Richmond, it became the Valentine Museum in 1898 and is still the cornerstone of the organization which now includes the entire south side of Clay St. between 10th and 11th Streets. In a classic example of the historic adage “what goes around comes around,” Fain is a former Valentine docent who once gave tours of the Wickham House and wrote an alternative tour of the house as seen through the eyes of the slaves who worked and lived there. Coincidence? You tell me, but I’ve heard that there are no coincidences. Presumably, that pertains to history if not always to beer. In keeping with the romantic nature of Valentine’s Day, another idea surfaced. This references one of the most romantic substances in the city’s history—Meat Juice. Developed in the 1870s by the Valentine family, it became a worldwide seller after its participation at the 1878 Paris World Exposition. You can still see the booth, on view in the Wickham House at the Valentine. Lauded for its “strengthgiving properties” as a “nourishing protein tonic,” Meat Juice contained juice from four pounds of meat in a two ounce bottle. This is not Meat Juice’s debut as part of an alcoholic concoction; at one time it was the secret ingredient for Bloody Marys at Richmond’s Commonwealth Club. In the middle of the last century, production of Meat Juice stopped. As with most first-time events, there have been some glitches. “We’re having some trouble getting our hands on the exact flavorings of the tonic,” Steigleder confided in early January. “We know that it was a savory taste,” noted Bill Martin, Valentine’s director, also mentioning that there were several different recipes over the years. But according to Meg Hughes, the Valentine’s Curator of Archives, the formulas remain the property of the Valentine family. As a result, the exact ingredients remain unknown to the general public. With a brewing deadline approaching, it was decided to go with a chocolate stout for this year in hopes of incorporating Meat Juice into a future endeavor. As of this writing, the exact release dates are unknown, but those interested are advised to check both Ardent’s and the Valentine’s early February schedules. As Martin observed, “Richmond from its founding has had a rich brewing tradition. Our partnership with Ardent reconnects in a real way the history of the Valentine and the city to today’s beer production.” You could call it one of the more enjoyable ways to participate in living history. Seven Arrows on Target with NOBO Kitchen By Mark Thompson

S

enate Bill 604 (SB 604) was the match that ignited a fire for the growth of craft breweries in Virginia. SB 604 gave breweries the right to serve beer for on premise consumption without the burden and cost of operating a fullscale restaurant. The law allowed craft breweries to remain profitable at lower beer volumes by capturing their full margins, selling directly to the consumer at retail prices. Since passage of SB 604 in 2012, individual breweries have chosen multiple paths to incorporate the benefits of the new law. Seven Arrows Brewery, in Waynesboro, showcases one of these paths that breweries have adopted in the wake of Senate Bill 604. Seven Arrows was founded by the husband and wife team of Aaron and Melissa Allen in January of 2014. They moved to Waynesboro in 2008, when Aaron began working

for Miller Coors in Elkton as a Process Engineer. Aaron worked at Miller Coors for six years until opening the brewery in 2014. Aaron holds a General Certificate of Brewing and Diploma in Brewing from the Institute of Brewing and Distilling, and also completed the Master Brewer exam in 2011. Melissa has her MBA from James Madison University. They began their business plan for the brewery in mid-2010 prior to the passage of SB 604. When Seven Arrows opened, they chose not to include a restaurant, saving tens of thousands of dollars in start up cost. When asked, Mellissa stated, “We knew that our core competencies were technical brewing, business acumen, and customer service. Food was not one of our core competencies.” For the first year of its operation, Seven Arrows had no food trucks and

only offered free snack mix. Every Friday, they would pick up pre-made sandwiches for the weekend from Long Meadows Cheese shop. The sandwiches were self-serve, stored in a merchandiser refrigerator, and sold throughout the weekend. When asked, Aaron jokingly said, “Mellissa and I ate a lot of stale sandwiches that year.” In 2015, Seven Arrows decided to change things up and start booking food trucks at the brewery. Melissa booked a different food truck every Friday, Saturday, and Sunday for the next year and a half. “We had a different truck each day on the weekend. We would provide power and water to the truck and often trade drink for food,” Melissa said. There were pros and cons to running a rotating cast of food trucks through the brewery. The customers enjoyed the variety of food and having options


