Is that the squealing tyres of summer we hear approaching? After such a sustained period of doom and gloom, we think we all deserve a bit of a lift. Have to say, there's nothing quite like a warm, sunny day to help that along.

If it feels a little like we're all emerging from our caves after an extended period of hibernation, that's because we are, a bit starved of everyday human interaction, freedom of movement and an actual summer and festive period where things resemble some form of normalcy (grim global scenarios notwithstanding). There is some degree of confidence that we New Zealanders are going to make it through next year, perhaps a little battered, but generally in an okay state. So, breathe in. Breathe out. Celebrate.

Heading into Christmas, we're doing a feature on our Top 20 Sparkling Finds, separating the wheat from the chaff (some thing we're really good at) to bring you a selection of wines for summer and the festive season that really do the business.

Gusbourne are considered the gold standard for English sparkling wine. All of their fruit is estategrown, the nearby sea bestowing a moderating influence on what is a south-facing, warm, dry microclimate. The focus on quality sees Gusbourne produce vintage wine only. With their ability to age slowly and gracefully, the Gusbourne sparkling wines sit comfortably among the best in the world.

Chardonnay, this has spent four years on lees and six months on the cork. The nose is pure mineral and very focused. With its stony edge and lovely balance, there is a real energy and drive to the wine. The dosage is 6.5gm.

Spanish cava is one of sparkling wine’s best kept secrets. Made vis champagne's traditional tech niques, the difference is in the grapes, the Spanish cavas drawing on indigenous varieties Xerello, Macabeo and Parelada, which deliver their own unique set of flavours, fragrances and textures. At around five million bottles, Piper-Heidsieck is one of Champagne's bigger producers, and the quality is at an all time high. Shedding their 'heavy on the history' approach, Piper are embracing a more current line via their youthful chef de cave, Emilien Boutillat, 2021's IWC Sparkling Winemaker of the Year, and an enthusiastic proponent of diligent sustainability and responsible production.

Piper-Heidsieck is now B Corp Certified, joining a community of companies leading a global movement for inclusive, equitable and regenerative change.

The Mathieu family's Grower champagne business is managed by Isabelle Mathieu and her husband, Michel Jacob, the couple promoting environmentally sustainable practices and practising as close to a biodynamic programme as the region will sustain. Low filtration, low sulphur and gentle handling deliver beautifully balanced and approachable Pinot Noir-dominant expressions, with the varietal responding well to the Aube's clay-rich soils.

With its vibrantly fresh minerality, the Preference embodies the spirit of the J Lassalle house. A smooth and fruity palate evokes characters of pear, apple, peach and apricot, underlined with notes of liquorice and fennel. Unassailable quality.

Boutique producer J Lassalle is run by three generations of women, with half the small-scale, 120,000-bottle production heading to the United States. Production is very traditional, with stainless steel, no use of oak, malolactic and 8-9g/L dosage. Lassalle have 16ha of vineyard, all in Premier and Grand Cru. There’s a definitive house style: one of delicacy, freshness and unassailable quality.

Serge Mathieu are a small family champagne house doing everything themselves. Malolactic fermentation is carried out with great delicacy, endowing these supremely elegant wines with a creamy richness. With its lovely texture and weight, this is an style that will appeal to a wide range of champagne lovers.

Charles Heidsieck’s provenance is immense, the energetic, extroverted Charles-Camille Heidsieck – made famous in the song Champagne Charlie – founding Charles Heidsieck in 1851.

Champagne Clarevallis (the name given by Saint Bernard to the abbey he founded) is made with grapes from the organically farmed Urville hillsides, tended since the 12th century. Notes of elderberry and violet, distinct minerality and a lovely balance from the discreet use of dosage (the addition of sugar after disgorgement).

Chef de cave Cyril Brun is stamping his own touch of genius on this distinguished brand. At his disposal is the largest collection of reserve wines in Champagne. Plump, fleshy and opulent, the Charles is a triumph. Deeply golden with a complex and voluptuous nose, sundrenched fruits, notes of pistachio and almond and layers of creamy texture.