other than snack mix and day-old sandwiches. The owners liked that the food trucks would keep customers at the brewery and thus sell more beer. The cons were that some of the food trucks were not reliable and would cancel due to weather or truck maintenance. Additionally, the brewery could not control pricing or food quality and would occasionally have to answer for those issues to their customers. As satisfying as having food trucks on the weekends was, there was still a “food” problem during the week. Monday through Friday afternoon was still limited to the snack mix offering. So, in 2016, they partnered with a local restaurant called Heritage on Main to develop an app similar to Grub Hub that allowed customers to place orders directly with Heritage on Main for delivery to the brewery within 30 minutes. The intention of the App was to be able to offer a full menu during all hours of operation. The food order App only lasted for a short time due to the logistical issues. Out of the ashes of the food app came the next step in the evolution of Seven

Arrows food journey. In late 2016, they approached one of their go to food trucks, Farm Fresh Fixins, about doing a brick and mortar food option inside of the brewery. Seven Arrows and Farm Fresh Fixins drew up a sublease for an unused space in the brewery that would become NOBO’s kitchen. In theory, this was a win-win proposition. The sub lease was based on a percentage of food sales and had a minimum amount that would cover the fixed costs of the space and a maximum if the food sold well. It also offered Farm Fresh Fixins a permanent home base to serve food and prep area for their food truck. NOBO’s kitchen sub leased the space inside of the brewery for all of 2016, but decided not to renew at the end of the first year due to personal reasons. Once again, Seven Arrows was at cross roads in their food journey. NOBO’s Kitchen was a good thing. It offered a full menu every day, drew customers to the brewery and kept them in the tasting room. Melissa recalls, “We were torn between looking for another food truck or taking the space ourselves.”

In the end, they decided to buy out NOBO’s kitchen and keep the space for themselves. In order to make the transition work, Mellissa would have to own the food business. Fortunately, the Sous Chef for NOBO’s kitchen, Ben Demory, wanted to stay on-board. Melissa and Ben partnered up and launched NOBO’s Kitchen 2.0 in early 2018. Ben runs the kitchen and Melissa handles the business. Aaron sums it up by saying, “Since opening Seven Arrows, we have always looked to act in a way that would maximize our revenue and minimize our expense and risk. Getting the brewery up and running was expensive and risky in and of itself. SB 604 allowed us to try multiple food options without having to incur the additional cost of opening a restaurant.” Mark Thompson founded Starr Hill Brewery in 1999 and today is president/ master brewer at The Brewing Tree Beer Company in Afton, VA.

Cape Charles Shining Bright with Brewery By Jeff Maisey

V

irginia’s Eastern Shore has long been known for its bountiful harvest yielded from the endless fields of potatoes, watermelons, soybeans, corn, and other vegetables as well as the freshest seafood found anywhere — especially oysters. In the past decade, wine flowing from grapes at Chatham Vineyards has made for a great compliment. Now, add quality craft beer to that mix in the form of Cape Charles Brewing Company. Cape Charles Brewing Company — conceptually — was born on Father’s Day 2016. Mark Marshall was an avid home-brewer and invited his daughter, Rachel Diamond, over for his latest fluid experiment. After several beers and sticky notepads scribed with ideas, a brewery was born. Mark Marshall was retiring from over 30 years in law enforcement, having served as Chief of Police in Smithfield before being elected Sheriff of Smithfield. Rachel, a teacher by profession, was wanting to move back to the Shore from North Carolina. They recruited Mark’s brother, Chris Marshall, and with the help of their mother, plans for the brewery began to take shape, though the operation wouldn’t open until June 2018 — a year after projection. The entire family participates in the running of the brewery. Rachel Diamond is the restaurant and tasting room manager. Her

husband, Zach, is the “fix-it” guy and a master carpenter. Cape Charles Brewing Company is classified as a brewpub. It operates a full-service kitchen specializing in steamers — steamed clams ($11/dozen), oysters ($10/half-dozen, $19/dozen), jumbo shrimp ($18/pound), and Oyster Rockefeller ($12.50/half dozen oysters baked with kale, bacon, onions, garlic and cheese). Also from the sea is the locally-caught Rockfish Sandwich ($14), House Beer Battered Fish & Chips ($15), Fish Tacos ($12), Tuna Burger ($12), and Cobb Island Crab Cake Sandwich ($15). If for some crazy reason you don’t love fresh seafood, try the Steak Frites ($17.50/8 oz sirloin with chimichurri sauce and sea salt fries), and a variety of burgers, and Pulled Pork BBQ Sandwich ($12) smoked right outside next to the parking lot. Vegetarians have a choice between the Greek and House salads ($4.50 to $10). Soft pretzels ($7), Brew-House Wings ($9) and Loaded Nachos ($12) take the bite out of your afternoon munchy craving. Their clam chowder won the Judge’s Choice first place award at the Eastern Shore Chowder Cook-off. Every aspect of the brewery is meant to celebrate and communicate its location of the natural beauty and lifestyle of the Eastern Shore. When you enter the tasting room/restaurant, a variety of tables and chairs invite you to sit and stay awhile. The wood used for

the table tops, the tasting bar, and interior walls is native to the Eastern Shore. The table tops are knotty pine. The bar top is black walnut made from a single tree. They are coated with an epoxy resin. Overhead, industrial cobalt blue light fixtures provide a rustic, nautical atmosphere. Photographs — many of them aerial — show the pristine scenery of the Shore and its small, marshy barrier islands. The tap handles used both in the brewery tasting room as well as in restaurants in Hampton Roads and on the Eastern Shore feature the Cape Charles Lighthouse. Talk about branding. “Smith Island and Cobb Island have been a place we have gone as a family,” explained Rachel Diamond, about the tap handle design. “We wanted something that was symbolic of the Eastern Shore. The first thing you see when you cross the Chesapeake Bay Bridge Tunnel is the Cape Charles Lighthouse in the distance on Smith Island.” Interestingly enough, the town of Cape Charles fabricated the exterior of its water tower to resemble the same lighthouse. The beer names also tie-in with the Eastern Shore, giving every ounce a reinforcement of their sense of place and pride in the community. Taking a flight test to sample the beers? Try these: Assateague Island New England IPA, Fisherman Island Double IPA, Cobb Island IPA, Smith Island Imperial Stout, Seaside Sour, Assateaugue Island Pils, Nor’Easter Pale Ale, Ole’ Reliable Lager, Bayside Belgian Farmhouse Ale, Puddle Pirate Porter, and Heff’n Fairytale Hefeweizen (sonamed after Zach responded to the idea of opening a brewery in Cape Charles). The beers with “Island” in the name are considered flagships. When possible, the brewery makes use of local, Eastern Shore ingredients. Smith Island Imperial Stout is made with 300 Chincoteague salt oysters. And, when the supply meets their needs, they use hops from Seaside Hops from nearby Machipongo. While Mark enjoys brewing beer, he made a wise decision in hiring a commercial brewmaster by the name of Brian Martin, whose brewing credits include Avery Brewing and running 3 Notch’d Brewing Company’s sour barrel program in Charlottesville. Behind a glass window, patrons in the tasting room can gaze into the 15-barrel brewhouse. “We built it for distribution, not just the restaurant,” said Chris Marshall. The tasting room benefits from local residents as well as tourists since they are literally the only game in town on the brewery level. THE BRÜT IPA Be a part of beer history By Annie Tobey

A

new beer style, Brüt IPA, has been flowing at breweries and bars around Virginia, offering a new variation on a popular style. As beer consumers, we have a chance to try various interpretations of an unofficial style, to see how it changes, to influence the outcome and to cast our bets: Will this style will be merely a footnote in beer history, or will it become a long-term style?

THE STORY OF THE STYLE The original Brüt IPA is credited to Kim Sturdavant, brewmaster at Social Kitchen & Brewery in San Francisco. If you’re familiar with sparkling wines, you know that “brüt” means “dry” – as in, not sweet. Sturdavant wanted to make a bone-dry IPA, with no residual sugar. He decided to use amyloglucosidase enzyme (amylase for short), which he had used to remove sweetness from triple IPAs. He and his customers liked the result. As the creator of the style, Sturdavant targets a beer that’s pale, light-bodied, dry, highly carbonated (all descriptors of a brüt Champagne) and hoppy. He continues to experiment with the - 42 -

recipe, including use of adjuncts such as corn, rice and wheat. He figures the style as about 6.5 to 7.5 percent ABV. And with no sweetness to balance bitterness, the IBU mustn’t be too high.