Eight generations in, exponents of organic and traditional practices, the Drappier family employ minimal amounts of sulphur and a low dosage approach that bestows a dry and aromatic elegance upon their champagnes. The Côtes des Bar region’s first zero-rated carbon producers, the Drappiers use 90% recycled glass and 75% of the electricity is sourced from solar panels.

Rockburn have a winning way with Pinot Noir, honed over decades of absorbing the lessons of their searingly austere landscape and its idiosyncracies. There is no doubt that Central Otago and its extremes have charmed the enigmatic variety and made it feel at home, but it nonetheless takes fastidious attention to detail along with a hands-off, 'let the terroir do the talking' approach by chief winemaker Malcolm Re es-Francis and his team to produce these masterful wines.

The fruit is hand-harvested off the company's Parkburn and Gibbston Valley vineyards. Each site contributes its own unique characteristics that provide the winemaking team with a palette of distinctive flavour profiles. Rockburn's outstanding record is not confined to their headlining Pinot Noir, but extends throughout the entire portfolio. At Glengarry, we've been championing Rockburn's wines from its inception back in 1991. Saving Grace is is in the heart of the North Canterbury wine region, with the Three Deans range to the West and sheltered from the stiff sea wind by the Teviotdale hills. It can be a challenging place to grow grapes, the often fierce Nor’wester testing at times. Viticulturist Jean-Luc Dufour has tended the vines for over a quarter of a century, many of which he planted. A diversity of companion plants and the beneficial insects they encourage keep things in balance. Winemaker Krystal Palmer has experience across many facets of winemaking and has done vintages in Marlborough, Waipara, the United States and China.

APPELLATION

Marlborough Wine

#askforAMW | AMW stands for Appellation Marlborough Wine, a trademark introduced in 2018 to safeguard the provenance of the region that first put New Zealand on the global wine map. Initially, AMW focused on Marlborough’s famous mainstay, Sauvignon Blanc, but the scope has now opened up to other varieties. For a wine to have the AMW logo on the bottle, particular criteria must be met.

Firstly, the wine must be made from 100% Marlborough grapes, and grown in Marlborough vineyards that are certified by Sustainable Winegrowing New Zealand. Although this seems relatively straightforward, a closer look at many bottles will show you that the wines do in fact come from elsewhere. The way to ensure that your Marlborough-branded wine is actually from Marlborough is to look for the AMW logo. A second qualification is that the wine must be bottled in New Zealand. The final criterion is that the wine has been tasted blind and then approved by an independent panel of qualified winemakers.

The AMW logo is, then, a stamp of authenticity, and verification that your wine is 100% Essence of Marlborough.

BREWING RICE INTO WINE

Sake has played a significant role in Japanese culture for centuries. A favourite of the Warrior Class, Samurai would symbolically partake of sake before battle. Often referred to as rice wine, sake production involves a brewing process more akin to beer (although not quite), and it is pretty much consumed as if it were a spirit.

Sake has its own specialised variety of rice, called sakamai . It is polished to remove proteins and fats, leaving the starch at the centre of the rice grain. The more that is polished off, the the higher the quality of sake. The polished rice is washed, soaked and steamed; a mould known as koji is introduced to convert the rice’s starch to sugar and a yeast starter is added to aid the fermentation process.

The entry-level Junmai sake is brewed using only rice, water, koji and yeast. If alcohol is added, the sake is not a Junmai. There are many top sake that are not Junmai, and the addition of alcohol is a skill that is prized. Junmai may be heated, chilled or consumed at room temperature.

Honjozo are polished down to at least 70% and are not Junmai; they are easy to drink and can be served warm or chilled. Ginjo sakes are polished down to at least 60%. Ginjo is the term used when alcohol is added, while Junmai Ginjo means no alcohol has been added. Daiginjo are sake polished to at least 50%. When called Junmai Daiginjo , it means no alcohol has been added. The fragrant Junmai Ginjo and Junmai Daiginjo sakes are best served chilled, as heating destroys their subtleties.