BREWERS ON THE BANDWAGON Breweries around the country and in Virginia have been putting out their interpretations of – or their riffs on – a Brüt IPA. New Realm Brewing in Virginia Beach has released several of the style. Co-founder Mitch Steele (who’s also author of IPA: Brewing Techniques, Recipes and the Evolution of India Pale Ale) says their first Gose resembled the early examples from San Francisco, “using corn grits and Hallertau blanc hops to get the wine-like character.” Since then, they’ve put out a Black Brüt IPA and one with all Cashmere hops, “adding a tropical fruit, almost oaky kind of character to it, which worked really well,” Steele says. Since then, New Realm has stopped using corn as an adjunct – though it helps dry out the beer, it adds a corn-like flavor.


Steele isn’t concerned about the color, but he wants the beers to be clear to reveal the Champagne-like bubbles. He’s also experimented with the best time to add the amylase: in the mash, kettle or fermenter. “We found that adding the enzyme in the fermenter works best,” Steele said. “It takes the beer to another level of dryness. The problem with that is the enzyme is still active in the beer when you package it.” Of the most appropriate hops, Steele says, “The first [Brüt IPAs] focused on hops that have wine-like characteristics and I think that does work really well. I think tropical hops work really well, too. I haven’t tried piney, citrusy hops in this style yet – that might be too intense.” Maltese Brewing, Fredericksburg, has been playing with the style, too, starting with Brotherhood Brüt with Champagne yeast. Next came Belgian Brüt, says Maltese brewer Stephen Matters, using a “Belgian yeast at a relatively low fermentation temperature so as to not bring out too much Belgian esters but still ferment dry as the desert,” plus coriander and orange peel, double dry-hopped with Citra and Centennial. Three Notch’d Brewing released Champers Brüt IPA. Brewmaster Dave Warwick used wheat to aid head retention and add bubbles. He stuck with the house Scottish ale yeast “to let the enzymes and low gravity do the work for the dryness.” Seven Arrows Brewing released Rosé Brut IPA. Brewmaster Aaron Allen added hibiscus near the end of the kettle boil for the rosé hue and residual floral notes. “There is a lot to be explored with this one,” says Kane Wille, head brewer for O’Connor Brewing.

THE STYLE’S STAYING POWER “To me, the idea of a really dry and slightly more carbonated hoppy beer sounds wonderful, but I’ve tried probably five different examples, and only one of them was one that I would get again,” says Tony Ammendolia, owner of Final Gravity Brewing and Original Gravity homebrew store. He examined consumer reaction on beer-rating app Untappd and noticed that no Brüt IPAs have achieved a rating of four (out of five) or better. “That tells me that it might be a hard style to do well,” Ammendolia says. He also speculates, “Many people are into the juicy, more full-bodied IPAs, and this is almost the opposite, because just by the nature of such a low finishing gravity, it’s not going to have a lot of body. A higher carbonation also lends that perception of less body.” “Some people just don’t like dry beers,” says Dave Warwick. But he sees the style as a welcome alternative to the juicy, hazy IPA style. Perhaps the moderate ratings indicate that the Brüt IPA is simply not a crowd-wooing style – even perfectly executed lagers often get moderate ratings. “It’s not a very aggressively flavored beer,” says Steele. “A beer that just knocks you in the teeth – that’s the beer that’s going to score high.” Allen anticipates that the style will appeal to both new and seasoned craft beer drinkers. “The lighter body and bittering of the Brüt IPA makes the beer extremely approachable,” he says. “Based on the broad appeal we see in the taproom, we see this style of beer increasing in popularity.” VIRGINIACRAFTBEER.COM

T

he following is an interview with Nordic Knot co-owner Melissa Romano, who is also a co-owner of the Lake Anne Brew House in Reston, Virginia.

So how did the path that led to Nordic Knots begin? Nordic-Knot (Malt & Salt, LLC) started with a pretzel in a brown bag, left on the doorstep of Lake Anne Brew House in late 2015 when we were still under construction. A note that accompanied the pretzel introduced a neighbor, who mentioned that he baked pretzels out of his home kitchen and wondered if we might be interested in selling them at the brewery. Normally, one might shy away from food left by a stranger outside, but this pretzel looked like something special, so I contacted the "pretzel fairy" right away and, I guess the rest is history! Eric Lundberg, now my business partner, began baking - 46 -

pretzels with his daughter when she was very young, and had spent years working on his recipe. As a soft pretzel lover, I knew immediately that this recipe was something special - quite possibly the best pretzel I had ever eaten, and knew that I had to have them for the Brew House. When we opened the doors of Lake Anne Brew House about six months later, Eric began to bake and deliver pretzels to us, alternating between utilizing a neighboring restaurant's kitchen and his own certified home kitchen, and eventually renting a commercial catering space. But when the demand for the pretzels became so large that he outgrew each of those options, I knew we were on to something. In the spring of 2017, Eric and I were overwhelmed by the demand for pretzels--he was baking around the clock to supply the Brew House, and we were turning away upset

customers who were coming, sometimes solely for the pretzels, but often finding us sold out by the end of the day. When a commercial space a few doors down from the Brew House became available, we started to brainstorm. Eric was continuously improving the product and his methods of baking, and I was eager to see if we could make pretzel sales work in a distribution model to other breweries who, like ours, did not have a kitchen or any way to prepare and profit from food service on site. Most brewery taprooms operate without a restaurant or in-house food component, and therefore don't benefit from the extra revenue stream that brewpubs do. We wanted to bring a wholesale item to these outlets, so that other breweries could benefit from the sale of pretzels just as Lake Anne Brew House did. Eric and I settled on a wholesale/ distribution model for our business


start-up, and though we do have a future goal to eventually open up a Nordic-Knot bakery storefront, we chose to focus on distribution for resale as our primary goal in the first year, targeting breweries and coffee shops as our customers. We've just wrapped up our first full year of distribution, and our pretzels have been sold at over 25 locations to date, ranging from festivals, to corporate events, to coffee shops, and of course breweries throughout Loudoun and Fairfax counties. We bake everything fresh to order, and deliver a ready to sell product in three sizes, plus specialty shapes and flavors.

I like to say that Nordic-Knot was born from a love of pretzels, and as a way of twisting together family, friends and community. The name Nordic-Knot stems from my business partner Eric's Scandinavian heritage. I am of German descent, and while my culture is known for its pretzels, Nordic-Knot does not necessarily bake in the traditional Bavarian style, though Eric has taken many cues from the Germans, even visiting Munich this past year to participate in the International Bakers Conference. When searching for a brand and logo for the company, we were intrigued by the Viking or Nordic knot work patterns and Norse designs, many of which resemble the twists of a pretzel. While the more popular Irish or Celtic knot work tends to be more repetitive, with tight or constrictive symmetrical patterns, almost mathematical in precision, Nordic knot work is typically a more loosely woven style, with a free form, non-linear aesthetic, though still highly detailed. Our logo "knot" is actually a small piece extracted from a much larger "Nordic Knot" pattern.

What is the general division of labor between you and Eric with Nordic Knots? While I love to bake and do often help in the bakery, Eric is our primary baker, and the recipe is all his. I tend to run the business end of things, while he focuses on artistry in the bakery. He is constantly tweaking and improving the recipe, but together we have come up with some great ideas for different offerings, my favorite of which is the "everything" pretzel. The idea came to me while eating an “everything” bagel one day... I just thought, these lox and cream cheese would be way better on a pretzel than a bagel. I took the idea to Eric, and he made it happen. It's now one of our best sellers, and my personal favorite.

What is the timeline of the Nordic Knot business versus that of the Lake Anne Brewhouse? The two really go hand in hand. Distributing Nordic-Knot pretzels to other local breweries has really been a fun way to get to know others in our local brewing community. For Jason (my husband and co-owner of Lake Anne Brew House) and I the beer came first, but the pretzels have been a sort of tie to the greater brewing community - an unexpected and wonderful “twist." While two separate companies, NK and LABH have sort of grown up together. I like to call them "sister companies,” and they certainly rely on each other. After all, beer and pretzels are sort of a match made in "malt and salt" heaven.

What are some details of the different types of Nordic Knots you make, any seasonal ones, related products, etc. Our traditional "Nordic" pretzel is a salted, buttered soft pretzel. We hand mill our flour from the finest brewery malts and grains (wheat and barley), and use all natural and organic ingredients. Our specialty pretzels include a cinnamon sugar VIRGINIACRAFTBEER.COM

twist; an "everything" pretzel with poppy, sesame, and black sesame seeds plus garlic, onion and salt; a dark brewers grain dough, which resembles pumpernickel, but is actually a rich, dark malty dough made so by incorporating the darkest brewers malts; and a "Why Knot Both" twist, which is a mixture of our brewers grain and traditional doughs layered and twisted for a striped effect. We make our pretzels in three sizes ranging from a "mini" (which is anything but) to our standard "taproom" sized monster. We also offer large, sharable braids and on occasion, other specialty shapes. We have also created special, custom pretzel doughs for some of our brewery customers, utilizing the grist bill from one of their signature beers to make a pretzel of matching malt blend. Most recently, and perhaps most fun, is that we actually brewed a beer at Lake Anne Brew House, aptly named "Twisted Sister Pretzel Ale". For this recipe, we mashed in dozens of fresh baked Nordic-Knot pretzels, and the result is an amazing ale that has significant malt characteristics, and an absolute pretzel aroma. Twisted Sister is currently on tap at LABH, while supplies last!

Which breweries (or other businesses) presently carry Nordic Knots? Over the past year, our pretzels have been distributed to Ocelot, Old Ox, Loudoun Brewing Company, Rocket Frog Brewing, Crooked Run Brewing, House 6 Brewing, Elden Street Tea Shop and Rare Bird Coffee Roasters among others. We also sell our pretzels weekly at the farmers markets at both Reston Town Center and Lake Anne Plaza. Currently, our pretzels can be regularly found at Beltway Brewing, Black Walnut Brewing, Eavesdrop Brewing, Chubby Squirrel Brewing, Bike Lane Brewing, Wild Hare Hard Cider, Weird Brothers Coffee Roasters, Huzzah Hobbies, Brew LoCo, Lake Anne Coffee House, and of course, Lake Anne Brew House. We also have some exciting new locations in the works--stay tuned.

Any local celebrities who are big fans of your knots? We were very fortunate to have former Governor Terry McAuliffe visit Lake Anne Brew House during his tenure. We had just won the gold medal for our Belgian Golden Strong ale at Lake Anne Brew House, and served him a glass of that alongside a Nordic-Knot pretzel. Getting In The Spirits Ironclad’s Kara King elected VP of the Virginia Distillers Association By Jim Roberts

y all measures, the spirits industry in Virginia is booming. While the number of distilleries grew 19 percent from 2016 to 2017, sales grew by 30 percent, state and local taxes paid grew by 51 percent, and federal taxes paid grew by 63 percent—and the numbers from 2018 promise to be even bigger. Credit the Virginia Distillers Association, a non-profit that formed in 2016 and has partnered with the Virginia Alcoholic Beverage Control Authority to champion legislative changes that make production, sales and promotion of Virginia’s spirits more competitive with beer and wine. Kara King, the creative director at Ironclad Distillery Co. in Newport News, was recently elected to a two-year term as the association’s vice president. I recently caught up with her for this Q&A.

Tell us about the benefits you saw as a member of the VDA—before you took office. They started these road shows, which are awesome. It’s all the distilleries together in one place, which is great for people to come and just taste Virginia in one place and get educated. You can - 50 -

taste a bourbon, you can taste a vodka, you can taste a gin. You can buy it there, which is even more amazing, instead of having to go to the ABC store. You meet the distillers there—the actual distillers are promoting their own product, which is really, really cool. Also, just the legislation that has passed has been amazing. Two years ago, if you had a tasting room, you were only allowed to pour one ounce of your stuff. Now, we can pour three ounces, which is a lot more beneficial to us.

The sales growth over the last two years is really amazing. How much of that do you think is attributable to the VDA? The road shows alone—when [VDA Executive Director Amy Ciarametaro] started it, maybe she’d barely get five distilleries to participate. Since the law changed that we can pull a license to sell remotely, that’s changed the game. We love to go to them just because people are so excited to taste all this stuff. If they like it, they can buy it on site, which


is awesome for us and awesome for them. It’s nice when they’re talking to you, you can actually be like: ‘Here’s a bottle. Take it home. Enjoy it.’ Those unto themselves have been really good. It makes people aware of what’s available, and then maybe they’re going to their ABC stores and re-upping their bar. It’s good to connect.

Were you approached to run as vice president? Amy and I, we just kind of clicked together. My past life was in marketing and copywriting and branding, so I love to do that. I actually approached her and said, ‘I’d love to work as much as I can with you on this.’ She will admit she’s more of a marketer— not a branding person. So we’ve really come together and come up with ideas. I bring her my background, and she says, ‘Well, we need to do this, and this is the budget.’ When she said there’s somebody up, I was like, ‘Well, can I run?’ It’s been a good relationship.

What’s been your experience in the first two months? The biggest thing I’ve learned is the legislative side is eyeopening on how it works. What you see from the outside is not the way it works behind the scenes. So that’s interesting. There’s a great group, and we have this email chain of all the VDA board members. They’re all coming from their different backgrounds. They all came from something else. They didn’t start distilleries first and foremost. It’s really interesting to see the different perspectives coming together. Barry Haneberg from Virago, he’ll say, ‘I’m coming at this from a numbers perspective, and maybe we should think about it this way.’ I’ll come at it from a marketing perspective and say, ‘Maybe we should think about it this way.’ Scott Harris from Catoctin Creek—he has experience beyond anything—he’ll come in and say, ‘In my experience, it’s been this way.” It’s really interesting. Five heads are better than one head. We think everything through, and we’re trying to attack everything the smartest way we can.

You bring the branding perspective. What else do you think you bring to the table? Being here, I’ve distilled with my brother when we worked on our old equipment, so I understand completely the pains that are distilling. I do all the reporting with my dad, so I understand that pain. I do the front of the house and the tasting room, so I understand that pain. All the marketing, I understand that pain. I feel like I get the holistic picture of what it’s like to run a distillery.

How often do you meet? We have one legislative day each year when they all go to session. We meet all the senators and our delegates in Richmond and tell them what we’re hoping they’ll vote on. We have a nice evening where they can taste all our stuff and meet all the distillers. Otherwise, we have meetings every two or three months. It depends what’s happening, but normally, it’s at the ABC in Richmond. We’re very good partners, ABC and us. We embrace each other. We’re scratching each other’s backs.

What are some of your goals for the next two years? Amy went to the VCU Brandcenter in Richmond and got in kind–some of the students actually rebranded Virginia Spirits as a whole and came up with a new logo and new

type treatment and all that. I’m taking that and applying it to everything we do and trying to make it look like a holistic brand. Everything should be cohesive. I’m trying to steer the events to be more educational. Things that we can do that are maybe more intimate—actually get more of a value to your ticket and more of a one-onone experience with the distilleries … just make it more memorable and more valuable and a more rich experience. And maybe just partnering with more restaurants and bars so they’ll showcase more Virginia spirits on their cocktail menus and stuff like that. Initiatives like that that make it a point of pride in Virginia. Make it so no matter where you go, Virginia spirits are going to be in your face, and you’re not going to be able to avoid it.

What else would you like to talk about? VDA President Gareth Moore has been a wonderful leader. He’s smart and has a lot of connections and has been a great leader. … Amy works tirelessly. She really does. She comes from the wine industry, so she’s been through all this before. Her learning curve on legislative stuff has been—whoosh—and she’s gotten it. … Things are really starting to happen, so we’re excited. VDA’s Executive Director Shares Local Favorites Kara King isn’t the only leader in the Virginia Distillers Association with ties to Hampton Roads. Amy Ciarametaro, the group’s executive director, was born and raised in Chesapeake and graduated from Old Dominion University. Although her job is to promote all of Virginia’s distilleries, she doesn’t hold back when asked for her favorites in southeastern Virginia. “Obviously, Ironclad,” she said. “I love what Kara and Owen are doing, as far as their focus on bourbon and the different spin-offs they’re doing. Those guys get it when it comes to craft and when it comes to artisanal products. … They’re also really sophisticated when it comes to branding their products. “Also, Chesapeake Bay Distillery in Virginia Beach, with their Blue Ridge Vodka, which is kind of the cornerstone of vodkas in this market. Their Lemon Liqueur is absolutely phenomenal. It’s one of those things that, once it hits the lips, it’s hard to put down. It’s delicious. “And then Copper Fox Distillery in Williamsburg, I’m a fan of everything they do, especially their single malts with the different fruited woods, especially the Peachwood Single Malt. … It’s one of those things that as soon as somebody tastes it, their eyes light up.
